On this episode we hear from Caroline. During he studies she met someone working at the Ibis Hotel near the Eiffel Tower in Paris and the rest as they say is history. She has made a now nearly 20 years career with Accor and in this podcast, we hear her journey. She spent a decade in operations across properties of Ibis and Novotel, in the UK and France. She held general manager roles and loved the diversity of her days in hospitality. After she transitioned in marketing at the Accor headquarters in Paris. One thing she noticed of female leaders in her career is that we behave kindly and do not dare to ask. Behaving well is rewarded in an academic setting, but this is not the case in a corporate environment. For her own career growth, she says it was about relationship and knowing the right people, and she did this through internal networking which was outside of her comfort zone. This eventually got her role on the shadow executive committee of Accor. As a mother now, combining her executive and personal life, she compares it to a military operation. Especially on days when she must leave the office at 5pm, to be with her family. She leaves with confidence and is setting an example for other parents in the office to not feel guilty or any shame for leaving on time.

Un evento lungo una giornata, per comprendere, sotto la guida di un gruppo di esperti, come attraversare le sfide e gli appuntamenti più importanti dell'esistenza con un senso di serenità e pienezza, spesso perduto nella frenesia del presente. Dal parto all'accettazione del lutto, dalla cura del giardino a quella della creatività, l'evento Dalla Nascita alla Morte: ritorno al Nostro futuro, ideato da Patrizia Manai, riunirà nove professionisti provenienti dai più svariati ambiti per offrire un ciclo di incontri, utili ad affrontare le fasi più cruciali dell'arco della vita e umanizzarne il percorso. Clara Scropetta, dottoressa in Chimica, ricercatrice e doula, ad esempio, si concentrerà sull'inizio della vita, addentrandosi nella perinatalità. Durante la lezione “L'accudimento psicofisico della partoriente e la cultura della nascita”, la dottoressa farà luce anche sul ruolo della doula: una figura che affianca la donna nel periodo perinatale, accanto a medici, ostetriche o altro personale sanitario, per occuparsi del suo benessere psicofisico. All'estremo opposto, nel corso della stessa giornata, la tanatologa, vincitrice del premio Terzani per l'Umanizzazione della Medicina 2008, Daniela Muggia, terrà una un incontro sulla fine della vita. La conferenza “Accompagnare empaticamente i propri cari quando la morte si avvicina” è un sunto del suo metodo ECEL, Empathic Care of the End of Life, di cui è ideatrice, basato su tecniche contemplative tibetane per sviluppare nell'accompagnatore una profonda empatia eticamente orientata durante la fase terminale delle persone. La pittrice Luisa Tartaglia Ciampi esplorerà invece la parte creativa dell'esistere con la conferenza “Mettere su tela ciò che strazia la realtà e la rende poetica: come la pittura trasforma la vita”. Camille a évolué pendant 10 ans chez Accor jusqu'à devenir responsable produits et concepts. Avec une passion innée pour la cuisine et le fooding, elle a même passé son CAP Cuisine en cours du soir pour gagner en crédibilité et professionnalisme. Elle s'est spécialisée notamment dans la création de concepts de restauration pour des marques comme Novotel, Mercure et Ibis. Elle revient en particulier sur un des concepts qui illustre le mieux son job : le restaurant italien Quindici au Novotel Vaugirard. Alors, comment transforme-t-elle une idée en un concept de restauration complet ? Quel est le processus de création, de l'importance des études de marché, du storytelling ? Paul Dubrule et Gérard Pélisson changent l'hôtellerie en France en créant le groupe mondial Accor. Dans ce 2e épisode, les 2 hommes sont pris dans une frénésie d'acquisition. Ils rachètent d'abord Jacques Borel International, une chaîne de 43 hôtels de Luxe, Sofitel puis lancent les hôtels Formule 1. Le groupe Accor est créé. Surtout, ils développent un pôle restauration avec Le groupe Lenôtre, Quick, les pizzeria del Arte, Courtepaille puis dans le voyage avec AfricaTour, AmericaTour et AsieTours. Pourtant, ce sont les investissements aux États-Unis qui leur coûtent trop chers et en 1994, le groupe Accor est surendetté. Ils décident de revendre tout ce qui n'est pas des hôtels. Ils achètent Carlson Wagon Lits en 1997 et décident de passer la main sur l'opérationnel après 30 ans. Paul Dubrule se consacre alors à sa passion, le vélo et s'expatrie en Suisse. Gérard, lui, se met au Golf tout en gardant un œil sur Accor, avec son neveu, Gilles Pélisson à sa tête. Paul Dubrule et Gérard Pélisson changent l'hôtellerie en France en créant le groupe mondial Accor. Et tout commence avec Paul à 26 ans aux