Spike Gjerde has long been one of the most committed regionalists in American cooking — so committed that for a while his Woodberry Kitchen in Baltimore didn't serve lemon, black pepper, or vanilla because they don't grow in the Chesapeake Bay region. Instead he used local vinegar, fish pepper, and other ingredients from Maryland and Virginia.He has modified his stance on that and expanded his business into what he calls the Ecco Project, a group of restaurants that reflect food trends but with a regional accent. Woodberry has been transformed from a large restaurant with a small private dining room to an event space with a small restaurant. La Jetée — French for “jetty” because of its location — reflects the cuisine of the French region of Provence, but with Gjerde's own approach to local sourcing. Next up: Bar Dalí, a tapas concept with Baltimore flair. He's also teaming up with Johns Hopkins Medicine and University, substantially expanding his buying power and ability to support even more local producers than he had been.  Because the producer of Ginger put Sulfur Dioxide inside of the Ginger. Ginger is a common medicine for health care. However, polysaccharides, vitamins, and water inside ginger are suitable for microbial reproduction and are prone to mold. To prevent ginger from becoming moldy and maintain its bright color, it is common to fumigate ginger with sulfur. This process can easily lead to excessive sulfur dioxide, which is seriously harmful to the human body. The residual sulfur dioxide in herbal medicine can not only cause bad taste, but can also cause respiratory symptoms such as coughing, chest tightness, and throat irritation. At the same time, residual sulfur dioxide within ginger may react chemically with other ingredients, changing the composition or content of the effective ingredients, thereby affecting the quality of ginger. Therefore, it is necessary to conduct quality testing on ginger to determine whether it is sulfur-fumigated.  Buy Organic: Certified organic ginger is prohibited from being treated with synthetic sulfur dioxide.    Buy Local or "Living Ginger": Look for ginger at farmers' markets or in stores that sell "living ginger" (with green shoots still attached). It's less likely to have been treated for long-distance shipping.I tried to buy organic Ginger in Krabi/Thailand and even the organic Ginger was sulfur-fumigated…After I checked all the markets, there was only one old woman who sold organic Ginger.On the internet I could not buy organic Ginger and normally I can buy online nearly every vegetable. How to identify organic Ginger…The sulfur-fumigated Ginger has a strong and shinny peel, you can only remove the peel with a knife and this Ginger is white inside.The organic Ginger has a very thin peel similar to New Potatoes that goes off by itself, or just rub the peel off. And this Ginger is inside yellowish…Grow Your Own Ginger is surprisingly easy to grow in a pot from an organic rhizome. Peeling and Soaking: If you must use conventional ginger, peel it thoroughly and soak it in warm water for 15-30 minutes. This can help reduce surface-level residues.With which vegetables can you substitute Ginger?These vegetable provide a pungent, warming quality similar to ginger.    Galangal: The closest relative. It's a bit sharper, more citrusy and piney. Essential in Thai and Southeast Asian cuisine. Use it as a 1:1 substitute.    Turmeric (Fresh): Provides earthiness and a warm, peppery flavor. It won't be as sharp, but it gives a beautiful yellow color and is a powerful anti-inflammatory. From there we examined the mysterious phenomenon of celebrity wealth, which turns out to be mostly an illusion created by sunglasses, confidence, and someone else paying for lunch. Naturally this led us to government conspiracies, because once you realize famous people don’t have as much money as you think, it’s only a short hop to assuming someone is hiding something. We discussed survival skills for the collapse of society, a scenario everyone is very confident about despite having trouble assembling IKEA furniture. The Doomsday Clock came up, which is reassuring because it’s good to know the end of the world is being managed by people who own a clock. We also talked about zombies, because every serious discussion eventually circles back to zombies, the one apocalypse we’ve fully rehearsed thanks to television. Along the way we touched on personal health journeys, which mostly involve learning what foods now hate us, and food preferences, which are deeply emotional and should never be questioned. Black pepper emerged as a cultural force, gold mining as an economic mystery, and hibernation as an underutilized lifestyle choice for anyone tired of the news. In the end, the conversation proved that modern life is complicated, confusing, and possibly ending soon, but at least we can laugh about it while seasoning our food aggressively and considering a long nap.

We discussed survival skills for the collapse of society, a scenario everyone is very confident about despite having trouble assembling IKEA furniture. The Doomsday Clock came up, which is reassuring because it’s good to know the end of the world is being managed by people who own a clock. We also talked about zombies, because every serious discussion eventually circles back to zombies, the one apocalypse we’ve fully rehearsed thanks to television. Along the way we touched on personal health journeys, which mostly involve learning what foods now hate us, and food preferences, which are deeply emotional and should never be questioned. Black pepper emerged as a cultural force, gold mining as an economic mystery, and hibernation as an underutilized lifestyle choice for anyone tired of the news. In the end, the conversation proved that modern life is complicated, confusing, and possibly ending soon, but at least we can laugh about it while seasoning our food aggressively and considering a long nap.

These panini are so simple to prepare and so delicious, that they should become a summer staple when tomato season is in swing. Use only fresh mozzarella and luscious, juicy tomatoes. If you can't find focaccia, try country bread-just toast the slices in the oven at 350 degrees Fahrenheit for 5 minutes. (If the slices are too big, cut the 6 slices in half before toasting. These are the best bite sizes.) When the ingredients here are at their peak, all in top form, these are true works of art.

We're keen on those topped with a rough-cut marmalade, like orange or ginger. A drizzle of maple syrup on a still-warm split bacon scone is very good, too.

Tea has a special place in Ayurveda and brings healing and delicious benefits. With basic kitchen herbs and spices, you can create teas to heal digestion, cleanse the blood, assist in weight loss and balance the doshas. In this episode I share simple remedies using teas that you can make right from your kitchen. Here are a few recipes you can try today: Digestive Tea (tri-doshic)Cumin, fennel, star anise, lemongrass and coriander. Mix in equal ratios the spoon 1 Tbsp into hot water and allow to steep for 5-10 minutes. Enjoy. Immunity Tea (V/K)Cardamom, Cinnamon, Ginger, Black Pepper. Mix 1/2 tsp cardamom, 1/4 tsp cinnamon, 1/8 tsp ginger and a pink of black pepper in hot water. Sip while warm. Not great for Pitta. Blood Cleansing (tri-doshic)Cumin, Fenugreek black pepper, turmeric. Mix 1/2 tsp cumin, 1 tsp fenugreek, 1/2 tsp turmeric, pinch of black pepper in 8 oz hot water. Sip while warm. Weight Loss (V/K, small amounts for Pitta)Fresh Ginger, 3-4 cloves, licorice root powder. Boil water with 1/2 in fresh ginger and cloves. Turn off heat and allow to steep for 5 minutes. Mix in licorice root powder.
