“I don't want people to feel like they are in Copenhagen, I want them to feel like they are in the countryside. We don't want food to be too meddled around with and manipulated with. We want people to feel close to where all the products come from. Of course we have a focus on everything local and seasonal because nature's just right outside our windows.” To welcome in our third season, we're in great company with Claus Meyer, a culinary entrepreneur known for creating the “New Nordic Food Movement” - where he has inspired a new generation to rediscover local and sustainable produce through his world-renowned restaurants, cookbooks, TV shows, cooking schools, nonprofits and community events alike.  Growing up visiting Hotel Saxkjøbing in his homeland Lolland, Denmark, Claus made it his personal mission to restore this 200 year old gathering place to its former glory for townsfolk and distinguished guests alike. We don't have that many disagreements as maybe in other sectors, and we can afford it."**"You have a massive amount of energy going towards moving atoms, as we say, at Nordic Ninja. That 'moving atoms' means moving people, moving goods. And so when you move atoms, we have, by the way, I think about 40% of the capital allocated in our fund so far into reducing the amount of energy that is spent moving atoms or, or getting rid of moving atoms altogether, like in the case of Veriff, which is an exception." **"I don't eat meat, but I know that obviously, a lot of people eat meat, and they will be eating meat in the next decades to come, even though that is going to be reduced, reducing in terms of percentage share, they still will do that. So if we are going to have people eating meat, it should be done as efficiently as possible. Like, what if there was a way to reduce methane emission of cows, like 80%?Of course, I would support doing that even though I don't eat meat, right? It's still a net impact."**

My guest on the podcast today is Bettina Lindfors, a project manager for the New Nordic Food Programme. In this episode, Bettina and I talked about the New Nordic Food Manifesto, published in 2004 and signed by chefs from all the Nordic countries. We discussed how the manifesto contributes to the sustainability transition of the food system, what its social and political impacts are, and how it changed the food scene in Finland and other Nordic countries. In the second part of the interview, we also talked about the food system problems in general and specifically in Finland. At the end of the episode, Bettina has a question that will make you think about your role in tackling the food system issues. Danish food culture has an outsized impact on the world stage. For a country with less than 0.1% of the world's population, Denmark boasts the two best restaurants in the world and has a culinary movement that is the envy of chefs and kitchens around the world. But it wasn't always that way... In fact, there was a very distinct turning point when Danish (and more broadly Nordic) food became "New". In 2004 a group of restauranteurs and food experts gathered in Copenhagen to write an outline of how they were going to revolutionise the region's food industry, much in the way the film and TV industry had done. The result was The Manifesto for the New Nordic Kitchen. Two of the chefs present were René Redzepi (Head Chef of Noma, now the #1 restaurant in the world) and Claus Meyer (food entrepreneur). In this episode Sam speaks with Jonas Astrup, head of product innovation at Meyers Madhus ("Meyers Food House" - the company Claus founded) to encourage more people to get interested in cooking and food. Lucky Episode 13! Welcome to the Whiskey Ring Podcast where we're bringing you the people who make whiskey interesting. Today's podcast is with Stauning Whisky all the way from Denmark. I came across Stauning by accident, if I'm being honest, but was taken with their story and their process. Plus, it's the first Danish whisky I've tried, so either way I had questions. Joining me to answer those questions is Alex Munch, who co-founded Stauning along with eight friends (that's nine total for those counting) in 2005. While not yet well-known in the US, Stauning is a legend in Denmark. What started as nine friends from disparate backgrounds (none of which were distilling, by the way), is now a massive enterprise nearing a million LPAs with backing from Diageo and Distill Ventures. You should seriously take a look at their site – the pictures are simply stunning. As we all know, though, pretty pictures don't mean good whisky. Stauning, however, has a great recommendation behind it. As he said on the podcast and also in a separate interview, Stauning's meteoric rise coincided with the rise of New Nordic cuisine, heralded by such acclaimed chefs as Magnus Nilsson and Rene Redzepi. The latter chef's restaurant, Noma, in Copenhagen, features Stauning as the only whiskey on their menu. I can't emphasize how cool that is to foodies who also enjoy whisky – it's a perfect match. Plus, as much as Stauning's whisky absolutely speaks for itself, having one of the best chefs in the world choose to exclusively serve your whisky is a hell of a mark of approval. Stauning sent me samples of three of their whiskies ahead of the recording, and all of the tasting notes will be posted ahead of this coming out. Anders Kristian Munk is an ethnologist and computational social scientist interested in cultural phenomena in Europe. He uses computational methods to study patterns in large amounts of data. In this interview with Stanley, Munk discusses one cultural phenomenon that he has been following for over 15 years: the New Nordic food movement. The New Nordic food movement was made famous by the restaurant Noma in Copenhagen, Denmark, which focuses on fresh, local, seasonal foods and traditional cuisine re-made in new ways. The movement has since spread around the world. Munk talks about how New Nordic food compares to other local diets, such as the Mediterranean Diet, and speaks to the potential for food innovation present in Scandinavia. And food waste isn't just an American problem, it's a global epidemic. Mads Refslund and Tama Matsuoka Wong are doing their best to combat the issue by using the toss-away parts of food into ingredients with a new purpose. Mads is a Danish chef and a pioneer of New Nordic cuisine, possibly best known as the cofounder of noma in Copenhagen. Tama is a forager, weed eater and home cook who graduated from Harvard law school. Together, they wrote Scraps, Wilt and Weeds: Turning Wasted Food into Plenty. Contributor Melissa Clark spoke with both of them about their approach to ‘trash cooking.' Benjamin Teitelbaum‘s Lions of the North: Sounds of the New Nordic Radical Nationalism (Oxford University Press, 2017) explores how Swedish and Nordic far right parties deployed music in the 2000's to expand the reach of their ideas. Consciously rejecting the sounds of White Power music and the image of skinheads in favor of pop music, hip-hop, and reggae, leaders of Sweden's far right parties used the change in music to make in-roads into mainstream political discourse. In this podcast Teitelbaum discusses the shifting theoretical landscape that undergirds the radical nationalism and how this led to a variety of approaches toward music by far right parties. We explore how far right musicians and audiences came to use African-inspired musical forms in their effort to spread their ideas about Swedish nationalism. In addition to exploring questions of race, the conversation also examines the changing role of women in far right music and the vexed position of folk music. The podcast concludes with drawing some comparisons and contrasts between far right movements in the United States and Sweden. Benjamin R. Gunnar Gíslason and his family have relocated to New York City where he is the Executive Chef of Agern, located in Grand Central Terminal. Gíslason has teamed up with Danish restauranteur and culinary entrepreneur Claus Meyer to introduce New Yorkers to New Nordic cuisine while using New York's best available and local produce. Gíslason applies ancient techniques commonly used in Scandinavian cooking, such as salting, fermenting, pickling and smoking, across its menu.

In his cookbook, “North: The New Nordic Cuisine of Iceland”, Gunnar travels among the country's many geysers and fjords, to find a cast of purveyors from bacalao fishermen to Artic char smokers, rúgbrauð (rye bread) bakers to seabird egg collectors, harðfiskur (fish) driers to dulse harvesters, and don't forget the hákarl (rotten shark). When he opened Dill Restaurant (Reykjavik) in 2009, it was amid the largest universal banking collapse. That didn't stop this viking, nor his country, from showing the world what Iceland has to offer. Skál!
