What does family mean to you? For the folks on this week's show, when it comes to food, family means everything. NOCCA Culinary Arts student and Chopped Junior champion Retiba Hagazzi is a perfect example of that. The bright, ambitious teenager learned how to love people through food from her father, Khalid. They share that love with the world every time their food truck, Sittoo's Kitchen pulls up. They join us in the studio to share their story. Jarred Zeringue of Wayne Jacob's Smokehouse perpetuates generational old food love at the LaPlace landmark. When the Vacherie-born chef acquired the business in 2016, he made sure to keep the Jacob's family recipes authentic, in part because of the vital role they played in his own family's food traditions. We talk with him about the smokehouse and his new book, Southern and Smoked: Cajun Cooking through the Seasons. Finally, we speak with keepers of the Poor Boy flame, John and his son Jason Gendusa. The Gendusa family bakery has been inextricably tied to that famous New Orleans sandwich since 1929. We're celebrating their bakery's centennial by hearing the story of how it all began. Born in 1983, Christian Petroni grew up in an Italian family in Bronx, New York. He told Food Network in a 2018 interview that he spent "countless time in the kitchen learning to make Italian feasts" as a kid and he knew he wanted to be part of the restaurant industry from a young age. By 2013, Petroni had opened up the first of what would become five uber-successful restaurants in New York and Connecticut under the name Fortina, in the tiny but affluent hamlet of Armonk, New York. But prior to that, he had helmed several popular kitchens and partnered with three other New York chefs to open Cooked & Co., a restaurant in well-heeled Scarsdale, New York Christian Petroni is a burgeoning celebrity chef whom you probably know about even if you don't realize you do. That's because Petroni has been a presence on the Food Network for years. In 2016, he appeared as a judge on Chopped Junior. Petroni has also appeared as a judge on Chopped and Beat Bobby Flay, among other series. Additionally, he has competed on Chopped and Food Network Star, which he won in 2018. In this episode, Christian and I got into a bunch of different topics like old school 90's pop culture and we talked about Chef's culture, Chef's life. We also talked about what got him into the food industry and how he left the comfort zone of being a restaurateur and going out on his own and leaning into himself and trusting himself into the journey. “Elisabeth Watkins is 18 years old. She is the Founder of Farm Girl Chef and she won Chopped Junior on Food Network when she was a freshman in high school!”Lori Taylor (0:48 - 0:55) Elisabeth Watkins from Farm Girl Chef. Elisabeth Watkins is only 18, but she has already accomplished so much. She won Chopped Junior, a reality-based cooking television game show on the Food Network when she was a freshman in high school. Elisabeth has won numerous awards, including the Youth in Action: Healthy Living 4-H. She is a mainstay on live TV in the Sacramento area, appearing over 50 times. She is also the Founder of Farm Girl Chef, a blog that works to reconnect consumers to where their food comes from. “The mission of Farm Girl Chef is to reconnect consumers to where their food comes from and how its produced.” - Elisabeth Watkins (6:08 - 6:14) Having grown up on a farm in Linden, California, Elisabeth is intimately familiar with the diversity of agriculture in the state. She grew up all around specialty produce commodities like walnuts, almonds, cherries, peaches, and she naturally grew an inclination to start cooking with a wide variety of fresh-grown ingredients. Now, Elisabeth has been able to take her passion for cooking with locally grown produce and turn it into a communications business. She teaches consumers about food grown in California through appearances on local television, radio, and through her blog. Farm Girl Chef's mission. Growing up, Elisabeth was surrounded by farmers. Her family is full of farmers, and all her neighbors are farmers as well. Needless to say, she has witnessed first-hand the amount of effort farmers put it to make sure that our food is safe for consumption and of the highest quality. She also knows that the farmers don't have the time to educate the consumers about the benefits of buying locally grown produce. For that reason, Elisabeth Founded Farm Girl Chef to reconnect consumers to where their food comes from and how its produced. She also wants to inspire people to get back in the kitchen and cook with fresh ingredients. Elisabeth's favorite produce items. When she's on TV in Sacramento, or when she's posting a recipe on her blog, Elisabeth focuses on ingredients that are in season. Also, the more unusual or under-the-radar the produce item, the better. For example, California used to grow a lot of asparagus, but due to various reasons, now there's only one grower left in the state. So, Elisabeth has been trying to do her part to promote asparagus. Besides in-season and under-the-radar produce items, Elisabeth has a thing for brussel-sprouts. She's also a fan of eggplants, and she has been known to cook up some delicious eggplant lasagna from time to time. “I want to inspire people to get back in the kitchen and cook with fresh ingredients.” - Elisabeth Watkins (6:48 - 6:53) If you're interested in learning more about produce that is grown in California, as well as across America, be sure to check out Farm Girl Chef. You will also learn about Elisabeth's farm background, and find some delicious recipes that are sure to be a hit at your next party. Ted Allen, television personality and host of Food Network’s “Chopped” talks with Emmy Winner Charlotte Robinson host of OUTTAKE