Episode 2 of our Interview Series! This time we get to chat with the former CEO & Director of the Institute of Brewing & Distilling, Douglas Murray. If you want to have the best technical knowledge of whisky production and spirits production in general, the institute is where you MUST go. I had to sit down and interview them so us folks in the USA could learn all about this UK-based program. Charles and I also have a lot to discuss before we get into the interview though. He just got back from two weeks in Japan and has a lot to share. We also talk about some new bottles in the shop since he's been away and he blind tastes me on something that he got while in Japan. But, is it Japanese Whisky?? This episode was such a blast for me and I feel honored that Douglas took an hour out of his day to chat with me. Not only do we talk about the IBD (Institute of Brewing & Distilling) and all of the courses they offer but we also chat about Talisker, Dalwhinnie, and some of the other Diageo distilleries he's worked at. He was a part of creating the Talisker Storm release and was also one of the folks who realized they needed to put the worm tubs back in at Dalwhinnie when they were renovating and changed to shell & tube! Oh and we take over ten minutes to go over worms versus shell & tube condensers. Johnnie, known as John, owned a grocery store and became known as the guy that could get you things. By things we mean tea, fine wines, and spirits. He found his way into the whiskey world by blending the whiskey that he got in Creating something new John passed away in 1857 and his son, Alexander, took over when he was old enough In 1843, with railroads in place, Alexander was able to create a distribution network which shipped his whiskey worldwide. In 1862, sales averaged 100,000 gallons each year. “Old Highland Blend” was the first copyrighted blend to hit shelves in 1867 Johnnie walker Black label Johnnie Walker Blue was released in 1992 and hit the shelves at $150 a bottle. It was the most expensive whiskey on the market and Diageo believed it would sell well in bars as bottle service for companies wooing potential clients This bottle comes from hand selecting rare scotch whiskies and blending them. Only 1 in 10,000 casks make the cut. Diageo operates about 28 distilleries across Scotland, many producing whisky casks utilized for Johnnie Walker products. These include single malts like Clynelish, Talisker, Caol Ila, Lagavulin, Oban, Glendullan, Dufftown, Glen Ord, Glenkinchie, Craagganmore, Mortlach, Royal Lochnagar, Glen Elgin, Dalwhinnie, Glenkinchi, Inchgower and Cardhu. The large single grain distilleries in Diageo's portfolio include the massive Cameronbridge Distillery north of Edinburgh, the home of Haig Club Single Grain Scotch Whisky. Since this is a blended bottle and the best of the best, it is rumored that barrels that are as old as 60 years are used in Johnnie Walker Blue and barrels as young as 28 years. This bottle gives a whole new perspective on what blended scotch is and the quality alone that goes into it. Um es mit einem Wort zu sagen: Unterdurchschnittlich. Mit einer Kapazität von 2,5 Millionen Liter Alkohol pro Jahr erreicht die Whisky-Destillerie Lagavulin nicht den Durchschnitt der Malt Whisky-Industrie Schottlands. Selbst bei voller Auslastung wären es noch ein paar Tropfen bis hin zu 3 Millionen. Aber ich meine, was soll’s? Stattdessen kann sich Lagavulin mit einer anderen Superlative brüsten. Einer, für die andere Malt Destillerien viel geben würden. Denn der 16-jährige Lagavulin, das Zugpferd des Unternehmens, ist eines der meistverkauften Single Malt Whiskys. Auch in Deutschland. Monatlich rattern hierzulande mehr Suchanfragen nach „Lagavulin 16“ durchs Internet als für Bowmore und Dalwhinnie zusammen. Für viele ist dieser Tropfen der Einstieg in eine Whisky-Sparte, in die wir Deutsche besonders vernarrt zu sein scheinen: rauchige Single Malts. Ich schließe mich da nicht aus. Schließlich war es eben ein Lagavulin 16 Jahre, der mich vor vielen Jahren mit offenen Mund hat dastehen lassen. Gerade so, dass der Whisky nicht wieder hinausläuft, war ich geplättet von der Intensität dieses Bouquets. Diese Intensität an Raucharomen macht es für viele Whisky-Fans allerdings schwierig, weitere Aromen zu erkennen. Nuancen, die im Hintergrund warten, gehen dabei gnadenlos unter. Einen Lagavulin Single Malt zu verkosten, benötigt daher meiner Erfahrung nach mehr Fingerspitzengefühl als bei Whiskys so manch anderer Destillerie. In dieser Episode möchte dir daher zeigen, welche Noten und Nuancen, du bei Malts von Lagavulin entdecken kannst. Nine years ago, yes NINE, in 2010 I released a short 3 part series entitled Three Men In The Cairngorms which recorded an audio diary of Lee, Tony and myself as we headed into the Cairngorms for a weeks walking and wild camping.They were a very popular series of just three normal guys going for a wander and so when lee called me in summer this year asking if I wanted to join them again for another mini adventure I didn't hesitate.Once again Lee was in charge of the router and the plan was to spend the first 2 days up on the Cairngorm plateau at the Wells of Dee and then drop back down via Loch Eanaich back to Aviemore. Pick up our second rations and then catch the train to Dalwhinnie and head for Ben Alder Lodge, round to Lock Ossian and then walk into Fort William along Glen Nevis.However Storm Lorenzo had other ideas and this is part one of our adventure.

Serious accident last night closes the A9 in both directions
All of a sudden the sky clears on day five and after a cold night, we all enjoy a good days walking, fantastic views and in some cases sunburn! Such are the diverse expectations of walking in Scotland. We walk for a day with Dave Albon to Dalwhinnie and discuss the new Paramo jacket which appears to be coming the perfect Challenge outer layer this year. Shirley has a moment of madness but enjoys the day all the same. However Andy appears to have picked up a flu bug, so he and Kate camp early to rest and enjoy the solitude and wildlife.
