Ball Technical Services specialist and culture research manager, Dr. Nathan Jahnke, joins Tech On Demand host Bill Calkins to share research-based best practices for rehydrating unrooted cuttings before sticking.   Cuttings can (and will) lose water at multiple points in the supply chain—arriving at greenhouses dehydrated by as much as 20%. As soon as harvest occurs, dehydration begins and although offshore farms have greatly improved harvest and handling processes in recent years, your young plants go through a lot before they land on your benches, ready to grow. Wilted cuttings can negatively impact production from the earliest stages, resulting in shrink and losses.   Dr. Jahnke walks growers through potential dehydration points in the supply chain and the challenges that result from dehydrated cuttings before explaining why water loss occurs and some of the ways farms are working to improve cutting hydration and handling. Then he moves quickly into ways growers can rehydrate cuttings before sticking, from good (misting) to better (dipping) to best (fogging) practices. Potatoes with wilted greens and anchovy cream: Cook time: 20 minutes Prep time: 30 minutes Serves: 6 1 kg little farm potatoes, washed 10 cloves garlic 300 ml milk 6 anchovy fillets 2 tsp Dijion mustard 2 tbsp cider vinegar 150 ml olive oil 200 gm winter greens like kale, swiss chard, spinach and wild rocket 2 tbsp sunflower oil Salt Place the potatoes into a pot and cover well with cold water, season with salt and bring to the boil, turn down to a simmer and cook until the potatoes are just undercooked. Approx 12-15 minutes. Turn the water off and allow the potatoes to sit in the water for 5 minutes before draining. For the dressing, place the milk into a small pot along with the garlic and anchovy fillets. Bring to a simmer and cook until the garlic is soft (around 10 minutes) turn off and pour mix into a blender and allow to cool for a couple of minutes. Add in the dijion mustard and cider vinegar. Carefully turn the blender on and blitz, slowly add in the oil and check the seasoning. To serve, heat a cast iron pan until hot. Place the winter greens into the pan along with a tbsp of water and a pinch of salt. Sauté quickly until the leaves just start to wilt. Mix through the potatoes and drizzle over the dressing. Dr. Julie Guthman is a Professor of Social Sciences at the University of California, Santa Cruz. Her publications include four books and over forty articles in peer-reviewed professional journals. In 2017 and 2018, Dr. Guthman received fellowships from the John Simon Guggenheim Foundation and the Radcliffe Institute for Advanced Study. Is there another sandwich that rides the line of great/gross like the BLT? Throw these three ingredients together with care and precision and you've got a masterpiece. Fresh, hot bacon, crisp lettuce, ripe, thin-sliced tomato: boom. Epic. Ever bought one at a diner or somewhere where the effort put into this sandwich was subpar at best? Wilted lettuce, maybe, or a too fat slimy tomato? Ugh, no - it's the worst sandwich ever. Not even the bacon can save it. Not enough Mayo or too much? Now you've got a dry bread lettuce disaster or a mushy tomato custard. I believe the only way to go about it is at home. I'm sure you can go to some fancy lunch spot and pay $20 and you'll get a decent BLT but the cost sinks the enjoyment returns. Home is best, with a fresh loaf of sourdough that you slice yourself. It should take about 45 minutes to make, as lightly toasting the buttered bread on the stove can take some time and care. Romaine hearts are nice. Buttered lettuce from TJ's also works. Bacon is crispy, just to the left of burnt. Tomato. This is the secret…. THIN-SLICED heirloom. Or a roma will work. If you slice to thick, you got too much skin in your bite, plus it makes your sandwich fall apart. You want the taste of the tomato juice more than the actual texture of the tomato. Mayo? In this episode, Ted Stryker welcomes Paris Jackson to the Tuna on Toast Studio. Paris just released a new song called "Lighthouse". Paris recorded the song in December of 2021 with Butch Walker producing and Mike McCready from Pearl Jam on guitar. Paris and Butch had been talking about working with eachother for years, it finally came to fruition on "lighthouse" as well has future songs yet to be released. Paris released a solo album in 2020 titled Wilted which was produced by Andy Hull of Manchester Orchestra. Paris talks about how great that experience was and what a good human Andy is. When discussing her music, she says at the end of the day, all her songs are folk. Paris tells Stryker she started playing guitar at 13 but doesn't consider herself to be a guitar player.   Paris Jackson talks about how singing "Surrender" with the band Cheap Trick and playing a set with her own band at Boston Calling was one of the best days of her life.   Paris also tells Stryker about playing with The Struts and botching their lyrics but still having a blast.     Stryker and Paris chat about being so under the microscope and not having a chance to stumble without it being super magnified.  Stryker asks Paris about music execs that try to get her to perform more under the pop umbrella than a rock or folk style.  Paris tells Stryker about the music she grew up listening to from Motley Crue to Simon and Garfunkle and Snoop and Dre. Stryker asks Paris what is success to her when it comes to her music career. Paris tells Stryker how the band Radiohead and their music helped her through some very dark times.  Paris mentions that she'd love to work with Conor Oberst, Cage the Elephant, Dave Grohl and Margot & the Nuclear So and So's. Paris tells Stryker she doesn't watch too much TV and really loves gore and to be scared! Paris said the only person that can really scare her is her brother Prince Jackson.
