What Ya Got Cooking for Thanksgiving?

Midday

It's the What Ya' Got Cookin'? Thanksgiving edition, a beloved tradition here on Midday, going all the way back to 2016. Tom talks with John Shields, owner of Gertrude's at the Baltimore Museum of Art and Damian Mosely of Blacksauce Kitchen. The two chefs talk with Tom and the Midday callers about cooking tips and food faux pas for folks preparing tomorrow's big meal. We also get a special check-in from Tom's mom, Rosemary Hall.   Jo-Jo's Curried Crab Dip (Gertrude's Recipe) Ingredients (8 servings): 1/2 cup of Dried currants 1 lb of Cream cheese 2 tbsp of Madras Curry Powder 2 tbsp of Mayonnaise 1/3 cup of Coconut Milk 1/3 cup of Minced green onions or chives 1/3 cup of finely diced Red bell pepper 1 lb of Lump or Claw Crab meat 1 pack of Melba rounds, Water crackers or Ginger snaps.   Directions: Preheat oven to 350 degrees Fahrenheit. In a small bowl place the currants and just enough water to cover. Let stand for 15 minutes. Drain, but reserve 2 tablespoons of liquid, and put the currants aside.  In a large bowl combine the cream cheese, curry powder, mayonnaise, coconut milk, green onion, and red bell pepper. Beat until smooth and somewhat creamy. Mix in the crabmeat, currants, and 2 tablespoons of the reserved currant liquid.  Transfer the mixture to a greased casserole dish and bake for 25 to 30 minutes. Serve hot or warm with Melba rounds, Water crackers, or Ginger snaps.   Chocolate Bourbon Pecan Pie (Gertrude's Recipe) Ingredients (1-9 Inch Pie): 1 Pie Crust 3 Eggs 1/2 cup of Sugar 1/2 cup of Brown sugar 1 cup of Karo syrup 2 tsp of Vanilla extract 1/2 cup of Melted butter 2 tsp of Flour 2 oz of Unsweetened chocolate, melted 1 1/2 oz of Semi-sweetened chocolate, melted 1/4 cup of Locally distilled bourbon 1 1/2 cup of Pecan pieces (per pie)   Directions: Preheat oven to 350 degrees Fahrenheit. Cream eggs and sugar together. Stir in the Karo syrup, vanilla, butter, and flour, Mix well. Add chocolate and bourbon. Spread pecan pieces around the bottom of each pie crust. Pour in filling and gently mix into the nuts. Bake for about 45 minutes to 1 hour, or until puffy and set. Cool and serve.   Rosemary Hall's Fresh Cranberry Relish Tom's Mom makes this delicious cranberry concoction, which Tom and his Mom first learned from James Porterfield, a friend in Ithaca, NY. Ingredients: 1lb Cranberries 1/2 cup of White granulated sugar (Tom uses 1/4 of a cup) 1/2 cup of Firmly packed brown sugar (Tom uses 1/4 of a cup) 1 cup of water   Directions: Grab a pot and bring the cranberries and sugar to a boil and cook for 10 minutes. When cool, mix in: 2 tbsp of Horseradish 2 tbsp of Dijon mustard Serve over Cream cheese as an Appetizer, or eat it as a side with Turkey, Chicken, or Pork.   Sweet Potato Biscuits (Blacksauce Recipe) Ingredients: 4.75 lbs of All-purpose flour 7 tbsp of Baking powder 4 tbsp of Sugar 2 tsp of Salt 1.75 lb of Cold butter, cut into parts 1 lb of a Peeled Sweet potato 64 oz of Buttermilk 2 oz of Heavy cream 2 tbsp of Turbinado sugar   Directions: Preheat convection oven to 400°F. (if you're using a conventional oven, then 425°F). Line two half-size sheet pans with parchment paper. Measure dry ingredients (flour, baking powder, sugar, and salt) into a stainless steel bowl. Using a knife and sanitized cutting board, cut the butter into 1-ounce cubes. In small batches, pulse the flour mixture and butter in the bowl of a food processor until the mixture resembles a coarse cornmeal. Return mixture to stainless steel bowl. Add roasted sweet potato to the food processor; pulse in the buttermilk. Make a well in the center of the flour & butter mixture; using a stainless steel spoon, fold in sweet potato buttermilk mixture just until the dough comes together. Turn out the biscuit dough onto dry, lightly floured work table; bring together and knead twice. Flatten the mound of dough, with hands or rolling pin, to two inches in height. Cut biscuits using 2” biscuit cutter, and place next to each other on sheet pan. Bake for 9 minutes in full size electric convection oven Remove biscuits from the oven and, working quickly, brush the tops with heavy cream and sprinkle with turbinado sugar. Return to the oven and bake for 9 more minutes in full size electric convection oven. Remove pans from oven and place onto bun rack to cool.   Email us at midday@wypr.org, tweet us: @MiddayWYPR, or call us at 410-662-8780.