États-unis quand il rencontre Bernard Trujillo, le gourou du retail. Celui-ci devient son mentor et lui conseille d'étudier le modèle des hôtels et notamment les Holiday Inn. Il a le coup de foudre et veut l'importer en France. Mais personne n'y croit jusqu'à sa rencontre avec Gérard Pélisson, un directeur chez IBM et surtout un diplômé du MIT. Il connaît bien l'Amérique et ses modèles économiques. Il finit par accepter tout en conservant son job. Novotel est lancé avec un premier hôtel en banlieue lilloise en 1967. Le style plait assez rapidement. Économique, pratique, il casse les codes de l'hôtellerie. En 1968, c'est Colmar puis Marignane. Ils ouvrent même un hôtel de 1000 chambres à Bagnolet, aux portes de Paris en 1973 puis fondent un hôtel 2 étoiles, Ibis en 1974. Tout va pour le mieux jusqu'à ce qu'un ancien salarié de Novotel lance une chaine concurrente où il copie tout. C'est Mercure. Une catastrophe pour les 2 hommes. It was a rainy day, two weeks ago, my friend Pauline and I were having a walk in the center of Paris, near Les halles, la bourse du commerce (now the Parisian exhibition site of François Pinault's modern art collection) and l'église Saint-Eustache.  Place Margurite de Navarre, there is a modern building : the Novotel Les Halles. In the center of the hotel, there is an unexpected hidden garden : a patio full of plants. There you can have a very nice experience : the Tea time of the cheffe pâtissière Emilie Gerardi.  She created a modern and plant and flower-based version of the tea time. I was very lucky to meet her for the podcast. Il y a à peine deux semaines, Pauline et moi nous trouvions au cœur de Paris, à deux pas du Forum des Halles, tout près du centre d'art contemporain de François Pinault qui se trouve dans l'ancienne Bourse du commerce de Paris, et de l'église Saint-Eustache. Il pleuvait quand nous avons débouché place Marguerite de Navarre, mais en quelques pas, nous avons atteint le Novotel des Halles. Il s'agit d'un hôtel moderne, mais pas seulement par son architecture : vous allez très vite comprendre pourquoi. Nous avions rendez-vous avec la cheffe pâtissière du restaurant de l'hôtel : le Jardin Privé, Émilie Gerardi. Nous ne sommes pas près d'oublier, Pauline et moi, cette rencontre avec une jeune femme extraordinaire. Nous étions là pour évoquer avec elle le Tea time, ou T'Time comme il est appelé ici, ce moment de dégustation autour d'une boisson chaude, emprunté aux Anglais, qui est très à la mode dans les hôtels parisiens. Le groupe Ritz-Carlton propose des croisières à ses clients, l'hôtelier Accor investit dans le train Orient-Express avec un succès fou... Les professionnels de l'hôtellerie ont rendez-vous à Londres du 7 au 9 novembre avec le World Travel Market. Selon Vanguelis Panayotis, PDG des sociétés de conseil MKG et Hospitality ON, le transport y aura une place de choix.  RFI : À la tête de MKG et Hospitaliy ON, vos sociétés de conseils tourisme et hôtellerie, vous témoignez de cet incroyable changement : le transport s'invite à l'hôtel !   Vanguelis Panayotis : Oui, tout à fait. Le trajet comme expérience ! Et ce besoin de prendre le temps en considération. De plus en plus, ce temps de voyage fera partie de l'offre hôtelière.  La crise du Covid-19 a sans doute accéléré les choses ?  Certainement, mais la tendance était déjà là. La preuve avec l'investissement du groupe hôtelier français Accor, ces cinq dernières années, dans plusieurs moyens de transports. En premier lieu avec le nouveau label autour du train Orient-Express, un train considéré comme un palace sur rails ! Ce train était hors service depuis trente ans, parce que trop vieux, d'où l'idée de participer à sa réhabilitation pour de nouveaux voyages réservés à une clientèle de luxe.  Accor, présent en France et dans le monde entier, vient d'innover avec des offres d'escapades moins coûteuses  Tout à fait. Le groupe profite de l'ampleur de son réseau d'enseignes (Mercure, Ibis, Novotel…) dans toutes les régions de France pour proposer des voyages. Ces séjours peuvent être réalisés étapes par étapes en van par exemple. Accor a signé un partenariat avec le constructeur Mercedes et ça marche vraiment très bien. Pour vous, le van, le train, et autre, correspondent à une vraie nouvelle demande ?  C'est certain. L'époque veut que les gens, donc la clientèle, se sentent de plus en plus déconnectés. Grâce au transport pour leur séjour en hôtel, le voyage les reconnecte à l'authenticité. Cela vient nourrir des émotions, crée des souvenirs. C'est cette expérience que la clientèle recherche aujourd'hui.  Avec une valeur service qui y trouve une renaissance, elle aussi, puisqu'il faut suivre ces escapades de découvertes. C'est là une réelle nouvelle façon d'aborder le service de conciergerie. Il faut de la logistique, couvrir les besoins des clients. Ils sont personnels (visites, garde d'enfants, lingerie…), mais ils concernent aussi les offres locales plus générales, comme la gastronomie. C'est un véritable réservoir d'idées et de potentiel.    