Il risultato si traduce in sapori schietti, genuini e avvolgenti che un po' si sono persi dalle nostre parti, e che in Giappone, invece, sono ben presenti! Negli ultimi tempi mi sono interrogato su come la pizza napoletana viene raccontata attraverso i canali di comunicazione moderni e se ci sono pizzaioli in grado di traghettarla - non solo a livello emozionale, ma anche a livello scientifico - verso le nuove generazioni. La situazione, dal mio punto di vista, non è tra le più rosee, perché sui canali Social è spesso rappresentata da chi parla di cose campate per area solo per fare interazioni, e in generale i pizzaioli più giovani hanno poca memoria e conoscenza del passato, facendo fatica a trasportarla nel futuro.

Il nuovo anno si apre con un calendario ricco di appuntamenti per l'Associazione Verace Pizza Napoletana, a partire dal tanto atteso Vera Pizza Day, la maratona no-stop per raccontare la pizza e il suo valore culturale in tutti i continenti. L'iniziativa, come ogni anno, si svolgerà in occasione della festa di Sant'Antuono Abate, il santo patrono protettore dei pizzaiuoli. La 24 ore in giro per il mondo, come di consueto, partirà allo scoccare della mezzanotte di venerdì 17 gennaio con l'accensione del tradizionale fuoco di Sant'Antuono, presso la sede AVPN di Napoli a Capodimonte.

Dalla pizza napoletana come unica vera pizza se fatta solo a Napoli fino alle polemiche sui costi di una Margherita o sui forni, arrivando anche ad altri stereotipi che invece vengono affibbiati al contrato da chi la pizza napoletana “vera” non l'ha mai mangiata.

Lo ha dichiarato Alfonso Pecoraro Scanio, intervenuto alla presentazione ufficiale dell'Osservatorio Socioeconomico sulla Pizza Napoletana, promosso dall'Università Parthenope di Napoli in collaborazione con Confcommercio, l'Associazione Verace Pizza Napoletana ed esperti del settore.Il progetto, che ha coinvolto anche esponenti del Consiglio Nazionale delle Ricerche (CNR), rappresenta un passo importante per analizzare e valorizzare il grande impatto che la pizza napoletana ha a livello local e internazionale. “Grazie al riconoscimento UNESCO come patrimonio immateriale dell'umanità per l'arte del pizzaiuolo napoletano e al grande impegno di tutte le realtà associative e imprenditoriali del settore abbiamo assistito a una crescita esponenziale non solo in termini di prestigio, ma anche di ricadute economiche per l'agroalimentare, il turismo e la formazione professionale”, ha aggiunto Pecoraro Scanio.La pizza napoletana, infatti, sta diventando un volano di opportunità per i giovani, sia italiani che stranieri, che si avvicinano a questa tradizione secolare, imparando l'arte del pizzaiuolo direttamente a Napoli. “È una sfida di grande portata: da un lato, mantenere viva l'autenticità di questa arte; dall'altro, garantire che il valore economico che si genera intorno a questo patrimonio sia sostenibile e inclusivo”. This week, we share our conversation with Nicole Bean, co-owner of Houston-based Pizaro's Pizza Napoletana. During PizzaCon 2024 in Philly, Executive Editor Denise Greer had a lively conversation with Nicole about top-of-mind pizza business issues, taking on a leadership role in the pizza industry, multiple pizza style and using AI in the business and an in-depth talk about dialing AI prompts. Bill Hutchinson, wife Gloria and son Matt opened Pizaro's in 2011. Nicole and husband Brad came on board in 2013. Today, Nicole is president of Pizaro's, which operates two locations. In a previous Conversation in Pizza Today Magazine, Nicole said, “ There was a lot of education with customers during the first year and tons of feedback about wanting more toppings and a more substantial crust to hold those toppings from those who didn't quite understand the concept of Napoletana pizza. We knew our Napoletana was great and didn't take long to catch on here in Houston, but we wanted to give customers something more. After opening our second and larger location (closer to downtown) in 2015, I went out to San Francisco to Tony's International School of Pizza to learn to make Detroit-style while also learning Chicago, New York and Sicilian. Matt and I launched Detroit six months after I got back from school. I used only social media and local press to spread the word on our newest baby. Response to our Detroit went better than expected and continues to grow. It was only a year ago (2017) that we launched New York-style, which took us 10 months of development with dough, tomatoes, cheese and market testing.” The podcast interview took place during PizzaCon in Philadelphia, PA on November 7. Questo il risultato secondo 50 Top Pizza annunciato ieri 25 giugno alle 18 - orario di New York - al West Edge, all'interno del Chelsea Market, durante una seguitissima cerimonia presentata da Scott Wiener e trasmessa in diretta sui canali social del network.Una riconferma importante per Una Pizza Napoletana di Anthony Mangieri, visibilmente emozionato durante la cerimonia, per la terza volta di fila migliore pizzeria negli USA. Al secondo posto Tony's Pizza Napoletana a San Francisco, di Tony Gemignani. Sul terzo gradino del podio Pizzeria Beddia a Philadelphia, di Joe Beddia.

