Sarah Thompson is the chef of Casa Playa in the Wynn Hotel in Las Vegas, Nevada. She was born in Boston, Massachusetts and is a Culinary Institute of America graduate who spent many years working in New York City at restaurants like Marea and Alder, but when taking a job with Enrique Olvera and Daniela Soto-Innes at Cosme, she fell in love with Mexican cuisine. When that restaurant wanted a variation of it called Elio in Las Vegas she was tapped as the executive chef. They opened right at the same time the pandemic hit, so after months of openings and closings and instability on the Las Vegas strip it closed. However, she was able to convince the Wynn to let her take over the space and serve her form of Mexican cooking.Casa Playa serves coastal Mexican food, but it's not attached to any specific region. She has no sentimental background with a grandmother in Michoacán or anything like that, so she doesn't try to insinuate that she does and just lets the flavors work together as she sees fit. She even whips the masa for her tamales with coconut oil. It's a very particular environment, running a restaurant inside of a casino. The way people dine is different. They often come in large groups. She has a late-night taco menu for those that want to stop in for a quick bite before during or after going to a club or some kind of attraction. The lighting is beyond her control at times. These unique attributes also give her an opportunity to do things a little differently. It's a really fascinating world in Las Vegas. I know it seems like a place I wouldn't like, but I've never really gone there for all of the money and excess and nightlife that it has a reputation for. I've always appreciated just the weirdness of Las Vegas which is everywhere, though sometimes you have to peel back what's on the surface.Read more at New Worlder.

Pat Cobe, senior menu editor of Restaurant Business, recently attended a milestone event for the town of Seguin, Texas: the debut of the first Applebee's-IHOP cobranded restaurant. With around 110 items, the menu is about as large of those of Applebee's and IHOP individually, featuring their greatest hits alongside collaborative mashups, like a Buffalo Chicken Omelet that Pat particularly enjoyed. Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, remarked that, although Buffalo chicken is everywhere, and spicy breakfasts are now quite commonplace, this is the first Buffalo breakfast item he has seen.He and Pat also discussed menu items that debuted at other chains, including caviar service that is now available at Sullivan Steakhouse and sister brand Eddie Merlot's. At $110 it's a premium offering to say the least, but the co-hosts observed that if there weren't demand for it they wouldn't have added it to their menus.There were also some interesting new collaborations this week, most notably Taco Bell introducing Birthday Cake Churros developed in concert with the New York City-based pastry shop Milk Bar. A couple of doughnut chains also introduced collabs of different sorts. Duck Donuts rolled out Sonic the Hedgehog-themed treats in celebration of the debut of Sonic the Hedgehog 3 on streaming service Paramount+. Meanwhile, Krispy Kreme rolled out more broadly movie-themed items, such as a Caramel Popcorn doughnut and a Blue Raspberry Slush doughnut in partnership with Hulu, apparently encouraging people to snack on the movie theater concession-inspired treats while watching their favorite shows at home. Bret also interviewed Sarah Thompson, executive chef of Casa Playa, a coastal Mexican restaurant at the Wynn Las Vegas, who discussed her approach to procuring top-notch ingredients and elevated cuisine while also appealing to the many guests who just want tacos and queso fundido without a lot of fuss.

Episode 279 Antarctic sea ice is melting at an unprecedented rate. A collapse like the one we're seeing was given just a 1 in 700 billion year chance of happening, based on climate models - we basically thought it was impossible. Melting ice in Antarctica will have global scale, knock-on ecological and climate consequences. To address the crisis, five hundred researchers met in Australia for an emergency summit for the future of the Antarctic. Sarah Thompson, one of the scientists at the conference, is working in Antarctica right now and shares her experiences assessing the damage in the region. Also hear from Sharon Robinson from the University of Wollongong, who explores how the ecology of the region is changing. A new type of brain implant technology is being developed that will allow direct access to a patient's brain in a more intimate way. Most devices place metal electrodes and wires into the brain, but this method is instead using living neurons to form a connection with the brain. Brain-computer interfaces are used to help treat conditions like ALS or stroke, as well as allowing patients to control technology with their mind. Researchers at the Science Corporation in California have tested their new method on mice - but can it be done in humans?
