With one small, clever—and now-trademark—idea in 1990, the chef Thomas Keller turned not only the notion of the ice-cream cone on its head, but the fine-dining world, too. Now, 35 years later, his hospitality group comprises 10 restaurants, including The French Laundry in Yountville, California, and Per Se in New York City—both of them three-Michelin-starred—as well as Bouchon Bistro and Bouchon Bakery in Las Vegas and The Surf Club Restaurant in Miami. Across his entire hospitality operation, a highly refined, expertly tuned set of standards feeds his “one-guest-at-a-time” philosophy and culture. In many respects, Keller was at the forefront of a local-focused cooking movement. He was also a pioneer in making fine dining more relaxed and approachable—and decidedly less fussy. The food world today would not be the same were it not for his wide-spanning influence.On the episode, Keller reflects on how it took two decades of failing and learning from mistakes before at last, in 1994, he opened The French Laundry, which instantly received rave reviews and remains one of the most celebrated restaurants in the world. In this week's episode, I talk to regenerative farmer, wife, foodie and mom to five kids, Paige Jackson, who I first ‘met' online when she posted about her Romertopf clay baker (you can hear the whole story in the interview!). We talk about how her quest to have more transparency in food after experiencing some health complications led her and her husband on the path to starting their own farm and eventually raising their kids participating in farm life. Learn some of Paige's secrets to including kids as a part of the farm business equation and how she supports her kids' individual interests. Paige teaches us about regenerative pasture-raised livestock and why that choice allows their farm business to uphold their values. Oven Roasted Chicken Quarters 4 leg quarters Olive oil Salt Pepper Garlic powder Paprika Preheat oven 400 degrees Cover cookie sheet with foil. Place quarters on sheet surround with carrots that has been peeled and sliced. Drizzle with olive oil under the skin. Sprinkle liberally with paprika ,salt , pepper and garlic powder. Roast 50 mins. To internal temp of 185-190. (If you do chicken breast do not let the internal temperature go beyond 165 as it will be dry) Serve with mashed potatoes

We're suckers for roast chicken here at No.11. With a myriad of uses, not least taking centrestage across a roast dinner, once cooked the tender chicken can be removed from the bones and used amongst pies, pastries, pasta, salads & sandwiches. Get into the habit of making this a weekly exercise and it'll not only expand your kitchen repertoire but make easy work of getting scrumptious suppers to the table in under 20 minutes. Ingredients: you will need - one chicken (the best your purse strings will stretch to) Two sticks celery, one onion, one carrot, two cloves garlic, olive oil, salt & pepper, a few sprigs thyme, half a lemon. Cooking time 1 1/2 - 1 3/4 hours, plus 20 minutes resting time.

Episode 14: BLT Pasta Salad, Roasted Chicken and Angel Hair Pasta, and Roasted Cauliflower Spaghetti It’s pasta night on the Dinner Sisters with recipes that go beyond just sauce and noodles. We’ll bake angel hair pasta with chicken, make a creamy cauliflower and mascarpone spaghetti and a pasta salad riff on the BLT. Each recipe is anything but a basic pasta dish. BLT Pasta Salad: The Kitchn Bacon, lettuce, and tomato are a killer classic summer sandwich and this pasta salad recipe evokes all the best parts. Tangy dressing is mixed in with crispy bacon, cherry tomatoes and spinach for a salad that is as great for dinner as it is for lunch the next day. Tips: Unless you are a huge garlic fan, consider using one clove of garlic instead of the suggested two. We two cloves to be too much. Pick any short pasta shape you like- we think raddiatore or penne are good choices here. This keeps well in the fridge for a couple days, making it a good recipe for houseguests or for taking for lunch. Roasted Chicken on Angel Hair Pasta: Simply Recipes Both a roasted chicken and angel hair pasta are dinner staples. Simply Recipes took the two and make a comforting baked pasta that will feed hungry dinner companions and be budget friendly. Tips: You can use all parts of the chicken but drumsticks and thighs tend to be economical and the most flavorful. Consider upping the oregano and adding a teaspoon of basil. Make sure to adequately salt the chicken before roasting. Underseasoned meat will be noticeable in this dish. Roasted Cauliflower Spaghetti: Sprouted Kitchen Mascarpone cheese makes a creamy sauce for roasted cauliflower and spaghetti. Roasting the cauliflower with nutmeg and smoked paprika gives the vegetable a subtle kick- one we would amp up when making again. Tips: Remember to reserve your pasta water to loosen the sauce- you will need it. We felt the sauce could use additional kick. Next time around we would double the spices and maybe add hot paprika to round out the flavors. From the Smorgasbord: Tackling questions and comments