Una cinque giorni, da sabato 29 giugno a mercoledì 3 luglio, che vedrà i grandi pizzaioli dell'Associazione, istituzioni, comunicatori e professionisti del settore insieme per ripercorrere l'evoluzione del prodotto che più di tutti identifica la cultura gastronomica tricolore, raccontando la storia e i successi dell'Associazione Verace Pizza Napoletana, da sempre ambasciatrice della pizza d'eccellenza in Italia e nel mondo.  Più di una celebrazione del quarantennale: un vero e proprio tributo all'arte bianca che darà il via a uno spettacolo di impasti da sogno e grandi abbinamenti nel cuore di Napoli. Sarà proprio la sede centrale dell'Associazione Verace Pizza Napoletana di Capodimonte (via Capodimonte, 19/A) il teatro di tutti gli incontri in programma: degustazioni, convegni e cene esclusive per celebrare la regina degli impasti in ogni sua forma e sapore.

Former University of West Georgia lecturer Richard Sigman, 49, pleaded guilty on Monday to malice murder, three counts of aggravated assault, and three counts of possession of a firearm during the commission of a felony. The charges stem from Sigman's inexplicable and random fatal shooting of 18-year-old Anna Lynn Jones, a college student with no prior connection to the assailant. The incident occurred on July 30, 2022, when Sigman, allegedly under the influence of alcohol, engaged in a heated argument at Leopoldo's Pizza Napoletana. After threatening violence, security ejected him from the establishment. Authorities later described Sigman as a "belligerent drunk who liked to pick fights with others." Even the authorities don't know why Sigman did what he did next. “For reasons that are not clear from the evidence, shortly after midnight, Sigman stumbled into the lower level of the courthouse parking deck, drew his firearm, and walked up to the parked vehicle occupied by the three female victims, all of whom were college students,” they wrote. “Sigman approached the passenger side of the vehicle and banged on the window while brandishing his handgun. The victims were naturally terrified and began to back out of the parking space to escape from Sigman. As they reversed out of the parking space, Sigman fired three rounds, striking the front seat passenger in the head and killing her.” The court sentenced Sigman to life imprisonment plus 55 years, with the possibility of parole after 30 years. Prosecutors emphasized that Sigman, who was 47 at the time of the murder, would be 77 before having a chance at freedom. During the court proceedings, Sigman claimed self-defense, alleging that someone had shot at him. However, security footage contradicted his account, leading prosecutors to denounce his actions as "legally unjustified, senseless, and incomprehensible." As the court heard the tragic details, Anna's family expressed their profound grief. Anna's father, Carl, delivered a heart-wrenching statement outside the courthouse, lamenting the loss of his daughter's dreams and the milestones she would never experience. The family's attorney, Jim Myers, revealed that Sigman attempted to deflect blame during the proceedings, but the judge swiftly put an end to such explanations. Myers is representing Anna's family in a lawsuit against Sigman and the bar where the initial altercation occurred. The lawsuit alleges negligence on the part of the bar staff for failing to address Sigman's dangerous behavior despite being aware of his intoxicated and agitated state. "He took our hopes for what we knew Anna would become and what she would accomplish -- the life she would have lived. Da lunedì 19 giugno ci sarà una nuova pizzeria a Nola: “‘O Sarracin” del maestro pizzaiolo Angioletto Tramontano.Dopo i successi maturati in tutti questi anni a Nocera Inferiore, dove nel lontano 2007 è partita la storia di Angioletto Tramontano e della sua famiglia, e le esperienze a Ibiza e Mugnano di Napoli, la sua “pizza style”, ovvero la pizza napoletana vecchia scuola conosciuta come “a ruota di carro”, arriva nella città di Nola.Una pizza che nel 2022 ha ricevuto il primo premio nella categoria “Pizza Napoletana stg” al Campionato del Mondo di Parma, quando Angioletto Tramontano è salito sul gradino più alto del podio assieme al suo collaboratore Manuel Longobardi.

