Roasting Coffee with Cutbow CoffeeIn this episode we interview Paul Gallegos of Cutbow Coffee in Alburquerqe New Mexico. Paul was trained in roasting at Peet's coffee and has been roasting coffee for 30 years. Paul shares with us the history of Peet's coffee and their early relationship with Starbucks. He talks about the specialty coffee movement started by Alfred Peet. He mentions how, at the same time in the 60's, the Berkley California scene also started the Farm to Table movement, with Alice Water's Chez Panisse. Paul educates us on coffee varieties and cultivation and the bean belt of countries across the world that produce coffee. He discusses about the care needed in selecting coffee and how it is similar to wine making.Giovanni and Paul discuss Italian coffee roasters such as Illy and Sant'Eustachio. They also discuss the region of Trieste, which is the most known region of Italy for coffee productionWe also delve into the roasting process and how this imparts flavor into the coffee before the coffee drink is made. CRUST: Combine cookie crumbs, grounds, salt and butter in bowl of food processor; pulse until combined (crumbs should appear cohesive). Press onto bottom of greased 10" spring form pan. Bake approximately 10 minutes; set aside to cool. CHEESECAKE: Beat cream cheese in large bowl until smooth and creamy. Add sugar, flour, salt, coffee grounds and espresso; mix well. Add eggs, one at a time, beating well after each addition. Pour over crust. Place pan in a water bath (optional) and bake 1 1/2 to 2 hours or until center is almost set (check after 1 hour). Loosen cake from rim of pan--do not remove rim. Place in draft free location to cool to room temperature. Cover and chill overnight in refrigerator. Prior to serving, run non metal knife around edge of rim to completely loosen cheesecake.; set aside. GANACHE TOPPING: heat cream in small saucepan or microwave. Break chocolate into small pieces and add to heated cream and stir until melted. Drizzle over cheesecake. Joerg is the owner of Intelligent Combustion Control Technology, and previously worked as a factory technician at Weishaupt Corp. in Germany, the manufacturer of the new DoubleShot roaster burner. Joerg talks about the difference between the old and new burner, as well as the seemingly-limitless applications a good modulating burner can be used for.

I solved the sagging rain gutter problem by installing a rain chain. This is a concept from ancient Japan that became popular in North America during the Victorian and Craftsman eras. I did a Kottage Knowhow video on our YouTube channel. I experiment with roasting my own coffee beans using a hot air popcorn popper and it worked out really well. I sourced some green beans from Ashanti Rostery Cafe in Elora. Then I dusted off the old Proctor Silex Popcorn Pumper. I dropped in about ¾ of a cup of beans and plugged it in. The whole process took about 12 minutes to get to a medium dark roast. All the way to second crack! Checkout our YouTube channel. I had a problem helping Karen get the capsule off a bottle of white wine. After slicing open my finger I discovered it was a screw top bottle and not a cork with a capsule. This did give us the chance to perfect the “mandaid”. You cannot beat paper towel and duct tape to stop the bleeding. Our beer of the day is Shoulders of Giants Imperial IPA. It comes from Flying Monkeys Craft Brewery in Barrie. This beer uses Galaxy, Falconers Flight, and Amarillo, hops to give it an IBU of 86. Be careful though, it comes in at a whopping 10% ABV in a 750ml bottle. Definitely not sessionable.
