The fourth of many from the New York State Cider Festival haul, Dan samples Hudson Valley Farmhouse Cider Northern Spy single varietal. Hudson Valley Farmhouse Cider Northern Spy STYLE: Cider – Traditional (single varietal)ABV: 6.5%AVAILABILITY: 12 oz bottlesStats above taken from the brewery’s bottle. Appearance Brilliant, clear, and golden, with some small bubble carbonation. Aroma Brush and tree bark/leaves in front of a rustic apple quality. Taste A bit of fruity apple juice sweetness, but finishes very dry with some earthy and sharp notes on the mid-palate. Mouthfeel Medium body with minimal carbonation and smooth mouthfeel. Overall I love Northern Spy-based ciders as well as getting to try single varietal ones in general. This is a treat on its own, but you can have this with a variety of lunch options (nothing too spicy), but I was feeling a grilled chicken sandwich with portobello mushrooms and roasted peppers. Marc Sheehan has long been interested in the history of food. A graduate of the Culinary Institute of American in Hyde Park, N.Y., the Massachusetts native worked at Blue Hill at Stone Barns, Dan Barber's farm, restaurant, and hotbed for culinary innovation in upstate New York, before working at Menton, a French-Italian restaurant by Barbara Lynch. Previously, he earned national acclaim at Loyal Nine in Cambridge, Massachusetts.There he served food based on what people cooked in the region from the Colonial era onward—not what was in cookbooks, which catered to a wealthy audience, but what normal people grew in their gardens. It turned out that they grew a lot of cayenne pepper, coriander and other robust flavors that were toned down by the likes of Fannie Farmer and other purveyors of food for the well-to-do.Now Sheehan operates Northern Spy, a restaurant in the Boston suburb of Canton, located in a copper rolling mill first opened by Paul Revere. Sheehan recently discussed the restaurant, which opened in December of 2020, as well as how the food that his ancestors likely grew up on is different than what you might have thought.

Drew Phillips opened the doors of Four Phantoms in Greenfield, Massachusetts in 2021. He began his fermentation career in the Pacific Northwest, and while waiting to open his own brewery, he took on the role as cider maker at Artifact Cider Project. Drew Phillips Known for his creative ciders and beers, Drew blends tradition with innovation, sourcing local fruit and experimenting with wild fermentation. Check out his talk on the making of Old Gods . In this episode, Drew shares how Four Phantoms' unique approach reflects the terroir of Western Massachusetts. Early Challenges of a Brewery/Cidery: Gaining a License Drew initially couldn't produce cider legally due to licensing restrictions in Massachusetts. After securing a farmer winery license, he started making cider alongside beer and mead. All ciders are crafted from Pine Hill fruit in Colrain, Massachusetts. Signature Ciders and Fermentation Techniques Late Harvest – 6.5% Apples (Spy, Golden Russet and Baldwin) Tamlane – 6% 100% Macintosh apples, aged on black birch wood, giving it a herbal, German liqueur note. Redfield – 7.7% 100% Redfield apples – A red-fleshed apple cider with natural acidity and structure. Chapin's Waltz – 8.5% A blend of Golden Russet, Baldwin, and Northern Spy, co-fermented with low intervention. King of the Wharf – 7.5% A Mac-based cider aged on rum-soaked oak chips, giving it a smooth, warming finish. Old Gods – 8% Inspired by Finnish farmhouse brewing, fermented on black birch. Dock sitting for the July 4 extended weekend means we've got books to talk about! Hannah pulled Peter Heller's "The Guide" off the camp shelves and found herself thinking, "the writing is so insanely beautiful." Pretty high praise. Heller even makes fly-fishing enthralling — she read it in a day. Meanwhile, Sam was consumed for multiple days with Lev Grossman's brand-new "The Bright Sword," a new take on the Arthurian legend that runs a thousand pages or so, but still reads quick. If you're a "Magicians" fan, you'll love this — even if things are getting more and more earnest nowadays.  Next up is "Trust Her," a follow up to Flynn Berry's "Northern Spy," a domestic story of the IRA in the 1980s. Hannah loved the first book; this one could have gotten started a little quicker. Sam had no such qualms about "Banal Nightmare," an early candidate for his favorite book of the year. Dang, it's funny. Halle Butler can bring it. Hannah is less enthused by "One of Our Kind," by Nicola Yoon, which just was too predictable and familiar to land, despite great sentence-level work. Hanif Abdurraqib's "There's Always This Year," on the other hand, is an important work you probably need to read right now if you're interested in explorations of Black culture. Sam loves it. So much to chew on this week!

