This interview is with Steve Vuylsteke of SakéOne. In this interview, Steve talks about growing up in the early Oregon wine industry and his transition to the saké industry.Steve dives into his early childhood and his parents' escapades with garage fruit winemaking. He goes on to talk about his parents' journey in creating Oak Knoll Winery and how this journey affected him. Later in the interview Steve shares about his involvement in helping to market some of the early iconic Oregon wines, like those of Erath. He then talks about his transition from wine to saké and how he faced the uphill battle with educating the early sake consumers.This interview was conducted by Rich Schmidt on March 24, 2025 at the SakéOne office in Beaverton.

There are few words in the english language that more poetic when strung together than "coffee" "weed" and "cobbler." Yes, this is another "only in Acadiana" episode of Out to Lunch. So let's dive in. For a lot of entrepreneurs, the dream of owning a business is about independence. The money helps, of course. But what they're really after is a kind of self-expression or self-determination. They want the satisfaction of working on their own terms, of doing things their own way. Working for someone else can offer stability, but it can be confining — especially when you have an unusual idea. You might not think a coffee shop is an unusual idea. But you've probably not been to a coffee shop quite like Coffeeweed Cottage in Lafayette. It's the brainchild of Denise Champagne McClure. Coffeeweed (which is technically a colloquial term for chicory) doubles as a cafe and home decor showroom. You can buy a cup of joe — artisan roasted — and shop for books, local crafts and…plants. Denise is a trained horticulturist, and a big part of Coffeeweed's vibe is its grow bar. Customers book grow bar sessions, pick plants and pots and get a lesson on how to help their new green friends thrive. Denise grew up in Cecilia and opened Coffeeweed in 2023. So diving headfirst into a new concept isn't the only path to striking out on your own. Plenty of entrepreneurs take advantage of franchising opportunities. That's how Christy Nolan and her husband Patrick came to open a Lafayette location of the fast-growing dessert chain: the Peach Cobbler Factory. There's no mystery here. The Peach Cobbler Factory is known for…wait for it…peach cobbler. But the concept serves up a much bigger dessert menu that encourages experimentation. Customers can mix and match toppings how they like. Christy and Patrick both work full time outside of running their Peach Cobbler location. The idea was to find a concept that would give them an off-ramp to retirement. They toyed with a few ideas but fell in love with the Peach Cobbler concept when a friend opened locations in Alabama. A taste test at a location in New Orleans sealed the deal. They opened their location in 2023. Christy grew up in Erath and now lives in Abbeville. She works for AT&T and her husband works offshore. Why the Pairing Works: Pinot Noir is one of the most versatile wines for food! It's all about balance. We had the pleasure of spending time with Karl Weichold, the estate winemaker at Stoller Family Estate, located in the famous Dundee Hills in Oregon. Karl shares his story of how he became a renowned winemaker, starting with a degree in Biochemistry and Genetics from Texas A&M, to working at an Italian restaurant where he first fell in love with wine, to Texas wine country, and then to Oregon where he worked at 12th and Maple and Erath before landing at Stoller. In our conversation we talk about his thoughts on the art and science of wine making, what makes a “haunting” wine, and how the changing climate affects the choices they have to make every year - including during the very warm summer of 2023 in the Pacific Northwest. As the estate winemaker, Karl also has the ability to manage the grapes themselves, and we talk about how he has changed the amount of time he spends with the grapes versus the juice. Warren Perrin, renowned historian of Acadian culture and a man who has dedicated his life to promoting the accurate history of the Acadians, is our guest on this special rebroadcast of Discover Lafayette. Author of “Acadian Redemption,” a biography of Beausoleil Broussard, Perrin has worked tirelessly to reinvigorate the Acadian pride movement, most notably through his Petition for an Apology from Queen Elizabeth II for the Acadian deportation from Nova Scotia. The Queen signed a Proclamation granting such an apology on December 9, 2003. Perrin established the Acadian Museum in Erath, LA. He has been engaged in many activities on behalf of the Council for the Development of French in Louisiana, known as CODOFIL; he served as President of CODOFIL from 1994 to 2010. He was a member of the UL – Lafayette (then known as Southwestern Louisiana Institute) weightlifting team which won eight national championships between 1957 and 1971, and established itself as one of the nation's most-successful collegiate lifting programs. A documentary film tentatively entitled, The Ragin 13, by filmmaker Nicholas Campbell, is currently being filmed and traces the inspirational underdog story of this exceptional team and its achievements. CODOFIL celebrated its 50th anniversary in 2018 and was featured in the Governor's Office in the Old State Capitol in Baton Rouge. He speaks about the benchmark moments in the Oregon Wine Industry, tells stories about others in the industry, and goes over struggles the industry faced - like the appearance of phylloxera. He describes the early days at Erath, as well as the challenges and questions he encountered. He discusses growing his business, selling his wine, and adapting as the industry grew. He also talks about the past and present of Oregon Wine and predicts what will be in its future. This interview is with Leah Adint of Erath Winery. In this interview, Leah speaks about her childhood in Alaska and how a coffee table book from her father cemented her decision to study wine. After getting a bachelor's and a master's in enology, Leah traveled around the world learning various types of winemaking strategies and techniques. Since July 2022, she has been the Head Winemaker at Erath Winery in Dundee, OR. This interview was conducted by Rich Schmidt at the Erath offices on January 25th, 2023.
