On this episode of Taste Buds with Deb, host Debra Eckerling speaks with Sarah Nathan, founder of NOOISH, a modern Jewish comfort food brand. Nathan has always been a huge fan of soup. Matzo ball soup in particular is well-known and beloved, so it's no wonder instant matzo ball soup is NOOISH's first product. “[With soup] you get this melding of flavors and that warmth in your heart,” Nathan explains. “We call it a hug in a cup for a reason.” NOOISH's matzo ball soup, which uses clean, high-end ingredients, is similar in format to Instant Ramen. “Just add water and microwave for two and a half minutes, and you get a really delicious steaming fresh bowl of matzo ball soup,” she says. And even though you get instant gratification with this matzo ball soup, it still counts. “I get comments online all the time: ‘My grandmother would be turning over in her grave; if you're not making it from scratch, it's not real,'” Nathan explains. “Well, I'm making it from scratch, so you don't have to.” The brand, however, is about more than soup. NOOISH's mission is to elevate and make Jewish food accessible to everyone. Nathan has been in the culinary space for a while, and was a producer on the Great Big Jewish Food Fest at the beginning of the pandemic. During that time, she noticed how everyone was seeking comfort and connecting through food. Then, after the pandemic, Nathan noticed a gap. Others were still elevating their own culture's food, but nobody was really doing that for Jewish food, outside of the kosher aisle. And now there is! Greetings from my kitchen! Today, it's all about matzo ball soup for Passover and rugelach. Delicious to eat and fun to make, rugelach (pronounced rug-a-lah) are miniature crescent-rolled pastries posing as cookies. They're made by rolling a triangle of dough around a sweet filling of fruit, nuts, chocolate or pretty much anything your heart desires. Medium-textured matzo meal is about the same texture as cornmeal. It is used for baking, as a coating for fried foods, to thicken, and to make matzo balls from. Some folks refer to matzo as the "bread of affliction" because it represents our suffering as slaves, or as lechem oni, "poor man's bread" in Hebrew. .... Matzah is a food which man makes and bakes, no external element beyond wheat flour and water defines or influences its form." Can I use flour instead of matzo meal? For most applications, flour is not recommended as a replacement for matzo meal. Flour is much finer and, unlike matzo meal, hasn't been baked. During Passover, you can use approved flours like almond flour, quinoa flour, or teff flour for thickening sauces, breading, and some baked recipes. What is the most important day of Passover 2022? Passover for the year 2022 starts on the evening of Friday, April 15th and ends the 7 day festival at sunset on Friday, April 22nd for Reform and progressive Jews living inside Israel who follow the Biblical text.

This week's episode of "Hunkered In The Bunker" was the Easter/ Passover show(later dubbed "extravaganza" mid show by Bernsteinn himself). This show was chock-a-block full of holiday magic and wonder including but not limited to songs about Ol' Peter Cottontail, Soft Boiled Eggs, Matzo Ball Soup, Jerusalem(with Mountains of Olives...shout out to the Bunker Buds), Passover as well as some amazing tales of the history of Moses...from parting the Red Sea to his later work in Vegas as a Croupier. There is also the moment where Bernsteinn risks life and limb during the peanut flick challange by attempting to use matzo pieces instead of the usual regulation nuts and legumes*. Thus is his mania and it shows just how far he's willing to go to deliver an exciting show. At the same time we are treated to readings from Johnathan Swift and Martain Luther King Jr as well as songs from the likes of Bob Dylan, Bruce Springsteen, Warren Zevon, John Prine and Joe Glazer. We talk about hospitality and the insecurities we have around gathering the people in our lives. A Recipe for Maundy Thursday: Chicken and Dumplings From A Homemade Year: The Blessings of Cooking, Crafting and Coming Together Ms. J’s Chicken and Dumplings This recipe is my answer to the Matzo Ball Soup and the Baked or Roasted Chicken that are often a staple of a modified Seder Supper. Not being Jewish, but being Southern, Chicken and Dumplings seemed like the perfect alternative to these traditional Seder dishes. And as for the recipe title, well, that comes from Sweet Man’s nickname for me, in the southern tradition of Miss Ellie from the TV show Dallas. This is a large recipe—enough for twelve adults. Note: You can use homemade or store-bought chicken stock, or a combination of both. For the Broth Bring 15 cups of chicken stock to a boil. Add the following to the boiling liquid: 3 carrots, peeled, washed, and diced (optional) 3 celery stalks, washed and thinly sliced 1 medium yellow onion, diced 1 tablespoon of salt 4 pounds of boneless chicken breast (frozen or thawed) Once the chicken breasts are fully cooked, pull them out, and set them aside to cool. Reduce broth to simmer and leave simmering while you make the dumplings. For the Dumplings Mix together the following ingredients: 6 cups of flour 3 tablespoons of baking powder 3 teaspoons of salt Next, cut in 1 cup of solid vegetable shortening (use either a pastry cutter, or 2 table knives, or your food processor). Once the shortening has been cut in well (creating a crumbly texture), begin adding ice cold water, ½ cup at a time, into the mixture. I use about 2¼ cup of ice water (sometimes I use more, sometimes I use less, depending on the humidity in the air). Your goal is to create a dough that is soft, smooth, and easy to roll out but is not leathery or mushy or grainy. Next, roll your dough out. These dumplings are Southern-style flat dumplings like we make in Arkansas, not the round fluffy “drop” dumplings that are common in the North. Sista’ Tip: My good friend and baking mentor Lynn taught me this great kitchen tip: When rolling out dough, spread out a smooth kitchen towel on your counter (I prefer the flour sack variety) and cover it with a good dusting of flour. This will be your rolling surface, and after you are done, you can simply fold the towel up and take it outside to shake off the excess. Roll out the dough, using a slightly floured rolling pin, to between ⅛ and ¼-inch thickness. Next, using a knife or pizza cutter, cut the dough into strips about 1 inch wide by 3 inches long. Finally, bring your stock back to a rolling boil, and tear the cooked chicken breast into bite-size pieces, adding it back to the liquid. Once that is done, begin adding the strips of dumpling dough into the stock. Once all the strips have been added, give the pot a good stir, and cover. Reduce the heat to a simmer. Check every few minutes, stirring gently, until the dumplings are tender and cooked through, about 15–20 minutes.
