“The cascara is the better half of what the coffee plant has to offer. We see even greater potential with cascara and the last thing that should be done is throw it to waste.” -Paul Evers Episode Description: Coffee is one of the most loved beverages around the world. According to data, around two billion cups of coffee are consumed every day! It's not surprising, therefore, that it has become a multi-billion dollar industry. However, the question still arises, “Are we really utilizing 100% of coffee's agricultural value?” Coffee is made from coffee cherries. Yes! Coffee actually comes from a fruit. Each pulp covers two beans, sometimes one, called a peaberry. Processing starts with separating the beans from the “CASCARA”, or the pulp. The beans are then roasted, brewed, and extracted depending on how strong or mild you want your coffee to be. What happens to the pulp, you may ask? Because there is little demand, the cascara is left to ferment, converted to fertilizer or animal feed, or thrown into a landfill. Needless to say, that accounts for billions of food waste and millions of metric tons of carbon emissions. Thankfully, more and more companies are acting to solve a significant portion of this problem. One of them is Riff. If you’re a regular BevNET reader, you might recognize Allison and Stephen Ellsworth, co-founders of prebiotic soda brand Poppi, who triumphed in BevNET’s New Beverage Showdown 12 competition. Or you might recall them from their 2018 appearance on the reality TV show “Shark Tank,” in which they received a $400,000 investment from beverage industry luminary Rohan Oza. In both appearances, the brand was known as Mother Beverage and positioned as a line of sparkling apple cider vinegar drinks. Yeah, we’ve known each other for ages in the industry. It’s been ages since we’ve seen each other at the same time. [00:20] I know. It’s really good to see you. [00:22] So, we’re at the... live at the WIRe events today with... in Austin with IIeX. I have not been to Austin in literally over 20 years, and the city has completely changed. How long have you been part of WIRe? [00:36] I’ve been part of WIRe... I mean I feel like since the beginning. I started going to the first meetings in L.A. about ten years ago, which is when it started. And I’m really happy to be more fully engaged with the group than ever before. So, I’m the Los Angeles event lead in program. I’m also a mentor; I’m part of the Executive Group. We’re going to our Summit next month. So it’s become a really integral part of my professional life. I love it. [01:04] We’re going to dive into your business in just a minute, but I want to just focus a little bit on WIRe. Talk to me little bit about the Mentorship Program. What sort of person are you looking for to fill that seat? And the other side of it is the mentee. What kind of person is a good fit in that role? [01:22] Yeah, I think that anybody with ten plus years of experience in the industry, whether it’s all on the client or all on the supplier side, is a valuable mentor. And really someone that will help younger women navigate the corporation world. A lot of them are trying to come up in their business. So, they’re looking to get promotions; they’re looking to get raises. And that’s a difficult thing for anybody to navigate but especially young women, particularly if their organization is very male-dominated. So the WIRe mentors really have invaluable experience in that regard because they’ve all been successful enough to navigate that path, right? And then, in terms of the mentees, I mean we’re really looking for women that will not only benefit from the program but that will also continue the legacy of WIRe and, in a few years, turn around and mentor themselves and that are really committed to the program. [02:18] It’s an important work on both sides of it. What kind of time commitment is involved? [02:22] For me... Well, I’ve been with my mentee now for two years. [02:26] Wow. [02:26] Yeah, she had the option of leaving and going to somebody else, but she stuck with me, which was nice. So, we talk every month. We try to do it in person if we can but schedules don’t allow that. We usually have a list of objectives that we’re going through from short-term goals to long-term goals; so, we’re always addressing those, talking about them. And then I’m available to her if things arise. Yeah, but usually once a month. [02:55] So, shift gears a little bit. Alter Agents, tell me a little bit about what you guys do. [03:01] So, we’re a full-service market research consultancy. We’re really methodology agnostic, vertical agnostic. We do qualitative and quantitative. We work with large companies like Hyundai Motor America and Viking River Cruises. We work with smaller brands like Humm Kombucha and Evelyn & Bobbie. Really what we found is that our niche isn’t in a particular type of research or with a particular type of industry, but really more around those clients that need a more consultat...