Sulla Gazzetta Europea è apparsa ieri 28 novembre una novità legislativa che potrebbe avere un grande impatto su pizzerie e ristoranti di tutta Europa. È stato infatti definito che solo il prodotto conforme al disciplinare di produzione registrato con il marchio di Specialità Tradizionale Garantita (STG) potrà chiamarsi Pizza Napoletana.Una notizia storica che potrebbe costare molto a chi sfrutta la dicitura "pizza napoletana" in modo inconsapevole: l'ICQRF, Ispettorato centrale della tutela della qualità e della repressione frodi dei prodotti agroalimentari sarà incaricato di sorvegliare in tutta Europa punendo con una sanzione tutti locali che dietro al nome Pizza Napoletana non propongono poi al cliente il prodotto che rispetta il disciplinare.

Tanta Italia, ma anche Turchia e Polonia sul podio finale del medagliere delle Olimpiadi della Vera Pizza Napoletana, che si sono chiuse ieri a Napoli, presso la sede dell'Associazione Verace Pizza Napoletana. La squadra azzurra si aggiudica quindi il Trofeo delle Nazioni Lello Surace piazzandosi al primo posto nelle categorie Calzone Napoletano, Pizza Fritta, Mastunicola e Vera Pizza Napoletana. Sorpresa nella categoria Per Gourmet, dove la Turchia, conquistando l'oro, si assicura anche il secondo gradino nella classifica generale, lasciando alla Polonia il terzo posto. Interessante la crescita di realtà come Malesia e Brasile. Si conferma la bontà della scuola polacca, che si aggiudica il bronzo olimpico nella classifica a squadre.

Dopo l'esordio assoluto nella competizione per la categoria Amatori nella giornata di domenica 3 luglio, si è svolta, lunedì 4, la cerimonia d'apertura dei Giochi. L'inaugurazione ha avuto inizio alle 10:30 e ha visto protagonisti il consueto rituale dell'accensione della Fiamma Olimpica e il disvelamento dell'Opera Celebrativa della Vera Pizza Napoletana e dell'Arte del Pizzaiuolo Napoletano, patrimonio immateriale dell'Umanità, realizzata dal Maestro Lello Esposito.

Un appuntamento che diventa anche l'occasione per festeggiare i 38 anni di attività dell'Associazione AVPN.

Una competizione cosmopolita, in cui gli “atleti”, professionisti e per la prima volta anche amatori, regaleranno la loro personale interpretazione della Vera Pizza Napoletana.