Une recherche d'authenticité propre aux jeunes générations, françaises et étrangères ?  C'est un phénomène mondial ! Avec une grande partie en France, et chez nos voisins européens. Cette demande explose aussi aux États-Unis ou au Canada. Je reste persuadé qu'avec les levées des confinements et l'ouverture de la Chine et des pays alentours, nous allons voir émerger des offres en Asie.          Le train, les minicamions… Et le groupe Ritz-Cartlon, qui peut faire profiter à ses clients des croisières du même nom.  Les croisières Ritz, pour le concept de palace voguant. De même, le groupe américain Four Seasons vient d'acheter son deuxième avion.  Le but est de monter une minicompagnie aérienne ? Ces avions sont proposés pour des séjours express, pendant le séjour à l'hôtel : pour visiter les régions ou pays avoisinants, voire en voyage initial, entre le pays de résidence (du touriste) et le pays de l'hôtel. Pourrions-nous imaginer à l'avenir des offres avec des chambres d'hôtels ou des voyages jusqu'à l'hôtel en cargo de marchandises ?  Pourquoi pas, cela a bien existé dans le passé ! D'ailleurs, pour l'anecdote, l'un des fondateurs du groupe Accor, Paul Dubrule, est allé aux États-Unis avec un billet de navire de fret, le moins cher pour voyager dans les années 1950. Si une telle possibilité existait aujourd'hui, je suis persuadé que cela marcherait.   L'envie de moins polluer la planète fait apparaître toutes ces nouvelles idées, que vous appelez « nouvelles mobilités douces » de l'hôtellerie.  On vient de le voir en France avec les polémiques sur les jets privés des footballeurs. Ce qui était possible hier ne le sera plus demain. Aujourd'hui, les avions ou les véhicules des groupes hôteliers proposés à leur clientèle doivent répondre aux deux maîtres-mots : « expérience de groupe » et « authenticité ». L'avenir possible du séjour ou du transport en ballon en fait partie ? Oui, le séjour en dirigeable, on en parle ! Quel rêve de pouvoir profiter en famille d'une découverte d'une région ou d'un pays dans les airs... Aujourd'hui j'ai la chance d'accueillir un grand Patron : Philippe Bourguignon. Grand par son parcours, grand par ce qu'il a accompli et grand par sa simplicité. Après une longue carrière au groupe Accor, qu'il a contribué à construire avec Paul Dubrule et Gérard Pélisson, il est rentré chez Disney et à diriger Disneyland Paris, puis le Club Med, et enfin Davos : le World Economic Forum où il a côtoyé les grands chefs d'Etat ou tous les grands de ce monde. À la suite d'un congé sabbatique, il rencontre Steve Case, le fondateur d'AOL, et ensemble ils travaillent dans un fonds d'investissement Revolution aux Etats-Unis. Philippe m'a fait l'amitié d'interrompre ses vacances, pour me recevoir dans sa maison varoise, dans son bureau, où trônent des dizaines de photos avec ses amis : Bill Clinton, Mickaël Jackson, Julia Roberts, Elton John… Son Wall of Fame est impressionnant ! Mais ce que j'ai le plus apprécié, c'est sa sympathie, son humour, sa précision. Nous parlons évidemment de sa carrière, ses hauts et ses bas, notamment à la direction du Club Med, où ça n'a pas été facile. Vous imaginez une société cotée qui perd de l'argent, un fleuron français, des investisseurs étrangers… Ils nous racontent également la mise en place de Disneyland Paris. Les premiers coups de pioche, le choix des attractions, des hôtels, un concert privé avec Mickaël Jackson… Aujourd'hui, Philippe est sur le papier à la retraite, mais continue à travailler, et à faire uniquement ce qui lui plaît. Après des performances particulièrement impressionnantes sur la Grande Boucle, les autorités soupçonnent ces coureurs d'avoir eu recours à des produits dopants. Le doute plane également sur le Slovène Tadej Pogacar, 21 ans, qui remporte sans difficulté cette édition, marquée par de violentes chutes dans le peloton et des conditions météo parfois très difficiles. GUEST'S NAME: Adam RoyCULINARY SCHOOL AFFILIATION: Joliet Junior College, Joliet, ILBIO: Chef Adam Roy was born and raised in Chicago, IL, USA. He started his career as a dishwasher in a small 9 table restaurant in his hometown of Frankfort, Illinois. He continued working there for many years and eventually took over as chef. After working in various other food and beverage establishments, he decided to attend culinary school and enrolled in the nearby Joliet Junior College where he earned an associate degree in Culinary Arts.After graduating from Joliet Junior College, he worked his way around the United States including being employed as a pastry cook in Chicago and a hot kitchen cook at the famous Mount Washington Resort in New Hampshire. Eventually the travel itch took over and