Oregon Rainmakers talks with Jaime Floyd, Co-founder and master brewer for Eugene's own Ninkasi Brewing company. The Craft brew business is a huge industry in Oregon and the nation and Jaime shares how Ninkasi began and where the company and the industry are headed.
Eilise is one of the few female brewmasters in Indiana, she's the CEO of Scarlet Lane Brewing Company, where 85% of her leadership team is female, and she's on a mission to inspire other women brewers. Those are just a few of the reasons she's a badass! She's from Coatsville, IN and a graduate of Butler University. She completed her brewing degree at the American Brewers Guild in Vermont and trained with Ninkasi Brewing and Fort George Brewing in Oregon. She opened Scarlet Lane in 2014 - one of Indiana's first female owned and brewed production breweries. Although successful, she's had some haters and harsh criticism along the way. Eilise talks about her successes and challenges, embracing the strange and unusual side of the company, and what the future holds for Scarlet Lane. Mickey died at 88 on June 11 at his home in Carmel, Calif. SPACE DRINKIN?: Two of its astronauts had flown three sheets to the ozone in 2007, NASA formally banned crews from imbibing in orbit. It’s equally sobering to note that carbonated beverages are outlawed on the International Space Station. Gas bubbles in a carbonated drink don’t act the same as on gravity-rich Earth. Instead of floating to the top, the bubbles lie there, evenly distributed in the liquid. To rework the lyrics of David Bowie’s “Space Oddity,” the head on a brewski poured from a tin can far above the world would float in a most peculiar way. SPACE BEER: 2014, Ninkasi Brewing Company, an independent craft brewery based in Eugene, Oregon, set its sights on a beer launch like no other and in July 2014, the Ninkasi Space Program (NSP) took flight. The mission: send brewer’s yeast to space and return it to Earth to brew a deliciously out-of-this-world beer. Ninkasi Brewing released the first edition of Ground Control April 2015. If there is one thing that the MCU can be blamed for, it's the rush to build a movie universe. DC tried, mostly failed, and had to soft reset; Universal's monsters went back into the vault only one film in; and now, sadly, Godzilla: King of the Monsters may have taken this burgeoning franchise down that same path. Unlike its 2014 predecessor, which was heavily criticized for its reluctance to show the titular monster, King of the Monsters doesn't only double down, it essentially quintuples down—stuffing the film with enough Titans (their moniker for the Kaiju) to fill a host of sequels to come. There's only one issue: That presumes there will be many sequels to come. In that way, it put the cart far ahead of the horse; whether you liked this film or not, it's undeniable that it is a flop. Of the three movies so far in the Monsterverse—2014's Godzilla and Kong: Skull Island being the others—this was the least successful, grossing almost $100 million less domestically than the film it was meant to be bigger and better than. Worldwide, it hasn't fared well either, lagging far behind both Kong and Godzilla (2014). Even worse, it wasn't just a disappointment financially. It was panned critically. Comparatively, at just 41%, its reviews were exactly 34% less favorable than the other two. Therein lies the problem. In attempting to course correct for 2014's methodical approach, it overshot. And it continued to bungle the other central element that plagued the first—the humans. Why, in a movie filled with incredible CGI creations, do we spend so much time with them? Believe me, it pains me to write this. Over a decade of my childhood is deeply intertwined with this character. As I've mentioned on the pod, I owned every VHS through 1995's Godzilla vs Destroyah. I desperately wanted this to work, so we could get the promised—and hopefully more proper—*Godzilla and King Kong showdown. Alas, it may not come to pass. If Kong vs Godzilla fares similarly, I fear the franchise is not long for the world. But, hey, it's not all doom and gloom. Join us as we take you through all the highs and lows of King of the Monsters, and if you love Godzilla, you may just learn a thing or two. Craft Brew News – 04/06/19(courtesy of Brewbound.com)Constellation Brands Sales Top $8.1 Billion in Fiscal Year 2019Constellation Brands reported its fiscal year and second quarter 2019 earnings results today, which were highlighted by a 7 percent increase in net sales, to more than $8.1 billion.During the 2019 fiscal year, Corona brand family shipments reached 150 million cases, while depletions increased 7 percent. Meanwhile, Modelo brand family shipments exceeded 125 million cases, as depletions rose 12 percent.Newlands called Modelo Especial “the leading growth engine in entire U.S. beer market,” adding that it is the “fastest growing brand in the on-premise” and the No. 1 selling beer in 7-Eleven stores.