Si terrà dal 3 al 6 luglio a Napoli la terza edizione delle Olimpiadi, gara tra pizzaioli organizzata da AVPN - Associazione Verace Pizza Napoletana.Un periodo "caldo" per il mondo della pizza, in particolare a causa della querelle che vede da un lato il noto imprenditore Flavio Briatore e dall'altro folte schiere di pizzaioli. Motivo del contendere un video nel quale l'imprenditore manifesta perplessità sulla possibilità di proporre una pizza di qualità a un prezzo da lui giudicato eccessivamente basso, soprattutto se confrontato con il listino che caratterizza la sua catena di pizzerie.

Neapolitan Pizza Cathy in Arizona asks about Grinding Her Own Wheat for Neapolitan Pizzas Thanks for all the great info.  I know that you recommend refined 00 flour for pizza dough.  Do you think Sonoran white wheat whole flour ground extra fine would be at all suitable and work ok in the high temperatures in the 700s or so?  I love baking Sonoran white wheat sourdough bread in my kitchen oven and we are going to purchase a Uuni Pro and I'm looking forward to trying breads and pizzas at the higher temps.  I have an All Grain Mill and it makes a pretty fine pastry flour. I plan to purchase some OO flour and do a test against my own home ground Sonoran white wheat flour in  pizza crusts.  Please let me know your thoughts. Tba 1 Many mistakes here. never use bread flour--the whole point of Chicago deep dish is its flaky, biscuit-like texture=AP flour. There has never been cornmeal in authentic Chicago deep dish. No need for butter, although it's O.K. To achieve the correct texture for Chicago deep dish you need lots of oil (usually 3 tablespoons per cup of flour) and very short mix/knead time (think biscuits).   Have a question or comment? On today's HRN Happy Hour, we're feeling bene! Caity and Kat are joined in the studio by Patrick Martins (as always) and our special guest, Mario LaPosta, Chef of Babbo Pizzeria in Boston. This is the final week of our winter season, so we recap the highlights of all the shows' season finales, plus a very special episode of The Front Burner in which Jimmy & Andrew interviewed Jeremiah Tower, Anthony Bourdain, and Lydia Tenaglia about the new documentary, The Last Magnificent. We share our favorite news stories of the week, and of course we have to talk to Mike Edison on this 4/20 holiday! Finally, we chat more with Mario about what's new in the Batali empire and ask for his food and travel tips when visiting Naples and Rome. Mario LaPosta’s lifelong obsession with pizza started when he was a child watching the pizzaioli in his father’s hometown just north of Naples. LaPosta began working in local pizzerias when he was fifteen years old. During his time studying hospitality at Central Connecticut State University, LaPosta worked in the kitchen at Bricco in West Hartford, one of Connecticut’s most celebrated Italian restaurants. After graduation, he moved to Italy to apprentice in Rome. From there, he moved south to the town of Piedimonte where he earned his chops at a Neapolitan-style pizzeria called Pietra di Luna. After reading that Mario Batali was planning to open a restaurant in Westchester, New York, LaPosta contacted Batali veteran Andy Nusser. Nusser tapped LaPosta to build the pizza program at Tarry Lodge in Port Chester. Soon after it opened in 2008, Tarry Lodge was named among the best pizzerias in the country by GQ’s Alan Richman. In 2011, LaPosta opened the second location of Tarry Lodge in Westport as Chef de Cuisine. LaPosta has competed in the World Pizza Championships in Italy finishing 10th place overall in Pizza Napoletana. He comes to Boston with fifteen years of pizza making experience, both in Italy and New England. His dedication for authentic, simple, and soulful food comes from his mother— who is an exceptional cook— and her homemade pizza.

