Sua história revela não apenas o caminho de uma brasileira até um dos endereços mais cobiçados da alta gastronomia, mas também como a profissão de chef ganhou uma nova dimensão nas últimas décadas. Há pouco mais de 20 anos, cursar Gastronomia ainda era visto no Brasil como uma escolha pouco convencional. Hoje, impulsionada por escolas especializadas, reality shows e pelo reconhecimento internacional da culinária brasileira, a profissão passou a atrair jovens que enxergam na cozinha uma carreira de excelência. "Eu acho que mudou, sim. Eu acho que tem um pouco mais de respeito pela profissão. Antes, era a segunda, terceira opção de carreira", diz a chef. A paixão pela cozinha, ou a vontade de comer bem, veio muito antes das estrelas Michelin entrarem no seu horizonte. "Eu sempre tive muita curiosidade na cozinha, desde pequena. Cresci com a minha avó, e ela é uma cozinheira muito boa. Eu mudei para a casa da minha mãe quando era adolescente e ela não cozinhava. Eu comecei a sentir muita falta da comida da minha avó e quis muito aprender a cozinhar." Brenda formou-se em Gastronomia em Vila Velha (ES) e começou a carreira em restaurantes brasileiros até seguir para o exterior, onde transformou cada país por onde passou em uma etapa de aprendizado. "Eu sempre busquei trabalhar em restaurantes que tenham alguma coisa que eu não sei e preciso aprender", conta. Essa busca a levou para o Canadá e também para Barcelona, onde trabalhou em restaurantes estrelados. Foi ali que começou a acompanhar o trabalho de Aitor Zabala, um dos nomes mais respeitados da gastronomia espanhola. Quando soube que o chef reabriria o Somni em Los Angeles, decidiu criar a própria oportunidade: comprou passagem e pediu para passar um dia trabalhando no local para conhecer a cozinha. Brenda insistiu por uma vaga e o que não imaginava era que o chef também enxergaria nela o perfil que procurava. Segundo Zabala, experiência e talento podem ser adquiridos ao longo da carreira, mas o que ele considera indispensável é outra característica: “atitude”, contou o badalado chef espanhol. Brenda mostrou que tem esse ingrediente e o chef trouxe a brasileira para o seu elenco. Disciplina por trás das três estrelas Ao contrário do glamour que muitos imaginam, trabalhar em um restaurante três estrelas Michelin significa viver uma rotina rígida de disciplina constante. Em Los Angeles – cidade cheia de estrelas do cinema –, há apenas dois restaurantes que ostentam o topo do guia francês, que leva em conta a qualidade dos ingredientes, o domínio das técnicas culinárias, harmonia e equilíbrio dos sabores, a personalidade do chef e a consistência ao longo do tempo. Para conseguir o feito, o caminho é árduo e para manter a constelação, é necessário rigor e precisão absoluta. "O que eu quero muito é treinar o que você tem que aprender como profissional para ter um restaurante desse nível. O que eu vejo todo dia é muita disciplina, foco e consistência. Todos os dias, nos mínimos detalhes, são milhares de detalhes. Aqui, tudo é feito todos os dias. Nada congelado. Nada cortado antes. Nada. Tudo chega todos os dias, tudo é feito todos os dias". Conseguir uma mesa no Somni não é fácil. O restaurante, que recebe clientes do mundo inteiro, possui apenas 14 lugares e as reservas costumam se esgotar rapidamente. Patrick Stewart saw a man in a beige coat vanish in the wings of the Theatre Royal Haymarket during Waiting for Godot, later matched to the ghost of 19th-century actor-manager Baldwin Buckstone, who died in 1879. Peter Jackson woke to a woman with a screaming face at the foot of his bed near London's St. James Theatre, a ghost his wife had seen two years earlier. Once or twice a year after a heavy May or June storm, live sardine-like fish cover the streets of a town more than 100 miles from the ocean, and a National Geographic team in the 1970s found the stranded fish were completely blind, hypothesizing underground rivers forced above ground by flooding rather than the waterspouts others propose. The town of roughly 93,000 celebrates with a festival, a parade, and a Miss Fish Rain crowned to ride a float dressed as a mermaid, and locals refuse to sell the catch, sharing it instead as a blessing.The episode closes with Weirdo family member Laura, who worked summers at a haunted candy store in a Wisconsin tourist town, a converted house where a ceramic jar once flew across a room at a coworker. That coworker, a Canadian tribeswoman from a family with the 'sight,' listened to Laura describe a dream that returned every Christmas Eve until she was six or seven — a black, pulsing void of indistinct voices that rose to screams and a pressure closing on her chest, replaced in its final occurrence by an overhead view of a storage yard before it stopped for good. This weekend marked America's 250th anniversary, but all we were talking about was what was going on with the wedding of the century. Over the holiday weekend, America's biggest popstar Taylor Swift tied the knot with football player Travis Kelce at New York's Madison Square Garden. Stepping in while our hosts were away, Senior Features Editor Marley Marius sat down with two Vogue staffers who are Swifties and were closely following the wedding festivities: Anna Grace Lee and Anna Cafolla. Films continue to top each other's openings at the box office this year, with Toy Story 5 having the current title of best opening of the year to the tune of $160 million domestically over the Father's Day weekend. This was also the all-time best opening for the 30-year-old franchise. Disclosure Day took second place this weekend, though Toy Story practically beat its global take in the states alone, and Obsession and Backrooms continue their strong streaks coming in at third and fourth respectively.Universal and Blumhouse's Atomic Monster are jumping on the Curry Barker bandwagon having acquired the young director's third film in a reported eight figure deal. While Universal has been backing Barker, both Obsession and his upcoming film Anything But Ghosts are coming from Focus Features. Blumhouse has produced those same films, but this new move puts the horror powerhouse in a stronger position for film development. To tag onto the box office talk and remind you, Obsession was made for $750,000 and has now made more than $300 million worldwide - making it a tantalizing prospect for Blumhouse.Netflix has opted not to proceed with a second season of The Boroughs, a sci-fi TV series executive produced by Stranger Things creators The Duffer Brothers. The series debuted its first season last month. Netflix has won the rights to develop Alix E. Harrow's best selling novel The Everlasting and will enter production on a series adaptation immediately according to Variety.