“It is the fastest growing major beer in the industry, accounting for almost 40 percent of total category growth,” he said, adding that the beer is now the top selling brand in California.In 2020 fiscal year, Constellation Brands will make its “biggest marketing investment” behind Modelo, with television advertising during live sporting events as well as the roll out of 32 oz. single-serve bottles.Heineken USA to Pay Record $2.5 Million Fine to Settle Trade Practice ViolationsThe Alcohol and Tobacco Tax and Trade Bureau (TTB) today announced the acceptance of a record $2.5 million offer in compromise from Heineken USA Incorporated for alleged trade practice violations outlined in the Federal Alcohol Administration (FAA) Act.According to the TTB, HUSA supplied alcohol retailers with its proprietary “BrewLock” draft systems at no cost between August 1, 2015, and March 26, 2019.In a press release, the TTB said the BrewLock systems were designed to only dispense products packaged in unique kegs used by HUSA, which subsequently induced retailers into purchasing offerings made by the global brewing entity.Additionally, the TTB accused Heineken’s U.S. importing arm of making “slotting fee payments” to retailers, and disguising those transactions as “permissible activities” such as consumer sampling experiences that never actually occurred.Brewers Association: Craft Growth Outpacing Overall Beer MarketThe BA, which released its 2018 craft industry growth statistics today, reported that 7,346 craft breweries operated in the U.S. in 2018. That’s up from 6,490 in 2017.Those 7,346 craft breweries produced a combined 25.9 million barrels of beer in 2018, up about 800,000 barrels from 2017, the BA said.Brewers Association chief economist Bart Watson told members of the media during a teleconference. “We’re still seeing openings outpace closings by almost five-to-one,” Watson added that he expects both numbers to be revised upward next year as additional data is collected.In 2018, craft’s share of total beer dollars grew to 24.1 percent — to an estimated $27.6 billion — which Watson attributed to price inflation and the so-called “long tail” of small brewers commanding higher retail margins. Craft’s volume share of the overall U.S. beer also increased, to 13.2 percent last year, up from 12.6 percent in 2017.Watson also made a case for the smallest breweries finding the most success as they build their businesses through direct-to-consumer taproom sales. The BA estimates that the number of barrels sold directly to consumers via brewery taprooms grew by about 400,000 barrels, to 3.1 million barrels, in 2018 (up from 2.71 million barrels in 2017).Ninkasi Brewing Sells Majority Stake, Establishes National Platform to Acquire Other BreweriesOregon’s Ninkasi Brewing has sold a majority stake to Legacy Breweries Inc., an upstart venture led by former Yakima Chief CEO Don Bryant, that aims to acquire U.S. craft breweries.Similar to Canarchy – which owns Oskar Blues, Cigar City Brewing, Deep Ellum, Utah Brewers Cooperative, Perrin Brewing and Three Weavers – or Artisanal Brewing Ventures – which owns Victory Brewing, Southern Tier and Sixpoint Brewery – Legacy Breweries Inc. hopes to establish “collaborative partnerships” with craft breweries, according Ninkasi co-founder Nikos Ridge.Speaking to Brewbound, Ridge said he, along and co-founder Jamie Floyd and the company’s six investors, would “retain significant ownership” in the brewery.“Ninkasi sold a majority stake to Legacy Breweries in order to create a new platform that can leverage our resources in conjunction with those of the Legacy team,” he said.As those “brewing hubs” are established, the company would also look to acquire 10 to 15 smaller breweries in those geographies. Those companies would be able to access expanded production and packaging capabilities and have better access to raw materials such as hops, malt, and cans. This episode we talk about our experience shooting a couple suppressed weapons that our guest brings along. Our guest is a gun nerd in his own right and brought some fun hardware to play with. Specifically we discuss an Aero .300 Blackout AR Pistol with a Rugged 7.62 suppressor and a Heckler and Koch 9mm with a Yankee Hill Machine suppressor. We also get into how archaic laws can result in ridiculous hoops to jump through and what good guys can do with those evil black shooting things. Our palate was please with a glorious IPA, Maiden the Shade by Ninkasi Brewing and a piney IPA sensation by Silver City Brewery, Saint Florian IPA.
The boys are out in Eugene, Oregon as part of a two part Oregon Brewery special, with the 2nd part: Portland, coming at ya soon! Joey’s Bachelor party was a brewhouse buffet, and they kicked if off in Eugene by visiting a long time favorite of the Italian groom-to-be: Ninkasi Brewing! There weren’t many surprises at the teal-hued home of great beers like Vanilla Oatis Oatmeal Stout and Tricerihops IPA, but Ninkasi is truly geared for quality and widespread distribution, so it was still a great bucket list checkmark. After a big pastrami bonanza at Falling Skies Brewery (filled with old world styles and cask ales) the gaggle of greasy geezers set off to Oakshire Brewing. A new logo and a great open environment set things off right, and Joey might have found one of his new favorite beers of all time! And, as always, the great search for Hazys was in full effect, and we sure found some doozies in the Pacific Northwest!
