Show Notes: https://wetflyswing.com/914b Presented by: TroutRoutes There's a stretch of the Midwest that a lot of anglers pass right by without ever realizing what's tucked into it. Beneath the farmland and rolling roads of the region sits one of the most underrated trout fisheries in the country. In this episode, John Van Vliet breaks down why the Driftless has become such a special place for anglers who love small streams, spring creeks, and big wild trout. We get into the unique geology of the Driftless, why the region fishes so differently from freestone rivers, and how a creek that looks too small to hold fish can surprise you with a twenty-inch brown. John also shares practical tactics for approaching new water, finding fish faster, and fishing these clear creeks without blowing your chances. This one is packed with useful takeaways whether you're planning your first trip to the Driftless or just want to become a better small stream angler.

We love to argue about food like it's simple—grass-fed vs. grain-fed, animal vs. plant, protein powder vs. "real food." But the truth is… we're barely scratching the surface of what food actually contains. In this episode of the ReThink Health Podcast, I sit down with Dr. Stephen Van Vliet (Utah State University), a researcher on the front lines of nutrient density, metabolomics, and regenerative agriculture. His lab is helping answer the questions most of us feel are important, but don't have clear, evidence-based answers for yet: Does food quality actually change what happens in your body? Does the way an animal is raised matter… beyond marketing labels? And what does "nutrient-dense" even mean when a food can contain thousands of compounds we don't track on a nutrition label? You'll hear why beef may contain tens of thousands of unique metabolites, how new metabolomics tools are changing what we can measure, and why "grass fed" isn't always as straightforward as people think. Dr. van Vliet also shares fascinating early findings from long-term human trials, looking at what happens when people switch from conventional to pasture-raised animal foods, including changes in omega-3 levels in the blood. It's a nuanced, science-forward conversation that skips the dogma and gets to what really matters: making food choices that support real health over the long haul. You'll learn: Why nutrition labels only tell a tiny part of the story What "nutrient density profiling" really means (and how it's measured) Why whole foods can act differently in the body than isolated protein powders The surprising reasons why some "grain-fed" samples can be more nutrient-dense than the least nutrient-dense "grass fed" samples What Dr. van Vliet's research suggests about omega-3s in pasture-raised meat, eggs, and blood markers over time The emerging role of phytonutrients in animal foods (and why liver may be especially interesting) The most impactful "health upgrade" you can make today If you've ever felt skeptical of nutrition debates that sound too black-and-white, this episode will feel like a breath of fresh air and a glimpse into where food research is heading next. Send us a textHow agricultural practices influence the nutrient density of foods, particularly meat, and the importance of hidden compounds beyond standard nutrition labels.TOPICS DISCUSSED:Nutrient density profiling: Labs analyze thousands of compounds beyond macros and vitamins; this “dark matter” includes phytonutrients that may support health despite not being essential.Phytonutrients in foods: Plant secondary metabolites like polyphenols act as antioxidants and influence pathways like mTOR; animals convert plant compounds into bioactives humans access via meat.Red meat definition: Refers to meats high in myoglobin, including beef and lamb; most meats are red in wild forms, but human intervention affects color and classification.Ruminant animals: Animals like cows that have multi-chambered stomachs to digest plants; this metabolism differs from non-ruminants (e.g. chickens), affecting nutrient profiles in their meat.Grass-fed vs. grain-fed beef: Grass-fed has higher omega-3 fats and phytonutrients from diverse plants; studies show it improves human omega-6:3 ratios and biomarkers from grass-fed, pastured-raised animals.Farming practices & variations: Plant diversity boosts beef nutrients.Upcoming research: Long-term trials on effects of pasture-raised foods on human health; interactive dashboards for farmers to profile nutrients and inform policy.ABOUT THE GUEST: Stephan Van Vliet, PhD is an Assistant Professor in the Department of Nutrition, Dietetics, and Food Sciences at Utah State University, where he directs the Center for Human Nutrition Studies, focusing on linking food production systems to nutrient profiles and conducting clinical trials on health impacts.Support the showAffiliates: Lumen device to optimize your metabolism for weight loss or athletic performance. Dr. Stephan Van Vliet joins us for an enlightening exploration of nutrition, agriculture, and human health. Our discussion navigates the often-overlooked complexities of food production, examining the nutritional differences between pasture-finished and grain-finished beef. We also uncover how maternal nutrition might set the stage for children's future dietary preferences. Dr. Van Vliet introduces the intriguing concept of the food matrix, emphasizing the profound impact of bioactive compounds in whole foods that go far beyond mere macronutrient content. As we venture into the emerging field of food metabolomics, Dr. Van Vliet reveals how metabolites in plants and animals can offer new insights into health optimization. The conversation highlights the critical role of dietary choices, particularly regarding the impact of diet on metabolite composition and the potential health benefits of shifting toward whole foods. Balancing plant-based and animal-derived diets also emerges as a focal point, underscoring the health potential of integrating both for optimal nutrient intake.
