Put in freezer bag or vac seal and refrigerate over night.  Next day:  Sear on all sides over medium heat.  Braise:  2 cups water 1 medium white onion, thinly sliced 1/2 orange, cut into 2 pieces 1/4 cup pork lard or vegetable oil 8 garlic cloves, peeled 3 bay leaves 1 tablespoon sweetened condensed milk 2 teaspoons dried oregano, preferably Mexican, crumbled 1 tbls kosher salt Cook until tender, several hours. Pick the meat from the tendons in the turkey leg and serve in flour tortillas. Drizzle hot braising liquid over the meat at service. Chris added cilantro & pickled red onions as a garnish. Kellogg Chair in Agricultural, Food & Community Ethics at Michigan State University Paul has written a number of excellent books, including From Field to Fork, and his new book Sustainability: What Everyone Needs to Know Paul shared a recipe for migas; check out the recipe because he included a great story at the end: "Here’s a recipe for migas. 1 cup chopped onions; 2 cloves minced garlic; 1 medium tomato chopped; 4-6 tomatillos, chopped; ½ to 1 ½ cup chopped peppers (jalapenos, poblanos, serranos, anaheims—your choice depending on desired heat—in pinch I’ll use green peppers, but I won’t like it); 8 eggs, lightly beaten; 2 cups broken corn chips (not too small) 1½ cup mild melting cheese (Colby jack, you add queso fresco, too, but you need a good melter); peanut or safflower oil to cover the bottom of a large skillet. Heat skillet and saute the peppers, onions, garlic and tomatillos Lower heat and add eggs, stirring constantly. When the mixture starts to thicken add chips and continue to stir; after all chips are covered add cheese and keep stirring. When the eggs are solid (but not rubbery) turn off the heat, add the tomato, stir briskly and cover. They will be ready to eat in two minutes. Serve with tortillas. Some people add chorizo, but I’m usually cooking for a vegetarian or two (not vegan, obviously) and I’ve come to prefer it without meat. Here’s a story to go with the recipe: One of legendary San Antonio restaurants is Mi Tierra, open 24 hours a day in Market Square next to the wholesale farmers market. When I first started going there in the early 80s, breakfast between 5:00 am and 9:00am was their busy time. I always ordered their chiliquiles and fresh squeezed orange juice. (It’s mentioned in Gary P. Nunn’s “What I Like about Texas”.) As Market Square has become more and more of a tourist destination, Mi Tierra has  been upgraded several times and they introduced a simplified and gringofied menu. Now you stand in line anytime between 11:00 am and midnight. When I was there eating alone at 7:00 am in about 2005, the place was almost deserted, but there was a table of about eight mid-30s white guys pestering the waitress with numerous questions about the menu (which no longer mentioned either chiliquiles or fresh squeezed orange juice). When the poor waitress got to me I said I’ll have chililquiles and fresh orange juice. She just wrote it down and didn’t say a thing. Before she could get back to me with my food (and Yes, I did get chiliquiles and fresh orange juice), a gentleman with a graying mustache at the table near mine poked me on the shoulder and said, “We don’t need no stinking menus!”   One of the great moments in my life.   You can get into the difference between migas and chiliquiles, but as you probably know, there are about as many theories on that as there are on barbeque, and like barbeque, everyone is completely convinced that their theory is the right one. No one wants to help anyone in this industry. We're losing our culture. We're losing what we are and who we are. From Field to Plate classes are to do the opposite." — Jeremiah Doughty, Wild Game Chef with From Field to Plate Today’s audio is brutal at some points. And I will not apologize. So goes it in the field, so goes this podcast.   You’re going to hear the sound of guts suctioning out of a big game animal. You’ll hear a 70 pound gut bucket dragged across pavement. And you’ll hear the loud bangs and frying sounds in the kitchen as we cook up said animal. The quality of this podcast is in the realness. This show was captured during that process so many of us know well—immediately after an animal expires, and during the consumption of that animal. This is a special show coming from my recent trip to Texas. I knew finding time in this busy trip to do a podcast with Jeremiah would be tough. We hunted our tails off. We butchered for hours. And we ate. A lot. So we did this show while Jeremiah did what he does best.  If you don’t know Jeremiah, he’s the man behind From Field to Plate. You can find him on GoWild, Facebook or Instagram. His website is a wealth of information. He’s a wild game chef, or the Wild Chef, as we’ve been calling him. Jeremiah was one of the first 50-60 people to use the GoWild app. He tested it out before it launched and I knew he was someone I wanted to work with. Food is my thing. I’m hyper passionate about it, and likewise, I love hunting and see it as a tool to improve my food. Jeremiah’s story is similar. We don’t get into his story as deeply here. The sweepstakes ran for 2 months, and collectively generated nearly 3,000 new hunters and anglers for 2018. Since my experience going hunting, I’ve done things I would have never done before.” — Marcus Stiggers, SIXSITE When I look at our industry, I’m inspired most by brands that market through empowerment, not impossibility. SIXSITE is one of those brands. Stephen Holley, the founder, understands that he makes a high end product, but he also understands the market well. He’s marketing to a new generation of hunters. And he’s marketing to a generation that’s largely untapped. While SIXSITE does make high-quality gear, the organization understands the lay of the land. They’re doing their part to get more people outside. Overall, that creates a healthy industry, and a healthy industry is good for business. And also at the root of this is doing the right thing. We’re going to hear from one of those people that SIXSITE has activated. Marcus Stiggers has suffered incredible loss. And he’s going to tell us about that loss, and how it’s changed his life. "I caught a 125 pounder, and the guide looked at it and said, 'We gotta turn it loose.'" — Bobby Stoker recapping his trip to Alaska. Today’s episode is interesting. We’re going to hear some stories from two different generations, in the same industry but approaching it from vastly different angles. Bobby Stoker is a third generation tobacco man. Jared Boyce, better known by many as simply “Outlaw,” is a famous YouTuber in the tobacco and outdoors space. I recently fished with both of these guys in Alaska, chasing King Salmon, Halibut, Lingcod, and yes, even those unworthy little black bass (more on that in the show). We had a great time, and one night we decided to bust out the podcast and video gear and record a conversation. I've worked with Bobby and Stokers a lot over the years, but I wasn’t sure what to expect when I met Jared. I was pretty sure this guy was a content creating genius, having tapped into a perfect niche—one that was underserved on the content perspective, and one he understood well. Jared is as I expected—very intelligent, and there's more to him than you can get from his YouTube channel. That said, his YouTube channel is full of hilarious parody and wild hunting and fishing content, so be sure to check that out. This interview closes out in the weirdest way. I can’t even tease it. You just have to listen to it to find out what happened. It was completely unscripted and unpredictable. I mean, you can’t predict or set this up. If you don’t believe it’s real, find Jared’s youtube channel and watch the video. I haven’t seen his video yet but I can’t imagine this part didn’t make it in. And talent. And maybe most importantly, a guy with a passion for helping others experience the outdoors. For episode 13, we welcome Jeremiah Doughty, who many of you would probably be more likely to recognize as the "From Field to Plate" guy. He’s a hunter, angler and amazing chef, and in this episode, we'll talk about his path to becoming a guy who's sponsored by some major brands in the industry, as well as how he's turned down more money because to him, it's about the people, not the paycheck. Jeremiah's version of success is probably different from many. He doesn’t care about the Insta-fame. He doesn’t care about the logos that show up at the end of his YouTube videos. To him, it's about helping people, and working with people he cares about. I admire that. Jeremiah doesn’t shy away from his passion for food, his strong faith and his natural desire to hunt.