In this episode, I, Dr. Laurie Marbas, a board-certified family and lifestyle medicine physician, delve into a cholesterol-lowering protocol that I've developed over the past four years through extensive research and patient experimentation. This protocol is particularly beneficial for those on a whole food plant-based diet who still struggle with high cholesterol levels. I start by explaining the importance of a plant-based diet and the common challenges my patients face, such as maintaining optimal cholesterol levels. I emphasize that while statins can be necessary for some, my goal is to improve quality of life and longevity through dietary means whenever possible. The core of my protocol involves a specific mixture to be consumed twice daily before lunch and dinner. This mixture includes: 1. Unsweetened applesauce (a quarter to half a cup) 2. Amla powder (eighth to a quarter teaspoon) 3. Psyllium husk (one teaspoon) 4. Ground flaxseed (one tablespoon) 5. Ceylon cinnamon (half a teaspoon) I also recommend additional steps to enhance the protocol's effectiveness: One Brazil nut per week for selenium. Berberine supplements (500 mg, three times a day) for cholesterol and blood sugar management. Algae omega-3s for heart and brain health, with brands like Nordic Naturals or Compliment. Soy products (two to three servings per day) such as soybeans, edamame, tempeh, tofu, or soy milk. I highlight the importance of consistency in following this protocol to achieve the best results. Additionally, I mention that this regimen can help with satiety, which may be beneficial for weight management. Towards the end of the episode, I invite listeners to join my newsletter for more detailed information and updates, including a forthcoming menopause course and a symptom questionnaire. I encourage everyone to subscribe, share the video, and stay connected for more health tips and recipes. After years of experimenting, Dr. Sonya Whitaker noticed a trend that causes her concern and the trend is directly tied to her personal experiences related to limited to no ability to obtain unsweetened ice tea in any of the black communities she frequents. In this podcast she opens up about topics related to black people being disproportionately harder hit by heart disease risk factors such as high blood pressure, diabetes and obesity and challenges fast food service providers to make a concentrated effort to engage in practices geared more toward extending the life expectancy rates of African Americans. Dr. Whitakers own grandmother died at the age of 54 due to complications related to heart disease.

Thank you for joining us for our 2nd Cabral HouseCall of the weekend! I'm looking forward to sharing with you some of our community's questions that have come in over the past few weeks…   Brandy: Hi! I have recently become a huge fan and I am thinking about becoming certified in your program. My question is about my father. He had a severe reaction to the yellow fever vacc several years ago and it caused brain swelling that took doctors months to figure out. He then was put on high levels of steroids, which then lead to Diabetes. Knowing what I know now, I think he has parasites (from all of his crazy travel places), h-pylori, Candida, SIBO all while getting sick constantly and taking forever to get over it. He won't change his diet but has recently made some changes in taking Omega 3's, CQ10 and NAC (this is huge progress) What would be a low hanging fruit (other than diet) that I could make him a believer in functional medicine that could spark some changes in him moving forward. I am sure taking the Big 5 would be the best place to start, however, I need to start very small. I am hoping for a suggestion for a supplement or something to that nature that people tend to see noticeable improvements from. Something like Zinc Picolinate or something that may help with blood sugar, blood pressure, mitochondrial function etc. Again, thank you in advance.   Demetria: Hi, I have been dx with PanUvitis. The doc says my vessels in my eye are leaking ingredients, so I have blurry vision. This started showing up about 4 years ago. Have you dealt with this type of issue? The doc says I have a autoimmune issue that is causing this, but is unable to give me answers to what it is, even after boold work.   