Our guests are Mary Broussard Perrin and Beverly Constantine Fuselier, authors of Healing Traditions of South Louisiana. Their book provides a fascinating history of South Louisiana's traditional healing arts from the dawn of civilization to today. Part One is about traiteurs (male) and traiteuses (female), their prayers, and rituals. Part Two presents the native medicinal plants that grow wild in South Louisiana, their properties and their traditional uses. Mary and Beverly are traiteurs who treat whatever is ailing you, such as back pain, wounds, warts, anxiety, sunstroke, etc. Traiteurs work with healing plants, occasionally “making medicine” when needed. And Mary and Beverly are dedicated….right before we began taping, they worked all morning at the Healing Garden at Vermilionville! It is also a beautiful testament to the Native Americans who first arrived in South Louisiana more than a thousand years before European settlers, who had discovered "a rich diversity of plant and animal life in its bayous, prairies, and marshes....they uncovered a multitude of powerful natural curatives, plants that could stop bleeding, cure infections, relieve pain, reduce fever, stop swelling, soothe troubled minds, and more. In short, Mother Nature's medicine cabinet was well stocked." These generous Native Americans shared their plant curative knowledge with the Acadians' traiteurs as they settled into their new home in South Louisiana. According to Healing Traditions of South Louisiana, Elderberry was "revered for its medical and reputed magical qualities" and the Acadians and Native Americans considered it vital to their medical needs. It is considered to be the "queen of the Healer's Garden." The book is a beautifully written account of local healing herbs and the healing touch and prayer of traiteurs. The Lafayette lawyer was a founder of Codofil (the organization to preserve the French language in Louisiana) and founded the Acadian Museum of Louisiana in Erath. Perrin joins Louisiana Life Executive Editor Errol Laborde, along with podcast producer Kelly Massicot to talk about several topics including his conversation with French President Emmanuel Macron and how the French perceive Louisiana's native Cajun French. Other topics covered include the tricentennial of the colonial Louisiana capitol having moved from Biloxi to New Orleans; and, a victim of the Munich Olympics terrorist attack 50 years ago who had connections in Louisiana. This week in Louisiana history. October 15, 1802. Spanish king Charles IV ordered retrocession of Louisiana from Spain to France. This week in New Orleans history. Nicolas-Ignace de Beaubois (October 15, 1689 – January 13, 1770) was a French Jesuit priest and missionary who joined the Canadian mission in Quebec in 1719. Beaubois spent a training period in Quebec and began his spreading of religious doctrine among the Illinois Indians in 1721. On 2 Feb. 1723, at Kaskaskia, Illinois he took the vows of a Jesuit. Because of the expansion of the Mississippi valley missions, the Jesuits had made the area a distinct mission district within the diocese of Quebec and Beaubois became the superior. He immediately went to France to populate and strengthen the new jurisdiction. The Compagnie des Indes was responsible for funding the parishes and missions in the Missio Ludovisiana district and he was successful in negotiating appropriate funding for future operations. He obtained authorization for the Jesuits to open a house in New Orleans and to have a plantation near the city for supplementing their operation. Beaubois also arranged to have Ursuline nuns funded to establish a girls' school in New Orleans. This became the first girls' school in the Mississippi valley. This week in Louisiana. Palmetto Island State Park's very name hints at the untamed wildness you can expect in this southern corner of the state. Palmettos, those shaggy, tropical trees found all over the swamps, grow alongside tall cypress and other Louisiana native plants, giving the park an air of authenticity — this is as unspoiled as south Louisiana gets. The Vermilion River runs through the Palmetto Island State Park. The most scenic way of reaching the river is via a boat launch near the center of the park, which also offers canoeists and kayakers easy access to narrow channels and tucked-away lagoons. Canoes are available for rent by the hour or day. Though the waterways here are the main attraction, the .7-mile-long Cypress Trail also allows visitors a close-up look at Palmetto Island State Park's jungle-like ecology. At the nearby visitor center, you'll find a water playground and bathhouse, and six cabins that give overnight guests a front-row seat to the symphony of native animal calls emerging from the swamps. Outside of Palmetto Island State Park you'll find even more opportunities to dive into Cajun culture. The town of Abbeville is home to the Sam Guarino Blacksmith Shop Museum, or check out the Acadian Museum of Erath. Over in Avery Island, you'll find the Tabasco Factory, Museum and Country Store. There is no shortage of podcasts. These days anyone can buy a microphone off the internet