Go ahead and grab the ingredients below before starting the episode.RecipeFor the rajma masala base2 tbsp ghee (or coconut oil)1 onion, finely chopped4 garlic cloves, finely chopped2in piece of ginger, peeled and finely chopped1 green chilli, finely chopped½ tsp ground turmeric½ tsp chilli powder1 tsp garam masala1 tsp cumin seeds2 x 400g tins pinto or borlotti beans1 x 400g tin chopped tomatoesFor the saag aloo topping2lb 4 oz small new or red skin potatoes (large ones cut in half)1lb 2oz cauliflower, broken into small florets, stalk and leaves roughly chopped1 ¾oz ghee (or unsalted butter)1 tsp cumin seeds1 tbsp black mustard seeds1 tsp ground turmeric7oz baby spinach, washedTo make the rajma masala base, heat the ghee or coconut oil in a large pan.Add the onion and cook for 10 minutes over a medium heat, or until soft and sweet.Add the garlic, ginger and chilli and cook for another 5 minutes.Add the spices to the pan and stir for a couple of minutes until it all smells fragrant.Stir in the tinned beans and their liquid, the tomatoes and 14fl oz water. Simmer for 25 minutes until the tomatoes are broken and you have a thick, gravy.Preheat the oven to 400F. Meanwhile, put the potatoes into a large pan, leaving enough space to add the cauliflower later. Cover with boiling water, add half a tablespoon of salt and bring to the boil. Cook for 15 minutes, or until the potatoes are almost cooked, then add the cauliflower and cook for a further 6 minutes. Drain well.Put the empty pan back on the heat, add 1 tablespoon of ghee, then add the cumin seeds, mustard seeds and turmeric. Cook for 1 minute, then add 3½fl oz water, the potatoes, cauliflower and half of the spinach.Stir to wilt the spinach and use the back of a spoon to crush the potatoes a little. Stir the rest of the spinach into the topping.Spoon the rajma masala mixture into a large baking dish. Top with the potato, cauliflower and spinach mixture. Melt the remaining ghee and drizzle over the top of the pie. Bake for 30-40 minutes, or until the filling is bubbling and the top is brown and crunchy in places. Today is a pretty special day in the Van de Elzen household as it's Pops or Opa's birthday. Don't ask me how old he is! I think he's either 86 or 87, but it doesn't really matter and more so, I'm sure he's not that fussed! This week at the farm we braved the wet and harvested a lot of our potatoes. We had to get them out as the ground wasn't drying up any time soon. So we have an abundance of potatoes right now. Which is all good as long as you store them in cool dark spots, with no direct sunlight they can easily last for 6 months or more. Making the potato a pretty versatile and sometimes very important vegetable. There is no other culture or cuisine that treats vegetables like potatoes with more respect than Indian cuisine. So this week we are very lucky! And with utmost respect I bring you Ash's from our favourite Indian restaurant Tandoori in Huapai. Bombay Aloo. A very tasty and easy potato curry. The only special ingredient you need to get is Kasuri Methi, but it is readily available for most Indian supermarkets and since it dried it will last a long time. Just store it in an airtight container. *Kasuri methi is dried fenugreek leaves that lend a delicious touch to homemade dishes. Bombay Aloo Cook time: 25 minutes Prep time: 5 minutes Serves: 4 6-7 medium potatoes 5 tbsp grapeseed oil 1 tsp cumin seeds 1 onion, peeled and diced 5 cloves of garlic, chopped 1 inch ginger, julienned 1/2 tsp turmeric 1/2 tsp garam masala 2 tsp kasturi methi dried chili powder to taste salt to taste coriander to garnish Peel and boil the potatoes. They should be firm not mushy when boiled. Heat oil, add cumin seeds and let them crackle, add chopped garlic and let it brown slightly. Add in the onions and when translucent, add in the ginger and continue to cook. Add in the turmeric, kasturi methi and potatoes. Let the get coated with the masala. Cook for a further 5 minutes and keep tossing. Then sprinkle over salt and garam masala. Toss for a couple of minutes and serve it garnished with coriander. Die Kartoffeln zerdrücken und die Zwiebeln, sowie Salz, Pfeffer (und ggf. Cayennepfeffer) dazugeben. Den Mozzarella in kleine Würfel schneiden. Das Kartoffelpüree zu Kugeln formen, eine kleine Mulde hineindrücken, Mozzarella hineingeben und die Kugel wieder schließen. 15 Minuten in den Kühlschrank. Danach die Kugeln erst in Mehl wälzen, dann in der Ei-Milch baden und schließlich in dem gewürzten Paniermehl rollen. Die Kugeln in den vorgeheizten Ofen schieben und 20 Minuten bei 200 Grad backen - ab und zu wenden. Ich habe eine Petition gestartet, um einen Garten auf dem Schuldach anzulegen. Dann schaffen wir Französisch ab und bauen in der Zeit unser eigenes Gemüse an. Ich habe aber erst sechs Unterschriften. Die meisten sagen, sie mögen kein Gemüse. In this episode of the Physician Grind Podcast we feature a brand new contributor, Sam Keif. A native of Boston, Sam shares with us his experience in health care at the time of the Boston Bombings.Sam Keif Bio:Sam has spent over a decade working in the healthcare industry. He started as a front desk attendant at his college's student health center and worked his way up to a management role at a world renowned academic hospital in Boston. In the span of his career he worked at institutions such as Boston's Children's Hospital, Dana-Farber Cancer Institute and Massachusetts Eye and Ear Infirmary. He's worked in roles directly within the operations, analytics, finance, billing, hiring and clinic management within the healthcare sector. After working for other for many years Sam got the itch to go out on his own and started freelance recruiting in the summer of 2016. In January 2017 Sam officially started "The Gaisce Group, LLC". "My goal is to help both hiring facilities and candidates reach their goals and find the right fit for them to be able to practice medicine to the best of their ability." "When you agree to work with me you get all of me. I pour my heart and soul into my work and I don't settle for mediocrity...ever."Why healthcare? "I've always wanted to work in a job where I can put my head on my pillow at the end of the day knowing I've helped someone."Sam lives in Braintree Massachusetts with his Wife Sabina, Son Barry, and their two dogs Gobi and Aloo. He is instructed that he is essential personnel and needs to report to the hospital. Road closures turn his usual 5 min commute into an hour. He arrived at work where he was responsible for coordinating care for cancer patients. The city suddenly closes and Sam is faced with a whole slew of new challenges. He continues to share the additional challenges he faced that day.
