Host Oneika Raymond takes the A-line up to Washington Heights, a loud, vibrant Dominican neighborhood in New York City, to join local Hector Espinal for a walking tour of his hometown. Hector is the co-founder of We Run Uptown, the first-ever running group in uptown Manhattan, and the perfect guide to get to know the streets of Washington Heights.     Oneika joins Hector at Locksmith Bar, a popular local watering hole and the meeting point for We Run Uptown's weekly Monday runs, before heading out to visit some of Hector's favorite sights, restaurants and running routes in the area. To kick off the tour, Hector shows Oneika a local shortcut to avoid walking some of the steepest hills in all of Manhattan as they make their way to St. Nicholas Ave., a bustling thoroughfare at the heart of Washington Heights. St. Nicholas Ave. They stroll down the busy avenue towards 182nd St. to check out its famed street vendors, including Nidia Rivera, who's been selling the Dominican dessert habichuelas con dulce for over 30 years. Then, Hector and Oneika stop for a traditional Dominican breakfast at La Casa del Mofongo. Over the meal, Hector and Oneika connect over their shared Caribbean roots, as Hector shares what it was like for him growing up in Washington Heights. We learn about la cultura of the neighborhood and its people, and the welcoming running culture that Hector's helped create here. Hector and Oneika end the day at J. After documenting her family's Puerto Rican recipes and preserving the island's disappearing foodways for years, Illyanna Maisonet shares over 90 recipes, including Arroz con Gandules and Mofongo and Pinchos with BBQ Guava Sauce, in her first cookbook, Diasporican. Maisonet joins us to talk about working on the cookbook and food memoir as well as the research that went into it.   Arroz Chino Boricua Makes 4 servings If you read my column, you know about the impact, especially gastronomically, that the Chinese have had on Puerto Ricans. When you go into a Chinese restaurant in Puerto Rico and order a seemingly innocuous combo plate, what you receive might baffle a Statesider: an entrée, fried rice, and french fries or tostones. Yes, Chinese cooks have figured out Puerto Ricans' love affair with double starch and meat. You can also add peas and carrots to this mixture. 1 tablespoon canola oil 1 small yellow onion, diced 1 cup chopped jamonilla (such as Spam) 1 pound 16/20-count shrimp, peeled and deveined 2 scallions, chopped 2 teaspoons sofrito 2 eggs, beaten 2 cups Basic White Rice 1/4 cup soy sauce Add the canola oil to a sauté pan and place over medium heat. Add the onion and cook for 2 to 3 minutes, or until translucent. Add the jamonilla and sauté for 2 to 3 minutes, or until browned, then stir to mix well. Add the shrimp to the pan and sauté for 1 to 2 minutes, or until just pink, then add the scallions and sofrito and mix to combine. Add the eggs, let settle for 1 minute, and then scramble them in the pan for about 3 minutes. Add the rice, stir in the soy sauce, and keep the mixture moving for 5 to 7 minutes, or until the shrimp are thoroughly cooked. Serve the rice hot.

In this episode of Chef AF, I chat with Trisha Pérez Kennealy, owner and culinary educator at the Inn at Hastings Park in Lexington, Massachusetts about growing up in Puerto Rico, earning her MBA from Harvard Business School and her passion for hospitality and community. Pérez Kennealy is the owner of the Inn at Hastings Park, a chef and culinary educator and a proud Puerto Rican, Jewish woman. After earning her MBA from Harvard Business School and a lucrative career in finance, she earned her Diplôme de Cuisine and Diplôme de Pâtisserie at Le Cordon Bleu Culinary School in London. In 2014, Pérez Kennealy opened the Inn at Hastings Park after realizing that her hometown did not have one. The Inn is the only Boston-area Relais & Châteaux hotel. I ask Pérez Kennealy about her journey to hospitality, she says, “Well, it actually does go back to Puerto Rico and how it was that my family ended up in Massachusetts, my father has always worked in a very traditional accounting firm, and then left and started his own company. So he's been an entrepreneur since that point and he was always my inspiration. I always knew that I wanted to have my own business.” We talk about the Inn being a center for food and community with high-touch hospitality plus things the team at the Inn does that is high-touch. Pérez Kennealy was able to provide culinary education to her guests and community during the pandemic, with the launch of Monthly Immersive Culinary Weekends and Monthly weekday Supper Club.