and start talking into it. The trick is finding an audience willing to listen. Passion is a great place to start. And there are few things people are more passionate about than music and food. So why not connect them? That's been the recipe for success for Greg Bresnitz. It all started with a TV show — Dinner With The Band — but took off with his long running podcast Snacky Tunes, which he began taping with his co-host and twin brother Darrin in 2009. Since then, the pair have recorded over 500 episodes interviewing chefs about the music that inspires their food. It's a format that lends itself to endless hours of conversation and makes for a pretty compelling live event, too. In 2022, Greg debuted Crescendo! — a new show guiding listeners through a seven-course menu with a chef, pairing each dish with a song. Greg grew up in Philadelphia, built his career in New York but relocated to Lafayette in 2020. He says it's a fitting landing spot for what he does. Few places combine food and music quite like Acadiana. Knowing your audience is the first rule of media. And it's also the best way to make your case in advocacy. Especially when you're talking to the world. Warren Perrin is an attorney by trade, but he's best known internationally as an advocate for Acadian culture and a preservationist of Cajun history. He's an author of books on Cajun History, including a biography of Beausoleil Broussard and he founded the Acadian Heritage and Culture Foundation, which operates the Acadian Museum of Louisiana in Erath, his hometown. Warren made international headlines as the man who won an apology from the Queen of England. He spent a decade petitioning the British Crown to formally end the exile of the Acadian people. In 2003, the Crown issued a Royal Proclamation apologizing for the expulsion and setting July 28 as the official date commemorating the Acadian deportation. If that weren't enough, Warren was inducted into the UL Sports Hall of Fame for his achievements on UL's legendary weightlifting team. The Friday Newsletter | Daily Gardener Community Historical Events 1717 Birth of Catharina Helena Dörrien ("Durr-ee-in"), German botanist, writer, and artist. After the death of her parents, Catharina became a governess for the Erath ("AIR-rit") family in Dillenburg. Sophie Erath was a childhood friend of Catharina's, and Anton Erath was an attorney; they became Catharina's second family. While teaching the Erath children, Catharina turned to nature to teach almost every subject. Catharina even wrote her own textbooks, heavily focused on botany and the natural world. As the Erath children grew, Catharina focused on her botanical work. Anton helped her gain membership to the Botanical Society of Florence - something unheard of for women of her time. Catharina would go on to be a member of the Berlin Society of Friends of Nature Research and the Regensburg Botanical Society in Germany. When Catharina was alive, Dillenburg was part of the Orange-Nassau principality. And Catharine's 496-page flora called Flora for Orange-Nassau was published in 1777. Catharina not only used the Linnaean system to organize and name each specimen, but she also named two new fungi ("funj-eye") - two little lichens - she named major Doerrieni ("Durr-ee-en-ee") and minor Doerrieni- an extraordinary accomplishment for a woman during the 1700s. As for her botanical illustrations, Catharina created over 1,400 illustrations of local flora and fauna. Yet, these masterpieces never made it into her flora. Instead, Catharina's botanical art became an heirloom passed down through the generations of the Erath family. In 1875 a few pieces of Catharina's work were shown at an exhibition. However, fifteen years later, a large collection of paintings by Johann Philipp Sandberger was bought by the Museum of Wiesbaden. Johann was a dear friend of Anton Erath's, and today, his work is considered to be copies of Catharine's original watercolor masterpieces. Still, Sandberger's pieces are precious because they give us a glimpse of Catharine's breadth and depth of talent. Without Sandberger, all would be lost because the bulk of Catharine's work has been lost to time. The curator Friedrich von Heinbeck once said that the precision of Catharine's brush strokes was like that of an embroiderer who stitched with only the finest of thread. 1848 Birth of Augustus Saint Gaudens ("gaw-dens") (books about this person), American sculptor of the Beaux-Arts generation. He is remembered for his stunning Civil War monuments, including a work called Abraham Lincoln: The Man. In Augustus Saint Gaudens, biography, Reminiscences, he wrote, What garlic is to salad, insanity is to art. The Frick museum has a medallion carved by Augustus. He was a fan of Robert Louis Stephenson, and the two met toward the end of Stephenson's life. The medallion has an inscription: Stevenson's poem Underwoods (1887), which reads: Youth now flees on feathered foot Faint and fainter sounds the flute … Where hath fleeting beauty led? In addition to teaching, Lenore was a marvelous children's author. Her books were always charming, and her titles include Stories of