Drew Phillips opened the doors of Four Phantoms in Greenfield, Massachusetts in 2021. He began his fermentation career in the Pacific Northwest, and while waiting to open his own brewery, he took on the role as cider maker at Artifact Cider Project. Drew Phillips Known for his creative ciders and beers, Drew blends tradition with innovation, sourcing local fruit and experimenting with wild fermentation. Check out his talk on the making of Old Gods . In this episode, Drew shares how Four Phantoms' unique approach reflects the terroir of Western Massachusetts. Early Challenges of a Brewery/Cidery: Gaining a License Drew initially couldn't produce cider legally due to licensing restrictions in Massachusetts. After securing a farmer winery license, he started making cider alongside beer and mead. All ciders are crafted from Pine Hill fruit in Colrain, Massachusetts. Signature Ciders and Fermentation Techniques Late Harvest – 6.5% Apples (Spy, Golden Russet and Baldwin) Tamlane – 6% 100% Macintosh apples, aged on black birch wood, giving it a herbal, German liqueur note. Dock sitting for the July 4 extended weekend means we've got books to talk about! Hannah pulled Peter Heller's "The Guide" off the camp shelves and found herself thinking, "the writing is so insanely beautiful." Pretty high praise. Heller even makes fly-fishing enthralling — she read it in a day. Meanwhile, Sam was consumed for multiple days with Lev Grossman's brand-new "The Bright Sword," a new take on the Arthurian legend that runs a thousand pages or so, but still reads quick. If you're a "Magicians" fan, you'll love this — even if things are getting more and more earnest nowadays.  Next up is "Trust Her," a follow up to Flynn Berry's "Northern Spy," a domestic story of the IRA in the 1980s. Hannah loved the first book; this one could have gotten started a little quicker. Sam had no such qualms about "Banal Nightmare," an early candidate for his favorite book of the year. Dang, it's funny. Halle Butler can bring it. Hannah is less enthused by "One of Our Kind," by Nicola Yoon, which just was too predictable and familiar to land, despite great sentence-level work. Hanif Abdurraqib's "There's Always This Year," on the other hand, is an important work you probably need to read right now if you're interested in explorations of Black culture. Sam loves it. So much to chew on this week!

This week, Brad Page from Colorado Cider Company in Denver joins Paul to try ciders from his esteemed cidery. Colorado Cider Company is the oldest operating cidery in the state. Owners Brad and Kathe Page have also been planting cider and heirloom variety apples and pears at their property in Hotchkiss since 2012. Some of their most well-known products include the Glider, Dry Glider and Ol' Stumpy, produced in 2011, but they're also known for our unique lemon grass/dry hopped Grasshop-ah as well as other botanical favorites such as Pome Mel (Cyser with rosemary and Lavender) and their session cider Radl'ah. The first cider on the list is the Colorado Cider Company's Block One Radler. This cider is made from the first planting (2013) of eleven plus cider and heirloom apple varieties at their orchard in Hotchkiss, Colorado. CCC are trying to determine what traditional apples will grow at altitude and produce unique flavorful ciders. They are happy with this first Block One harvest and think you'll like it too! The 11 heirloom apple varieties are: Yarlington Mill, Golden Russet, Ellis Bitter, Major, Michelin, Kingston Black, Dabinett, Northern Spy, Foxwhelp, Brown's Apple, and Wickson Crab. Shilpa Ray released her album Teenage and Torture in 2011 on Knitting Factory Records and found her a fan in Nick Cave who started telling music journalists she was a favorit. Cave brought her on tour as support and recorded the song Pirate Jenny with her. Then Cave hired Shilpa to sing backup on his Bad Seeds tour. Shilpa has also served as main support for Man Man and Acid Mother's Temple as well as the opening act for Elvis Costello, Patti Smith, and A Place to Bury Strangers. Shilpa just released her new album Portrait of a Lady via Northern Spy.

Esta semana, en una nueva sesión de Rebelión Sónica, los invitamos a escuchar música de “Hope”, el nuevo trabajo del trío liderado por el multifacético guitarrista estadounidense Marc Ribot, Ceramic Dog. Lanzado el 25 de junio pasado por el sello Northern Spy, se trata del cuarto álbum de la banda, que completan el bajista Shahzad Ismaily y el baterista Ches Smith. Ribot comentó sobre “Hope” que “cuando comenzaron estas sesiones de grabación en la última semana de mayo de 2020, no había salido de mi casa para ir a ningún otro lugar que no fuera la tienda de comestibles en más de dos meses. No había tomado un taxi ni el metro. Había perdido a varios amigos a causa del COVID-19”. Agregó que “cuando con mis compañeros Ceramic Dog descubrimos una manera de grabar, entramos al estudio por separado, nos sentamos en habitaciones separadas y aisladas desde las que no podíamos vernos, comunicándonos a través de micrófonos y auriculares”. En la parte final del programa, viajamos algunos años al pasado en el catálogo de Ribot, para escucharlo con material del LP en vivo de 2014 “Live at the Village Vanguard”, esta vez, junto a su Marc Ribot Trio integrado por el bajista Henry Grimes y el baterista Chad Taylor. Semana a semana, Rebelión Sónica se transmite por radio Rockaxis los miércoles a las 10, 17 y 23 horas -se repite los domingos a las 19-, con la conducción de Héctor Aravena.

