Dr. Bill Schindler is an experimental archaeologist, anthropologist, restauranteur, hunter, butcher, father, husband…. And Renaissance man when it comes to early man. Author of ‘Eat Like a Human', Bill and I dive right into a conversation about the origins of homo sapiens and how technology and morphology shaped our modern form. We talk about hunting and the consumption of meat vs animal and how butchery evolves alongside humans. Bill owns a restaurant, Modern Stoneage Kitchen, and we take a sidebar conversation to explore entrepreneurship, food safety, and more in relation to getting healthy food to people. In episode seven of The Springfield Three, we dive into questions that remain. Because, really, there are so many questions. First and maybe most importantly, why and who would want to do this to Stacy, Suzie, and Sherrill? How did the perpetrator manage to get three healthy women out of the house with very little, if no, sign of struggle? How did three women just disappear? I'll talk with local law enforcement and journalists to go over different scenarios and try to uncover the questions that remain. Do you have information on the Springfield Three? On episode six of the Springfield Three we uncover what went wrong in the investigation. To be perfectly clear, there are a lot of folks in Springfield's law enforcement that want nothing more than to solve this case. But after a year of research, it seems to me that just about everyone points to one key person who could have possibly failed this case. I speak with him on this episode. In episode five of The Springfield Three, we look at some of the potential suspects that emerge in this case. We talk about Steve Garrison, who is serving 40 years in prison for raping, sodomizing, and terrorizing a female college student in Springfield, Missouri in the summer of 1993, just a year after the three women went missing. There's Larry DeWayne Hall, a serial killer and Civil War buff who traveled to the area often. Also, Gerald Carnahan, who murdered beauty-queen Jackie Johns from Nixa, Missouri—just a few minutes outside of Springfield. And finally, there's Robert Craig Cox, a convicted murderer who claims to know exactly where the three women are buried—but won't reveal this until his own mother dies. In episode four of the Springfield Three, we start to delve into the leading theories that emerge. We'll talk about a group of men who were arrested for stealing gold fillings out of corpses' mouths in a local cemetery—one of whom was dating Suzie. We'll talk about a boy who tells the haunting story of seeing the women in what locals called “The Girl Scout Camp.” It's a story that would haunt him for the rest of his life. We'll talk about the van—an infamous piece of information in this case. And we'll talk about the theory that the women are buried underneath a parking lot, one that still continues to ripple throughout the town nearly 30 years later. In Episode 44, Brandon introduces "The Finisher", a new tool he's discovered for pithing ducks (rather than slitting their necks) which allows for a more attractive presentation and preserves the blood, within the animal, for such dishes as Duck a la Press. Brandon and Lauren discuss the struggle that exists between humane killing and efficiency, and question whether pithing or neck slitting is the more humane method of poultry slaughter. Other topics include: making Duck a la Presse; how poultry plumage acts as a veil for an animal, but simultaneously reveals its nature and reality; how commodified forms of meat, as currently sold in supermarkets, allow us to forget that we are a burden to the earth; and how to preserve meat in its own fat in the form of confit and rillettes. Finally, Lauren discusses her maiden venture into making hand soap from lard and her new Keto diet. This week, I talk to Rashel Harris from Texas, USA. She has been cheese making for over six years using the milk from her own Jersey cow and has made many different kinds of cheese over the years. In fact, it was Rashel's 10 part YouTube series that I used to better understand how to cloth band a cheddar! How lucky was I when she reached out to me whereby I asked her on the show. Here is a picture of Rashel and a link to the start of her blog series of cheese making posts below. Want to learn how to make delicious cheeses in your own kitchen? It’s easier than you think. Our guest this week is radical natural cheesemaker David Asher, author of The Art of Natural Cheesemaking: Using Traditional, Non-Industrial Methods and Raw Ingredients to Make the World’s Best Cheeses. During the podcast we discuss: The difference between […]
David Asher is an organic farmer, farmstead cheese maker and cheese educator based on the gulf islands of British Columbia, Canada. A guerrilla cheesemaker, David does not make cheese according to standard industrial philosophies - he explores traditionally cultured, non-corporate methods of cheesemaking. David offers cheese outreach to communities near and far with the Black Sheep School of Cheesemaking. Through workshops in partnership with food-sovereignty-minded organizations, he shares his distinct cheesemaking style. His workshops teach a cheesemaking method that is natural, DIY, and well suited to the home kitchen or artisanal production. He is the author of The Art of Natural Cheesemaking. David talks with Devon about raw milk, kefir cultures, and how diversity makes cheese and food systems resilient. See acast.com/privacy for privacy and opt-out information.
Fuhmentaboudit is getting cheesy this week as author and natural cheesemaker David Asher is on the line with Chris and Mary. Talking about what constitutes natural cheesemaking as well as other items that David regularly ferments, he explains that a popular item he produces is kefir: a traditional yogurt culture from Central Asia. Conversation delves into rennet and the various types that are available to the aspiring cheesemakers today and many more details from David’s new book, “The Art of Natural Cheesemaking: Using Traditional, Non-Industrial Methods and Raw Ingredients to Make the World’s Best Cheeses!” Tune in for an informative show! “My favorite is chevre, a straight up fresh goat cheese… it’s remarkably tasty for a fresh cheese only two days old and really, really easy to make.” [33:45] –David Asher on Fuhmentaboudit
Most DIY cheesemaking books are hard to follow, complicated, and confusing, and call for the use of packaged freeze-dried cultures, chemical additives, and expensive cheesemaking equipment. This week on Cutting the Curd, host Diane Stemple is in studio with David Asher, author of “The Art of Natural Cheesemaking: Using Traditional, Non-Industrial Methods and Raw Ingredients to Make the World’s Best Cheeses,” who seeks to influence cheesemakers to adopt more natural, sustainable practices. Preaching a traditional, but increasingly countercultural, way of making cheese―one that is natural and intuitive, grounded in ecological principles and biological science―Diane goes behind the scenes of the book and uncovers David’s path to natural cheesemaking. This program was brought to you by the Wisconsin Milk Marketing Board. “I believe that there’s a healthy community of microbes out there that can help cheesemakers practice a very safe, traditional cheese making.” [18:10] “I will not necessarily choose certified organic cheese over not certified organic cheese. The organic regulations really just apply to the production of milk rather than the production of the cheese.” [24:25] –David Asher on Cutting the Curd