VOICES™ about Dining Out For Life the HIV/AIDS fundraiser. Dining Out For Life hosted by Subaru® takes place in 60 cities across North America on Thursday, April 25th. The event was conceived 28 years ago in Philadelphia and the concept is quite simple. More than 3,000 participating restaurants donate a generous percentage of that day’s proceeds to support service providers in their region to fund care, prevention, education, testing, counseling and other essential HIV/AIDS services. This year over 3,000 participating restaurants, thousands of volunteers and an expected 300,000+ diners will be served to raise over $4 million for people living with HIV/AIDS in the United States and Canada. We talked to Ted about being a spokesperson for this fabulous event and his spin on our LGBTQ issues. When asked what he would like Dining Out For Life to accomplish this year Allen stated, “Well I think the model has long been proven, it raises a lot of money. What I think we would like to accomplish this year is to raise more money than we ever had before and we are talking about millions and millions of dollars that you are helping to raise that stays in your community. The money that is raised in Houston is spent in Houston helping your own neighbors, people down the block and I think that’s another thing that people feel really good about with this technique of fundraising.” Emmy and James Beard Award winner Ted Allen is the host of “Chopped” and “Chopped Junior” the Food Network’s hit primetime culinary competition shows and the author of two cookbooks, “In My Kitchen: 100 Recipes and Discoveries for Passionate Cooks” and “The Food You Want to Eat: 100 Smart, Simple Recipes" both published by Clarkson-Potter. Previously he was the food and wine specialist on the Emmy-winning Bravo series “Queer Eye” and a regular judge on both Food Network's “Iron Chef America” and Bravo’s “Top Chef.” This is the twelfth year he has served as a volunteer celebrity spokesperson for Dining Out For Life along with actor/activist Pam Grier (Foxy Brown, Jackie Brown) & HIV positive designer Mondo Guerra, winner of Project Runway All-Stars and host of the new streaming series “Runway Remake”. Ted lives in Brooklyn with his husband Barry Rice. For More Info: diningoutforlife.com LISTEN: 450+ LGBTQ Chats @OUTTAKE VOICES
When the Food Network launched in 1993, the pastime of binge watching cooking shows didn t exist, and chefs weren t celebrities. Today, with shows like Chopped and Iron Chef America airing on primetime, the role of the Food Network has transformed. On this week s show, we speak with one of the network s first stars, David Rosengarten. Since he was "discovered" by the Food Network many years ago, David has enjoyed a remarkable career enlightening America about food. Then, we speak with the latest Food Network stars, husband and wife and Louisiana born Chefs Cody and Samantha Carroll. The culinary couple bring audiences to South Louisiana with their new show, Cajun Aces. And we meet with one of the youngest stars of food TV, Kaj Hecht, the recent winner of Chopped Junior. To get an understanding of how the 10 year old New Orleans local came to be a contestant on the program, we invited Kaj and his father Michael into our studio. No stranger to television, we are excited to talk to a culinary kid wizard Chef Elliott Wakefield who is appearing on the January 29th episode of Stove Tots a kids cooking competition on FYI Television Network with his mother. Hailing from McConnellsburg, Pennsylvania; Chef Elliott has been cooking since he was 3 years old. He also has appeared on Food Network show Chopped Junior episode "The Curd is the Word" with judges Billy Gardell, Chef Marcela Valladolid, and Geoffrey Zakarian. Chef Elliott was sous chef to Chef Justin Rexroad at Culinary Fight Club's Boston event and then went on to win Amazing Culinary Fight Club Pantry Race - Kids Edition in Chicago this past September 2017. Before outgrowing his peanut allergy, Elliott's food exploration was limited. To fill the void, his mother, Robin Hann Wakefield who also appears on Stove Tots with Chef Elliott and runs Facebook page The Food Hag, pulled him into the kitchen to educate him on the complex and wonderful ways he could enjoy the world at the same time being aware of his limitations regarding the allergy. At 8 years old Elliott out grew the allergy and has been making up for lost time. Elliott loves Asian fusion! His favorite hobby is traveling the country looking for uniquely tweaked dishes that push all boundaries of the culinary rules. Elliott transforms his travel experiences into his kitchen to create unique spins on dishes of his own and shares on all of this on his Facebook page Elliott Eats. On this week s show, we look at the role food television plays in the lives of several chefs here in New Orleans. We begin with one of the youngest stars of food TV, Kaj Hecht, the recent winner of Chopped Junior. To get an understanding of how the 10 year old New Orleans local came to be a contestant on the program, we invited Kaj and his father Michael into our studio. Next, we visit with Michael Gulotta, a chef who s well known for boldly taking on new challenges. The executive chef at MoPho and Maypop, Michael is now beginning a new endeavor and this time, to a much larger audience as a contestant on Iron Chef Gauntlet. Chefs Aar n S nchez and John Besh first became friends in a highly competitive atmosphere on the set of The Next Iron Chef. Now close pals and co owners of the modern Mexican eatery, Johnny S nchez, Aaron and John reflect back on their early days on food TV. Over the past year, we ve had the great fortune of chronicling Chef Isaac Toups experiences on Top Chef. Now a year after his stint on the show, we spoke with Isaac about his celebrity transition.