Birds, Flower Stories, Insect Stories, and Tree Stories, just to name a few. In the preface to Flower Stories, Lenore wrote, When the flowers of the field and garden lift their bright faces to you, can you call them by name and greet them as old acquaintances? Or, having passed them a hundred times, are they still strangers to you? And in her book Stories of Birds, Lenore wrote: Such a twittering and fluttering there was when this news came. Botanic Spark 1958 On this day, The New Yorker published gardener and garden writer Katharine White's (books about this person)review of garden catalogs. It was the first time a garden catalog received a published review, and it was an immediate hit. Readers wrote in to request the name of the author since Katharine had signed off with only her initials, KSW. Katherine was married to EB White - the author of Charlotte's Web and Stuart Little. But the garden writer Elizabeth Lawrence (books about this person) figured out that KSW was Katherine, and she sent her a letter a month later. The two women would exchange correspondence about gardening for the rest of their lives. Here's an excerpt from Elizabeth's letter: I asked Mrs. Lamm if you were Mrs. E. B. White, and she said you were. So please tell Mr. E. B. that he has three generations of devoted readers in this family... Have you the charming Barnhaven catalogs? (Gresham, Oregon). This interview is with Chris Burrough of Twomey Cellars. In this interview, Chris speaks about his approach to wine from a food background. He describes his initial interest in the restaurant industry, which pivoted into winemaking after working in a tasting room. He talks about looking for jobs overseas and his constant exploration of new opportunities. He goes over what it was like to work his first harvest and what it was like working at different wineries such as Erath, Domaine Drouhin Oregon, and J.K. Carriere. Later, he speaks about the hiring process at Twomey, what it was like starting there, and what it is like working there now. He describes his growth in the industry, gaining experience, and “drinking from the firehose” when working in the wine industry. The third winery in our series is Erath Vineyards. We met up with Dick Erath on October 9, 2020 at his original vineyard property. Today, it is known as Chehalem Mountain Vineyard and is owned by Geodesy Wine/Capra Vineyards. I first met Dick in April 1971, when we stopped our car in front of the rented logger's cabin, where he and his family were living. We were hoping to see some wine grapes, which we'd heard had been planted in the area. And, as it turned out, Dick knew where some were planted. The Erath Oregon Pinot Noir 2016 is sourced from vineyards all over Oregon, the Willamette Valley AVA is the one that everyone knows, but there is also the Rogue Valley AVA and the Umpqua Valley AVA. Erath Winery is one of the Chateau Ste Michelle family of wines and this is their "Taste of Oregon" Pinot Noir, they produce several different Pinots including high-end single vineyard Pinot Noir. The stated goal for this wine is "to make the best Pinot Noir in the world for under $20" and they just may have pulled it off since both Wine Advocate and Wine Spectator awarded this sub-$20 Pinot, 90 points. For me giving a wine a point score is essential if you are purchasing a $150+ wine and want to insure you are buying one of the elite wines, for under $20 value priced wines points don't mean as much. But, both those publications have well-respected, talented critics and while their palates may not been in tune with yours or mine, they do know how to identify quality in the vineyard and in the winemaking. So a good score for a value wine does indicate top quality, if the wine appeals to you or not is another story. The 2016 growing season in Oregon was cool and long, just what Pinot Noir grapes need to excel. 20% for this wine was aged in new French oak, they didn't specify if it was oak barrels or other means to impart oak seasoning. The alcohol content is 13.5%. The color is clear, see-thru garnet red. The nose is delicate and complicated, herbs, cherry, mushroom, baking spices, black pepper, raspberry, and a whiff of dark chocolate. This is a light to medium-bodied wine, the flavor profile starts off soft, then builds, very cool. It tastes of ripe cherry, a slap of pepper, some not sweet cola, candy spice, and herbs. The mid-palate shows tart cranberry with cream, orange zest, a quick hit of milk chocolate, and smooth plum. The tannins are sweet, you sense them, but there is no bite. The acidity is solid, you don't get these many flavors unfolding in a sip of wine without well-balanced acidity acting as a backbone. The finish engages you palate and then slowing fades away. The Erath Oregon Pinot Noir 2016 is an excellent Pinot Noir, no need for a "for the price" qualifier. It has flavor galore, it has structure that holds the wine together, but also stays out-of-the-way of you're sipping pleasure. I used to say that the Willamette Valley AVA produced my favorite Pinot Noirs, but I think from now on I will simply say my favorite Pinot Noir comes from Oregon.
