We welcome Clément Cousin, Co-Founder of Bavette Bistro, to The Premier Cru!Clément and his partner Sandy met whilst working at Terroirs (now closed), an iconic wine bar located in central London. After honing their crafts for 10+ years , as front of house and chef respectively, they decided it was time to set up their own venture and Bavette Bistro was the result. It has been incredibly well received, winning Good Food Guide's award for "best local restaurant of the year 2024", and is a great addition to the culinary scene in Leeds.Clément is from Anjou, in the Loire Valley in France, where his father and brother manage their family's vineyards. They produce a great range of cuvées (predominantly red) that are all underpinned by organic/biodynamic viticulture and low intervention winemaking. The wines have to be labelled as Vin de France as they break many appellation "rules", making them similar to the style made popular by the likes of Mark Angeli and Richard Leroy. When he bought a vineyard in Napa Valley prior to the exit, one of his sons remarked, “He's given up. Samatha joined The Cabin remotely from her RV in Wyoming, where she found a restaurant offering “Wisconsin Cheese Curds” and they offered a side of honey, kicking off a conversation about dips for curds. Marinara and ranch are two of the most popular, but many variations exist; some add spices like Spanish Paprika, others offer aioli blends including a Bloody Mary aioli at Copper State Brewing in Green Bay. Some go sweeter with jam variations, others with more savory sauces. They all pair quite well - we all know how versatile cheese is! From there, the conversation delved into locations where you can find some of the best curds. Eric, Ana, and Samatha discussed some of their favorite fresh curds - often right from the factory - as well as fried curds across the state that are worth the trip. Highlights include cheese factories offering their curds fresh from Ellsworth - Wisconsin's “Cheese Curd Capital” to Watertown with Kraemer Cheese with spots in between from Door County to the Driftless. Curds offering up in restaurants and select bars - usually fried, but not always - are listed by all three. Cheddar curds from places like Merchant and The Old Fashioned in Madison, Guu's in Stevens Point, Courthouse Pub in Manitowoc, Parker John's BBQ (where they blend chives and garlic into the batter), Bavette and Lakefront Brewery in Milwaukee, and many, many more. Curds are usually cheddar, but Muenster works well, such as at Sconnie's in Schofield, Even curds made with goat cheese get a salute, with the ones at La Merenda in Milwaukee; their goat cheese curds are also served with Tia Paquita chorizo cream sauce. The variations are many, but all are delicious. Bavette de bœuf à la guacamole 1 morceaux de bavette 1 à 2 lbs Dry rub au café 1 ou 2 avocats mûres Le jus de 1 citron Sel Sauce piquante Coriandre fraîche et tomates en dés en garniture 1. Trancher la bavette en tranches de 1cm dans le sens de l'épaisseur pour obtenir de grosses tranches minces, comme des galettes. 2. Broyer les avocats à la fourchette, assaisonner avec le sel, le jus de citron et un peu de sauce piquante au goût. 3. Assaisonner la bavette avec le dry rub au café et griller environ 1 minute de chaque côté pour une cuisson medium. 4. Dans une assiette faire un nid de guacamole et déposer la bavette tranchée dessus. Garnir de coriandre fraiche et dés de tomates.

When you walk up to Loro you don't expect to run into a bouncer...not truly a bouncer, but there is someone working the door. One thing you wouldn't expect at Loro is, it's counter service. The door person keeps the line from backing up and helps new arrivals navigate the menu. On busy days, they even open an outdoor bar so you can have a drink while you wait. Bram Tripp and the team at Loro have thought a lot about flavor and taste. For example, their Bavette is a cold smoked, beef fat con fit steak that is finished on a giant wood fired grill in their kitchen. They have karaage, Oak smoked salmon and even a brisket burger topped with a papaya salad. Even the bar menu is thought out so your drinks are fresh and quick. Even after trying half the menu I'll be back to voer the rest. If you had told me a year ago that I'd be sitting down with a highly skilled chef, who cooked bbq in Houston and then moved to an asian smokehouse in Austin, I might not have believed you. The truth is, the term "bbq" is starting to cover a wider range of food and I'm loving every minute of it. I already make Ramen, Pho, curry and other dishes with my BBQ leftovers. What Loro has done is inspire me to take it even further.