Heather: Hi Doctor Cabral, Thanks as always for all you do! I'm a little confused about my acne situation. I used to have really bad acne as a teenager, went on birth control for it which cleared it up, then got off birth control two years ago and my skin was clear for about nine months. I started getting a little acne here and there, mostly bumps and blackheads around my chin and jawline, on my right side of my face specifically, that turned into under the skin zits. I then did the 7-day detox followed by the CBO Protocol and heavy metal detox while incorporating Equi.Life hormone supplements. After all that, now my chin and jaw acne is now on the left side of my face instead of the right side. I feel a bit helpless, would love some help here :)   Sarah: I recently got results from a hormone test - estrogen, progesterone and testosterone are all very low. Cortisol is through the roof all day long. Liver isn't detoxifying as it should, which is suspected why I'm not able to produce enough hormones. Any tips on how to support my liver? I weight train 5x a week and am active. Eat a wide variety of whole foods and fibre daily, hit my macros. No alcohol or smoking. I've supplemented with lglutamine for years, tried milk thistle etc but remained the same. Main symptoms - acne, hair loss, lethargic and low energy, brain fog   Whit: Would you /have you ever considered making an unsweetened DNS powder ? I love making a smoothie with the DNS and berries but it is just way sweet for me if I add any fruit at all to the DNS even if the lowest sugar berries. Would love to be able to sweeten the smoothie with whole fruit alone. I tried adding things like cranberry and pomegranate powder to give it more tart flavor to offset the sweet and also tried adding salt but it's still too sweet for me. Maybe I'm the only weird one with this issue ? Today's guest, Kara Goldin, is an energetic spirit of fearless solutions. She is a magnet attracting KINDNESS in CULTURE that continuously discovers answers by asking questions. One of the most endearing traits that I found in Kara is her willingness to share WHAT SHE HAS LEARNED so freely with the world. She has been named one of InStyle's Badass 50, Fast Company's Most Creative People in Business, Fortune's Most Powerful Women Entrepreneurs, Fortune's Most Innovative Women in Food & Drink and EY Entrepreneur of the Year for Northern California. In her life she has always led with authentic curiosity to learn more. And then she ADVANCES forward. She owns her mistakes, accepts things, absorbs lessons, shares learnings, and moves forward. She laughs a lot and appropriately, as a reminder to NOT TAKE OBSTACLES too detrimentally serious. She will find a SOLUTION. "IN 2004, I HAD TERRIBLE ACNE, ZERO ENERGY, AND I WAS 45 POUNDS OVERWEIGHT. SO I DECIDED TO SEE A DOCTOR. Almost immediately, I found the culprit — diet soda. I was addicted to the stuff at that time, drinking upwards of 10 cans a day. I'll be the first to admit that the word “diet” had totally fooled me. Gosh, I thought I was being so responsible. When I read the full list of ingredients and didn't even recognize most of them – I thought, what the heck was I drinking?! That day, I decided to cut diet soda out of my life and started drinking water instead. Three months later, my acne was gone, I was bursting with energy, and I had lost 40 pounds!" We discuss: -Grass roots selling, finding your tribe of ambassadors to request your product -Approaching every opportunity with a "What's the worst that can happen" attitude -Creating a KINDNESS CULTURE where employees and co-workers could THRIVE, when she found a lack of KINDNESS at other jobs -LEADING BY EXAMPLE, and only asking others to do what she would do Read her book (Undaunted, published by Harper Leadership) to learn about her encounter with a rattlesnake and two coyotes. And how that defined and symbolizes her life. The Huffington Post listed her as one of six disruptors in business, alongside Steve Jobs and Mark Zuckerberg. She is an active speaker & writer and hosts the podcast The Kara Goldin Show where she interviews founders, entrepreneurs and other disruptors across various industries. We love making pasta with spaghetti squash and/or zucchini - you can get a veggie spiraler and/or cut into thin strings and saute with onions, then add your sauce (as long as no sugar) to it - and it is delicious! 6. Is yogurt ok or considered dairy? Yogurt and Greek yogurt are dairy so they are removed.Coconut milk yogurt can be a great substitute. They have a variety of kinds and flavors, while you are allowed to use the ones that are sweetened with Agave at this time, we do recommend try to use the unsweetened types. Most of these yogurts can be found in the higher end grocery stores, and natural foods / whole foods type stores. 7. Is keifer, ghee, or cheese substitutes allowed? No, all dairy is removed. Some stores may sell vegan cheese substitutes, these are technically allowed (however many are full of a ton of chemicals so not recommended) 8. Are coconut flour and almond flour ok? At this time they are ok if used for cooking as a light sprinkling, if they are being used for baking then do not bake with them (again they will be back in the future though :) ). 9. What are some meal ideas that I can have? 1. Eggs - omelets, fried, scrambled, hard boiled, deviled, egg salads. 