An informative discussion with Jeff Chilton on the medicinal properties of mushrooms for optimal health, preventative medicine and much more!!! Bio: Jeff Chilton, raised in Pacific Northwest, studied ethno-mycology at the University of Washington in the late sixties. In 1973 he started work on a commercial mushroom farm in Olympia, Washington. During the next 10 years he became the production manager, responsible for the cultivation of over 2 million pounds of Agaricus mushrooms per year. He was also involved in the research and development of shiitake, oyster and enoki mushrooms which resulted in the earliest U.S. fresh shiitake sales in 1978. In the late seventies Jeff was a founder of Mycomedia, which held 4 mushroom conferences in the Pacific Northwest. These educational conferences brought together educators and experts in mushroom identification, ethno-mycology, and mushroom cultivation. During this period Jeff co-authored the highly acclaimed book, The Mushroom Cultivator, which was published in 1983. In the 1980's he operated a mushroom spawn business and in 1989 he started Nammex, a business that introduced medicinal mushrooms to the U.S. nutritional supplement industry. Jeff traveled extensively in China during the 1990's, attending conferences and visiting research facilities and mushroom farms. In 1997 he organized the first organic mushroom production seminar in China. A founding member of the World Society for Mushroom Biology and Mushroom Products in 1994 and a Member of the International Society for Mushroom Science, Mr Chilton's company was the first to offer a complete line of Certified Organic mushroom extracts to the US nutritional supplement industry. Nammex extracts are used by many supplement companies and are noted for their high quality based on scientific analysis of the active compounds. Professor Paul Cotter on the scientific evidence supporting the benefits of fermented food and why these foods are great for gut health and the microbiome. A breathtaking conversation with GT Dave, entrepreneur and founder of GT’s Kombucha creator of the Global Bottled Kombucha category on living a vibrant life, bringing real kombucha to the world, fermented foods, mushrooms, plant medicines, future health trends and more Bio: GT Dave is an American businessman who is the founder and CEO of the Kombucha company GT’s Living Foods/ GT's Kombucha. In the late 1990s, he was the first to put kombucha on store shelves and his company currently owns 40% of the U.S. kombucha market. Dave was the first to put kombucha on store shelves. His first sale of kombucha (which he marketed as GT's Kombucha) was to Erewhon Natural Foods in 1995, when he sold two cases (24 bottles) which nearly sold out in the first day. From his bedroom, he would call buyers, distributors and store owners, using different voices to pose as different employees. He continued to homebrew kombucha in his family home, which quickly outgrew the kitchen and expanded to the living room, and would sleep from 4 p.m. to midnight and work while his family slept. His mother Laraine helped him market the product by setting up tasting tables and sharing her cancer story. GT's Kombucha continued to grow and in December 1997, when he was selling 30 to 50 cases per day, he rented a 2,000-square-foot industrial space in Gardena and began to hire employees. That was when Whole Foods Market called to inquire about distributing his kombucha. He initially hesitated, but ultimately decided to accept their offer, stressing the importance of preserving the integrity of his product. GT's Kombucha was now in stores across the Southwest and he rented another 2,000 square feet space in Gardena. The demand continued to grow as Dave expanded to more regions and he struggled to keep up with demand but as he insisted on brewing the traditional way with close oversight over every batch. GT's Kombucha later rebranded as GT's Living Foods and now produces over one million bottles per year in its 100,000-square-foot campus in Vernon. Dave has declined multiple acquisition offers and remains the sole owner of GT's Living Foods which is worth over $900 million and owns 40% of the U.S. kombucha market. A fascinating conversation with author of Ferment for Good, and Founder of The Fermentary, Sharon Flynn. We discuss Sharon’s love affair with fermented foods, helping her sick daughter get better from gut issues ,the challenges around making fermented foods commercially, homemade vs store bought ferments, Sharon’s easy Carrot Brine recipe, milk Kefir the probiotic superfood to transform your gut health and much more. Bio: Australian-born Sharon Flynn was living in Tokyo, teaching English at a university, more than two decades ago when she first learned about fermenting. An elderly Japanese neighbour and her family introduced Sharon to the joys of miso, tofu and eventually fermented vegetables. Many city moves later - she married a financier who moved with work regularly - Sharon found herself in Seattle. That's where she really caught the fermenting bug. She belonged to a Community Supported Agricultural Scheme and received so many little cucumbers that she recalls she had to learn to pickle! She moved on to cheese, yoghurt and bread - and was truly hooked after meeting the man regarded as the master of fermentation in the US, Sandor Katz. In the background here, her third daughter became quite ill. By this time the family had moved to Brussels and she found that antibiotics had left her daughter's system devoid of essential bacteria. Sharon