Today we're talking with Brad Kintzer, the chocolate maker for TCHO Chocolate in Berkeley, California. In our conversation, we discuss TCHO's corporate ownership and how they source their cacao. We also talk about the flavor labs TCHO has established in many cacao growing regions to work with growers on a mutually-informed flavor lexicon for chocolate, and to improve quality. We spend about the last third of the interview talking about TCHO's relationship to craft beer, both through the cacao nibs they provide to hundreds of brewers through their relationship with BSG (Brewers Supply Group), a major ingredient provider, and through direct collaborations with breweries like Fieldwork and Faction. These collabs have resulted in some really unique chocolate beers, and most recently, a beer chocolate bar called Hoppy Hour made with Cascade, Centennial, and Chinook hops. Brad Kintzer is the Chief Chocolate Maker at TCHO Chocolate, based in Berkeley, California. Prior to joining TCHO, Brad was chocolate maker and product developer at U.S. bean-to-bar chocolate pioneer, Scharffen Berger, acquired by The Hershey Company in 2005. Previous to his 20 years of chocolate making, Brad studied tropical botany and environmental studies at the University of Vermont, and spent months working on cacao plantations throughout Latin America to better understand the origins of chocolate flavor. At TCHO since 2009, Brad and his team are focused on innovating in every aspect of chocolate making; from cocoa genetics, fermentation and roasting, to creating unique and tasty chocolate products for market. Abstract: Metabolites play important roles in brain development and their levels change rapidly in in the prenatal period and during infancy. Metabolite levels are thought to stabilize during childhood, but the development of neurochemistry across early-middle childhood remains understudied. We examined the developmental changes of key metabolites (total N- acetylaspartate, tNAA; total choline, tCho; total creatine, tCr; glutamate+glutamine, Glx; and myo-inositol, mI) using short echo-time magnetic resonance spectroscopy (MRS) in the anterior cingulate cortex (ACC) and the left temporo-parietal cortex (LTP) using a mixed cross- sectional/longitudinal design in children aged 2-11 years (ACC: N=101 children, 112 observations; LTP: N=95 children, 318 observations). We found age-related effects for all metabolites. tNAA increased with age in both regions, while tCho decreased with age in both regions. tCr increased with age in the LTP only, and mI decreased with age in the ACC only. Glx did not show linear age effects in either region, but a follow-up analysis in only participants with greater than or equal to 3 datapoints in the LTP revealed a quadratic effect of age following an inverted U-shape. These substantial changes in neurochemistry throughout childhood likely underlie various processes of structural and functional brain development. Copy rights belong to original authors. Clearly, “if it ain't broke, don't fix it,” is an adage that doesn't apply to TCHO Chocolate. Launched in 2005, the Berkeley, Calif.-based company has been at the forefront of chocolate innovation by emphasizing sustainable and ethical sourcing as a key metric of quality. Over the years, TCHO has developed a cachet that is rare among consumer brands, winning awards for its commitment to sourcing standards, flavors and package design. Given its standing and success, why did the company recently introduce massive changes in the formulation and branding of its chocolate? For TCHO's chief chocolate maker Brad Kintzer, it all goes back to the company's overarching mission of supporting its sourcing partners and making better chocolate. In an interview featured in this episode, Kintzer spoke about TCHO's evolution as a company and brand, having committed to using plant-based ingredients for all of its chocolate and overhauled its familiar packaging in December. He also discussed his role in the development of TCHO as leading brand of premium chocolate, how the company defines “better” when evaluating progress, why he is inspired by and has a deep admiration for winemaking and how the company assessed the right timing for unveiling its new look. An Israeli food tech startup called B.T. Sweet recently unveiled a plant-based, one-to-one drop-in sugar substitute called Cambya. In this episode of the Xtalks Food Podcast, Sydney talks about Cambya's potential to replace traditional sugar in a multitude of baking applications as well as its advantaged over other sugar substitutes. She discusses the sugar substitute market and the growing need for