It's about relaxing and taking time away from the daily rush to enjoy life's quieter pleasures. And yet, Trine finds the time to write cookery books (over 20 so far), and run cookery lessons from the kitchen in her family home in Copenhagen. She tells Sahar how she does it, as she prepares a comforting meal of freshly harvested vegetables, and explains how she started her culinary career by cooking for rock stars on tour, including Red Hot Chilli Peppers, The Rolling Stones and Elton John.

Sarah is joined by Sahar Francis, a Palestinian lawyer and human rights defender, to discuss Israel's recently passed “Prisoners' Execution Law” and its devastating impact on Palestinian political prisoners. With over 10,000 detainees- including 350 children, Sahar highlights the ongoing torture, extrajudicial killings, and systemic abuses perpetrated by Israel. Drawing on her 27 years defending prisoners, she shares the fight for human rights and justice for Palestinian prisoners on the international stage as well as highlighting the brutal systems of apartheid operational on a domestic level. About Sahar Francis Sahar Francis is a Palestinian lawyer and human rights defender, an expert in international humanitarian law, international human rights law, and international criminal law. She has worked for the last three decades, defending Palestinian political prisoners held under the Israeli occupation. Francis advocates against torture, arbitrary detention, for the guarantees of fair trial procedures, rights of women and children, and works to abolish death penalty, locally and regionally. Francis has worked closely with the UN special procedures system and appeared as a witness in front of the United Nations Fact-Finding Missions and Commissions of Inquiry. She has drafted legal cases on torture, arbitrary detention, denial of fair trial and forcible transfer of prisoners with the International Criminal court. She was awarded a 2023 Jack Hazard Fellowship from New Literary Project and an Illinois Arts Council Grant. Mustafah writes and teaches outside of Chicago. We are joined today by award-winning Iranian author Sahar Delijani. Sahar was born in the notorious Evin prison. A prison in Iran which has become synonymous with political oppression. Her debut novel, Children of the Jacaranda Tree, is partially inspired by her own family history, and recounts one of the bloodiest and most repressive phases of Iranian history: the mass executions in 1988. The most recent wave of protests in Iran last month were met with violent repression not seen since the days of 1988. Thousands, possibly tens of thousands, of Iranians have been killed by the Islamic Republic regime. In recent days, protests have resurfaced and there is once again rumours of possible American military intervention. On the banks of the Brahmaputra River, a remote village in northern Bangladesh serves as a sanctuary for the hijra (transgender) community, a once-revered but now persecuted group. In March 2024, a mosque built by and for hijras offered a rare haven for worship without fear. After the August 2024 protests that toppled the secular government, a surge in religious extremism has fueled renewed violence against minorities, including the hijra community. Their mosque, once a beacon of hope and inclusivity, now faces significant threats. The conversation also addresses the rise of influencers who may lack expertise, the creation of ideological echo chambers that stifle dialogue, the challenges of transnational activism from the diaspora, and the critical importance of media literacy in navigating a landscape rife with misinformation and disinformation. Dr. Sahar Khamis is an associate professor in the Department of Communication at the University of Maryland, College Park, recognized as an expert on Arab and Muslim media, an ethnographer, Islamic feminist, peace and interfaith activist, and an accomplished media commentator and analyst. Her experience includes serving as the Head of the Mass Communication and Information Science Department at Qatar University (2005–2006), Mellon Islamic Studies Initiative Visiting Professor at the University of Chicago (2014), and Professor of Communication at the American University in Cairo (1990–2004). Since 2014, she has been an associate professor at the University of Maryland. She is the co-author of the books: Islam Dot Com: Contemporary Islamic Discourses in Cyberspace (Palgrave Macmillan, 2009) and Egyptian Revolution 2.0: Political Blogging, Civic Engagement and Citizen Journalism (Palgrave Macmillan, 2013). She is the co-editor of the book Arab Women's Activism and Socio-Political Transformation: Unfinished Gendered Revolutions (Palgrave Macmillan 2018). Additionally, she authored and co-authored numerous book chapters, journal articles and conference papers, regionally and internationally, in both English and Arabic.
