Neste magazine "Artes" debruçamo-nos uma forma de arte que faz parte do nosso quotidiano e que todos nós podemos -a certa altura- praticar: a gastronomia e mais concretamente a doçaria e a pastelaria. A conhecida 'chef' cabo-verdiana Alia dos Santos acaba de lançar o seu segundo livro de receitas, 'Sobremesas e Surpresas', uma obra que, como o título indica, apresenta diversos doces, bolos, sumos, gelados e também petiscos de Cabo Verde. Fundadora do conhecido 'Quintal da Música', na Cidade da Praia, um espaço que é simultaneamente uma sala de concertos e um restaurante que em 25 anos de existência se tornou um pólo incontornável da cultura do arquipélago, Alia dos Santos diz pretender dar a conhecer os saberes e os sabores do seu país. Em conversa com a RFI, ela fala dos momentos de convívio que a preparação de festas pode proporcionar, as reminiscências da infância ligadas ao 'bolo mármore' e ao doce de batata-doce e a importância de manter vivas as tradições gustativas do seu país. "O livro fala sobre a história da gastronomia cabo verdiana, mais concretamente doces. É um livro que traz receitas típicas de Cabo Verde e algumas internacionais, mas com mais destaque à nossa tradição e não só, sobremesas, petiscos, coquetéis, a famosa 'Banana Flambée" e também sumos naturais da terra", começa por dizer a 'chef' que ao detalhar o conteúdo das mais de duzentas páginas de delícias que tem a sua obra, explica ter optado por fazer uma edição bilingue português-inglês "porque Cabo Verde está por todo o lado (...) porque temos filhos de cabo verdianos que praticamente já não falam o crioulo e nem o português". A autora que confessa ter um gosto particular pelo 'bolo mármore' "porque o pai gostava muito de bolo de mármore e que se fazia muito em casa", também tem uma certa inclinação que lhe vem da infância pelo doce de batata-doce, "muito fácil de fazer, não leva muito açúcar". Aos bolos também liga momentos de convívio privilegiados durante a preparação de festas como baptizados e casamentos. "As pessoas reúnem-se para preparar a festa, não só para fazer bolos, mas também confeccionar pratos e cachupa, feijoada e outras coisas mais. As sobremesas também. Estar aí reunido com amigos, família e convidados, é muita alegria", diz. Ao evocar o seu percurso que a levou primeiro para a administração pública antes de enveredar em 1995 para a sua paixão pela culinária, a 'chef' confessa que no começo "foi desafiante". "No início comecei com poucos recursos, mas ao longo dos anos fui aprendendo com erros e também com outras pessoas, pessoas que têm mais experiência", lembra Alia dos Santos que dirigindo-se às jovens gerações diz "para não terem medo, porque muitas vezes a pessoa pensa que para ficar perfeito tem que ser logo à primeira. Não. Vamos começar com o que temos aí. Com o andar dos anos, vamos aprender a melhorar o trabalho. E não esquecer que a alma do sucesso está no amor pelo que a pessoa faz". Numa altura em que tem estado fora do arquipélago, em Portugal e nos Estados unidos para promover o seu novo livro, a 'chef' deixa antever o que será o seu terceiro livro, um projecto mais introspectivo, uma autobiografia. "Falo da minha infância, da minha trajectória na administração pública e a minha trajectória em dois espaços diferentes, porque antes de trabalhar no 'Quintal da Música', já tinha um outro espaço que é o bar-restaurante 'A Esquina', onde eu fazia também de tudo um pouco, desde a pastelaria e culinária. E veio culminar com o 'Quintal da Música', que é um espaço de cultura e da gastronomia", diz a autora.
