I went to have a chat to head chef, Jason Yong at Wagyu Ya Teppenyaki at The Glen. Now I hadn't been to The Glen before, so rookie mistake, I followed Google Maps which led me to a carpark that ended up being at the polar opposite end of the mall and I did spend quite a bit of time trying to find the restaurant. But it is actually not that hard at all. Come in off Springvale Road, and it is up on the top level near David Jones. The fit out is all beautiful timber and lovely lighting. I absolutely hit the jackpot because, not only did I get to speak to Jason, I also sat down with acclaimed sushi chef, Wataru Sato, who had Bistro Goemon in Elsternwick and has worked at Nobu, as well as saucier Hori Shinshuke, who has a 15-year-plus career specialising in Japanese, French, and Italian cookery. Jason runs the teppan section and if you want culinary theatrics, this is the place to come. There is fire and super sharp knife and cooking over coals skills as well as smoky cocktails and all round lovely conversation. The restaurant has been split into four spaces with counter seating at the grill, booth seating, a private dining room, and a sushi bar, and extensive menu options. This chat was an absolute delight.

Fast forward 9 years and the group has expanded to consist of 21 venues, as well as our very own Coffee Roastery called Inglewood Coffee.  Driven by a passion for design and architecture, Only Hospitality prides itself on creating hospitality spaces that are welcoming, comfortable and memorable for both our customers and employees. This ideology is highlighted across all venues, with Bentwood Fitzroy, Stanley Mount Waverley and Glovers Station in Elsternwick being prime examples.  Despite the overwhelming success, the ambition and drive that Julien initially had for hospitality have only grown throughout his time as Director of Only Hospitality Group. Coming from humble beginnings, it all began with Director Julien Moussi rolling out the coffee cart to local football matches, with the aim of saving enough capital to start up his own café in Fitzroy. Fast forward 9 years and the group has expanded to consist of 15 venues, as well as our very own Coffee Roastery called Inglewood Coffee. Alex Dafner with SBS weekly Yiddish report 29.11.2020A number of important building projects in the Jewish communities in Australia were begun and announced this week:- The Jewish Holocaust Museum in Melbourne began its rebuilding works in the presence of the Federal Treasurer Josh Frydenberg, Victorian Premier Dan Andrews, Parliamentarians and Holocaust survivors and their descendants, who spoke about the importance of the museum in the education about the Holocaust and fight against intolerance and racism.- Plans to relocate Mt Scopus College, the biggest Jewish school in Australia from its outer suburb location in Burwood to the heart of the Jewish community in the suburb of Caulfield, received a boost with the State Government’s announcement of the rebuilding of the Caulfield hospital, which sits on a large acreage that would allow Scopus to potentially relocate there in the future.- The planned Jewish Arts Quarter in Elsternwick, in Melbourne, received a boost of $3.5m in funding from the Victorian State Government for its project of a cultural hub that will become a centre for culture in the area and a showcase of Jewish culture and arts for the state.- The Emanuel School in Sydney received the go ahead to plan a capital works appeal to double the size of its building that will create the state of the art facilities and flexibilities required by the school’s project based learning approach.Anns: Australia’s first Yiddish Poetica, an online open mic evening of poetry mit a Yiddishn tam (taste), proudly co-presented by Poetica, Kadimah and the Dunera Project, hosted by Poetica’s founder Miriam Hechtman. Alex Dafner with SBS Yiddish report: The Australian Jewish Community Security Group CSG, has reported a very concerning 24% increase, compared with the previous year, in a total of 451 noted antisemitic incidents, with NSW reporting the highest such numbers, 68% of all such incidents in Australia.Australia is one of the best countries, when it comes to monitoring the flow of Government funds granted to NGOs for Palestinian projects, in trying to ensure that they do not end up in the wrong and even extremists’ hands, according to the founder and president of the Israeli NGO Monitor organisation Prof Gerald Steinberg.Progress re the creation of two renewed Jewish community, cultural and recreational centres were revealed in the past fortnight, with the publication of plans for the Jewish Arts Quarter in Elsternwick in Melbourne and the Hakoah Centre in White City in Sydney.