I flera år har det kommit ut i genomsnitt en ny kokbok på svenska om dan. Men i år var det ännu fler! I många år har det kommit ut cirka 360 kokböcker om året på svenska. I år har Sverige slagit rekord. Utgivningen har passerat 400 titlar! Sverige är världsmästare på kokböcker, åtminstone vad gäller antalet titlar per capita. Tillsammans med Emma Kolback, kock och krögare, och Eric Ericson, skådespelare, men framför allt matlagnings- och kokboksfantast, kollar Meny den här gången närmare på några kokböcker som kommit under hösten. Förhållanden, utbildningar och jobb har offrats i jakten på den perfekta pizzan. Det här är de mest besatta matnördar jag nånsin träffat, säger Menys programledare Tomas Tengby. Ville Ilola läste ekonomi och skulle skriva sin C-uppsats. Men så blev han intresserad av pizza. Jag hade aldrig varit i Italien, säger han. Jag blev bara intresserad av den ursprungliga italienska pizzan, den som kommer från Neapel.På den tiden var det inte lika lätt som nu att hitta informationen. Tillsammans med plattläggaren och muraren Besmir Balaj startade Ville jakten på den perfekta pizzan. (Utbildningen avslutades aldrig.)I elva år har de varit helt besatta av napoletansk pizza.De tjatade sig till att få använda ugnarna på de lokala pizzeriorna i Falkenberg efter stängningsdags. De eldade dem så varma som möjligt, men kunde konstatera att de inte blir varma nog. En napoletansk pizza gräddas i 450500 grader!Så de började bygga om klotgrillar. Och fick ett bättre resultat. Men inte perfekt.Så de åkte till Neapel för att lära sig hur de riktiga vedeldade ugnarna där är konstruerade. Och så byggde de en egen. Som stod utomhus, för de hade ingen lokal.Och de ägnade sig åt att förstå hur degen fungerar. De försökte hitta den perfekta degen. De har 1000 recept idag, men är ännu inte nöjdaOch när pizzan inte blir bra nog så slängs den. Villes mamma och pappa kom med idén att killarna kanske kunde sälja pizzorna istället för att slänga dem. Först sålde de dem utomhus. Sen flyttade de in sin ugn i en gammal dragig nedlagd bensinmack i Falkenberg.Sedan några år driver de en pizzeria där. Men för dem själva är det först och främst ett pizzalaboratorium, för de menar att de ännu inte har lärt sig allt. Ibland stänger de och låter gästerna vända, eftersom de måste jobba vidare i sin jakt på perfektionen.En del av sin kunskap om napoletansk pizza har de samlat i en ny kokbok Pizza Napoletana, jakten på en fulländad napoletansk pizza i en hemmaugn, ombyggd grill och vedugn. 300 sidor tjock! Och då har ändå 100 sidor inte kommit medOch de fortsätter åka till Neapel för att studera på plats. Deras pizzeria är den första i Norden som har fått en officiell certifiering av organisationen som ser till att napoletansk pizza görs på rätt sätt. Så de har nog lärt sig en hel del trots allt.

Bolin på Bokmässan är Sveriges Radios dagliga podd från Bok- och Bibliotekmässan i Göteborg, som ersätter "Lundströms Bokradio" när Marie Lundström är sjuk. Och i dagens podd hörs artisten Jennie Abrahamsson framföra en fantastisk tolkning av Kate Busch-låten "Babooschka", en låt som drog igång Jennies kreativa lokomotiv. Dessutom spelar hon hennes egna låt "Gemini Gemini".Vi möter också de två största pizzanördarna i norra europa: Ville Ilola och Besmir Balaj som i nio års tid har jagat efter kunskap att kunna göra den perfekta Napoletanska pizzan. Dom hävdar själva att dom inte kan laga mat, men avslöjar ändå att dom gör egen komozarella på sin pizzeria som ligger på en övergiven parkeringsplats utanför Falkenberg. Hela resan, samt recept, har nu blivit boken "Pizza Napoletana".Och sist, men absolut inte minst, möter vi Jan Guillou i ett samtal om hans 21 år gamla bok "En medborgare höjd över varje misstanke", som är den tionde och sista boken i serien om Carl Hamilton - tillika, enligt Bolin på Bokmässan, den absolut bästa i serien.Programledare är Gunnar Bolin
