What a divine experience to talk to David Zhou at Oriental Teahouse in South Yarra on the eve of their 20th birthday celebrations. David is softly spoken with a wealth of wisdom and knowledge about his teas, hospitality and people. While we spoke, I was treated to a glorious pot of David's calm concentrate tea, made with goji berries, lychees and other ingredients and which became more and more caramel flavoured as the conversation went on and is designed to nourish the heart and sharpen your mind. I also ate incredibly flavoursome twice cooked ginger prawn dumplings which are pan fried and then steamed in ginger juice and the chilli wagyu beef dumplings marinated in kaffir lime in a homemade chili oil.. The 20-year celebrations will bring together the Yum Cha experience diners have come to love over the last two decades and will be happening in both the CBD and South Yarra venues on the 23rd and 24th August. If you know, you know, and you can expect such beauties and the Lamb Cumin dumplings from 2015, Treasure Dumplings from 2005 and the cheese and bacon spring rolls from 2018. There will be other dishes as well as tea tasting and a really good chance to appreciate all the work that David and his family have put into making Oriental Teahouse what it is today.

Today I'm chatting to Neil Rocke at The Commons Collective in Ormond Hall, a beautiful art deco complex with various venues like the Moubray Bar, Rose Garden, Conservatory, Chapel and more. I actually felt as though I had stepped back in time in the hall which has the most beautiful wooden panelling and paintings of the hunt and an intriguing collection of old leather boxing gloves plus Christmas wreaths and stars and fairy lights, so a ye olde English pub at Christmas time. I wanted to be in that world and I didn't want to leave. Neil met me there and took me through a complex labyrinth of passages, the sort of situation where you wish you had some breadcrumbs to drop along the way so you can find your way back, but I took in all the various spaces and the loveliness of the building and we eventually ended up in the office. Now, this was the kind of office I see myself in. There was a bar at one end, but that wasn't even the best bit, a chandelier made of antlers, walls covered in art and big old comfy leather couches. I loved all that with an ardour far exceeding moderation. But I loved more the conversation I had with Neil. Neil is the epitome of hospitality. He has mainly worked in catering across his career and he is all about the people, both staff and guests and he is all about the food and giving people a good time. When Neil talks about what he does, his eyes sparkle. The Commons Collective is doing some pretty fun stuff over the winter months – Christmas in July, Yum Cha, Cabaret Thursdays, Weekend Roasts – and with Neil in charge of the food and the ambiance of that magical place, you know you are going to be in for an excellent time. Now, I started recording when I was being all awestruck in the Hall, so do come with me as I sort of breathlessly follow Neil through the back passages and up to the office. There's no other way of describing these two other than, OG Foodies! Their passion for cooking (and teaching!) started from a very early age for both Railea and Melissa. They both taught home economics at TAFE and have always had a love of food, which they share with their families, and the wider community. They have always been adventurous when it comes to food, in their cooking, but also where they eat out...not to give it away, but Mel's kids started solids at Yum Cha! Even after having children, both Railea and Melissa found a way to keep their passion for cooking alive. Melissa started Mia Cucina (miacucina.com.au), which initially started as cooking classes from her kitchen, now runs food tours from exploring Vietnamese foods to Turkish delights. Railea has only recently retired, due to COVID, but after this chat, we think she should write a cookbook as a family heirloom! Typically at Yum Cha there are three options to the tea: jasmine green tea, chrysanthemum herbal tea and Sow Mee tea 壽眉茶. Sow Mee tea is classed under the Chinese tea system as a white tea, alongside Pai Mu Tan and Silver Needle. Depending on who you talk to, the rules on what makes a white tea can vary. But the general consensus is that it is a tea with the least amount of handling by people. Ideally the leaves and buds are just plucked and dried. Of the three grades of white tea, Sow Mee is the tea of the common folk because it is cheap and can still be brewed into a strong dark liquor. Hence the name Sow Mee 壽眉: poetic licence to let buyers know that old folks love it. Qigong 氣功 is on the most basic level focused breathing exercises designed to increase a person's inner energy. On the next level up, it is