We Hit It Out Of The Park With New York Yankees MLB.com Beat Reporter, Bryan Hoch and Hoodoo Brown Barbeque's, Alan Stinson Bryan Hoch is the New York Yankees MLB.com beat reporter.  Covering the team on a daily basis has provided Bryan a chance to witness many great moments and seasons.  One of the greatest individual and season long accomplishments of recent memory was last year when New York Yankees slugger, Aaron Judge chased the American League's home run record which was held for 61 years by another Yankees great, Roger Maris who in 1961 had broken Babe Ruth's record of 60.  On October 4, 2022 Judge entered the record books as he hit home run number 62.  Hoch was there to witness this momentous moment and the other home runs leading up to it.  He documents it all in his new book, 62:  Aaron Judge, The New York Yankees, And The Pursuit Of Greatness.  The book details all of the home runs, but offers a much deeper look at baseball's history and many other players who are a part of it.  Bryan's impressions of the late New York Mets broadcaster, Bob Murphy and Back to the Future's, Doc Emmett Brown are a bonus not to be missed.   Alan Stinson is learning what it takes to be a top-notch pitmaster.  His training occurs at the extremely popular restaurant, Hoodoo Brown Barbeque where his brother, Tyler has earned the title of Sausage King.  We met some of the people from Hoodoo Brown at the Jeff Michner Foundation BBQ Benefit at Pig Beach and were eager to have them on the show.  Alan was presented as a perfect show guest since he played college baseball at Connecticut's, Albertus Magnus College.  We talked with Alan about baseball and barbecue, but one interesting fact we covered was that Alan is a vegetarian and has never tried any of the meats he is learning to cook.  Since taste is not a way he can tell if his barbecue is good, he must rely on other senses and Alan shares that. Pulitzer Prize Winning Author, Ira Berkow and Snap-O-Razzo Hot Dogs Creator, Ralph Perrazzo Ira Berkow is a sports reporter, columnist, and writer. He shared the 2001 Pulitzer Prize for National Reporting awarded to the staff of The New York Times for his article, "The Minority Quarterback", which was part of the series, How Race Is Lived in America.  He has written for Esquire, The New York Times Magazine, Art News, Seventeen, Chicago Magazine, The Chicago Tribune Magazine, National Strategic Forum Review, Reader's Digest, and Sports Illustrated, among others.  He is the author of 26 books and his latest is Baseball's Best Ever:  A Half Century of Covering Hall of Famers.  It is a collection of many of Ira's columns which are insightful and meaningful views of the lives and careers of some of the greatest who have played the game.  These player are so much more than what they are on the field and that is provided by Ira's wonderful writing. It's Memorial Day Weekend, which means it's time to fire up the grills! Here to provide some of the best BBQ tips and tricks are the pair of chefs behind the popular Pig Beach restaurant in Gowanus, Matt Abdoo and Shane McBride. They share some grilling advice, and recipes, in their new cookbook, Pig Beach BBQ Cookbook: Smoked, Grilled, Roasted, and Sauced.     WHERE'S THE MEAT BURGER (SMOKED PECAN, QUINOA, AND CHICKPEA PATTIES) Makes 5   As much as we are meat-centric, we do have to accommodate our customers who choose not to eat animal protein. After much trial and error, we came up with this mix, which has great flavor and takes to the regular Pig Beach fixin's just like our meat-based burgers do. If you choose not to smoke the pecans, you can either toast them on the stovetop in a heavy-bottomed pan over very low heat or roast, stirring occasionally, in a 300°F oven for about 6 minutes. However, we think that the smoke flavor elevates these meatless burgers in a most delicious way. Serve these as is or just as we do our regular Pig Beach Burger, with sauce and pickles or with a slice of cheese melted over the top while the patties grill. Another tasty mix is sliced tomatoes, butter lettuce, and our NYC White Sauce.   ½ cup pecan pieces 1 tablespoon plus ½ teaspoon kosher salt ⅓ cup uncooked quinoa 1 tablespoon vegetable oil 2 garlic cloves, minced 1 large red onion, finely diced 1 tablespoon tomato paste 2 teaspoons Dijon mustard 1½ teaspoons Worcestershire sauce ¾ teaspoon finely minced fresh thyme 1 cup finely chopped cooked or canned chickpeas 1½ teaspoons Pig Beach All-Purpose Barbecue Seasoning (see below) ¼ teaspoon ground black pepper   Using cherry wood, preheat your smoker to 250°F.  Line a small rimmed baking sheet with parchment paper. Spread the pecans in an even layer over the baking sheet and place the pan in the smoker. Smoke for 30 minutes or until nicely toasted and smoky. Remove from the smoker and set aside to cool.  