This week, Brad Page from Colorado Cider Company in Denver joins Paul to try ciders from his esteemed cidery. Colorado Cider Company is the oldest operating cidery in the state. Owners Brad and Kathe Page have also been planting cider and heirloom variety apples and pears at their property in Hotchkiss since 2012. Some of their most well-known products include the Glider, Dry Glider and Ol' Stumpy, produced in 2011, but they're also known for our unique lemon grass/dry hopped Grasshop-ah as well as other botanical favorites such as Pome Mel (Cyser with rosemary and Lavender) and their session cider Radl'ah. The first cider on the list is the Colorado Cider Company's Block One Radler. This cider is made from the first planting (2013) of eleven plus cider and heirloom apple varieties at their orchard in Hotchkiss, Colorado. CCC are trying to determine what traditional apples will grow at altitude and produce unique flavorful ciders. They are happy with this first Block One harvest and think you'll like it too! The 11 heirloom apple varieties are: Yarlington Mill, Golden Russet, Ellis Bitter, Major, Michelin, Kingston Black, Dabinett, Northern Spy, Foxwhelp, Brown's Apple, and Wickson Crab. Shilpa Ray released her album Teenage and Torture in 2011 on Knitting Factory Records and found her a fan in Nick Cave who started telling music journalists she was a favorit. Cave brought her on tour as support and recorded the song Pirate Jenny with her. Then Cave hired Shilpa to sing backup on his Bad Seeds tour. Shilpa has also served as main support for Man Man and Acid Mother's Temple as well as the opening act for Elvis Costello, Patti Smith, and A Place to Bury Strangers. Shilpa just released her new album Portrait of a Lady via Northern Spy.

Esta semana, en una nueva sesión de Rebelión Sónica, los invitamos a escuchar música de “Hope”, el nuevo trabajo del trío liderado por el multifacético guitarrista estadounidense Marc Ribot, Ceramic Dog. Lanzado el 25 de junio pasado por el sello Northern Spy, se trata del cuarto álbum de la banda, que completan el bajista Shahzad Ismaily y el baterista Ches Smith. Ribot comentó sobre “Hope” que “cuando comenzaron estas sesiones de grabación en la última semana de mayo de 2020, no había salido de mi casa para ir a ningún otro lugar que no fuera la tienda de comestibles en más de dos meses. No había tomado un taxi ni el metro. Había perdido a varios amigos a causa del COVID-19”. Agregó que “cuando con mis compañeros Ceramic Dog descubrimos una manera de grabar, entramos al estudio por separado, nos sentamos en habitaciones separadas y aisladas desde las que no podíamos vernos, comunicándonos a través de micrófonos y auriculares”. En la parte final del programa, viajamos algunos años al pasado en el catálogo de Ribot, para escucharlo con material del LP en vivo de 2014 “Live at the Village Vanguard”, esta vez, junto a su Marc Ribot Trio integrado por el bajista Henry Grimes y el baterista Chad Taylor. Semana a semana, Rebelión Sónica se transmite por radio Rockaxis los miércoles a las 10, 17 y 23 horas -se repite los domingos a las 19-, con la conducción de Héctor Aravena.

He was a sideman in the David S. Ware quartet and also for Roscoe Mitchell's Note Factory before making the decision to concentrate on his own music. Since then, dozens of his albums have been released, mostly on the labels Hatology and Thirsty Ear. His latest album Cactus, recorded with drummer Bobby Kapp, is available now from Northern Spy.
