In the early morning hours of July 4, 1925, the crowd at The Pickwick Club in Boston were celebrating the holiday at the “Before-the-Fourth” dance when roughly fifty couples took to the dance floor for one of the final songs of the night. With so much revelry and vibrations from the dancing, no one noticed the subtle sounds distressed infrastructure makes just before a tragedy, and even if they had, there likely wasn't enough time to avoid the disaster. Around 3:30 am, the ceiling above them collapsed, as the entire five-story building came down on top of them, killing forty-four people and injuring countless more. At the time, the Pickwick Club disaster was the deadliest building collapse and one of the worst accidents in in the city's history. It was followed by large investigation, during which the disaster was temporarily blamed on the Charleston, and a sensational trial aimed at punishing those responsible. However, in the one hundred years since the disaster, the tragedy at the Pickwick Club has been largely forgotten, overshadowed by larger and more devastating accidents. Es gibt in der Welt des Weins eine merkwürdige Versuchung. Der Wein wird zum Hauptdarsteller. Der Gast zur Statisterie. Der Beruf des Sommeliers wird missverstanden. Bei Max Johne entsteht dieser Eindruck nicht, denn er lebt einen aktiven Gegentrend. Was das heißt? Zu allererst versucht er nicht Komplexität für Bedeutung zu halten. Oftmals weiß ein Gast durch den Weinkellner mehr über die Hangneigung eines Weinbergs als über den Menschen, der ihm den Wein eingeschenkt hat. Max zeigt sich. Er ist für den Gast da und dann sekundär für die Weine. Und Max ist nicht nur greifbar, sondern er sieht seine Gäste. Von außen betrachtet scheint er sich um Flaschen zu drehen. Um Etiketten. Um Regionen, Rebsorten und Jahrgänge. Tatsächlich sieht er einen großen Teil seiner Arbeit in etwas anderem. Das ist das lesen der Menschen und nicht der Weine. Der Unterschied zwischen Information und Erfahrung. Denn ein Wein ist zunächst nur eine Flüssigkeit. Er wird erst interessant, wenn jemand auf ihn reagiert, ihn interpretiert, ihn inszeniert und ihn für den perfekten Zeitpunkt präpariert. Max Johne scheint genau für diese Zwischenelemente ein besonderes Gespür entwickelt zu haben. Und er hat sein Handwerk – und das ist der zweite sehr ungewöhnliche Punkt – von der Pike auf gelernt und ist die einzelnen möglichen Stationen bewusst durchlaufen. Statt direkt nach der Ausbildung eine Chefposition anzustreben, wollte er lernen. Alles. Von den Besten. Gerade in einem Beruf, in dem Positionen jung vergeben werden und Eitelkeit manchmal schneller befördert wird als Erfahrung, braucht es viel Charakterfestigkeit, warten und lernen zu können. Und das, was Max Johne nun mit zwanzig Jahren Berufserfahrung präsentiert, ist das Ergebnis davon. Perfekter Service als Stilelement. Wein als Handwerkzeug. Weinberatung als Bindeglied für ein perfektes Restaurant-Wein-Erlebnis. Das ist das Fundament. Und darauf erlebt man ganz viel Max Johne – als Persönlichkeit, als Mensch. Nicht darstellend, sondern begleitend. Nicht vorne, sondern genau da, wo es gebraucht wird.

Beitz Recognition Symposium: 50-Plus Years of Dairy Science Research.” The guests on this episode, all former graduate students of Dr. Beitz, were speakers at the event. He talks about studies on low calcium diets, investigating the metabolic pathways of vitamin D, and low phosphorus diets. Dr. Beitz also studied the impact of vitamin D on meat tenderness. (22:37)Dr. Nelson's presentation detailed the advances in understanding bovine immunology from the work of Don Beitz and his colleagues. From the milk fever vitamin D research, it was also discovered that vitamin D had an impact on the immune system, which led to further work with vitamin A and immunity as well. Dr. Beitz also had students investigate calf growth rate influence on immune system development as well as Johne's disease. The transition period was of interest to Dr. Beitz, which is reflected not only in his work in hypocalcemia, but also the lipid and carbohydrate metabolism of ketosis. Dr. Beitz and his colleague, Dr. Young, developed a successful ketosis model using a slight feed restriction and supplementing a ketone body precursor, which was used to investigate ketosis and fatty liver.
