How to Make Your Own Deli Meats

In Episode 92, your host, Lee Uehara (way-ha-rah) takes you through making your own deli meat using chicken breasts. She does mention bologna, but says that's another process for another episode. Basically, all you're doing is slow-roasting a marinated piece of meat! (The basic idea is the same for most types of meat, BTW.) RECIPE: Chicken breasts Marinade: honey, onion powder, garlic powder, salt and black pepper. Let it hang out in the fridge for at least one day. Then, slow roast them for about 1.5 hours at 260 degrees F. Check the internal temperature so that it's at least 166 degrees F. Lee's trick to slicing the meat into thin slices: put the cooled-down chicken breasts in the freezer for at least 45 minutes. You don't want to freeze them but get them to be firmer, more solid for easier slicing. *That's especially if you're using a knife and not a meat slicer or slicer attachment with your food processor. For bologna, which will be talked about in another episode, basically you've got to make a meat pureé with cold water and about a 1:1 ratio of meat to fat. You'll need casing, which you can get at Sausage Maker. Then, you can smoke it, roast it with a water bath or cook it in a hot water bath. The secret ingredients for bologna are mace, nutmeg and possibly coriander. Well, Lee's point is that whatever you do, keep it short, new, simple and keeps you feeling good about yourself. Major Tip: It could be a simple as making your bed! Really. Listen in to hear Lee share how she makes her bed in under one minute – so easy anyone can do it! Again, the point is to take small steps to enter the new year instead of feeling down about not having done all those things you thought you were going to complete - there is still time! Oh, and if you're accepting of yourself, non-judgmental, don't do anything. Just say, “Hello Self! Welcome to 2020!” LOL. Reiterating: Do something that's new, small, takes less than an hour to do, perhaps something that's fun - and most definitely something that makes you feel good about yourself! Lee goes to...Lexington, Kentucky to give an AAP/WOC talk, "Avoiding Newbie Mistakes" for the Lexington Podcasters group run by Jennifer Longworth of Bourbon Barrel Podcasting.Then, Andy and Lee move on and talk about the terms "Asian" versus "Asian American." Which do you use? Does either bother you? Let us know and reach out at @aapodcasters. Food Talk: Andy eats fried grasshoppers - or is it caramelized duck tongue? He told friends that if they nominated his personal show for a business podcast award, he would eat one of those foods. During a previous conversation about her toddler songs (more about those in the episode) Lee told Jen about EFT, Emotional Freedom Therapy, and they did an impromptu session. It was life-changing for Jen! After having guilt most of her life about everything (mostly things no one else would think about feeling guilty for) Jen was able to ditch the guilt and knew you had to hear about EFT. EFT is relatively new, (1980s) but amazing technique that can help conquer most of our problems including: Stress Anger Guilt Weight issues Physical ailments People who annoy you (and who doesn't have one of those?)   We also talked about Lee's toddler songs. Young children need guidance, and sometimes they don't want to do what we need them to do. so Lee created special songs for parents to learn to motivate them to follow directions.
