Welcome to the latest episode of our podcast. Today on the podcast I have an interview with Chef Kenny Gilbert. Chef Kenny Gilbert is best known for his appearance on “Top Chef” Season seven, where he displayed a big personality and instantly became one of the most likable cheftestants to date. An award winning-chef and restaurateur, Gilbert's career spans over two decades and has graced him with opportunities to travel around the world and learn the authentic techniques and flavors of global cuisines. He has always had a love of cooking. Growing up in Cleveland, but with roots in the South, his father was an avid BBQ man with his own rubs and sauces while his mother was a fantastic home cook. An entrepreneur, Gilbert launched a product line of spices in 2014, and then added on sauces in 2022.  His restaurant Silkie's Chicken & Champagne Bar in Jacksonville, Florida showcases a global take on the iconic Southern chicken and biscuits.  In addition to Silkie's, Kenny joined Grove Bay Hospitality in the Fall of 2022, where he serves as the VP of Culinary, overseeing all culinary operations. In April of 2023 Kenny released his very first cookbook, Southern Cooking, Global Flavors from Rizzoli. A judge in Texas has ruled that women who experience pregnancy complications are temporarily exempt from the state's abortion bans. The ruling comes after a group of thirteen women and two doctors sued the state of Texas in March of this year, calling for a clarification of the law. However, the injunction is only temporary until the lawsuit is decided - and the state of Texas has appealed the ruling. Dr Emma Long, Associate Professor in American History and Politics at the University of East Anglia, joins Clare McDonnell to explain the significance of the ruling. Author and researcher Dr Julia Ebner has spent the last two years immersed in one of the darkest corners of the internet, the world of incels. She has been pretending to be an unhappily single, unemployed, male in his late 20s who is tired of feminism. This is part of her decade-long work going undercover investigating different extremist movements and how they pose a risk to democracy. Her new book, Going Mainstream, looks at the rapid spread of extremism into our mainstream social and political discourse. Chloe Matharu is an award-winning, singer songwriter and harpist. She has cultural roots in Scotland, Wales and the Punjab, and draws inspiration from her time in the Merchant Navy and the natural world as experienced at sea. Her debut album, Small Voyages, was selected for Celtic Music Radio's Album of the Year. At Celtic Connections she was awarded the revered Danny in February this year. She joins the programme live in the studio to talk about her music and to perform The Silkie of Sule Skerry. More than 60 women have made allegations of rape, sexual assault and sexual harassment against the US comedian and actor Bill Cosby. But only one woman, Andrea Constand, was able to gain a criminal conviction. In 2018, he was sent to prison for three to 10 years on three counts of aggravated indecent assault. At the time it was celebrated as a major win for the #MeToo movement. Less than three years later, he was freed when the Pennsylvania Supreme Court overturned his conviction on a legal technicality. When asked to appear as a living example, Gunny was forced out of his box. Gunny opened himself up to allow parts of himself to be touched that as a Marine would not have been otherwise.    Gunny provides us a chance to witness in real time that how we affect someone has ripple effects throughout our world. And you never know when you might run into one of those particular individuals. Be careful, you meet the same people on the way up as you do on the way down. Founder of Sliabh Liag Distillers, James Doherty, says the inspiration for the collection of Silkie whiskeys comes from memories of those early years in Donegal: “In the mornings, I would head down to the kitchen, where beside the stove, grandad's pipe would be sitting from the night before. Grandad was a wonderful man, tall, strong, hard-working, and generous, with a mischievous twinkle in his eye. Eleven-year-old me would tug on his pipe and I can viscerally remember the sweet tobacco, smoky and ashy aroma. It seemed to compliment the smell of the stove, the peat and my gran's baking. Although it's a morning moment, the whiskey is the taste of the night before”. Once he has this taste in his mind's eye, the sense of place for James is richer than the lighter Irish whiskey style prevalent today. His aim is to create a style that harks back to a richer era in Irish whiskey, pre-prohibition, and for which Donegal's distillers were famed. James continued: “I look for balance in the structure of that taste in the whiskeys available to me. One building block of Dark Silkie is intense sweetness - Grain Whiskey virgin oak provides a rounded sweetness, caramel toffee; it feels rich, luxurious, generous, and safe, and captures the innocence of that version of me. It also brings a degree of tannin to the whiskey. Another is smoky, ashy; triple distilled peated malt provides the pipe aromas, an earthy smoky note that we can get to play off the sweetness of the grain. Accents include aromatic dryness. To balance the intense sweet grain I choose the aromatic freshness of a double distilled single malt in sherry, more estery and zesty to cut into the sweetness in the final blend, all of which creates a maritime herbal quality that is almost salty”.