consumers to cut down on sugar intake. Abstract: {gamma}-Aminobutyric acid (GABA) is a primary inhibitory neurotransmitter in the human brain. It has been shown that altered GABA concentration plays an important role in a variety of psychiatric and neurological disorders. The main purpose of this study was to propose a combination of PRESS and MEGA-PRESS acquisitions for absolute GABA quantification and to compare GABA estimations obtained using total choline (tCho), total creatine (tCr), and total N-acetyl aspartate (tNAA) as the internal concentration references with water referenced quantification. The second aim was to demonstrate the fitting approach of MEGA-PRESS spectra with QuasarX algorithm using a basis set of GABA, glutamate, glutamine, and NAA in vitro spectra. Thirteen volunteers were scanned with the MEGA-PRESS sequence at 3T. Interleaved water referencing was used for quantification, B 0 drift correction and to update the carrier frequency of RF pulses in real time. Reference metabolite concentrations were acquired using a PRESS sequence with short TE (30 ms) and long TR (5000 ms). Absolute concentration were corrected for cerebrospinal fluid, gray and white matter water fractions and relaxation effects. Water referenced GABA estimations were significantly higher compared to the values obtained by metabolite references. We conclude that QuasarX algorithm together with the basis set of in vitro spectra improves reliability of GABA+ fitting. The proposed GABA quantification method with PRESS and MEGA-PRESS acquisitions enables the utilization of tCho, tCr, and tNAA as internal concentration references. Abstract: OBJECTIVE: 7 Tesla (T) longitudinal magnetic resonance spectroscopy (MRS) offers a precise measurment of metabolic levels in human brain via a non-invasive approach. Studying longitudinal changes in neurometabolites could help identify trait and state markers for diseases and understand inconsistent findings from different researchers due to differences in the age of study participants and duration of illness. This study is the first to report novel longitudinal patterns in young adulthood from both physiological and pathological viewpoints using 7T MRS. METHODS: Utilizing a four-year longitudinal cohort with 38 first episode psychosis (FEP) patients (onset within 2 years) and 48 healthy controls (HC), the authors examined the annual percentage changes of 9 neurometabolites in 5 brain regions. RESULTS: Both FEP patients and HC subjects were found to have significant longitudinal reductions in glutamate (Glu) in the anterior cingulate cortex (ACC). Only FEP patients were found to have a significant decrease over time in gamma-aminobutyric acid (GABA), N-acetyl aspartate (NAA), myo-inositol (mI), and total choline (tCho: phosphocholine plus glycerophosphocholine) in the ACC. Uniquely, glutathione (GSH) was found to have a near zero annual percentage change in both FEP patients and HC subjects in all 5 brain regions over a four-year timespan in young adulthood. CONCLUSIONS: GSH could be a trait marker for diagnostic applications at least in young adulthood. Glu, GABA, NAA, mI, and tCho in the ACC are associated with the patient's status and could be state markers for mechanistic studies of psychotic disorders, including those for progressive pathological changes and medication effects in young adulthood. Season 2, Episode 3 - Four Brewers is on the road! Our first stop in this three episode series devoted to Los Angeles beer is Smog City Brewing Co., in Torrance, California. This week, we’re trying our hand at remote shows, and exploring the LA beer scene. The first stop on the tour is at Smog City Brewing Co., located in Torrance, California. Jonathan Porter and Chris Walowski sat down with us three hours before the release of their bourbon barrel-aged imperial stout named Infinite Wishes, to talk about the brewery and share some tasty brews and interesting stories. Sabre-Toothed Squirrel Labels The first beer, which was served up at a bright and early nine o’clock in the morning, was their “hoppy amber” ale named Sabre-Toothed Squirrel. This beer is made with Falconer’s Flight hops, and could almost be described as “Arrogant Bastard light” in terms of the way the hops and amber malt qualities interact with each another. This sabre-toothed squirrel definitely has some bite… (See what I did there?) Next up is Smog City’s outstanding imperial stout called The Nothing. This beer was originally brewed by Porter at his former brewing home, Tustin Brewing Company, as Double Chocolate Imperial Stout. Coming in at 10% ABV, it contains two types of TCHO cocoa nibs and two