On this episode Erin dives into an exploration of cassava root, also known as a yuca. This is a new one for us both, never having cooked with it before. Fair warning, results are mixed! Let's get into it. Erin roasts the raw cassava by first boiling it and then tossing it in oil and seasonings. They turned out not terrible, but a bit dry and too starchy for our taste. In our opinion, just eat potatoes. They're much better. Or perhaps the cassava from the store wasn't fresh enough and just should have been eaten earlier. Who knows. She also tries a recipe called Pan de Yuca (cheese bread) using cassava flour. It's a bit like a small gluten-free cheese bun. These were pretty good fresh out of the oven, but they didn't keep well past the day they were made. We might make these again, knowing to eat them right away! You don't know how to cook with something new, or even whether you'll enjoy the flavour, until you try. Count on us to jump in and try anything! Luis Javier “L.J.” acquired 24 years of experience in Guatemala with Pollo Campero prior to helping grow the fast-casual chicken concept in the United States beginning in 2017. His experience and MBA (ESEADE — Escuela Superior de Economía y Administración de Empresas) served him well in his expanding role with the company as director of marketing, CFO, and ultimately today as CEO. In this episode, L.J. explains how he grew the concept in the U.S. to 99 units in California, Florida, Georgia, Oklahoma, Texas, and Washington D.C. “Successful growth comes from thinking small,” he says. “We are very customer-focused. We are in the service business after all. Food is simply the vehicle we use to serve.” Pollo Campero stands out in the crowded fast-casual chicken sector with fresh chicken broasted in a blend of Central American spices and served with rice, beans, and Yuca fries. The counter-service concept also offers drive-thru service at many of its units. “Keeping product quality as your number-one priority is most important as you expand,” says L.J. “But growth doesn't work without building a solid team,” he adds, explaining how the company's commitment to staff selection, training, and development helps Pollo Campero overcome labor market challenges. L.J. ensures his headquarters staff are involved in daily operations at the unit level. “The closer you are to your customer, the smarter you become," he says. “Today many restaurant operators grow for the sake of numbers, but we lead with passion and grow from the heart.”

(Día Nacional del Panadero en Ecuador) Nadie supo cómo había quedado embarazada la hija del jefe, porque ningún hombre la había tocado. No obstante, comenzó a formarse en su vientre un niño. El desarrollo físico e intelectual del niño, al que llamaron Mani, fue tan asombroso como su nacimiento virginal, pues comenzó a correr y a conversar en cuestión de días. Corrió la noticia y se desató una ola de peregrinajes desde los más remotos rincones de la selva. Todo el mundo quería conocer al prodigioso Mani. El día de su primer cumpleaños, a pesar de no haber padecido de enfermedad alguna durante todo ese año, dijo: «Voy a morir», y murió. Pasó algún tiempo y una planta desconocida brotó en la tierra donde lo sepultaron. Bajo el cuidado de la madre de Mani, que la regaba cada mañana, la planta creció, floreció y fructificó. A los pájaros les encantaba picotearla, porque volaban luego dando tumbos por el aire, aleteando en espirales locas y cantando como nunca. Un día se abrió la tierra en la que yacía Mani. De allí el jefe arrancó una inmensa raíz carnosa. La ralló con una piedra, del polvo hizo una pasta, la exprimió, encendió un fuego y coció pan para que comieran todos. A esa raíz la nombraron mani oca, que significa «casa de Mani». De ahí viene el vocablo mandioca, que es el nombre que se le da a la yuca en la cuenca amazónica y otros lugares de América.1 ¿En qué se parecen ese mito indígena y la historia de la encarnación de Jesucristo? En que tanto el niño Dios como el niño Mani nacen milagrosamente, adquieren fama de prodigiosos y anuncian de antemano su muerte. Pero difieren esencialmente en que el Hijo de Dios ya es el pan de vida antes de su muerte, sepultura y resurreción, mientras que el nieto del jefe no llega a ser el pan de yuca sino hasta después de su muerte, sepultura y reencarnación. Tal vez una de las razones por las que el niño Jesús nació en Belén haya sido que en hebreo Belén significa «casa de pan». Lo cierto es que en su ministerio público Jesucristo se presentó como el pan de vida. A la multitud que lo seguía le dijo: «Yo soy el pan de vida. El que a mí viene nunca pasará hambre..., y... no lo rechazo.... Porque he bajado del cielo no para hacer mi voluntad sino la... de [mi Padre] que me envió: que... es que todo el que reconozca al Hijo y crea en él, tenga vida eterna, y yo lo resucitaré en el día final.»2 Si bien Mani mitológicamente nació, murió y reencarnó para alimentarnos físicamente, Cristo realmente nació, murió y resucitó para alimentarnos espiritualmente. Trabajemos, pues, como nos exhorta Cristo, «no por la comida que es perecedera, sino por la que permanece para vida eterna»,3 que Él mismo quiere darnos. Ésa es la única comida que va acompañada de una póliza de seguro a todo riesgo contra el hambre.
