Elise is soft spoken but passionate and has a beautiful accent, born in Rome with a Dutch parent. She has that Roman vitality in her speech, and speaks of Roman glory and soul lost. She caught me off guard with her love of Lord of the Rings books. We recorded it in the taproom, you could feel the age of the building in its walls and in its wooden rafters. There are some background sounds as the entire room watched us record, which was intimidating at first but after a few minutes we forgot they were there. The entire place was probably less that 600 square feet but was constantly packed with regulars and newbies discovering it from reviews, they are known as the best craft beer place in Rome and are known throughout the entire Continent. Their passion for beer and conversation come through immediately. My favorite part may be the front entrance...it's not decorated, it's even a little trashy with graffiti in the typical Rome way and you feel the authenticity and neighborhood love here. It's set in the fairytale setting of Trastevere, a vine covered section of Rome next to the River and the City Center. Put this place on your list to visit for a few beers when you're in Rome next.

Bio" I am Sophie Minchilli, half American, half Italian, born and raised in Rome. I have lived here all my life except for my time at university in London. While I loved my experience there, all I could think about was Italy, Italian food, Italian people and Italian markets. I finally realized that although my body was in the UK, my heart and soul were in Italy. I think that while Italy is a country with many challenges, once you experience Italian lifestyle, it's hard to adapt to anything else. So as soon as I graduated, I moved back to Rome. I decided to entirely dedicate my life to food, in any way possible. Soon after, I started working with my mother (now business partner), leading food tours and cooking classes in Rome, Puglia and Umbria. I've recently written a book, The Sweetness of Doing Nothing: Live Life the Italian Way with Dolce Far Niente (Harper Collins April 2022) The book pulls together so much of the Italy I love to share. There are chapters on Family, Friends and Leisure and of course some of my favorite recipes. But it's mostly a very sweet book about how to incorporate the concept of Dolce Far Niente – taking the time to enjoy life – into your own routines." This is the final week of our winter season, so we recap the highlights of all the shows' season finales, plus a very special episode of The Front Burner in which Jimmy & Andrew interviewed Jeremiah Tower, Anthony Bourdain, and Lydia Tenaglia about the new documentary, The Last Magnificent. We share our favorite news stories of the week, and of course we have to talk to Mike Edison on this 4/20 holiday! Finally, we chat more with Mario about what's new in the Batali empire and ask for his food and travel tips when visiting Naples and Rome. Mario LaPosta’s lifelong obsession with pizza started when he was a child watching the pizzaioli in his father’s hometown just north of Naples. LaPosta began working in local pizzerias when he was fifteen years old. During his time studying hospitality at Central Connecticut State University, LaPosta worked in the kitchen at Bricco in West Hartford, one of Connecticut’s most celebrated Italian restaurants. After graduation, he moved to Italy to apprentice in Rome. From there, he moved south to the town of Piedimonte where he earned his chops at a Neapolitan-style pizzeria called Pietra di Luna. After reading that Mario Batali was planning to open a restaurant in Westchester, New York, LaPosta contacted Batali veteran Andy Nusser. Nusser tapped LaPosta to build the pizza program at Tarry Lodge in Port Chester. Soon after it opened in 2008, Tarry Lodge was named among the best pizzerias in the country by GQ’s Alan Richman. In 2011, LaPosta opened the second location of Tarry Lodge in Westport as Chef de Cuisine. LaPosta has competed in the World Pizza Championships in Italy finishing 10th place overall in Pizza Napoletana. He comes to Boston with fifteen years of pizza making experience, both in Italy and New England. His dedication for authentic, simple, and soulful food comes from his mother— who is an exceptional cook— and her homemade pizza.

There’s supposed to be this whole mystique surrounding “proper” pasta: how to cook it, which shape with what sauce, how to eat it, all that. And if you’re not born to it, you’ll never really understand it. Well, maybe not, but with a little effort you can get a whole lot closer to authenticity. Maureen Fant, a writer and scholar who has lived in Rome since 1979, has a new book out with her collaborator Oretta Zanini de Vita, making their Encyclopedia of Pasta a tad more kitchen-friendly. Sauces and Shapes: Pasta the Italian Way is a curious blend of the constrained and the relaxed … just like Italy. One of the things they’re relaxed about is shapes for sauces, which came as a bit of a surprise. One of the things they’re not relaxed about is overcooked pasta, which did not. There was so much else we could have talked about, and the book is a one of those cookbooks that is as much a good read as a manual of instruction. As for my beloved cacio e pepe, fashionable or not, I am greatly encouraged by the the news that “[t]his is not a dish to make for a crowd … The smaller the quantity, the better the result.” That’s all the encouragement I need.
