Tune in as we chat about intermittent fasting, therapeutic fasting levels, and how many carbs you should be eating.  [01:55] Shana Speaks About Her Journey As A Registered Dietician and  Hormone Healing Expert Shana is a registered dietician, and she has been in the field for over 20 years.  As a registered dietician, Shana was dealing with her own health issues. She was bloated all the time and had chronic canker sores.  Shana's son got very ill out of the blue. [14:30] It's Unbelievable: Registered Dieticians Are Recommending Canola Oil!  When Shana went to school to be a registered dietician, she was taught very little about hormones.  The only time insulin was talked about was when someone had diabetes.  Unfortunately, the US Dietary Guidelines are what they are, and that's what registered dieticians need to teach.  Hospitals still recommend using canola oil in cooking. We need to change the messaging around saturated fats.  [23:55] PCOS Stems From Insulin Resistance and Can Be Reversed  80% or more of PCOS stems from insulin resistance.  PCOS is the number one issue of infertility.  Most women are told PCOS is something they will have to deal with for the rest of their lives.  Luckily, PCOS is something that can be reversed through lifestyle interventions.  [27:55] What To Do If You're Not Losing Weight While Intermittent Fasting Intermittent fasting is a highly individual lifestyle.  If you start fasting, most likely, you will see some type of progress with it.  Remember, you don't want to fast when pregnant or breastfeeding.  Also, don't try fasting if you have an active eating disorder.  Eight hours of eating and sixteen hours of fasting are great ways to start.  Sometimes, you need to extend your fasts to reverse your disease and start seeing results.  [34:00] Therapeutic Fasting Levels Will Result In A Reversal of Insulin Resistance  Therapeutic fasting levels work for almost everybody who is stuck or not seeing any progress.  If you're ready to get off medications, you have to work with your doctor to monitor your blood sugar levels.  It can be a matter of weeks or even days when you're coming off some high insulin levels.  Therapeutic fasting is 31 to 42-hour fasts a week.  The therapeutic level of fasting is where almost everyone will see a reversal of insulin resistance. [39:50] How Many Carbs Should You Eat? Take The Carb Quiz!  Carbs can be confusing for most people. Shana developed a carb quiz: https://www.fasttoheal.info/carbquiz. You want to look at your family history and goals before determining how to incorporate carbs into your diet.  Shana likes everyone below 100 grams of carbs.  Remember, everyone handles carbs differently. If you're thin and work out, you can handle more carbs. Also, men have more storage capacity for carbs.  [45:55] Ketones Are Great For Inflammation and The Reason You Should Consider A Meat-Based Approach  So many people don't burn ketones.  Burning ketones can be anti-inflammatory in general.  Taking away plant foods for a time period will also be beneficial.  If you have severe issues, following a meat-based diet can help with health problems. Many people think if they are iron deficient, they should eat more kale and spinach. Well, you're only absorbing 6% of what you're eating. Plus, it could be causing inflammation. It's tough to know what foods you react to when you're ill.  [55:45] Advice For Women: Should You Fast During Your Period?  Day one is when you start your period.  During your period is when you should incorporate longer fasts. The week leading up to your period should not include long fasts. The first two weeks of your cycle are the best times for longer fasts. Episode Highlights [03:03] Ben's Fitness Story Ben grew up following the standard 'sad, toxic, and process-filled American diet' alongside unhealthy behaviours linked to drugs, alcohol, and video games. At 24, Ben started to read health books. Reading helped change his mindset and take ownership and responsibility for his life and decisions.  He began exercising and eating better. Ben went from 250 pounds at 34% body fat to 170 pounds at 6% body fat.  Ben continues to explore different diets and protocols and keeps up with the research.  [07:16] The Deal with Type II Diabetes Ben's father had Type II diabetes and died from it despite following his healthcare providers' instructions. His father's untimely death prompted Ben to question the ‘conventional approach' to treating diabetes and why many people suffer from the chronic disease. [25:21] Insulin Resistance  Ben explains that the body's optimal amount of glucose is about one to two teaspoons or 80 milligrams per deciliter.  Insulin levels spike when the body takes in too much glucose, overworking your receptors. The solution is to reduce carbohydrate intake, practice intermittent fasting, and drop glucose and insulin.  Measure, then double your waistline. If it's more than your height, you probably have metabolic dysregulation. [31:52] Taking Responsibility for your Health Insulin resistance leads to Type II diabetes, leading to many other problems — stroke, heart attack, infections, and kidney failures.  Diabetes and insulin resistance are easy to reverse, but they involve time and effort. Understanding the process and science will make people much more likely to do the work. Epigenetic changes take place over at least six to eight weeks or longer.   There is no need to avoid carbs for years. Instead, try different avenues of healing to get optimal peak healthy states.  [38:33] Counter Regulatory Hormones  Human bodies drop insulin in a fasted state. The body's counter-regulatory hormones increase as you lower insulin. This is the body's innate intelligence to pump the body full of energy for daily functions.  At the same time, when the body is dropping insulin, it burns body fat and produces ketones giving you another fuel source.  Listen to the episode to learn more about how keto works!  [41:58] Metabolic Flexibility Think of intermittent fasting as a muscle that develops over time. It has to be trained to have metabolic flexibility . Hypoglycemic people often feel awful during the fast; instead of burning fat and producing ketones, their brains panic and send intense signals for cravings for sugar and carbs.  Exogenous ketones also help people transition through the phase.  Ben recommends adding ketones in the mix and electrolytes during keto to help transition into the ketosis state.  It gives the body the needed ketones, especially for people who have never experienced a deficit of calories or glucose.  [48:08] Keto Diets   Keto is not a diet. It is a metabolic process. Ketosis is our natural fat-burning state. It has always been around for as long as humans have existed.  Dieting is not the only path to health — there are other tools to use. [51:22] Focus on Cellular Health, Not Just Losing Weight  Do it from a lens of cellular health, not just losing weight. Do not lose weight to get healthy. As you get healthy, you will lose weight. View health in cycles, just like in circadian rhythm. Another complicating factor in getting client results can come from not increasing calories properly during refeeds via the proper amount of carbs. Coach Will and Gillis also go over how important measuring glucose can be during a fat loss phase and what a proper glucose response should be. Last but not least, William and Gillis talk about how only using a caloric surplus and a caloric deficit to periodize nutrition is a big mistake, and the two review what the sweet spot for calories should be at for a client to become insulin sensitive. Today, I am blessed to have here with me Dr. David Harper. As a health educator and cancer researcher, Dr. David G. Harper has studied the impact of diet on human health for many years. The culmination of that extensive work is the BioDiet, a ketogenic food regimen that he and his wife began in 2012. The significant weight loss and health improvements they experienced led Dr. Harper to counsel hundreds of people on the BioDiet, with similarly consistent and impressive results. Dr. Harper is an associate professor of kinesiology at the University of the Fraser Valley and a visiting scientist at the BC Cancer Research Center, Terry Fox Laboratory. He holds a Ph.D. from the University of British Columbia and completed a post-doctoral fellowship in comparative physiology at the University of Cambridge. He is on the scientific advisory board of the Canadian Clinicians for Therapeutic Nutrition and is a member of the Institute for Personalized Therapeutic Nutrition. Today we have Dr. Benjamin Bikman on the Keto Kamp Podcast. Dr. Bikman is a biomedical scientist, professor, and expert on insulin resistance. Dr. Benjamin Bikman studies diabetes and obesity, and much of what he focuses on is a seemingly obscure condition called insulin resistance. But it's, in fact, not very obscure at all. Half of all adults in the U.S. have insulin resistance. That means you could have it too, and you don't know it. What is insulin resistance? Why did Dr. Benjamin Bikman devote his career to studying something like this? Well, insulin resistance is essentially two things. First of all, some cells in your body aren't responding very well to the hormone insulin. Second, you have more insulin than you did before, a condition called hyperinsulinemia. Insulin resistance is at the root of virtually every chronic disease. If we go through the chronic diseases that are killing us today, things like Type 2 Diabetes, heart disease, Alzheimer's Disease, and certain cancers, what they all have in common is insulin resistance. To varying degrees, insulin resistance is either causing the problem or making it worse. Purchase all 7 challenge recordings! Special pricing: http://www.ketochallengerecordings.com  Who Can You Trust When It Comes To Experts In The Health Space?  If the person we're seeking to learn from uses derogatory language when speaking about those with whom they disagree, that is the sign of a petty person. Experts should have discussions politely and respectfully and acknowledge that there is room for disagreement. There ought to be a degree of skepticism that we apply to every authority. We should challenge that authority to some degree. There are people with Ph.D. degrees who we shouldn't trust. Overall, we should always be on our own journey to understand what is accurate and true.  A Basic Understanding of Ketosis  Ketosis is the state where blood ketones are elevated, but pH is normal. Every human has some amount of ketones, even if it's below the detection level on commonly used devices. When you're in ketosis, you will have a detectable level of ketones on a moderately used device and yet pH is not changing. Ketones have the potential to make the body more acidic. When someone's in ketosis, the amount of hydrogens coming off the ketone is relatively modest. Within the blood, there are numerous buffering mechanisms. That way, your body will defend its pH range. Overall, ketones are fat-burning products; when insulin is low, the body will burn fat at a high rate.  Ketones Are Energetic Molecules; Plus, Ketones Are Signaling Molecules Ketones are energetic molecules roughly similar to the calories you get from glucose. Plus, ketones are signaling molecules. If a ketone is being used as a fuel, it will come to a cell. Then the ketone will get shuttled into the cell through an MCT (monocarboxylate transporter). When the mitochondria have a lot of pressure to be burning molecules, they get the signal that they need more mitochondria. Fatty acids can have the same effect. When a cell is burning a lot of fatty acids for fuel, it will start stimulating mitochondrial biogenesis.  Why The Laws of Thermodynamics Are Misleading Regarding Weight Loss People are producing ketones and breathing out ketones, and urinating them out. Remember, ketones have a caloric value. Calories matter, but don't worry about them. Let the calories take care of themselves. Invoking the laws of thermodynamics in nutrition and human metabolism was one of the greatest tragedies in the history of human-relevant science. It absolutely misled us and made us demonize fat and embrace carbohydrates. Hormones matter at least as much as calories because hormones tell the body's cells what to do with the available calories.  The Problems With Metabolic Syndrome and Insulin Resistance  Metabolic syndrome used to be called insulin resistance syndrome. Insulin resistance is the single most common problem in the US and abroad. Plus, insulin resistance is relevant to virtually every chronic disease. Covid has only made metabolic problems worse. Luckily, keto and intermittent fasting can help lower insulin. Remember, there is no insulin resistance without elevated insulin. Lowering insulin is a perfect way to help the body become more sensitive to it. If no nutrients are coming into the blood, insulin starts running out of nutrients in the blood that it can store away. So, insulin comes down when nutrients aren't coming into the blood.
