Hi Bakers, Don't you want to cut into a warm slightly sweet biscuit bread with a beautiful craggy top and tons of sweet dried fruit inside? Yes please, I say! I'll grab the butter and honey and we can dig in. I have no shame in saying I ate three pieces of bread during the taping of this episode because it was so darn good. This easy bake comes together quickly and you don't have to wait for the yeast to work since Irish Soda Bread uses baking soda and buttermilk to rise! Try this making this treat sometime soon and have it for breakfast, a midmorning snack, or anytime -Carolyn Gluten-Free Irish Soda Bread Makes one 9” round loaf Dry 3 1/4 cups Cup4Cup Gluten-Free Multipurpose Flour 1 cup gluten-free oat flour* 1 teaspoon sweet rice flour 3 tablespoons granulated sugar 1 teaspoon baking soda 1 teaspoon salt 5 tablespoons butter, cold Wet 1 1/2 cups buttermilk 1/4 cup applesauce, unsweetened 1 large egg 1 cup currants or raisins, lightly dusted with flour Preheat oven to 375F and set the rack in the middle position. Grease a 9” cast iron pan or baking dish. In a large mixing bowl whisk together dry ingredients except for the butter. Next, cut in butter and set aside. In a small mixing bowl combine buttermilk, applesauce, and egg. Add wet ingredients to dry and mix until the dough just comes together. Stir in currants to evenly distribute them. Then, gather the dough into a ball and knead it on a floured counter a few times until you can shape it into a round loaf. Transfer the dough to the baking pan and score an “X” lightly into the top with a serrated knife. Bake for 45-50 minutes or until the bread is done. Check the bread about 20 minutes into the bake for color and tent with foil if the bread is already browned. The bread is done when a cake tester inserted into the middle comes clean. Cool for 10 minutes and cut with a serrated knife. I like my Irish Soda Bread with butter and honey. The Multiple Heritages of Irish Soda Bread Presented by Lucy Long, PhD Soda bread, a quick bread using baking soda as the primary rising agent, is closely associated in the U.S. with Ireland. Its history and meanings, however, are much more complicated—and tasty—than the sweet loaf with raisins that is usually found around St Patrick's Day in March. This talk discusses the various forms this bread takes in Northern Ireland, the Republic of Ireland, and the U.S., exploring how it represents different notions of Irish heritage in each of those countries. Recipes will be made available. Lucy M. Long directs the non-profit Center for Food and Culture (www.foodandculture.org) and teaches adjunct in American studies, ethnic studies, folklore, nutrition, and tourism at Bowling Green State University in Ohio. With a PhD in Folklore and Folklife (University of Pennsylvania), she has been involved in humanities-based research on food as a medium for creating meaning, identity, and community since the 1980s. She has published extensively on food topics, including Culinary Tourism (2004), Regional American Food Culture (2009), The Food and Folklore Reader ( 2015), Ethnic American Food Today: A Cultural Encyclopedia (2015, 2016), Honey: A Global History (2017) and Comfort Food Meals and Meanings (2017) and has produced numerous documentaries and community programs on a variety of food-related subjects and issues. The show starts with some St. Patrick's Day inspired snacking. After supping the pot o' delicious gold (Yukon potatoes), Jana asks Mark what he thinks makes for a good partner. Conversation evolves into bodily functions, 'cause Mark is twelve years old. Next is technology and the recent loss of a pioneer in sound recording. And, Paranormal Corner brings up the rear *ding* with some famous and creepy hauntings in Ireland.
The luck of the Irish, wasn't about their cuisine but rather the propensity for miners of Irish decent during the gold rush to strike it rich. At House of Bread, we added our "lucky" ingredients to Irish Soda Bread to make one feel lucky to enjoy. Traditional Irish Soda Bread is made with flour, baking soda, soured milk, and salt-that's edible but just doesn't taste very good. At House of Bread, we took tradition and added, butter, buttermilk, raisins, caraway seeds for a full bounty of delicious flavor. This recipe will yield two loaves. 2 ½ cups of white all purpose or pastry flour (can use gold whole wheat for Irish Brown Soda Bread) 3 Tablespoons of granulated sugar 1 tsp of baking soda 1 tsp of baking powder 1 tsp of salt 1 tsp of caraway seeds (optional) Measure out dry ingredients into a mixing bowl and mix them thoroughly together. ¼ cup of cold butter Cube butter into small pieces and cut into dry ingredients with fingertips until it resembles pea size crumbles. Add in raisins and mix together: 1/2 cup of golden raisins (may substitute regular raisins or currants) In large pitcher or use well method. 1 cup of buttermilk. Can not substitute milk, well you can but you have to add a T lemon juice. The acid found in buttermilk reacts to bases — most commonly baking soda — creating carbon dioxide gas. 2 eggs Whisk the egg/buttermilk together and then add in your dry ingredients. Using your hands, mix until flour holds together like a biscuit or scone dough, not a cookie dough. Cut dough into two equal parts. Place on well sprayed cookie sheet and cut a cross shape on top. Egg wash the top, by scrambling one egg and brushing it on top. Bake for approximately 30-35 minutes at 350 degree oven. Happy Baking everyone! This National Adoption Month, meet Rosemary Caldwell Llewellyn! Rosemary and her twin brother Robbie were adopted from Peru at six months old. Their adoption was the first second-parent adoption by a gay male couple in the city of Los Angeles. Now a professional social worker, Rosemary reflects on her experiences growing up in a trans-racial adoptive family, her identity, and how her parents supported her through the years.
