This weeks guest is Denis Hernandez who joins us for an in person interview. Originally born in Woodstock, Ontario, Denis is of El Salvadorian background where cooking, eating and sharing food plays a prominent role in life. Denis's mother and aunts are a big influence on his passion for the industry. Denis has been in the culinary filed for the past 16 years. Denis started his journey in the Industry when he attended the Niagara Culinary Institute after high school. It was during that time that Denis began his apprenticeship at Peller Estates at Niagara On The Lake which really opened up his mind to the creativity of the kitchen. Over the last decade, Denis has moved around Ontario and has had the opportunity of working with some of the most talented chefs in the province. In Denis's career he has been the recipient of many accolades and rewards and has given his time and effort back to the community. James Russell made headlines recently for staging a sit-in at Niagara-on-the-Lake. He chained himself to a plaque at a Black cemetery, vowing not to leave until the town agreed to unearth and restore the Negro Burial Ground's long-buried headstones. And while the story has made headlines, hearing James describe the history of what happened here is deeply moving. Headstones were placed at the site for those who died, but 30 years ago those headstones mysteriously disappeared - covered over and buried so the town could “cut the grass”. Russell wants more than a simple memorial on site. He feels people should deserve to know the names of people buried there. The Ghosts of Fort George, Niagara-on-the-Lake, Ontario - During the War of 1812, Fort George served as the headquarters for the Centre Division of the British Army. These forces included British regulars, local militia, aboriginal warriors, and Runchey's corps of freed slaves. Major General Sir Isaac Brock, "the saviour of Upper Canada" served here until his death at the Battle of Queenston Heights in October, 1812. Brock and his aide-de-camp John Macdonell were initially buried within the fort. Fort George was destroyed by American artillery fire and captured during the Battle of Fort George in May 1813. The U.S. forces used the fort as a base to invade the rest of Upper Canada, however, they were repulsed at the Battles of Stoney Creek and Beaver Dams. After a seven month occupation, the fort was retaken in December and remained in British hands for the remainder of the war. After the war, the fort was partially rebuilt, and by the 1820's it was falling into ruins. It's also haunted by Capt Colin Swayze who was killed there one night hiding from American soldiers. He was there for one last rendezvous with his lady love. It's a charming inn with delicious food and good drinks. Across the border, in Rochester, NY there is the White Lady's Castle. Yes, a lady in white. We visited there but we didn't see her. There were a lot of people there doing photo shoots (a beautiful spot for that). Legend is she usually appears to nubile young things, which we aren't, or couples who are canoodling, which we weren't. Jeff and I did this while on vacation. We didn't know anything about the Olde Angel Inn being haunted until we got there and found something on the table about it. So vacation turned into something of a field trip. These forces included British regulars, local militia, aboriginal warriors, and Runchey's corps of freed slaves. Major General Sir Isaac Brock, "the saviour of Upper Canada" served here until his death at the Battle of Queenston Heights in October, 1812. Brock and his aide-de-camp John Macdonell were initially buried within the fort. Fort George was destroyed by American artillery fire and captured during the Battle of Fort George in May 1813. The U.S. forces used the fort as a base to invade the rest of Upper Canada, however, they were repulsed at the Battles of Stoney Creek and Beaver Dams. After a seven month occupation, the fort was retaken in December and remained in British hands for the remainder of the war. After the war, the fort was partially rebuilt, and by the 1820's it was falling into ruins. It was finally abandoned in favour of a more strategic installation at Fort Mississauga and a more protected one at Butler's Barracks. She is the author of twenty-four books, ranging from film criticism to fiction, sports, true crime, Latin American studies and biography. Her early work was about the cinema. Her “Women and Their Sexuality in the New Film” published in 1974, was a landmark work in feminist studies. Larry McMurtry pronounced it “brilliant” in his “Washington Post” review. Her study of the image of women in film was followed by the companion study, “Big Bad Wolves: Masculinity in the American Cinema.” Her book about “The Battle of Algiers,” written in 1972, has been quoted widely in connection with the events of 9/11. In 1972, she was awarded a prize by the Mainichi Shimbun newspaper organization in Japan. This led her to write five books about Japan, including “The Waves at Genji's Door: Japan through Its Cinema,” 1976. Her 1981 novel, “Natural Tendencies,” is set in Japan. More recently, she has written two books about Japanese film for the British Film Institute, “Seven Samurai” (2002) and “In the Realm of the Senses” (2004). She is also a biographer. Both “Kay Boyle: Author of Herself” (1994) and “Hellman and Hammett” (1996) were “New York Times” Notable Books of the year. “Hellman and Hammett” was also a finalist for the “Los Angeles Times” book prize. She has written for a variety of publications such as the “New York Times,” the “Los Angeles Times,” and the “Philadelphia Inquirer, including the “Baltimore Sun” where she is a frequent contributor. Gareth Berg is currently the Restaurant Coordinator at the Sleeman Centre in Guelph Ontario. This public facility is owned by the City of Guelph and is home to the Guelph Storm of the Ontario Hockey League. In addition to hockey, this 