Episode 96: This week, Bill (a newer roaster working with an SR800 and extension tube) asks a fantastic question: which coffee books deserve a permanent place on every roaster's shelf? Stephen and Catherine dive into their favorite resources, from foundational roasting texts to broader guides on green coffee, blending, and the coffee industry as a whole. Along the way, they discuss why some books become dog-eared classics, how to navigate conflicting advice, and why learning from multiple perspectives can make you a better roaster. What if I told you your side hustle could teach you more about systems than your main practice ever did?In this episode, I sit down with Dr. Darin Ward, an orthodontist with an unconventional journey—from growing a $2.5M practice in Canada, to downsizing into a lifestyle practice in rural Michigan, to roasting thousands of pounds of organic coffee out of his garage. Darin's story is a masterclass in knowing what you want, building it intentionally, and embracing entrepreneurship in and out of the operatory. We talk about the real cost of rapid growth (spoiler: it's not just financial), why he walked away from a thriving practice to prioritize family, and how that shift led him to discover his passion for coffee roasting. If you've ever wrestled with burnout, wondered how much growth is enough, or dreamed of turning a hobby into something more—this episode is going to resonate hard.Oh, and did I mention he owns six vintage wooden rowing shells and was once an Aztec rower at SDSU? Roasting has historically been shaped by the experiences of crafts people and their experiments with what works, or does not work, in their roastery. These days we hav many people entering into the industry to affirm, challenge, and explore those dogmas in an effort to find the "why" behind the assumptions we have. Today's guest, Mark Al-Shemmeri is one of those people challenging dogma with data. Mark is a chemical engineer who spent four years as a doctoral researcher (EngD) in the UK figuring out how to simulate coffee roasting in-silico, creating a digital twin of a coffee roaster. The data-driven approach meant a lot of roasting, analysis of the process and product and coding up of simulations to predict how different green coffees, in different roasters with different process conditions, transform during roasting. Mark also operates a nomadic roastery under the pseudonym 'dialect' - a name befitting for his engineering approach to coffee and his efforts to challenge the complexities entrained in the industry. In this episode we talk with mark about how as a chemical engineer he ended up also in professional coffee work, how his expertise has shaped his own approach to roasting, and a look into the experiments he has been running to explore the variables of coffee roasting in a quest to simplify the overly complex. As coffee roasters, we understand that we can only roast a coffee to the potential of the green coffee itself. In many cases, we're doing our best to try to maximize the potential of each coffee and minimize the loss it may go through in the roasting process. That being said, starting with quality, fresh green is plays a vital role to roasting good coffee. In this episode, we specifically talk about the impact aging can have on your green coffee.