Flynn Berry is the author of two other novels, “Under the Harrow,” which won the Edgar Award for best first novel, and “A Double Life.” “Northern Spy” takes place in Northern Ireland as the tension between Catholics and Protestants has ratcheted up several notches. A single Catholic mother of an infant son, working as a producer in Belfast's BBC studios, finds herself increasingly drawn into dealings with the IRA through her sister, who had lived a double life for the previous seven years. In this interview Flynn Berry discusses how she came to write the novel, her writing process, and her history as an author of thrillers. Jason Stein is among the mere handful of improvisers who play the bass clarinet exclusively. Stein leads the acclaimed trio Locksmith Isidore as well as his quartet. He contributes to several of the leading bands on Chicago’s new-music scene and has brought a vital voice to the freest of free-jazz shows. Stein’s playing showcases an extraordinary expertise on the bass clarinet, which ranges from powerful post-bop lines to ear-grabbing wails in the altissimo range. Chicago writer Neil Tesser notes that “Stein’s playing has a rawboned swagger particular to Chicago jazz in all its manifestations – from the trad playing of Bud Freeman and Jimmy McPartland in the 20s, through the tenor titans of the 50s, through the adventurers who formed the AACM in the 60s, and right up to the city’s renowned modern cadre of new-music improvisers.” Stein moved to Chicago in 2005 and has since recorded for such labels as Leo, Delmark, Not Two, Atavistic, 482 Music, Clean Feed, Astral Spirits, Sunnyside, Ears, and Eyes, and Northern Spy. Northern Spy is a short story that weaves the tale of the early grafting of the apple known as the Northern Spy, Quaker values, and the Underground Railroad. Read and written by Ryan Monkman, for the new Cider Chat segment titled "Stories in Ciderville". For additional reading and inspiration look to the children's book An Apple for Harriet Tubman.   Northern Spy by Ryan Monkman About 200 years ago, somewhere in Upstate New York, a boy ran through the woods. He hid in a bush under a tree. Then, when no one found him, he stood up and grabbed an apple above him. He bit the apple then spat it out. It was horribly acidic. The boy ran back to town and convinced a friend to take a bite of the “wonderful” apple. Soon it was a game: try the apple, spit it out. But the boy’s father liked the acid. The two of them walked back to the forest and picked the tree clean. They put the apples in bins then put those bins in their root cellar. Everyday the father would have an apple with breakfast. Everyday the son would try to sucker a new friend. After a few weeks in storage, the apples grew sweet. The father didn’t like them anymore and the son’s game grew boring. So the crates sat, untouched and unloved, next to the potatoes. The boy’s mother found the apples in mid Spring. Somehow they still looked and tasted like apples after months underground. She took them to a church picnic. There’s a tradition in Quaker communities; speak boldly when the Spirit calls you to. A neighbor spoke and the town listened. That summer they propagated the wild apple. If you plant an apple seed, you’ll get an apple tree but the fruit will be different. With each generation the seeds morph and mutate. The apple changes. If you want to preserve the beauty of a varietal, you have to take a cutting of the original tree and plant the cutting. That’s what the town did. They sent a team into the woods to collect small clippings of the wild tree. Each cut was only two inches long. Those cuttings were then slipped into a piece of root from another tree then the two were planted together. The bottom half rooted in the ground, the top half bearing identical fruit to the wild tree. The grafted trees were divided throughout the town. Each family grew a handful of trees and the church planted an orchard. Eight years past. Then one day in May the town awoke to a bursting of pink flowers. That Summer they saw their first fruit. That Fall they picked their first apples. The boy, now a man, loaded up a wagon and headed South. Then another wagon followed. And another. That Winter the town was empty. The wagons would pull into a new town. The driver asked for the Station Master, dropped off a whack of apples, then left without another word. In each town the pattern repeated. When the wagon was empty the driver returned home, refilled, then hit the road again. By February the town was out of apples. Traffic on the Underground Railroad surged that Spring. One of the first tastes of freedom was a piece of fruit that never seemed to rot. Discover two cidermaking techniques that are also used in winemaking, called Maderisation and Bâtonnage. We delve into both of these topics in Part 3 of the Quarantine Quad Series called "Ask Ryan" with Ryan Monkman of FieldBird Cider, Ontario Canada answering questions from Cider Chat listeners. Maderisation: What is this technique and can it be used with cider? Bâtonnage: are there any short term benefits from bâtonnage or does one need to "stir up the barrel" for a long period (1 year at the least) to benefit from this technique? Listen Part 1 and Part 2 of the Quarantine Quad Series. Maderisation - The barrels are cooked - sometimes for years. Developing flavors called "maderised". If done well it can be delicious. High alcohol cider is best for maderisation - slower  bacterial growth. Cider that is has a low alcohol by volume  - likely to get organism spikes. FieldBird is planning to do a maderized cider from the 2020 harvest Northern Spy, fermented half way and fortified with apple brandy and let the barrel sit in a hot place. 