Tortilla Soup By: The Jaroudi Family Serves 4-6 Ingredients: 4 cups of vegetable broth 1 - 15 can of black beans, drained and rinsed 1 cup shredded soy curls 3 Tbsp tomato paste 1 cup fresh or frozen corn 2 bell peppers, chopped half of a small onion, chopped 1/2 cup of salsa 1 tsp chili powder 1/4 tsp ground cumin 1/4 tsp ground garlic 2 tsp white miso paste Tortilla Strips: 2 whole wheat wraps or corn tortilla Optional: plant-based yogurt and fresh lime Directions: 1.) Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Cut the whole wheat wraps or corn tortillas into long strips. Bake for 3-5 minutes, then flip and bake for 3-5 more minutes. 2.) Add all the remaining ingredients in a large stock pot. Cook on medium heat until the peppers are soft. 3.) Serve with baked tortilla strips and an optional dollop of plant-based yogurt with a squeeze of fresh lime.

Paul Rodriguez was born in Mexico but raised in East Los Angeles. After finishing his military service, he went to college on the GI bill with the idea of becoming an attorney but developed an interest in comedy while taking elective courses. Paul honed his stand-up act at L.A.'s famous The Comedy Store while working as a doorman there, and got his break as an opening act for others at various concerts and universities. Television Rodriguez first appeared in a.k.a. Pablo, a 1984 sitcom produced by Embassy Television for ABC. Later in the same year he replaced Bob Eubanks as host of The Newlywed Game for a season. El Show de Paul Rodriguez was on Univision from March 2, 1990, to January 1, 1993. Film Rodriguez has appeared in several feature films, such as  Blood Work with Clint Eastwood, D.C. Cab, Born in East L.A., Tortilla Soup, Rat Race, and Ali, and has also performed voiceover roles for King of the Hill, Dora the Explorer, and Beverly Hills Chihuahua. Rodriguez has worked in other roles in the film industry: he directed and starred in the film A Million to Juan, and he produced and appeared in the 2002 comedy film The Original Latin Kings of Comedy.Paul has been recognized for his tireless charity work, which includes strong, avid support for the National Hispanic Scholarship Fund, Farm Aid, Leukemia Telethon, Project Literacy, and Housing Now, among many others. His son, Paul Rodriguez Jr. is a professional skateboarder, won the gold medal in the 2004 X Games Skateboard Street Competition.

Mary Sue Milliken is an American chef, restaurateur, cookbook author, and radio and TV personality with a focus on Latin cuisine in the United States.Milliken is a graduate of Chicago's Washburne Culinary & Hospitality Institute.After working together in Chicago and Paris, Milliken and her longtime collaborator, Susan Feniger, settled in Los Angeles where they founded the critically acclaimed City Cafe in 1981.[1] They eventually expanded to a larger space on La Brea Avenue, renaming the establishment CITY Restaurant. In 1985, they opened the Mexican restaurant Border Grill in the original City Cafe space, before moving it to Santa Monica in 1990. The restaurant later expanded to Pasadena (closed) and the Mandalay Bay Resort in Las Vegas.[2] Broadening their culinary horizons, Milliken and her partner opened Ciudad in Los Angeles in 1998. It's a fictional character by the name of FACO or FACOS. As we get ready to launch Season 3 of 10,000 TACOS, we introduce you to a new character on the show. It's a fictional character by the name of FACO or FACOS.  FACO represents the people who make it a habit to misrepresent what a TACO really is. But it's not just tacos.  Why are we doing this? Well, it's because there is a problem. Not a big problem, but it's not a Chardonnay problem either - meaning it's not a small problem. The problem is that there are a lot of people who misrepresent what a TACO is. While doing so, they also distort Mexican cuisine along with the culture. FACO(s) spread falsehoods that eventually become a thing.  Some of the episodes this season will cover some of the following falsehoods: 1. TAQUITOS 2. Soft Shell Tortilla (Taco) 3. Tortilla Soup 4. Taco Seasoning 5.