essentially for most people light aenorobic exercises that most people can do on a daily basis. Done daily, both the drinking of tea like Sow Mee 壽眉茶 and qigong are more beneficial to the body than not doing them at all. Traditionally when a master was in repose, they were typically engaged in them and as such can be viewed as a form of wushu leisure. Martial Qigong 武氣功 is the ancient discipline of using qigong as part of a master's martial art practice. A lot of it is hidden in secrecy, mystery and wuxia literature that makes the line between fact and fiction a little more than blurred. But to dismiss it as outright mumbo-jumbo would be to miss the truth that some made up stuff is deliberately misleading to keep the “real secrets” hidden from prying eyes. The secret maybe something quite mundane and right in front of the observers' eyes, but may represent a strategic and tactical advantage to its bearer. Sow Mee tea 壽眉茶 on one level has got nothing to do with Martial Qigong 武氣功. Controversy can be a challenging word around the Yum Cha table. Even when all the dishes being pushed around by the Yum Cha girls are all so temptingly delicious. It can be a little humbling to discover that what gets served with the rice is usually Jasmine Green tea: the typical ordinary default choice for most people. During the Southern Song Dynasty, there was a General named Yue Fei 岳飛 who came to represent the epitome of loyalty in Chinese culture because he remained loyal, right to the end of his life when killed by conspiracies within the imperial court. Thankfully nowadays, as they sip their cups of Jasmine Green tea, most people never have to experience such a controversial life. Rather, we are blessed by an abundance never known by most people living before us. The martial arts of Xingyi Quan 形意拳, like its acclaimed ancestor Yue Fei 岳飛, is an internally focused style that also carries its fair share of controversy. Whether you believe any of it or not, Southern Song General Yue Fei created a style for his officers and soldiers to use in the heat of battle through the use of explosive internal chi by way of the fist or spear. Passed down from Yue Fei to Divine Fist Li - Li Luoneng 李洛能, the style has become rich and varied in our time, just like all those yum cha dishes. Hence something easy on the palette has to be drunk to cut through it all; practically and effectively. And Jasmine Green tea is what cuts through all of it. It is like a bitter-sweet refresher that allows one to enjoy all the dishes in their respective turn, just like a Xingyi fighter taking down one opponent at a time with explosive grace and ease. Controversial this may all be. The style of Xingyi Quan 形意拳 has always been so. Within the form resides the mind: within the complex reside the simple. 「明日香のキッチン・トーク」Episode17は、中国・広州の旅パート2。広東料理の本場で食べた飲茶のお話です。日本で持っていたイメージとはかなり違っていた飲茶の世界。美味しくて身体にも良いお茶を飲みながら、楽しくおしゃべりをして、見たことのないお料理を味わう…広州の飲茶は初体験の連続で「味覚のチャンネルが開く」思いでした。飲茶という食のスタイルはもっと注目されても良いのではないかと広州へ行ってから感じています。そこで食べた広東料理の数々は驚き&感激の連続。漢方、薬膳といった意味合いはもちろん、「空を飛ぶものは◯◯◯以外食べる。泳いでいるものは◯以外食べる」(笑)と言われるほど、あらゆるモノが食材となる美食の世界をたっぷりご紹介しました。
☴ Dear stressed executive, Suntzu 孫子 was a great sage 大智 who knew the Tao 道 and tried as best as he could to guide kings in their bloody warfaring. ☲ His book, The Art of War 孫子兵法 got around places. And for those too stressed to buy his book, perhaps you would consider his book printed on your favourite tea cup? ☱ The tea cup would say a lot about the determination of its wielder to make things happen. At least passively. I mean, imagine going into a negotiation and your opponent was drinking tea 茶 from such a cup. I doubt the negotiations would go in your favour. ☷ And in the mayhem of battle, what type of tea 茶 would be served? ☰ As a tea merchant having to supply tea to an aspiring executive, I am guessing it is a tea that, while expressing the flavours of over two thousand years of bloody Chinese warfare history, it would have in its soul some chi 氣 to invigorate the mind, body and spirit. ☶ Therefore, based on my own experience, I would have recommended a good ginseng oolong 人參烏龍茶. Not American ginseng but Siberian ginseng. In TCM, American ginseng is known to restrict blood-flow. Siberian ginseng improves blood-flow thereby strengthening the mind and certain key vital organs; Best drunk first thing in the morning before breakfast. ☵ So now, a sharpened up executive would wonder: Hang on a minute, isn't he some sort of qigong 氣功 master? What's he needing ginseng 參 for? Can't he just make some chi 氣 out of thin air 气? ☳ Well... For all those questions, the answers comes best experientially. In the meantime, I would recommend for the down-to-earth fighter Pu-erh 普洱茶. The same stuff they serve in Yum Cha 飲茶: It's dark, low caffeine and goes down well with any low qi 氣 sapping fried food.