types of chocolate malt, and is meant to have a mouthfeel similar to that of a chocolate milk shake. It’s also made with malted oats, which of course, gives John a beer boner. Infinite Wishes Infinite Wishes is the next beer on deck. It’s the bourbon barrel-aged version of The Nothing, and is in the neighborhood of 12% ABV. It was aged in bourbon barrels for precisely 364 days, and it is truly spectacular. It’s quite smooth and hides its alcohol quite well. The barrel character really shines and isn’t too overwhelming or woody. Fans of Smog City were lined up outside of the brewery when we finished recording this episode at 10:00 am, and it sold out in a matter of hours. Here’s to hoping the’ll make this beer again next year… We wrap up the show with a nice, palate cleansing Smog City saison named Saison Contraire. This beer was fermented with Smog City’s house brettanomyces yeast, and then refermanted with two other types of brett yeast. It’s then dry-hoppped and packaged with another dose of brettanomyces to condition the beer in the bottle. That’s a lot of brett, yo. Needless to say, it’s pretty friggin’ great. Smog City Brewing Co. have been at their current location since 2013, but were brewing beers at Tustin Brewing Company under the name Smog City since 2011. They’ve come a long way in the last four years, and we can’t wait to see what 2015 has in store for them. Side note: About halfway through the episode, there is a faint, consistent white noise that can be heard in the background. That was the sound of their CO2 tank being refilled by an outside vendor. TCHO, a chocolate factory in San Francisco, has encouraged social entrepreneurship in developing countries through its innovative supply chain practices. In this short audio lecture, John Kehoe, VP of Sourcing and Development at TCHO, discusses the company’s complex supply chain. His story starts with growers in Ghana, Ecuador, Peru, and Madagascar, and moves to to their factory and store in San Francisco. The company has developed TCHOSource, a unique partnership program that connects the TCHO to its sourcing cooperatives around the world through technology. The use of technology throughout the supply chain helps increase the quality, productivity, and sustainability of the chocolate production. Technology use, starting from the co-op level, allows TCHO to help improve the livelihood and craft of its growers. TCHO is promoting social entrepreneurship from the ground up. John Kehoe began his career in international trade in Caracas, Venezuela, in 1987 with a local trading operation. After establishing a $10MM annual cotton trade, he co-founded and operated a leading cocoa exporting business, managing thirty percent of the country’s exports of premium cacao with clients in the United States, Japan, and Europe. In 1999, ED&F Man Cocoa hired Kehoe to restructure a cocoa exporting operation in the Dominican Republic. In 2002, he returned to the United States, and founded “EcoTrade,” a specialty cocoa brokerage and consultancy based in Miami. Joining TCHO in March of 2008, he has helped build TCHOSource through a $3.3MM USAID cooperative development grant. He also created a network of raw materials suppliers providing critical inventory financing. For TCHO, San Francisco’s only chocolate factory, social entrepreneurship is the focus. In this audio lecture, company executive John Kehoe talks about how the firm not only produces high-end chocolate products, but also helps farmers in developing countries. He discusses challenges associated with sourcing and cultivating quality organic cocoa beans, and what it takes to invest in and work with growers. Kehoe spoke at the Stanford Graduate School of Business at the invitation of the International Development Club. John Kehoe is Vice President of Sourcing and Development at TCHO, San Franciso’s only chocolate factory. He began his career in international trade in Caracas, Venezuela in 1987. Since the cocoa market in Venezuela was liberalized in 1991, his work has been dedicated to the procurement and marketing of specialty cocoa, working closely with farmers, exporters, importers and chocolate manufactures. In 1999, ED&F Man Cocoa hired Kehoe to restructure a cocoa exporting operation in the Dominican Republic. In 2002, he returned to the United States, and founded EcoTrade, a specialty cocoa brokerage and consultancy based in Miami. Through friendships and contacts developed over the years, Kehoe expanded his experiences to initiate new relationships and diversify supply in Ecuador, Jamaica, Trinidad, and Madagascar, and to include fair trade cocoa from Ghana and the Ivory Coast.