says she read up more and more on fermenting - every culture has a version of some sort - and her daughter eventually regained her zest and good health. Fast forward a few years and Sharon found herself in Melbourne, this time sans her husband, with her three daughters. She learnt to make kefir, made her own ferments and started sharing these with friends. She tried to teach her friends, but quickly discovered that what they really wanted was for her to make it for them! So began her little business, The Fermentary. Her products quickly won a following, alongside acclaim in the restaurant world. Now, with new partner chef Roger Fowler, her business is not so little; they sell both wholesale to leading Sydney and Melbourne restaurants and retailers, as well as direct to their customers at farmers' markets. As well, Sharon conducts regular workshops in Victoria and beyond. Sharon was also fortunate enough to spend a fortnight in late 2015 undertaking an intensive, advanced fermenting workshop with Sandor Katz (described by The New York Times as one of the unlikely rock stars of the American food scene) at his home in Cannon County, Tennessee. Kriben Govender (Honours Degree in Food Science and Technology) and James Shadrach (Honours Degree in Psychology) have a groundbreaking discussion with Dr Gabor Somlyai on the role that the hydrogen isotope, deuterium plays in the growth of cancer cells and using deuterium depleted water as a cancer treatment. We also discuss using deuterium depleted water as a cancer prevention strategy and other benefits like improved gut health and athletic performance. Bio: Dr Gábor Somlyai graduated as a biologist from the University of Szeged in 1982. Between 1982 and 1990 he worked for the Department of Plant Pathology, Plant Protection Institute of the Hungarian Academy of Sciences. He had a scholarship from the Hungarian Academy of Sciences while studying for his PhD and defended his thesis in molecular biology in 1988. Dr Somlyai spent six months at the Georg-August University in Göttingen on a DFG scholarship after receiving his PhD. He followed that with a postdoctoral fellowship in the field of genetic engineering and gene mapping at the University of Missouri in Columbia, Missouri. In the wake of the Hungarian, Nobel-prize winning scientist Albert Szent-Györgyi – who said that the true cause of cancer should be looked for at the sub-molecular level – Gábor began his examining the biological importance of naturally occurring deuterium as a senior research fellow at the Hungarian Institute of Oncology in 1990. In 1993 Gabor established HYD Ltd. for Research and Development (now HYD LLC. for Cancer Research and Drug Development) to carry out cancer research and drug development based on the proprietary procedure called deuterium depletion. Dr Somlyai served as the scientific director of HYD Ltd. between 1993 and 1997 before becoming the CEO of the company. In 2012 he also began serving as the General Director of HYD’s parent company, HYD Pharma Inc. His book, Defeating Cancer!, was published in Hungary in 2000. It has since been published in Romania, Japan, China, South-Korea and the U.S.A. Gábor is a holder of numerous international patents, an author of more than 40 scientific publications, and is a highly sought-after speaker at international conferences. Kriben Govender (Honours Degree in Food Science and Technology) has a mind-blowing conversation with Dr Laszlo Boros from The Deuterium Depletion Centre on the dangers of excess deuterium and strategies to naturally deplete deuterium from your body for optimal health. We discuss the impact of deuterium on our mitochondria, gut and microbiome. Bio: Dr Boros holds a Doctor of Medicine (M.D.) degree from the Albert Szent-Györgyi School of Medicine, Szeged, Hungary. Dr Boros is currently a Professor of Pediatrics, Endocrinology and Metabolism at the UCLA School of Medicine, an investigator at the UCLA Clinical & Translational Science (CTSI) and the Los Angeles Biomedical Research Institutes, and he is also the Chief Scientific Advisor of SiDMAP, LLC. Dr Boros studies functional biochemistry for drug testing that involves library screening, lead optimization and in vitro and in vivo phenotype profiling. The core technology involves studying natural and disease/drug-induced variations in stable non-radiating harmless isotope variations via cross-talk among metabolites in living systems with 13C-glucose as the labelling substrate. Dr Boros is the co-inventor of the targeted 13C tracer fate association study (TTFAS) platform to study deuterium as an oncoisotope and its depletion by mitochondrial matrix water exchanges to prevent oncoisotopic cell transformation by deuterium. Dr Boros trained as house staff in his medical school in gastroenterology after receiving a research training fellowship from the Hungarian Academy of Sciences. Dr Boros was a Visiting Scholar at the Essen School of Medicine in Germany and also worked as a Research Scientist at the Ohio State University, Department of Surgery, in the historic Zollinger-Ellison laboratory. Dr. Boros is the recipient of the C. Williams Hall Outstanding Publication Award from the Academy of Surgical Research of the United States (1997), the Richard E. Weitzman Memorial Research Award from the University of California (2001), the Excellence in Clinical Research Award from the General Clinical Research Center at the Harbor-UCLA Medical Center (2004) and Public Health Impact Investigator Award of the United States Food and Drug Administration (2011).
