Pendant ce temps, laver, sécher et effeuiller le persil avant de le hacher très finement. Peler, dégermer et hacher l'ail et les échalotes.  Lorsque votre beurre est suffisamment ramolli, le fouetter jusqu'à ce qu'il ait la consistance d'une crème. Y ajouter le persil, l'ail et les échalotes, puis mélanger énergiquement. Vous obtenez un beurre aillé et persillé. Afin que votre beurre parfumé se fige, le mettre 30 min au frais.  Place aux escargots. Les sortir de leur coquille et préchauffer votre four en position gril.  Vous munir des coquilles et enfoncer un peu de beurre à l'ail dans le fond de chacune d'elles. Remettre un escargot, puis terminer de remplir la coquille de beurre. Les poser escargots dans des caquelons adaptés et les enfourner. Les faire gratiner 5 min, juste le temps que le beurre soit frémissant. Notre série sur les objets du pouvoir fait escale aujourd'hui en Éthiopie. Durant plusieurs siècles, un objet a accompagné systématiquement les souverains du pays alors en déplacement avec les membres de la Cour : l'ombrelle. En quoi cet objet, qui sert d'abord à se protéger du soleil, est-il plus politique qu'il n'y paraît ?  Alula Pankhurst sélectionne deux ouvrages de sa bibliothèque personnelle. En feuilletant les pages du premier livre, l'historien tombe sur une photo de l'empereur Ménélik II. Le souverain, qui a régné sur l'Éthiopie de 1889 à 1913, se déplace à dos de mule, entouré de sa cour, et est protégé du soleil par une ombrelle, qu'un de ses sujets tient pour lui. Alula Pankhurst explique comment cet objet a permis aux souverains éthiopiens d'asseoir leur pouvoir : « L'ombrelle fait partie de tous les objets sacrés. Tous ces objets sont une façon pour la royauté d'exprimer leur pouvoir non seulement dans le contexte national, mais aussi lorsqu'il y a des ambassadeurs qui viennent de l'étranger, des voyageurs. Donc, ils les reçoivent dans le contexte où le fait qu'ils soient souvent à l'extérieur et au soleil, avec des ombrelles, tandis que les personnes qui viennent ne le sont pas, déjà ça créé une certaine relation de pouvoir. » Ahmed Hassen Omer, historien lui aussi, confirme, photo de Ménélik II à la main : l'ombrelle est un attribut royal qui distingue l'empereur de ses sujets : « Il n'y a pas de Cour royale en Éthiopie sans grand parapluie. Même s'il n'y a pas de soleil, on regarde le roi ou l'empereur avec son parapluie. S'il y a des cérémonies locales, c'est toujours le symbole du pouvoir. Lui, il est au milieu avec son grand parapluie. » Ahmed Hassen Omer fait aussi remarquer que la symbolique de l'ombrelle se retrouve dans l'iconographie de l'Église orthodoxe d'Éthiopie : « L'Église et le roi s'organisent pour diriger le pays. Donc, parapluie pour l'Église, parapluie pour le roi. » Dans sa bibliothèque, Alula Pankhurst confirme : « Les prêtres ont toujours des ombrelles, surtout lorsqu'ils sortent pour des processions. Et évidemment, c'est quelque chose qui démontre la différence entre eux et le reste non seulement du peuple, mais des nobles. » Haïlé Sélassié est le dernier à avoir utilisé l'ombrelle, jusqu'à sa chute en 1974.