2. Veggies and hummus 3. Veggie or meat and veggie stir fry (try Bragg's amino acid as a great substitute for soy sauce) 4. Soups: Roasted red pepper, split pea, cabbage soups, veggie soups 5. Meats and Veggies: chicken, asparagus, onions, zucchini, squash, steaks 6. Salads 7. Steak and sweet potatoes, asparagus, onions, veggies 8. Roasted veggies and meats 10. What about soy milk? Tofu? Etc. The WildFit view on soy is that is extremely hard to find non-contaminated non-gmo organic soy. With the big scale gmo production even sources that claim to be non-gmo can easily be contaminated. I would say that the situation is worse in US than in Europe. With all that in mind. Soy can be a substitute for dairy (it is better than dairy) but not ideal 11. Is there a limit to how many eggs can be eaten in a day? There are no limits on the number of eggs. The only reminder here would be that in nature it would have been really hard to have access to eggs every single day. So please take care of variety. 12. Are there any bread substitutes? Yes, breads made purely from nuts and seeds can be acceptable substitutes. 13. What about soaking and sprouting nuts? Soaking and sprouting nuts is a great practice. However it is not a WildFit requirement. 14. What about corn, buckwheat, oat, quinoa, brown rice, millet, spelt? They are all grains and they are out of season for this time of the challenge. Also there is a bonus video titled No Gain From Grain. 15. What about alcohol? Beer, wine, and liquor is all still ok, we have only asked you to remove any items that continue sugar (sugary drinks).

Does Nut Milk Break A Fast

Does Nut Milk Break A Fast Nut milks are a great substitute for dairy products, if you have a problem digesting dairy. I have a genetic problem with cow dairy products myself. I don’t get mucous, I just feel really strange. It affects my hormones.  Having said that, I seem to do fine with goat and sheep cheese. So it’s an individual thing. But if you already know you can’t or don’t want to have dairy, then nut milks are a great substitute. Question is, do they break a fast?  There are two ways of looking at breaking a fast.  Technical approach: If you take in anything that changes your insulin levels, even a tiny amount, like when you eat a meal, you are breaking the fast. Real World: If you take in something that has a bit of nutritional content, like coffee with a little cream, it probably doesn’t have an impact on your fasting state. Your body will usually take care of it and carry on. When you are answering the question, does nut milk break a fast, carbs are by far the main foe in the situation. Fats don’t spike the insulin levels much at all.  Therefore, small amounts are a good trade off. Coffee or tea with a little of these alternatives can give you a needed boost.   If you have to choose between staying on the fast with a small boost, or going off the fast because you have no energy, take the boost. Let’s go through the different alternative milks.  These are all UNSWEETENED, obviously. In 8 ounces or 225 ml... Almond Milk.  1 gram carb. Whole Cow Milk    12 grams carb. Soy Milk    4  grams carb. Coconut Milk  2  grams carb. Rice Milk   22 grams!  (or you could drink sugar). As you can see, the Almond milk and Coconut milks are the best by far. I don’t recommend Soy milk at all. It changes your hormonal balance. It can cause all sorts of problems. Almond and coconut milk have half the carbs anyway, so try to go with them. Remember, any drink with any kind of added sugar is OUT. Honey, Maple syrup, Agave, all NO NO’s.  Those are all different names for sugar. The body doesn’t differentiate. It just sees sugar. Does nut milk break a fast? Don’t worry so much about a small amount of cream, almond, or coconut milk in your coffee or tea if you are fasting. Everything in moderation.  If you like these tips and would like to get more tips, endless recipes, and lots of inspiration, then come to our free website and sign up for our mailing list.https://rockthatketo.com/ ( https://RockThatKeto.com) .  Act! Toss out those outdated lesson plans and forget about sticking to the book. In Ep. 4 of Season 2, we are joined by Detroit educator, Bayan Founas, who is truly redefining what it means to be an educator.Teaching is by far one of the most important careers out there. Bayan spends a good chunk of her day shaping the future leaders, doctors, lawyers and artists of our next generation. But as rewarding as this may sound, teaching can also be extremely difficult. With limited resources and disruptive environments, a career in education can be time-consuming and can provide little to no stability. Bayan dives into the unjust disruption of funding throughout the public school system and with the lack of technology and baseline