I don't usually like to play favorites, but this week's episode is a really special interview, especially for me personally. I LOVE kombucha. I mean love kombucha. And as you'll hear me mention during the interview, once I found Synergy Kombucha by GT's Living Foods, I was hooked, and dug deep into the story of the brand, how it's made, and started following founder GT Dave. I've listened to many interviews with GT over the years, so the chance to be the interviewer and spend some time with GT, is a personal dream come true. I also really thought that GT could offer a really interesting perspective to our community. He's had multiple offers to acquire his company over the years and has taken on no outside investment, which is incredible for a nearly billion dollar brand that owns 40% of the kombucha market. For almost 30 years, he's operated as the 100% owner and as you'll hear, has no plans for that to change. I think there's room for so many different operating models and perspectives in this space, and part of the fun of my job is getting to share different perspectives, hoping that you'll be able to find and take pieces that resonate with you as you build your own adventure. If you aren't familiar with GT's Living Foods, you've no doubt seen the ubiquitous tall glass bottles with a white lotus - the Synergy line is oven what people recognize. GT was the first person to bottle kombucha back in 1995 after his parents received a SCOBY from a friend after a trip to the Himalayas - and this was well before you could Google making kombucha! As you'll hear GT mention, he saw kombucha become part of his parents' lives, help his mom while recovering from cancer, and he decided to try to sell a few bottles to the local health store as 15 year old who had dropped out of high school. He then got the product into Erewhon and Whole Foods and has grown steadily - while other kombuchas have entered the market and now it's a whole separate category. GT continues to innovate in the living foods space with ancient mushroom elixirs, non-dairy water kefir, and raw, fermented, non-dairy, coconut yogurt. A Himalayan Mother SCOBY entered GT Dave’s home back in 1993, about 20 years before kombucha started to grow as a wellness trend in the Western world. They started brewing their own fizzy, fermented tea… and, honestly, it was kinda weird at first. But when his mom was diagnosed with an aggressive form of breast cancer — and then beat that cancer — GT started to take a closer look at this ancient Eastern brew. And the more GT learned, the more he knew that he had to make kombucha more accessible to everyone, everywhere.  GT first started brewing and bottling kombucha when he was only 15 years old, two years after they received that SCOBY, and this endeavor has since grown into the incredible GT’s Living Foods brand. GT Dave is the founder and CEO of the kombucha company GT’s Living Foods. In the late 1990s, he was the first to put kombucha on store shelves and his company currently owns 40% of the U.S. kombucha market. His first sale of kombucha (which he marketed as GT's Kombucha) was to Erewhon Natural Foods in 1995, when he sold two cases (24 bottles) which nearly sold out in the first day. From his bedroom, he would call buyers, distributors and store owners, using different voices to pose as different employees. Back when GT Dave, founder of GT's Living Food, single-handedly proved that there was a market for kombucha in the U.S., "probiotic" was hardly a buzzword. "Fortunately today, that hurdle or barrier is no longer there," Dave said on the Modern Retail Podcast. Kombucha is big business; sales exceeded $480 million in 2019, according to Nielsen. GT's Living Foods, which was founded in 1995, makes for a big piece of that pie -- 60% of it back in 2015, as he then told a profile writer. He wouldn't provide an update to that figure for 2020, but did speak to the challenges presented by the pandemic, especially early on. "There was a time where anything that was considered single serve, like our 16-ounce bottle, was basically dead," Dave said about March and April. In-store sales have since rebounded, and the company is taking its first steps in the direct-to-consumer space. "This quasi-subscription approach is something our fans have been waiting for a very long time and Covid kind of gave us that reason to explore it." GT's other strategies for surviving the downturn include emphasizing the product's possible health benefits (or at least, its healthful reputation) and communicating with retailers about their common interests in keeping supply flowing.