You might have put time, money, blood, sweat and tears into building your brand, but at the end of the day it doesn’t belong to you. That’s the perspective of Christian Krogstad and Thomas Mooney, the co-founders of Westward Whiskey, which helped establish the rapidly growing American single-malt whiskey category. As part of a wide-ranging conversation included in this episode, Krogstad and Mooney explained that consumers, via their palates and wallets, are Westward’s true owners. “We share a belief that it’s Westward, not either of us, that should be famous,” Mooney said. “And that we want our whiskey to do the talking. Ultimately, brands belong to the people who enjoy them, not to the people who make the products.” Originally founded as House Spirits Distillery in 2004, Westward was one of several brands in a broad portfolio that included Aviation Gin -- since acquired by actor Ryan Reynolds -- and others. Following an investment from Distill Ventures, the venture capital arm of beer and spirits conglomerate Diageo, in 2018, the Portland, Ore.-based company shifted its primary focus to Westward, a single-malt whiskey that draws inspiration from Oregon’s deep-rooted craft beer culture. As part of our conversation, Krogstad and Mooney spoke about Westward’s origins and explained why it was important for them to develop a personal relationship prior to formalizing their professional one. Bend, the small, yet fast-growing city in Central Oregon, has become a haven for entrepreneurship. Although the local economy had been driven by the lumber industry for over a century, Bend has in recent years seen an influx of innovative companies -- from tech to food and beverage -- launched within its borders. According the office of Oregon’s Secretary of State, Bend registers more new businesses each year than any other city in the state. Entrepreneurs often point to the Bend lifestyle, which is steeped in outdoor sports, snow activities and craft beer, as part of the city’s appeal and why a variety of business and consumer publications have ranked Bend as one of the best small cities to live and work in the U.S. In a recent visit to Bend, we met with a few of its food and beverage entrepreneurs and community leaders to learn more about the reasons behind its emergence as a business capital on the West Coast. Humm Kombucha co-founder and CEO Jamie Danek says that after several years and lots of practice, she’s finally become a good listener. Danek admits that during her first few years at the helm she had a talk first, listen second approach to leadership, and, as a result, struggled as a manager. She eventually realized that for Humm to grow, she needed to evolve from being what she described as a “solopreneur,” who constantly put her voice ahead of others, into an attentive leader. “Listening is the number one thing you can do as a CEO or a leader,” she said in an interview included in this episode. “Listening to your staff, listening to your partners, listening to your investors -- just listening.” That change in leadership style helped accelerate the rapid rise of Humm into one of the top brands in the red hot kombucha category, with sales more than doubling last year. It would be fair to say that things are going well for Country Archer. But it wasn’t always that way. A maker of clean-label meat snacks, the brand’s flagship jerky line is the fastest growing in its category among natural retailers, and the company recently announced $10 million in new funding from its primary investor, Monogram Capital. Nevertheless, not too long ago, Country Archer faced rejection in the very retail channel in which it’s now the fastest growing; in fact, it had been written off as a “convenience store” product. While debate over the country's travel and immigration policies continues to dominate the news cycle, Christopher Kimball is thinking beyond borders. The founder of iconic cooking show “America’s Test Kitchen,” Kimball believes that all food has a cultural value with the potential to bypass walls and transcend politics. “You almost can experience a culture through the food,” he said in an interview included in this episode of Taste Radio. “There’s context around [a] recipe, and you learn a lot about the people. Kombucha started out being a healthy, effervescent tea sold at natural and health foods stores—and it was expensive. That is, until Humm Kombucha came along. Humm Kombu-cha is the brainchild of Jamie Danek and her partner, Michelle Mitchell. Back in the 90s Jamie had never even heard of Kombucha. She was busy climbing the ladder as a top-tier tech executive.She spent 14 years cultivating her IT recruiting firm and, although the money was good, she a felt like she was wearing “golden handcuffs." Then the stock market crashed in 2008 and overnight, Jamie’s business was decimated. As the major breadwinner in her family (which includes two kids), Jamie certainly thought about rebuilding, but she just couldn’t get herself to do it. Jamie shares with Linda the story of how, while she was playing tennis one day, she met Michelle who’d had come up with a tasty recipe for Kombucha. The two bonded over their fierce swings and their love of the beverage, which contains digestion-aiding probiotics , and the duo started sharing the tea with the stressed out community. “At that time, the local economy was terrible. We just knew drinking it made us feel better and we wanted to make everyone else feel better, too. VMG has invested in some of the hottest food and beverage brands in recent years, including Justin’s, Kind, Humm Kombucha, Vega, Spindrift and Pirate’s Booty, and the private equity firm isn’t done -- not by a long shot. The San Francisco-based company last year closed its fourth fund, giving it $550 million to spend on promising CPG companies.