materials, some low-income areas are set up to fail. We also discuss a disturbing national trend: The School To Prison Pipeline. This happens when minors and young adults from disadvantaged backgrounds become incarcerated because of increasingly harsh school and district policies. What this means is that the kids who need help the most are shut off and ignored. Bayan dives into the world of the negative consequences of disciplining students, and how most of the time “acting out” is a cry for help with several underlying factors. When it comes to the classroom, Bayan explains it's never just black and white. Adapting lesson plans and teaching methods to her present students can make a world of a difference. Comparing “Shakespeare” to “The Lion King” is a much more efficient way to teach. Science and math are very important topics, this we know. But we can't forget about the arts, which allows kids to push the envelope when express themselves. Bayan realizes the importance of it, which is why she began the first poetry club at the school she teaches at. Speaking of poetry…did we mention Bayan has her own poetry book?Diary of a Daughter In Diaspora focuses on Bayan’s life experiences as a child of Algerian immigrants living in America. The highs, the lows and all things in between, this book gets the Unfiltered and Unsweetened seal of approval for sure! LIsten in today for my take on intermittent fasting. I shoot for 3x a week.  Easiest for me to fast the mornings that I work out.  I feel best doing a workout on an empty stomach. **Please check with your doctor before trying any sort of fast. If you are brand new to fasting start with a 12 hour fast.  If you eat dinner at 6 pm then have nothing but water until 6 am the next day.  That means no late night snacking. If you aren't a nighttime eater, then try for 14 hours.  Dinner at 6 pm and nothing until 8 am the next day. If this is comfortable for you, shoot for 16 hours fasted.  6 pm dinner and first food at 10 am the next morning.  If it is very difficult I would recommend drinking herbal teas in the morning.  Unsweetened!!  Remember you want no calories so that your body is forced to burn fat stores for energy. Would love to hear how this works for you.  DM me on Insta @theguudcompany

Hydration 101 Everyone has probably heard that a human being can live for more than 3 weeks without food but only 3-4 days without water. Even with this knowledge, water is the most common nutritional deficiency in the American population. It may surprise you to know that water is a nutrient but it is actually the most important nutrient in our body and makes up 55-60% of our body mass. Some of water’s many roles include: Improving oxygen delivery Transport of nutrients Cushions bones and joints Absorbs shocks to joints and organs Enables cellular hydration Regulates body temperature Removes wastes Flushes toxins Prevents tissues from sticking Maintains normal electrical properties of cells (electrolytes) Empowers the body’s natural healing process Moistens oxygen The ideal amount of water is bio-individual but the general recommendation is to drink half of your weight in ounces of water. For example, a 140-pound individual would aim for about 70 ounces of water per day. Those who are more active may need more water and very sedentary individuals less. If you consume a large amount of diuretic beverages such as coffee, tea, energy drinks, soft drinks, and alcohol, you will need to drink more water As a functional nutritionist in Colts Neck, NJ, when someone tells me that they are having issues with constipation, headaches, joint problems or fatigue, the first questions I ask is how much water they are drinking. We don’t normally make the association of being dehydrated to any physical issues but many symptoms we have on a daily basis can be related to just that. What are some signs of dehydration? Some early signs of dehydration are: Fatigue Anxiety Irritability Depression Cravings Cramps Headache Mature signs of dehydration are: Heartburn Joint pain Back pain Migraines Fibromyalgia Constipation Colitis About 8% of water is produced when the body processes (metabolizes) certain nutrients. The body loses water primarily by excreting it in urine from the kidneys. The remaining 92% must be ingested through the foods we eat and the beverages we drink. Also, water cannot be stored in the body - we are not camels! In order to absorb water, we need to have appropriate electrolytes, such as: potassium sodium calcium bicarbonate magnesium chloride phosphate Electrolytes are chemicals that form ions in body fluids. They help make sure specific bodily functions run smoothly. The electrical energy that is carried by these ions is necessary for many functions, including muscle contractions and transmission of nerve impulses. For example, muscle