In the late 1990s, he was the first to put kombucha on store shelves and his company currently owns 40% of the U.S. kombucha market.   Dave was the first to put kombucha on store shelves. His first sale of kombucha (which he marketed as GT's Kombucha) was to Erewhon Natural Foods in 1995, when he sold two cases (24 bottles) which nearly sold out in the first day. From his bedroom, he would call buyers, distributors and store owners, using different voices to pose as different employees.   He continued to homebrew kombucha in his family home, which quickly outgrew the kitchen and expanded to the living room, and would sleep from 4 p.m. to midnight and work while his family slept. His mother Laraine helped him market the product by setting up tasting tables and sharing her cancer story.   GT's Kombucha continued to grow and in December 1997, when he was selling 30 to 50 cases per day, he rented a 2,000-square-foot industrial space in Gardena and began to hire employees. That was when Whole Foods Market called to inquire about distributing his kombucha. He initially hesitated, but ultimately decided to accept their offer, stressing the importance of preserving the integrity of his product. GT's Kombucha was now in stores across the Southwest and he rented another 2,000 square feet space in Gardena. The demand continued to grow as Dave expanded to more regions and he struggled to keep up with demand but as he insisted on brewing the traditional way with close oversight over every batch.   GT's Kombucha later rebranded as GT's Living Foods and now produces over one million bottles per year in its 100,000-square-foot campus in Vernon. Today, GT Dave is often referred to as the “king of kombucha.” But in late 1994, he was brewing small batches of the fermented tea in his parents’ kitchen. At the time, his mom was diagnosed with a highly aggressive form of breast cancer. When she healed, she shared with doctors that she’d been drinking her son’s very pungent, homemade tea that experts said helped her fight the battle. “I’m starting a new category.” It’s a familiar refrain often heard in the food and beverage industry, even if most times what’s spoken isn’t necessarily true. But in the rare cases in which an entrepreneur is indeed breaking new ground, the challenges are plentiful. GT Dave, the founder of GT’s Living Foods and a pioneer in packaged kombucha, has experienced  firsthand the difficulties of introducing an entirely new category to the market after launching his brandin 1995. For years, GT’s was the singular bottled kombucha brand and paved the way for what is now a thriving category that includes dozens of players. Reflecting on the first few years of his business in an interview included in this episode, Dave said that entrepreneurs should carefully consider consumer needs before launching a product that sits outside the lines of traditional food and beverage categories. “To me, looking back, the questions that need to be answered to define and determine if you’re creating a new category [are], ‘What is it that the consumer needs and wants?’ and ‘Why are they not getting it?’ and ‘How am I, the company, the brand owner, the pioneer… going to satisfy that need?’ he said.” Dave also discussed why being an “artistic sponge” supported GT’s development,spoke about his approach to working with competitors and emphasized the importance of authenticity in and around the bottle. You’ll hear from a true wellness O.G. on how he turned his family’s passion and their own health journey from sickness to health into a reality bigger than anything he could have imagined. From the humblest of beginnings--he did his best Doogie Howser as a 15-year-old in a suit with a briefcase and peddled his wares straight into the iconic Erewhon Market in LA--to a more recent spiritual journey he had, which gave him all the confidence he needed to grow, expand and eventually rebrand to bring his vision to its full funky glory. Here's some of what we covered with GT: ·     GT’s first exposure to kombucha was through a friend of his parents--she came back from the Himalayas with a culture, and shared it with GT's father who then brought it into the household.   It made everyone just feel good, and his parents were instant fans.  They started to drink it religiously and went from one batch to two to seven batches. Basically they started getting all cultural at home.  ·      Life at Beverly Hills High for GT was less Kelly and Donna, more Andrea Zuckerman and her library friends. **Those born after 1990 please google all of the above, including the word “library.”** His parents’ early prototype of this mysterious fermented tea used to sit on the dining room table and burp and bubble and fart to any lucky passerby. Social life was a bit of a challenge, to say the least. ·     As they watched his mother’s miraculous progress in her fight against cancer, he convinced his parents that there was something to this burping beauty and they should make a real go of it as a business. To which they replied, we have jobs—your move, kiddo. And so it began. ·     He started the business out of his parents’ kitchen, and with laser precision he painstakingly labeled every bottle, sold every order and set up every new account himself. Actually himself and the two alternate personalities he created so that folks would take him seriously.  ·     He considered himself barefoot and pregnant at the inception of the product—he was so invested and so willing to just go for it that he made the decision to not go to college, but to jump in with both feet and build a business, with his parents’ blessing. Wow, they really were super cool watching their barefoot and pregnant son. ·     To this day he considers himself a helicopter parent over his baby—this metaphor just keeps giving. He wants to make sure as it grows up, it goes to the right school and doesn’t marry the wrong dude. See above, “Dylan McKay.” ·     A quick lesson on Ayahuasca—it’s not a drug, it’s a medicinal preparation of a plant and a leaf. And powerful medicine at that—GT got a message during his ceremony that validated his work and inspired his rebrand, including a new name. Zoe then very generously tried to sell him the trademark to her own name, just in case. We’ll follow up on that at a later date. ·     As part of the new vision, he acquired CocoKefir, a similar business that started with a healing story and ended with a success—CocoYo was their love child. Groovy. ·     Like us, GT has watched the category he created grow and thrive, and then get infiltrated with some less-than-authentic coattail riders. We agreed that as much as brands must do the work to offer the information, the responsibility lies also with the consumer to educate themselves and understand the brands that are authentic (AHEM!) vs the ones that are just copycats. And since we ran out of time before we could play Fantasy Dinner Party, we asked GT to send his picks, so here you have it. Hope there's room at the table for us: "Jesus Christ, Madonna (the singer), George Washington, Mother Teresa, Ghandi, Marilyn Monroe, Steve Jobs, Oprah, Pablo Picasso, and my Mom. GT Dave is the founder of the world's most successful kombucha company, GT's Kombucha. A native Californian, he was born a vegetarian and raised by two very holistic parents who always looked at life—and more importantly, health—from a holistic perspective. His journey with kombucha began in 1994 as a teenager when his parents starting making and drinking it regularly. Not long after, his mother—who was healthy and active—was diagnosed with breast cancer. When weeks later her doctors downgraded her tumor diagnosis from cancerous to precancerous, they asked what she was doing differently in her diet. The answer was kombucha. Still, he had no idea that just a few years later he would be bottling 60 to 100 bottles in his house every morning before driving them to local stores in a van. Earlier this month the Taste Radio team met with GT Dave, the founder of best-selling kombucha brand GT’s Kombucha. In an interview recorded for this episode, Dave discussed the origins of GT’s, a brand he created 22 years ago and its pioneering role in the fast-growing and high-profile kombucha category. Recorded at the company’s headquarters in Los Angeles, Dave explained his belief that most "successful businesses come from a pure place" and stressed that brands should attempt to connect with consumers on a personal, intimate level.