5000+ seat venue also hosts concerts and conventions. Gareth oversees the 240 seat restaurant, 5 bars, 3 kitchens, 32 private suites and 55+ staff. Additionally, Gareth also teaches at Conestoga College in the Culinary and Hospitality programs. Gareth got his start in The Industry as a dishwasher at Benjamin's in St Jacobs Ontario. Being a hard worker, he quickly moved up to cook's apprentice. From there he moved on to La Costa in downtown Kitchener and eventually followed that up by going to Culinary School at Niagara College. Gareth starting working at Trius/Hillebrand Winery under Tony Deluca. Eventually, he moved on to Chef at the Merchant Ale House. In 2006 Gareth went back to school for a degree in Business Management - Hospitality at Niagara College. While working on his degree, Gareth worked at a number of bartending and service jobs in Niagara Falls and Niagara-On-The-Lake. Upon graduating, Gareth starting as the Assistant Food and Beverage Manager at Zee's Grill in Niagara-On-The-Lake. Eventually, he moved on to Fionn MacCools in Cambridge Ontario. The job at Finn McCools involved taking his staff to open and train additional Finn McCools franchises as well as training incoming franchisees and their teams at the Cambridge location. Eventually, Gareth moved on to the Breadalbane Inn located in Fergus Ontario as the General Manager/Maitre'D for several years before finally entering his current roll in 2014 at the Sleeman Centre in Guelph where he remains to this day. What can you expect from Niagara-on-the-Lake wineries in 2021? About Andrea Kaiser Andrea Kaiser grew up in Niagara-on-the-Lake amidst a transformation ignited by her father’s vision in winemaking. Karl J. Kaiser was none other than co-founder and winemaker of Inniskillin Wines, that revolutionized an industry. He is considered by many to be the pioneer of modern winemaking in Canada. His pursuit of creating exceptional wine revolutionized local viticulture and grape growing sparking a transformation in winemaking. As the daughter of Karl, she had the unique opportunity to see first-hand the birth of an industry but also an iconic Canadian brand. His influence on her was also great. She was inspired by his vision and his absolute commitment to excellence in winemaking. Her father also understood the value of authenticity and taught her that above all else, it is the foundation of all things exceptional. While her father’s ultimate career path was born of his passion, like Andrea’s own, it began as a winding road that was cemented by serendipity along the way. Her father first intended to become a priest, was then a teacher and later found his true calling when he by accident, became a winemaker. Andrea’s career began as a restauranteur and along the way she has been a sommelier, politician, writer, teacher, marketer and now winemaker. She recently launched Drea’s Wine Co., making wines in memory of her father, who affectionately called her ‘Drea’. Andrea’s deep passion for local food and wine has been the common thread in her career path. Her incredible journey has provided her with an insight and a depth of understanding not only of her community and country but a global industry. You could say she was born into a life of food and wine and now shares this passion with others. The Ghosts of Fort George, Niagara-on-the-Lake, Ontario - During the War of 1812, Fort George served as the headquarters for the Centre Division of the British Army. These forces included British regulars, local militia, aboriginal warriors, and Runchey's corps of freed slaves. Major General Sir Isaac Brock, "the saviour of Upper Canada" served here until his death at the Battle of Queenston Heights in October, 1812. Brock and his aide-de-camp John Macdonell were initially buried within the fort. Fort George was destroyed by American artillery fire and captured during the Battle of Fort George in May 1813. The U.S. forces used the fort as a base to invade the rest of Upper Canada, however, they were repulsed at the Battles of Stoney Creek and Beaver Dams. After a seven month occupation, the fort was retaken in December and remained in British hands for the remainder of the war. After the war, the fort was partially rebuilt, and by the 1820's it was falling into ruins. It was finally abandoned in favour of a more strategic installation at Fort Mississauga and a more protected one at Butler's Barracks.

Jaimie is adapting the best way she knows how by connecting with her clients and contributing to her community at the same time. In exchange for their food donation, she dropped off pre-mixed color for her clients to touch up their roots, helping them feel somewhat normal during these unprecedented times. Jaime hopes to maintain a sense of normalcy again soon so she can reconnect with her clients on a more personal level to offer the spa-like treatment they once had in the salon. With the use of PPE for protection against the coronavirus, this will be an obstacle, though she is confident that she will find her way through it. Like many small business owners across the country, innovating may be the only way to sustain her once-thriving pre-COVID19 business. Though she says she has gone through many tissue boxes over the past weeks, she is determined to find a way to grow since her entire livelihood is dependent on this investment with her genuine love of serving her clients. Beth Kates is a Toronto based designer who, along with her life and design partner Ben Chaisson has been focusing a lot video and projection design. I met with Beth in Niagara-On-The-Lake in the summer of 2015 when she was working at The Shaw Festival. We spoke about her early career and training and the work on the hit show Bigger Than Jesus where they started with running a show on VHS (!) and WinAmp (!!). Beth then brings us through the process of creating a video and projection design and how to tackle this rapidly changing landscape.