cramping can be an indication of low electrolytes. Sports drinks that claim to replace electrolytes are not the best choice for hydration because most of them contain an abundance of sugar or artificial sweeteners plus artificial colors and flavors. Your best bet is filtered, spring water or coconut water with a pinch of unrefined sea salt or Himalayan pink sea salt. It is best to drink filtered or spring water. If you drink bottled water make sure the bottle is BPA free. Distilled Water, which is free of dissolved minerals and other particles has the ability to absorb toxic substances but pulls minerals from the body and can be dehydrating. It can be used for short term detoxifying of heavy metals if indicated but should not be consumed as drinking water. How much water loss causes dehydration? If the body’s water content drops by as little as 2%, it will cause fatigue. A drop of 10% will cause significant digestive, cardiovascular, immune and musculoskeletal problems. Losses of greater than 10% can cause death. There is something else to keep in mind regarding hydration and age. There has been research that seems to indicate that as we age there is a change in the way our body regulates thirst. Due to this, elderly people may need to drink regularly even when they do not feel thirsty. So, other than feeling thirsty, how do you know if you are dehydrated? A good indicator of proper hydration is the color of urine. Use the following as a general indicator of hydration: Clear urine (no color at all) - you may be drinking too much water Pale yellow - this color indicates adequate hydration Bright yellow - if you are taking vitamin B2 (riboflavin) which is in most multi-vitamins your urine will be a fluorescent yellow Dark amber - this is a sign of dehydration If your urine is scant or if you haven't urinated in several hours, that too is an indication that you're not drinking enough. Based on the results from a few different studies, a healthy person urinates on average about seven or eight times a day What if you don’t like the taste of water or the lack of taste? There are a few ways to make drinking water or other hydrating drinks more palatable. Try adding a squeeze of lemon juice, lime juice or grapefruit juice to your water and add a pinch of sea salt. Or buy an infuser water bottle that has a separate compartment at the bottom that crushes your choice of fruits and infuses the water. Unsweetened herbal teas, iced or hot, are also a good choice for hydration with more flavor. If you're a fan of coconut water, this can be a hydrating drink as long as it is not sweetened. There are natural sugars in coconut water but they do not have a big impact on blood sugar and it is a good source of electrolytes. Goldin, the founder of $30 million beverage company hint®, launched the company in 2005 after developing the unsweetened flavored water in her home kitchen as a healthy alternative to the sweetened juices she had been buying for her kids. Goldin approaches the subject of sugar and sweeteners with the subtly of a presidential stump speech. “People ask me ‘who’s your biggest competitor?’ It’s the sugar and sweetener companies. They will use any food or beverage to sell their ‘drug.’ And use any language to make it seem healthy,” she says. The former AOL AOL +% executive doesn’t like diet sweeteners much more than sugar. She proclaims, “Almost 1/2 of Americans have type 2 diabetes or pre-diabetes. That’s up 27% from a decade ago! And what are we drinking over the past decade? Diet sweeteners. You be the judge.” Read the full Forbes article and watch the interview here: http://onforb.es/1MM2SGS. Jae Gruenke Jae Gruenke, owner of The Balanced Runner™, rocks Kari's world by taking a different approach in talking about proper running form. Learn how to run naturally and efficiently. Jae tells listeners what a running form (US term) or running technique (UK term) expert does. Listen to why she was offended by running and how she went about solving it. She explores why gait and posture affect our running forms. Learn about the Alexander Technique and the Feldenkrais Method of Somatic Education. Sometimes when runners try to change their forms, that can be the worst thing to do. She shares what makes her cringe as a form expert—including how runners swing their arms (which affects foot strike) and how people try to apply what are considered the rules of posture to running (“posture is for posts”). Jae shares how to position your head when running, how to shift your hips properly (which can lead to IT band issues if done improperly), how to lean from your ankles, and how to tip your pelvis from side to side. Learn why Jae thinks stability shoes are heavy, and they interfere with your ability to use your arch as a spring. Find a way to make running feel natural and safe.
