Sarà una festa del gusto e della più autentica e genuina tradizione gastronomica montana quella di domenica 21 Novembre 2021 a Sutrio (UD), incantevole borgo della Carnia, ai piedi del monte Zoncolan, con un doppio appuntamento dedicato ai formaggi di malga e alle farine, due prodotti d'eccellenza di queste incontaminate montagne del Friuli Venezia Giulia. Solitamente programmati in due diverse date, quest'anno Formandi – Sapori e formaggi di montagna e Farine di Flor- Mulini, farine e delizie della Carnia — organizzati in collaborazione fra Pro Loco di Sutrio, Caseificio Sociale Alto But e Cooperativa Malghesi della Carnia e Val Canale — si terranno nella medesima giornata, trasformando Sutrio in un vero e proprio gustoso laboratorio di sapori della tradizione en plein air. Ad approfondire il doppio appuntamento l'Assessore del Comune di Sutrio Dott.ssa Sara Morocutti. Qui l'intervista: FARINE DI FLOR Le antiche farine e i loro molteplici e gustosi impieghi in campo gastronomico saranno al centro di Farine di Flor. In Carnia, infatti, nonostante le condizioni climatiche poco favorevoli, venivano coltivati fin dal Medioevo grano, orzo, grano saraceno (pajan), segale e, dalla metà del 1700 il granoturco, che finì col soppiantare tutti gli altri cereali.  Per macinarli, i corsi d'acqua si punteggiarono di piccoli mulini, alcuni dei quali sono ancora oggi funzionanti. In tempi recenti, alcuni agricoltori hanno con passione e impegno rivalorizzato vecchi cereali dai sapori dimenticati, che la manifestazione farà scoprire. Nelle caratteristiche vie e nelle piazzette del Centro Storico di Sutrio, 8 paesi della Carnia si cimenteranno nella preparazione di antichi piatti della tradizione che hanno come protagonista le farine: gustarli per alcuni sarà un ritorno al passato, capace di risvegliare vecchi ricordi, per altri (soprattutto i giovani) sarà un'assoluta e gustosa novità. Ad accompagnarli, le pregiate birre di 4 birrerie artigianali del Friuli Venezia Giulia (Bondai di Sutrio, Casamatta di Enemonzo, Dimont di Cedarchis, Villa Chiarzis di Nespoledo di Lestizza). Tra i piatti, Cercivento proporrà l'Antipast das Stries (il cui nome si rifà alla leggenda, cantata anche dal Carducci, che narra degli incontri segreti sul “Pian delle Streghe” sul Monte Tenchia tra le streghe locali e quelle nordiche) a base di Polente rustiche cul muset (cotechino), Pan neri di siale cun la “Varhackara” (pesto tipico di Timau, composto in prevalenza da lardo bianco, speck, pancetta affumicata e qualche piccolo segreto del produttore spalmato su una fetta di pane di segale), Pan di farine di forment dûr cunt'une fetute di argjel (pane di grano duro con una fettina di lardo). Tra i particolarissimi sapori da provare ci saranno, tra gli altri, la Meste Cuinciade, gnocco al cucchiaio fatto con latte e una miscela di farine, condito con burro fuso, ricotta affumicata e accompagnato da una fetta di salame (Sutrio), i  Gnocs di Cjistinies, gnocchi di castagne (Ligosullo), i Blecs cul Cjavrul, maltagliati con sugo di capriolo (Ovaro) e i tradizionalissimi Toc in Braido (polentina morbida con intingolo di Forni Avoltri) e  Polente, Muset e Caput, polenta taragna, cotechino e cappucci carnici (Cabia). Durante tutta la giornata, il Mulin Di Croce a Cercivento aprirà le sue porte al pubblico per visite gratuite. FORMANDI Sempre nella stessa giornata, una straordinaria selezione di Formaggi di Malga della montagna friulana sarà in degustazione e in vendita nella Piazzetta del Municipio di Sutrio. 20 malghe della Carnia, del Canal del Ferro-Val Canale e del Pordenonese si presentano insieme per far conoscere la qualità dei loro prodotti e raccontare al largo pubblico il loro impegno a tutela della montagna e delle attività della tradizione. (21.5.2021) Defenzívna jazda Ineosu je definitívne minulosťou. Ganna, Moscon a Bernal predviedli na prašných cestách výkon, na ktorý nestačil Remco Evenepoel. Toskánsko Ineosu zachutilo a pelotón smeruje do horského terénu. Zoncolan je silným magnetom 14. etapy, ale hlavným vrchárskym chodom bude etapa č. 16. Fedaia, Pordoi, Giau. It was a fairly unremarkable stage but there were two very notable aspects to the final climb – firstly the attack by Richard Carapaz, the best young rider, who broke away to become the first from Ecuador to win a stage of one of cycling’s grand tours. We hear from our Spanish correspondent Fran Reyes about Carapaz. And Chris Froome’s luck refuses to turn – he fell on the slippery road approaching the finish. In this episode we learn more about Simon Yates, we take a detour to visit the so-called Zoncolan of the South, we try to coin a new nickname for Yates and we hear from Alex Dowsett about the dangerous, poorly-lit tunnels on the course towards the end of stage seven. Glad the Giro's over, or are you like Garmin-Sharp's Ryder Hesjedal, whose sport director Charly Wegelius said that if there was a fourth week, he'd probably be in pink? (Never mind the fact that the Canadian lost 5'39 to Nairo Quintana in the Cima Grappa time trial and the next day to Zoncolan, ceded three-and-a-half minutes more to the Colombian.) Whatever! By almost all accounts, the 97th edition of La Corsa Rosa provided a spectacular three weeks' racing - and perhaps best of all, it looked like one that, 5, 10, 20, or 100 years from now, won't ask to be rewritten. The Inimitables - that being host Al Hinds, together with Phil Gomes and Anthony Tan - recap the first Grand Tour of the year with typical aplomb, unscripted and uncensored. From looking back to gazing forward, the trio then get stuck into the Tour Contenders' pre-Tour warm-up, also known as the Critérium du Dauphiné. This year - and by the way folks, it starts this Sunday! - it plays host to a veritable selection of TdF favs - Froome, Contador, Nibali, van Garderen. La Grande Boucle is still a month away, so will the aforementioned their legs on the card table, play down (or up, if they're creeping) their form, or target a stage in which to test themselves? To complete proceedings, the Hour Record gets a(nother) run. Ho hum. Recent changes by the genuises at the UCI tech committee mean Hour aspirants no longer need use a conventional bike. Yet it seems to have turned its only protagonist, Fabian Cancellara off, who wanted to go 'old-school'.