17 Brix on the Spys (9%) ferment down half way and then add brandy. Getting 8% sugar. Sugar helps - creates the caramel flavor and provides an appearance of freshness. No MLF in the presence of sugar. Leave in cellar over the winter. Then leave the barrel outside all summer. 30 Celsius - 86 Farenheit. This will cause the maderisation The risk of maderisation is cooking a barrel to much The final product will be around 17-18%  Battonage: Is it worth it if you don’t have a full year to do Bâtonnage on a barrel? Nano proteins are the biggest benefit of Bâtonnage They release into the cider providing a perception of sweetness and body with out the sugar Need at least 9 months to a year to get the nano proteins There are short term benefits. Yeast produces less carbon dioxide and bubbles. They slow down after the first primary ferment. Fermentation may have stopped but there is still sugar left. Lees absorb off aromas, except for H2S rotting egg smell. Bâtonnage helps to maintain a reductive state. Full reduction - rotting smell is a type of reduction. Which helps protect the cider from oxidization and protect the flavor components. In wine, a Sauvignon Blanc, has rich tropical flavors which come from a rich reductive state, At FieldBird, they save lees in the freezer. Cracking - the freeze helps the lees cells break down. In 1996 Bellwether Hard Cider and Wine Cellars opened for business in a repurposed chicken hatchery in upper New York state in the Finger Lakes regions surrounding Lake Cayuga. Now in its 23rd year of business, this family operation makes both cider, wine and is now planning to get into distilling. Bill Barton of Bellwether Cider This chat began outdoors under the covered porch outside the Tasting Room as a soft rain fell. Bill began as a home fermenter making 5 gallon batches of wine and cider and then scaled up to a 1500 gallons when he first started the cidery. 190: Cider Revitalizes 1750 Colonial Orchard | Massachusetts

In 1968, Carol B. Hillman bought a colonial era estate that overlooked the Quabbin Reservoir, Boston's water source, in New Salem, Massachusetts.   Originally attracted to the home onsite which is a classic colonial style home with a fire place in every room and a large hearth for cooking, she and her husband set to task to renovating the home to its full glory. At the same time, she also began bringing the 2 orchards back. Carol B. Hillman serving cider The two orchards named "Lawerence and Clara" after Carol's first grandchildren are all standard trees. Many of the trees are over 150 years old. Many of the same people that Carol originally worked with are still with her today, like Steve Wiseman who helps with the orchard and New Hampshire pruner Brad Maloney. Brad considers the orchard his museum piece.  Over the past 30 years he has added his own special touch by using the water sprouts and bending them into what he calls Apple Pretzels, as seen in photo below. Apple Pretzels   During Franklin County CiderDays this orchard is open on both Sunday and Saturday to family and friends with workshops on all things apple and cider. This is always an outdoor fire, food and crafts. Carol has always called her fresh pressed apple juice "Cider" or "Sweet Cider" She destains the term apple juice, which to Carol means canned juice that is over pasteurizes and stripped of all the rich flavors that can only be found in orchard pressed juice. In 2019, the orchard became licensed to ferment cider into "hard cider". William Grote, an award winning cidermaker from Boston, travels out to New Salem each week to make cider. William Grote outside the CiderMill at New Salem Preserves and Heritage Cider  In short order, an outdoor space was made for visitors to sit in called the Cider Garden. He comes into the trade as an entrepreneur and owner of Tornado Seattle, a bar with a craft beer and spirits focus, also serving cider and food. Say’s Rick of his new venture with Newtopia Cyder that is both a cidery with Tastig Room, we are “making our own new American style”. He takes an engaging approach to educating and meeting the San Diego beer palate by having a set standard flight of ciders called “Four Core” Rick says, “I created a Four Core (flight of ciders) that hits every part of your palate. We use old world wine processes and blend them with new world beer ingredients” One side of the cidery is flanked with stainless steel tanks for making modern ciders. This variety can be made in 4-6 weeks and usually have a fruit or flavored component. The wall on the other side of the cidery has oak barrels stacked and filled with what Rick calls “Old World Heritage Cider”. The Tasting room has ample seating both indoors and outdoors. The taps were purposely design to be a bit high to facilitate a long pour as one would do when pouring sidra. Take home a can or crawler of cider of any of the Four Core Ciders. Join the Member Club and have access to all of the ciders being