It isn’t true that all geologists drink beer. But many do, and I’m one of them. Today I’m going to talk about the intimate connection between geology and beer. Beer is mostly water, and water chemistry has everything to do with beer styles. And water chemistry itself depends mostly on the kinds of rocks through which the water flows. You know about hard and soft water – hard water has more dissolved chemicals like calcium and magnesium in it, and while salts of those chemicals can precipitate out of hard water, making a scum on your dishes, they also can be beneficial to development of bones and teeth. In the United States, the Midwest and Great Plains have some of the hardest water because of the abundant limestones there, and in Great Britain, southern and eastern England have harder water than Scotland for similar reasons. But it wasn’t limestone that made Burton-upon-Trent a center of brewing in the 19th Century, when it was home to more than 30 breweries. The water there is rich in sulfate which comes from gypsum, calcium sulfate, in the sandstone underlying the region. Those sandstones are Permian and Triassic in age, representing a time when much of the earth was arid. Those dry conditions allowed gypsum to crystallize in the sediments. Gypsum is much more soluble than limestone, and the slightly acidic waters of Burton help with that. Burton water has ten times the calcium, three times the bicarbonate, and 14 times the sulfate of Coors’ “Rocky Mountain Spring water” in Colorado. That certainly makes Coors’ Burton brewery product rather different from that made in Colorado. In fact, the addition of gypsum to beer is called “Burtonization.” This increases the hops flavor, but more important to history, sulfates act as preservatives in beer, enough so that Burton brews of pale ales could survive the long trip to British India, giving us the India Pale Ale style of beer. Not from India, but brewed with sulfates derived from gypsum in Britain’s rocks. That slight acidity in Burton’s water depends on the calcium and magnesium content, and also lends itself to extracting sugars from malted barley in the mashing process. Calcium and magnesium also help yeast to work its magic. Today, home brewers can buy “Burton Water Salts” to imitate the product from England. Truman, Hanbury, Buxton & Co., Black Eagle brewery, Derby Street, Burton-upon-Trent, in 1876,from University of LondonLess hoppy beers often originated in areas where the sulfate content of the water was low. Pilsen in the Czech Republic, home to pilsner beer, has almost no sulfate and only 7 parts per million calcium in its water, compared to around 300 for Burton. Pilsen is in an area of metamorphic rocks that don’t yield the typical hard-water-making elements.The presence of Carboniferous age limestones in Ireland make waters that are high in calcium and carbonate, but they lack the sulfate of northern England. Together with other differences, that makes the area around Dublin ideal for making a stout porter known today as Guinness. After water, it’s the soil that makes the most difference to beer. Hops can grow in a wide range of soils, even the decomposed granite we have here in Butte, but the thick, well-drained soils of Washington and Oregon, weathered from volcanic rocks, make those states the source of 70% of the hops grown in the United States. The surge of craft breweries in the United States has given rise to some interesting geological names for brews. Great Basin Brewing in Reno and Sparks, Nevada, has Ichthyosaur IPA, known as Icky, as well as Orogenesis, a Belgian-style amber ale. Socorro Springs, in New Mexico, brews Isopod Pale Ale and Obsidian Stout is available from Deschutes in Oregon. You can get Triceratops Double IPA at Ninkasi Brewing in Eugene, Oregon, and Pangaea Ale at Dogfish Head in Delaware. And even though it’s more chemical than geological, we shouldn’t leave out Atomic Ale’s Dysprosium Dunkelweizen, made in Richland, Washington. Dysprosium is a rare-earth element found in the phosphate mineral xenotime and other stranger minerals. San Andreas Brewing Company, near the fault in California, boasts Oktoberquake and Aftershock Wheat. And I’m undoubtedly prejudiced, because I’m the House Geologist at Quarry Brewing here in Butte, which probably has the best mineral collection in a brewery in the United States, but I think their collection of geological names for their beers is unexcelled: Shale Pale Ale, Galena Gold, Open Cab Copper, and Gneiss IPA, and seasonals including Albite, Basalt, Bauxite, Calcite, Epidote, Halite, Ironstone, Porphyry, Opal Oktoberfest, Schist Sour, Rhyolite Rye Pale Ale, Pyrite Pilsner, and more. Mia the bartender and I tried to come up with a fitting name for a 50-50 mix of basalt and gneiss. I wanted it to be charnockite, but we ended up calling it Mia’s Mixture. This week’s episode of Taste Radio features a captivating interview with veteran beverage executive with Joth Ricci, a veteran beverage executive Joth Ricci with one of the most diverse, interesting and impactful track records of anyone in the industry. Over a 17-year career, Ricci has held roles as president of Stumptown Coffee, president and CEO of Jones Soda and managing director with beverage investment and advisory firm First Beverage Group.
