Before you can make the quiche, you need to cook the squirrel. I developed this recipe on my own. Once you get it down, you can use the meat to make a variety of dishes: quiche, pizza, bbq sliders, soup, tacos, etc. Slow Cooked Squirrel Ingredients: 1-2 Squirrels, skinned and gutted As many cloves of garlic as you can handle 1 tbsp each of salt, pepper, and oregano Half an onion 1 peeled lemon (helps with gamey flavor - can also use lime, vinegar, or some other source of acid) 1 can of beer (I use NA Busch, as I don't drink alcohol) 6 cups of water  4 bullion cubes Steps: In a crockpot, place the squirrels in the crockpot. Add all other ingredients. Cook on low for 6-8 hours (fox squirrels tend to take longer than gray squirrels). Remove squirrels and place in a large bowl. Let the squirrels cool until you can touch them without burning your hands. Carefully remove the meat from the bones. Arms, legs, and back strap are the easiest and most enjoyable pieces, the rib, belly, and spine meat is much more difficult to get, is more stringy, and is optional. However, I always go for it.  Discard bones and remove any bbs from the meat if you find any (only a problem if you hunt with a shotgun). This meat can be used in a variety of dishes. Squirrel Quiche Ingredients: 3-4 strips of bacon A cup of diced green onions 1 diced serrano or 1 small jalapeno Salt & Pepper Tony Chachare's creole seasoning (or your own cajun blend of salt, pepper, oregano, paprika, and garlic powder). 1.5 cups of shredded cheese 6 eggs Pre-made pie crust Steps: Preheat oven at 375 In a skillet, cook the bacon until desired crispiness (mine is basically burnt) and crumble into small pieces.  Put the pie crust in a nine-inch pie pan (it helps to let the crust warm up on the counter for 20-30 minutes beforehand. Add the bacon, green onions, squirrel, serrano, and 1 cup of cheese into the pan. In a separate bowl, beat the six eggs until smooth and consistent. Pour the eggs over all of the ingredients in the pie pan. Add the remaining cheese on top. Place in the oven for 40 minutes.  Let cool, slice, and then serve.

Listen in on this episode as we talk with Bruce & Erin Wilson. They live in California and have a son who has low verbal skills and has moderately, severe autism who is now 19 years old. Because of their love and concern for their son Jay when he was younger, Bruce and Erin created The Non Profit If I Need Help (IINH). The Wilsons were terrified about what would happen to their son if he eloped or became separated from them - because he would not be able to provide information about himself or how to reunite with his loved ones. So to help their son and others like him with communication issues, they created an affordable wearable iD utilizing QR code technology which connects to a database that provides information about anyone with a disability. The products and free service are an effective way to alert community members and first responders that the wearer is a person with special needs who needs help, and how to provide that help. Now that Jay is older, they still want to keep him safe, and If I need help has grown to 26,000 members internationally since 2014. They are vendors with 10 CA Regional Centers for Safety iD Kits with thousands of families served. Bruce is an active member of LA Found which is the LA county task force on wandering. They have trained over 1400 California Highway Patrol Officers about Autism in identifying it and de escalating situations. Who do they look to in times of trouble – and what do they want from those who lead them? In this Life & Faith, we explore an unofficial but significant part of any political leader's job: their responsibility to not only steer people through a crisis but also comfort them with empathy, compassion, and wisdom.  Regardless of whether we have a Prime Minister or a President, we also want our leader to be a pastor to the nation. Tim Costello, Senior Fellow at CPX, explains the role of the pastor and how former Australian Prime Ministers have inhabited that role over time. Erin Wilson, Professor of Politics and Religion at the University of Groningen in the Netherlands, explains how “civil religion” – the intertwining of religious symbols and language with the political state – accounts for the “priestly role” of national leaders. Ask questions like:How long does it take you to go from first round interview to offer? What is your offer acceptance rate? How many hours are you spending per hire? The average is 300-400 hours, but can be 30-40 if done well. What is your churn rate in your pipeline (people accept other jobs - or choose to not continue)? Start small!Start with a user story, not a full job description. An example user story starts with just a few questions: User story: 4-6 questions to make you think a little bit.What's the business need behind this hire? We had the fun opportunity to sit down with the 3rd graders at The Independent School (of which all three hosts are alumni) and they got to share their favorite fun facts about Wichita. Each year the 3rd graders at TIS learn about different Wichita topics as a project and so they wanted to share with us some of their knowledge! Why the world needs refugee organisations - both secular and religious - to work together for good. --- "There's also this implicit assumption [in Western societies] that religion is somehow the source of all conflict. What that forgets is that religion is often also a source of peace - it's an inspiration for people to engage in peace-building activities." According to the UN, an unprecedented 65.6 million people around the world have been displaced, of them 22.5 million have official refugee status, and of those, half are under the age of 18. The numbers are staggering - and the work of nations and organisations that help and support refugees all around the world is monumental. Erin Wilson is Associate Professor of Religion and Politics at the University of Groningen in the Netherlands, and one of the editors of The Refugee Crisis and Religion: Secularism, Security and Hospitality in Question. The book details the ways in which the current global refugee crisis intersects with important but largely neglected questions of religion. In this episode, we talk refugee policy, the role faith-based organisations have to play, and the problem with a narrative that dominates the refugee space - the Muslim refugee as a threat to the secular/Christian West. "I think at the heart of the matter there's a very simple question: are we prepared to see these people as the same as us - as deserving of the same kinds of quality of life and wellbeing as we are?