poured as a take home option. What to look forward to in the coming year from Newtopia Cyder? Distilling an Apple Jack Brandy in March 2019. Expansion into a 4000 square foot building area next door with a meat and cheese parlor too. There are 10 acres not on site but not too far away that is being used to grow cider apples. This location will be used as a destination site for weddings and events. Rick calls the growing Newtopia scene “a compound”. The feel though industrial is warm and engaging. Exactly what cider fans want in their cider compound. Plus, kayakers' slang, wooden spoon, Shakespearean knock-knock jokes, Sunday throat, celestial discharge, and mickey mousing. FULL DETAILS Whitewater rafting has a rich tradition of slang that includes such terms as boulder garden, strainer, and drop pool. An Indianapolis, Indiana, teacher and his class wonder about the origin of whistling in the dark, which means "to put on a brave face in a scary situation." As it happens, the teacher's band, The Knollwood Boys, recorded a song by the same name. A listener reports that the pronunciation of Novi, Michigan, is counterintuitive. It's pronounced noh-VYE. The manager of a cider mill in Rochester, Minnesota, is curious about the name of the variety of apple known as Northern Spy. The origins of its name are murky, but it was likely popularized by the 1830 novel Northern Spy, about a wily abolitionist. Other names for this apple are Northern Pie and Northern Spice. An Omaha, Nebraska, listener has a word for using Google Earth to fly around the planet virtually and zoom in on far-flung locations: floogling, a combination of flying and Googling. Quiz Guy John Chaneski has a quiz about 4-letter anagrams. For example, what letters can anagram into words meaning either "cruel" or "designation"? A historian in Indianapolis, Indiana, says a World War II-era letter from her father to her mother refers to running a sandy. It's a phrase that derives from poker, and the act of sandbagging, or in other words, "bluffing," an opponent. Locals pronounce the name of the town of Thoreau, New Mexico, as thuh-ROO. In Cantabrigian tradition, a wooden spoon was jokingly awarded to low achievers in mathematics. That practice later extended to other types of competitions. It's also key to a heartwarming story about a charitable organization that arose from a friendly spoon-swapping rivalry between English and Irish rugby teams. If you complain that something went down my Sunday throat, you mean that it went into your windpipe. To go down your Sunday throat may derive from the fact that just as Sunday is a special day of the week, the bite you swallowed went into an unaccustomed place. In kayakers' slang, a park and play is a part of a river where you park your vehicle closer to a river and enter the water to paddle around a particular water feature, then paddle back to your launch spot rather than continue downstream. If you make a wet exit, you end up in the water. As we mentioned earlier, knock-knock jokes were once a fad sweeping the nation. What we didn't mention is that there are quite a few Shakespearean knock-knock jokes. Such as: Knock-Knock. Who's there? Et. Et who? Et who, Brute? (Hey, don't blame us! Blame some guy named Duane.)   A caller from San Antonio, Texas, remembers a song her father, a World War II vet, used to sing: Around the corner and under a tree/ A sergeant major proposed to me / Who would marry you? I would like to know / For every time I look at your face it makes me want to go -- at which point the verse repeats. These marching songs are known as cadence calls or Jody calls. They apparently arose among American troops during World War II, when a soldier named Willie Duckworth began chanting to boost his comrades' spirits. Such songs echo the rhythmic work songs sung by enslaved Africans and prison chain gangs, which helped to make sure they moved in unison and also helped pass the time.   The Indianapolis, Indiana, caller who asked about running a sandy figures out the movie she saw that included that phrase: Action in Arabia. And sure enough, the expression is used by a character during a poker game. Who is she from home? meaning "What's her maiden name?" is a construction common in communities with significant Polish heritage. It's what linguists call a calque--a word or phrase from another language translated literally into another. From home is a literal translation of Polish z domu, just as English blueblood is a literal translation of the older Spanish term sangre azul. Celestial discharge, in medical slang, refers to a patient's death. The terms mickey mouse and mickey mousing can be used as pejoratives. In whitewater rafting, river left and river right refer to the banks of the river on either side when looking downstream. On today's episode I talk to free jazz pianist Matthew Shipp. Originally from Delaware, Matt moved to New York in 1984 and quickly became one of the leading lights in the New York jazz scene. He was a sideman in the David S. Ware quartet and also for Roscoe Mitchell's Note Factory before making the decision to concentrate on his own music. Since then, dozens of his albums have been released, mostly on the labels Hatology and Thirsty Ear. His latest album Cactus, recorded with drummer Bobby Kapp, is available now from Northern Spy.