from our listeners; Tyler suggests adding mustard to the Kale, Apple and Cheddar salad from Episode 3. We think this is a great idea. Thanks, Tyler! Starving in the Bleachers asked, "Please help! I have 2 boys, age 6 and 9. Two nights a week they have swim practice followed by baseball. On a good night we have an hour at home in between to change clothes, eat dinner and head to baseball and sometimes we have to eat in the car between the two activities. Any ideas on what to serve them for dinner so we can stay away from fast food drive thrus??” Kate suggested buying a few medium sized plastic containers and using themfor homemade lunchables. Perhaps reheating the salmon patties from Episode 13  with some sliced cucumbers or pancakes with bacon from Episode 11. She also suggests store-bought dumplings would work really well.  Betsy suggests cooking a pound of pasta at a time and keeping it in a gallon plastic bag in the fridge for really busy nights. When boiling water takes too long, this could be a lifesaver.  Ana asked, "I made the BBQ meatloaf from Episode 3 in a loaf pan but I didn't know how long to cook it and it fell apart afterwards. What happened? Any tips?" Betsy makes a lot of meatloaf and did some research and found a few things: Most meatloaves take about 45 mins to an hour to cook. Good rule of thumb.  Use an 80/20 hamburger mix. This should keep the meatloaf together.  Alton Brown's Meatloaf Recipe has methods that many people swear by. Perhaps that's the ticket! We talk about hospitality and the insecurities we have around gathering the people in our lives.   A Recipe for Maundy Thursday: Chicken and Dumplings From A Homemade Year: The Blessings of Cooking, Crafting and Coming Together Ms. J’s Chicken and Dumplings This recipe is my answer to the Matzo Ball Soup and the Baked or Roasted Chicken that are often a staple of a modified Seder Supper. Not being Jewish, but being Southern, Chicken and Dumplings seemed like the perfect alternative to these traditional Seder dishes. And as for the recipe title, well, that comes from Sweet Man’s nickname for me, in the southern tradition of Miss Ellie from the TV show Dallas. This is a large recipe—enough for twelve adults. Note: You can use homemade or store-bought chicken stock, or a combination of both. For the Broth Bring 15 cups of chicken stock to a boil. Add the following to the boiling liquid: 3 carrots, peeled, washed, and diced (optional) 3 celery stalks, washed and thinly sliced 1 medium yellow onion, diced 1 tablespoon of salt 4 pounds of boneless chicken breast (frozen or thawed) Once the chicken breasts are fully cooked, pull them out, and set them aside to cool. Reduce broth to simmer and leave simmering while you make the dumplings. For the Dumplings Mix together the following ingredients: 6 cups of flour 3 tablespoons of baking powder 3 teaspoons of salt Next, cut in 1 cup of solid vegetable shortening (use either a pastry cutter, or 2 table knives, or your food processor). Once the shortening has been cut in well (creating a crumbly texture), begin adding ice cold water, ½ cup at a time, into the mixture. I use about 2¼ cup of ice water (sometimes I use more, sometimes I use less, depending on the humidity in the air). Your goal is to create a dough that is soft, smooth, and easy to roll out but is not leathery or mushy or grainy. Next, roll your dough out. These dumplings are Southern-style flat dumplings like we make in Arkansas, not the round fluffy “drop” dumplings that are common in the North.          Sista’ Tip: My good friend and baking mentor Lynn taught me this great kitchen tip: When rolling out dough, spread out a smooth kitchen towel on your counter (I prefer the flour sack variety) and cover it with a good dusting of flour. This will be your rolling surface, and after you are done, you can simply fold the towel up and take it outside to shake off the excess.   Roll out the dough, using a slightly floured rolling pin, to between ⅛ and ¼-inch thickness. Next, using a knife or pizza cutter, cut the dough into strips about 1 inch wide by 3 inches long. Finally, bring your stock back to a rolling boil, and tear the cooked chicken breast into bite-size pieces, adding it back to the liquid. Once that is done, begin adding the strips of dumpling dough into the stock. Once all the strips have been added, give the pot a good stir, and cover. Reduce the heat to a simmer. Wash and dry a 4 lb chicken - place on a roasting rack in a shallow pan 3. Salt the cavity then stuff it with 1/2 an onion and 1/2 bulb of fennel (slice each half into a few pieces before stuffing)- a few crushed cloves of garlic are nice too (don't pack it too tight). You can throw the balance of the onion and fennel into the pan to help flavor the basting liquid 4. Season the exterior to your taste - I usually use salt, pepper, garlic powder, and some crushed rosemary. 5. Spray or lightly coat the whole bird with olive oil. 6. Cook for 60-75 minutes (until leg is loose in the socket), baste after 40 and 50 minutes 7. Let roasted bird sit for 15 minutes before carving – Website LOUD!
