Our guest on this week's Menu Talk is Isabel Coss, executive chef at Pascual, a contemporary Mexican restaurant in Washington, D.C.A native of Mexico City, Chef Coss actually studied ballet—not cooking—as a way to get into arts school and become a filmmaker. But once there, she realized she was more passionate about cooking than film, and enrolled in culinary school.She quickly landed an externship at Pujol, the Michelin-starred Mexico City restaurant on the list of the World's 50 Best Restaurants. She worked at the pastry station, honing her bread baking skills. In 2011, she brought those skills to New York City where she was hired as a pastry chef at Empellón, Chef Alex Stupak's renowned Mexican Restaurant, followed by a position at Enrique Olvera's Cosme, another award-winning Mexican restaurant.Isabel Coss in front of Pascual. | Photo by Alex Lau.In 2020, Chef Coss moved to Washington, D.C., and overhauled the pastry program at Lutèce, a notable French bistro in Georgetown. Coss's culinary skills have landed her on lists like Food & Wine's Best New Chefs in America and as a semifinalist for a James Beard Best Chef Mid-Atlantic award. Su libro Ecuador: leyendas de nuestro país recopila relatos tradicionales del folclore ecuatoriano, con ilustraciones de Pablo Pincay, y forma parte de la colección de la Smithsonian Libraries. Además de su labor como escritora, Graciela Eldredge es maestra y terapeuta de Reiki, y reside en Quito, Ecuador. My guest today is underwater Portrait Photographer , Jennifer Tanksley-Coss. Jennifer grew up eating, breathing, and drinking the film industry, having been introduced to it through her stepfather's business in camera rentals and production in Germany. Her career began straight out of high school, where she quickly excelled as a High Speed Camera Technician, working on commercials and motion pictures across Europe. At the time, she was one of the sales support members on the manufacturing side of the business, contributing in R&D as the product line began to grow. Jennifer's expertise led her to join Local600, marking the start of a 15-year career as a camera assistant in Los Angeles-before choosing to leave her work in the industry to concentrate on raising her children. When they were old enough for her to return to work- she realized she couldn't go back to what she was doing before - and at 43 created a whole new career by herself, and for herself! One where she was finally able to express her vision in a creative way through photography . This week, we are thrilled to welcome Coss Marte to the show! Coss Marte is an entrepreneur from the Lower East Side of Manhattan. By the age of 19, he was running a multi-million dollar drug dealing operation, which eventually led to his incarceration.While in prison, he experienced a pivotal moment when doctors warned him about his poor health. Determined to change his life, he developed a fitness routine using only his body weight and the confines of his cell. He lost 70 pounds in six months and helped 20 other inmates improve their fitness.Upon his release, Coss founded Conbody, a prison-style boot camp fitness program that employs more than 50 formerly incarcerated individuals. Por último José Ramón Cossío indicó por qué es incorrecto decir que la elección de personas juzgadoras como se plantea en México es similar al mecanismo que existe en Estados Unidos y al que fracasó en Bolivia.

While having his more solid bases in Cologne and Berlin, Sneffinsky also embodies the free spirit of a migratory bird and can often be found in many other parts of this beautiful world throughout the year following the universal flow that this life has to offer to him. Through his travels and his affinity for other cultures, Sneffinsky has been living in various subcultures over the years and therefore come into contact with many different musical genres. This is reflected in the musical diversity of his DJ sets, which can vary a lot in its roots, its speed and the overall mood. Whether it is a fiery club gig, a vibrant & bouncy festival day rave or a groovy sundowner session on a remote place near the ocean, there is one thing all of his sets have in common: They always come with personal intention & result in a unique and deep journey through sound & mind for the listeners and Saymon himself. The creative expression through music plays a crucial part of processing events and emotions throughout the different phases of his life. The biggest inspiration for Saymon has always been nature.
