Many of you may remember the recession of 2008 — I do! — it was a heavy crush for a lot of people. Maybe one of the few silver linings that came out of it was people looking at what they did for a living and saying — Screw it! — I am going to do what I love. Makers, craft artisans — whatever you want to call it — these people had passion projects that they wanted to bring to fruition — enter Union Kitchen in 2012. The DC area's first business incubator, now an accelerator and an investment fund with area markets and…  and…  and… So many shifts, pivots and swivels over the last 10 years. This journey took her from Texas to Nigeria, where she opened 3 physical store locations. She has created flavors for and led partnerships with many exciting brands such as Moet & Chandon, Pepsi, Guinness, Baileys to name a few. In 2017, Ehime moved to the DC area and was accepted into the Union Kitchen food accelerator to launch her delicious Whipped Greek Yogurt in grocery stores, most recently she launched in Whole Foods Market. Welcome to a very special episode of the Happy Half Hour! This week, we are sailing through San Diego Bay on the High Spirits, a vintage ship belonging to Hornblower Cruises and Events. We’re chatting with the marketing manager, director of food and beverage, national sales manager, executive chef, and the captain who make the Hornblower cruises sail so smoothly. Hornblower offers several different dining cruises which include brunch, cocktails, dinner and holiday cruises, whale watching tours (resuming on December 14), and private events like weddings, and corporate and school events. There are seven different Hornblower ships in San Diego, with the biggest one hosting up to 1,200 people. Sophie Shrader, marketing manager and fan of the Happy Half Hour podcast, tells us Hornblower Cruises and Events is hosting a Thanksgiving brunch and dinner, as well as a Christmas Eve and Christmas Day brunch and dinner complete with carolers and Santa. If she’s not eating a delicious holiday dinner on the Hornblower, Sophie says she likes to indulge in the cheese wheel pasta at Monello in Little Italy. Next up is Chris Schlerf, director of food and beverage—and previously Troy’s boss when Troy worked for Hornblower back in the day. Chris has been with the company for 32 years, and focuses on gathering local and seasonal ingredients in addition to providing free-flowing Champagne during their brunch cruises with bottomless mimosas. His famous grandmother’s bread pudding, which is still on the menu today, started in 1987 when Chris was working in the Bay Area and made the pudding out of day-old Danish pastries. While waiting for our entrees to arrive, we talk to Mandy Brown, national sales manager, who takes care of business not only here in San Diego, but in the many other ports the company has on both the East and West Coast (they have more than 100 vessels). Mandy says when she’s not eating on the boat, she goes to Pete’s Seafood and Sandwich to get the mozzarella sticks filled with either mozzarella or pepper jack cheese. While digging into our main courses, we chat with Dave Mango, executive chef for Hornblower. He had his start in Boston and loves to be creative with his cooking, even in the small, cramped cooking quarters. For example, he recreated the 10-course, final meal served on the Titanic for a special themed cruise. In addition to cooking on the Hornblower, Dave is the executive chef at Union Kitchen & Tap downtown, which serves what he calls the best chilaquiles north of TJ. Captain Jose Gurganus is the last guest of the night, and he just celebrated his 25th anniversary with Hornblower Cruise and Events! The captain says when he’s not saving struggling jet skiers or partaking in dinner on the boat, he likes to go to Leroy's on Coronado with his wife and order the deviled eggs. Looking ahead, the project seeks to open a new space for entrepreneurs in Mersin, as well as publish a forthcoming and much-anticipated cookbook with recipes and stories from its members within the next year. The Hmong are an indigenous people who’ve historically called Southeast Asia home. Following the ravages of the Vietnam War, many Hmong escaped to America settling in all places the Upper Midwest. In St. Paul, MN, Chef Yia Vang has been running Union Kitchen, a pop-up restaurant that specializes in Hmong fare, and he hangs with us to explain the nuances of his culture and its delectable cuisine. For “Snacky Tunes 5’s," our go-to oenophile Jameson Fink does some island hopping, and tells us all about the wonders of volcanic wines. We then head to Los Angeles and the Silver Lake studios of Dangerbird Records to get a live, one-of-a-kind performance from Peter Walker and Aaron Espinoza of the music-and-art collective, Arthur King. The duo crafts ambient improvised music utilizing synthesizer, guitar, drum machine and sounds extracted from environmental field recordings, and combine it with the experimental projections of visual artist John Schlue. All the sonic material used on Arthur King’s latest album, Changing Landscapes (Grand Escalante), is derived from a trip to the Grand Staircase-Escalante National Monument in rural Utah. I got to sit down and taste their amazing concoctions mixed with sparkling wine. This stuff is amazing (and I don't have a poker approach). Check them out at www.sunomi.com) About The Founders of Sip City In 2012, both women battled parallel autoimmune and digestive issues—Josie in Nashville, and Nikki in Boston—and began tinkering with homemade concoctions to improve their health. While Josie and her mother began crafting apple cider vinegar drinks called Haymaker's Punch in the kitchen, Nikki was home-brewing switchel, the same product under a different name and an alternative to expensive kombucha. When Nikki brought her concoctions to work at PBS, her coworkers were immediately hooked. Before long, Nikki had established an underground smoothie/switchel subscription service with loyal customers, run right out of the WGBH newsroom. Fast forward to January 2017. A mutual friend brought Nikki and Josie together at the Women's March in Boston, and it was like love at first sight. Bonding over everything from all-natural, gluten-free products to kombucha cocktails, the two quickly discovered that they had been making the same apple cider vinegar and ginger drink—switchel, or Haymaker's Punch in the South—to help alleviate their health symptoms. That commonality sealed the deal: both women realized the need to do something more with their lives, and they needed to do it together. In June, Nikki moved to Washington DC, inspired to take a chance and create something new. She and Josie had become closer since the Women's March. The two linked up one night in NoMa, over boozy homemade popsicles on Nikki's roof. That's when they decided: “Screw it, let's start something.” They researched and realized the untapped potential for the drink that they both turned to in their time of need. After building a business plan and creating product samples, Nikki and Josie pitched Union Kitchen.