he took a private chef's position on a luxury yacht that sailed the Mediterranean Sea including stops in Greece, France, Italy and Spain.His career continued in other areas of the globe when he was hand selected for a mini-ambassadorship and a 1-year exchange program in Germany, which is where Chef Roy learned the German language. Adrienn Tomcsanyi joins the show this week. Currently living in Helsinki, Finland - Adrienn grew up in Budapest, Hungary. The first time Adrienn got introduced to the bartending industry was back in her high school days when she studied hospitality and management back in the mid to late 2000's. It was during this time that Adrienn had an opportunity to travel to Poland and to Finland as an exchange student. This allowed her to expand her knowledge about bartending and other languages. While in Poland, Adrienn got her first job in the Industry working in a hotel bar called the Novotel Hotel. While working at Novotel, a Polish bartender taught her a few classic cocktails such as the Daiquiri, Mojito and Bloody Mary. It was at this time that Adrienn discovered she had a passion for cocktails and turn this love for drinks into a career.  With her studies completed in 2011, Adrienn decided that her best method for her to grow was to leave Hungary and move to another country. As a result, Adrienn moved to the North of Finland where she worked in an authentic Finnish Hotel bar for a year. Shortly thereafter, she moved from the North of Finland to the capital city - Helsinki and try her luck out there. Adrienn spent several years there working in various restaurants and bars in the city centre. In 2017, Adrienn wanted to take her bartending knowledge and skills to the next level and attended a bartender school in her home town of Budapest Hungary. It was at this point that she expanded her knowledge in bar techniques, history of alcohol and spirts and learned a plethora of new recipes. Even though this was a short program, this provided Adrienn and solid foundation to take her bartending skills to the next level.  At this point, Adrienne got a job at an airport bar where she had the opportunity to take over the direction of the bar. She was given the task to develop the winter bar menu. As a result of the success of her first bar menu, she had taken over the creation of the seasonal and permanent bar menus as well. In 3 years, Adrienn created 3 large bar menus along with several seasonal ones. During this time, as bartending had originally started as a hobby in her life - this slowly turned to a lifestyle and even more like a love. Since that time, whenever Adrienn has had an opportunity, she continually takes more courses, meets new bartenders, visits bar shows, and grabs every single chance to learn more about her passion in life.  Recently, Adrienn got another job in the heart of Helsinki, in an Italian jazz bar and restaurant. Headlines Pre-conference activities: Goat BoF, FreeBSD Foundation Board Meeting, and FreeBSD Journal Editorial Board Meeting The FreeBSD Foundation has a new President as Justin Gibbs is busy this year with building a house, so George Neville-Neil took up the task to serve as President, with Justin Gibbs as Secretary. We also have a new staff member (https://www.freebsdfoundation.org/about/staff/): Scott Lamons joined the Foundation team as senior program manager. Scott's work for the Foundation will focus on managing and evangelizing programs for advanced technologies in FreeBSD including preparing project plans, coordinating resources, and facilitating interactions between commercial vendors, the Foundation, and the FreeBSD community. The Foundation also planned various future activities, visits of upcoming conferences, and finding new ways to support and engage the community. The Foundation now has interns in the form of co-op students from the University of Waterloo, Canada. This is described further in the May 2017 Development Projects Update (https://www.freebsdfoundation.org/blog/may-2017-development-projects-update/). Both students (Siva and Charlie) were also the conference, helping out at the Foundation table, demonstrating the tinderbox dashboard. FreeBSD Devsummit Day 1 & 2 (https://wiki.freebsd.org/DevSummit/201706) The first day of the Devsummit began with introductory slides by Gordon Tetlow, who organized the devsummit very well. Benno Rice of the FreeBSD core team presented the work done on the new Code of Conduct, which will become effective soon. A round of Q&A followed, with positive feedback from the other devsummit attendees supporting the new CoC. After that, Allan Jude joined to talk about the new FreeBSD Community Proposal (FCP) (https://github.com/freebsd/fcp) process. Modelled after IETF RFCs, Joyent RFDs, and Python PEP, it is a new way for the project to reach consensus on the design or implementation of new