The Corona Virus pandemic effected the Jewish community this week with the closure of the Yeshiva-Beth Rivka Colleges in Melbourne following the testing positive for the virus a teacher at the schools who recently returned from Los Angeles with his children, also students at the college.A number of annual events held in the Jewish Communities in Australia, such as the In One Voice Festival in Melbourne, the March of the Living to Poland and Israel were cancelled and delegations due to visit Israel, including by the Premier on NSW Gladys Berejiklian, have been postponed because of the dangers of the Corona Virus pandemicMalka Leifer’s alleged victims hope they are “one step closer” to justice after a Jerusalem court judge decided not to allow any more defence witnesses to cross-examine a psychiatric panel who assessed Leifer’s mental state.Approximately $7.3 million is alleged to have been defrauded from Sydney’s Moriah College through various means by its former financial controller Augustine “Gus” Nosti over a 14-year period, a sum that is being pursued for recovery from the accused and his family by the college’s management in the Supreme Court of NSW.In sad news for the Yiddish Melbourne community, the last of a small band of published Australian Yiddish immigrant writers, Moishe Ajzenbud e”h, passed away in Melbourne last week at the age of 99 plus years. Aside from several books published in Yiddish and in English translation, Ajzenbud was also a very active member of the Yiddish speaking community and among other involvements served as the President and Honorary Secretary of the Kadimah and first Hon Sec of the Jewish Holocaust Centre. He founded and edited the Kadimah’s Melburner Bletter Yiddish journal, presented a long running Yiddish program on Radio 3ZZZ, was an active, leading member of the Bund and chronicled its first 60 years in Melbourne and he was a Yiddish a teacher and principal at the Sholem Aleichem Sunday School. Karen Martini’s Chickpea Puree (originally from her Crispy Fried Lamp with Chickpea Puree and Carrot and Beetroot Salad recipe).  2 x 400g cans chickpeas 1 bay leaf 2 cloves garlic, halved 100ml extra virgin olive oil 2 teaspoons tahini paste Juice of 2 lemons 1-2 tablespoons hot water (optional)   Place the chickpeas and bay leaf in a saucepan of water over medium heat and bring to the boil. Drain. Puree the hot chickpeas and garlic in a food processor. Add the remaining ingredients and process     Caro’s Spiced Nuts (Recipe from a Laurie Chartres Cooking Class). INGREDIENTS 2 tablespoons of olive oil 300g macadamia nuts 2 tablespoons of white sesame seeds 3 tablespoons of sunflower seeds OR any seeds (pepitas, pine nuts etc) ½ cup (100g) caster sugar 1 and ½ teaspoons of salt 1 tablespoon of ground cumin 1 teaspoon ground coriander   METHOD Line a large baking tray with baking paper and set aside. Combine the sugar and spices. Heat the oil in a large, heavy-based frying pan over medium high heat, add the nuts, sesame seeds, pepitas and /or seed mix, and sprinkle over the sugar and spice. Cook the nuts, tossing constantly until dark brown and the sugar has caramelised. Watch out as sugar can burn very quickly. When it starts to smell like it’s burning lower the heat immediately. Once nicely browned, tip the mixture onto the lined tray. As caramel can be very hot CAREFULLY separate the mixture, spreading it out in a single layer to cool completely. Once completely cooled, this will keep for a good week in an airtight container.

Crostini with Chicken Livers, Anchovies and Capers. INGREDIENTS 500g of chicken livers, trimmed and cleaned 2 tbs of butter ½ of fresh chicken stock (home-made is preferable) 2 to 4 anchovy fillets (to taste) 1 tablespoon of capers Cracked black pepper Fresh parsley Fresh crostini   METHOD Melt the butter in a fry pan. Add the livers and cook for 2 mins stirring with a wooden spoon. Add chicken stock and cook for another 3 mins. Remove livers and place on a chopping board with anchovies and capers Chop the whole lot together then return to the pan with a little bit of extra butter. Cook for another minute – remove from the heat. Grill the bread on both sides, then top with the liver mix and fresh chopped parsley and serve warm.