When cool, using a sharp knife, chop the pecans into small pieces and set aside. Place 2 quarts water and 1 tablespoon of the salt in a large saucepan. Bring to a boil over high heat. Add the quinoa and cook, stirring occasionally, for about 10 minutes or just until the quinoa is tender. Remove from the heat. Pour the quinoa into a strainer and set aside to drain well and cool slightly. You need to remove as much water as possible. Spread the cooked quinoa in an even layer on a rimmed baking sheet and set aside to cool completely, then cover and refrigerate until ready to use. Heat the oil in a small heavy-bottomed saucepan over medium heat. When warm, add the garlic and cook, stirring, for about 2 minutes or until light golden brown and very aromatic. Add the onion and cook, stirring occasionally, for about 20 minutes or until well caramelized. Add the tomato paste, mustard, Worcestershire, and thyme and cook, stirring occasionally, for another 5 minutes. Line a small rimmed baking sheet with parchment paper. Scrape the onion mixture onto the prepared baking sheet and set aside to cool, then transfer to a large bowl. Remove the quinoa from the refrigerator and add it to the onion mixture along with the pecans. Add the chickpeas and rib rub and season with the remaining ½ teaspoon salt and the pepper. Using your hands, blend the mixture well. Cover and refrigerate for at least 1 hour to allow the flavors to blend and to ensure the mixture will hold together when formed into patties. Using your hands, form the chilled chickpea mixture into five 4-ounce patties. (At this point, if not cooking the patties immediately, you can place them on a parchment-lined plate or pan, cover, and refrigerate until ready to use, or place in the freezer until frozen, then transfer to a resealable freezer bag and freeze for up to 3 months. Defrost frozen patties before cooking.) Clean and oil the grill grate and preheat the grill to high. Grill the chickpea patties for 3 minutes, then flip and grill on the second side for 2 minutes. Serve immediately.   PIG BEACH ALL-PURPOSE BARBECUE SEASONING Makes about 1 cup   This is our basic seasoning, which can be used on almost anything. It is terrific on proteins but equally delicious on grilled or roasted vegetables.   ¼ cup granulated sugar ¼ cup sweet paprika 3 tablespoons dark brown sugar 2½ tablespoons coarse salt 1 tablespoon ground black pepper 1 tablespoon granulated garlic 1 tablespoon granulated onion 2 teaspoons Hatch red chile powder (see BBQ Bits & Pieces) ½ teaspoon dried oregano ½ teaspoon ground cumin ¼ teaspoon dried thyme ⅛ teaspoon ground fennel seed   Combine the granulated sugar, paprika, brown sugar, salt, pepper, garlic, onion, chile powder, oregano, cumin, thyme, and fennel in a medium bowl and stir to combine completely. Transfer to a spice grinder or food processor and process to a coarse blend. Transfer to a glass container, cover, and store in a cool, dark spot for up to 6 weeks. BBQ Bits & Pieces: Hatch chile powder is an earthy, slightly spicy, and deeply flavored seasoning made from chiles grown in the Hatch Valley of New Mexico. It comes in both red and green varieties and is available at specialty food stores or online. At Pig Beach, we use only the red variety. Episode 129 is overflowing with guests as we are joined by Michael Massiglia known as Messy Mike, owner of Messy Mike's Barbecue & Catering, Shane McBride, and Matt Abdoo from Pig Beach BBQ talking about an important fundraiser,  and David Krell, noted baseball author. Michael Massiglia aka Messy Mike was an electrician for many years and, by his own admission, he was an ok one, but not great and certainly not happy in his chosen career field.  The story Messy Mike tells of how barbecue became his passion and lead him to his new career as the owner of a food truck/catering company called Messy Mike's Barbecue & Catering will make you question whether you heard things correctly.  It amazed and intrigued us as well, and yes you heard him right.  He did take his wedding money and purchased a very expensive smoker without having any idea what he was doing.  From there the story gets crazier.  His food truck is located at 161 Rockingham Road, Derry, NH, and is open from Thursday to Sunday during the hours of 11:00 am to 3:00 pm or until they are sold out.  Tell Messy Mike the folks at Baseball and BBQ sent you. A foundation was created in Jeff's honor to keep his memory alive. The organization embraces the things he loved best: family, friends, and great food. David Krell is an author and baseball historian.  His latest work is 1962:  Baseball and America in the Time of JFK.  It is a fascinating look at a year when two new baseball franchises, the New York Mets and the Houston Colt .45s had their first seasons and NASA was launching men into space.  It was an extraordinary year in baseball, culture, and politics.  According to David, the book originally began with the idea of exploring the two new baseball teams, and it morphed into an amazing look at history which included baseball, but also encompassed so much more.  David did an extreme amount of research to give us a feel for what life in America was like in 1962.  As we like to say, he did the "heavy lifting" which benefits us immensely and we are grateful he did.  David made us feel as if we had taken a time machine back to 1962 as we enjoyed every month of the year from cover to cover. Matt is the chef/partner of the critically-acclaimed barbecue restaurant Pig Beach located in Gowanus, Brooklyn. Matt first earned his BBQ chops during his time working on America’s highly competitive barbecue teams, Salty Rinse, receiving 2nd place medal for Whole Hog in 2015 and 1st Place for Best Sauce at the annual Memphis in May World Championship. Prior to opening his own restaurants, Matt was the Chef de Cuisine of Del Posto and during is tenure, the restaurant received a coveted four-star review from the New York Times, and the Relais & Chateaux distinction. Raised in the small upstate New York town of New Hartford in an extremely tight-knit Italian-American-Lebanese family where he began his culinary training at a very young age by rolling meatballs and house-made pasta with his nona. Today, Matt is a frequent guest chef on The Today Show and has appeared on NBC’s The Chew and DirecTV’s Fantasty Zone.