features or processes. The FCP repo contains FCP#0 that describes the process, and a template for writing a proposal. Then, the entire core team (except John Baldwin, who could not make it this year) and core secretary held a core Q&A session, Answering questions, gathering feedback and suggestions. After the coffee break, we had a presentation about Intel's QAT integration in FreeBSD. When the lunch was over, people spread out into working groups about BearSSL, Transport (TCP/IP), and OpenZFS. OpenZFS working group (https://pbs.twimg.com/media/DBu_IMsWAAId2sN.jpg:large): Matt Ahrens lead the group, and spent most of the first session providing a status update about what features have been recently committed, are out for review, on the horizon, or in the design phase. A number of features that various people have or are in the process of building, were discussed with an eye towards upstreaming them. Features we want to have in time for 12.0 (early 2019) were also discussed. After the break was the Vendor summit, which continued the discussion of how FreeBSD and its vendors can work together to make a better operating system, and better products based on it After lunch, the group broke up into various working groups: Testing/CI, Containers, Hardening UFS, and GELI Improvements Allan lead the GELI Improvements session. The main thrust of the discussions was fixing an outstanding bug in GELI when using both key slots with passphrases. To solve this, and make GELI more extensible, the metadata format will be extended to allow it to store more than 512 bytes of data (currently 511 bytes are used). The new format will allow arbitrarily large metadata, defined at creation time by selecting the number of user key slots desired. The new extended metadata format will contain mostly the same fields, except the userkey will no longer be a byte array of IV-key, Data-key, HMAC, but a struct that will contain all data about that key This new format will store the number of pkcs5v2 iterations per key, instead of only having a single location to store this number for all keys (the source of the original bug) A new set of flags per key, to control some aspects of the key (does it require a keyfile, etc), as well as possibly the role of the key. An auxdata field related to the flags, this would allow a specific key with a specific flag set, to boot a different partition, rather than decrypt the main partition. A URI to external key material is also stored per key, allowing GELI to uniquely identify the correct data to load to be able to use a specific decryption key And the three original parts of the key are stored in separate fields now. The HMAC also has a type field, allowing for a different HMAC algorithm to be used in the future. The main metadata is also extended to include a field to store the number of user keys, and to provide an overall HMAC of the metadata, so that it can be verified using the master key (provide any of the user keys) Other topics discussed: Ken Merry presented sedutil, a tool for managing Self Encrypting Drives, as may be required by certain governments and other specific use cases. Creating a deniable version of GELI, where the metadata is also encrypted The work to implemented GELI in the UEFI loader was discussed, and a number of developers volunteered to review and test the code Following the end of the Dev Summit, the “Newcomers orientation and mentorship” session was run by Michael W. Lucas, which attempts to pair up first time attendees with oldtimers, to make sure they always know a few people they can ask if they have questions, or if they need help getting introduced to the right people. News Roundup Conference Day 1 (http://www.bsdcan.org/2017/schedule/day_2017-06-09.en.html) The conference opened with some short remarks from Dan Langille, and then the opening keynote by Dr Michael Geist, a law professor at the University of Ottawa where he holds the Canada Research Chair in Internet and E-commerce Law. The keynote focused on what some of the currently issues are, and how the technical community needs to get involved at all levels. In Canada especially, contacting your representatives is quite effective, and when it does not happen, they only hear the other side of the story, and often end up spouting talking points from lobbyists as if they were facts. The question period for the keynote ran well overtime because of the number of good questions the discussion raised, including how do we fight back against large telcos with teams of lawyers and piles of money. Then the four tracks of talks started up for the day The day wrapped up with the Work In Progress (WIP) session. Allan Jude presented work on ZSTD compression in ZFS Drew Gallatin presented about work at Netflix on larger mbufs, to avoid the need for chaining and to allow more data to be pushed at once.
