It's the What Ya' Got Cookin'? Thanksgiving edition, a beloved tradition here on Midday, going all the way back to 2016. Tom talks with John Shields, owner of Gertrude's at the Baltimore Museum of Art and Damian Mosely of Blacksauce Kitchen. The two chefs talk with Tom and the Midday callers about cooking tips and food faux pas for folks preparing tomorrow's big meal. We also get a special check-in from Tom's mom, Rosemary Hall. Jo-Jo's Curried Crab Dip (Gertrude's Recipe) Ingredients (8 servings): 1/2 cup of Dried currants 1 lb of Cream cheese 2 tbsp of Madras Curry Powder 2 tbsp of Mayonnaise 1/3 cup of Coconut Milk 1/3 cup of Minced green onions or chives 1/3 cup of finely diced Red bell pepper 1 lb of Lump or Claw Crab meat 1 pack of Melba rounds, Water crackers or Ginger snaps. Directions: Preheat oven to 350 degrees Fahrenheit. In a small bowl place the currants and just enough water to cover. Let stand for 15 minutes. Drain, but reserve 2 tablespoons of liquid, and put the currants aside. In a large bowl combine the cream cheese, curry powder, mayonnaise, coconut milk, green onion, and red bell pepper. Beat until smooth and somewhat creamy. Mix in the crabmeat, currants, and 2 tablespoons of the reserved currant liquid. Transfer the mixture to a greased casserole dish and bake for 25 to 30 minutes. Serve hot or warm with Melba rounds, Water crackers, or Ginger snaps. Chocolate Bourbon Pecan Pie (Gertrude's Recipe) Ingredients (1-9 Inch Pie): 1 Pie Crust 3 Eggs 1/2 cup of Sugar 1/2 cup of Brown sugar 1 cup of Karo syrup 2 tsp of Vanilla extract 1/2 cup of Melted butter 2 tsp of Flour 2 oz of Unsweetened chocolate, melted 1 1/2 oz of Semi-sweetened chocolate, melted 1/4 cup of Locally distilled bourbon 1 1/2 cup of Pecan pieces (per pie) Directions: Preheat oven to 350 degrees Fahrenheit. Cream eggs and sugar together. Stir in the Karo syrup, vanilla, butter, and flour, Mix well. Add chocolate and bourbon. Spread pecan pieces around the bottom of each pie crust. Pour in filling and gently mix into the nuts. Bake for about 45 minutes to 1 hour, or until puffy and set. Cool and serve. Rosemary Hall's Fresh Cranberry Relish Tom's Mom makes this delicious cranberry concoction, which Tom and his Mom first learned from James Porterfield, a friend in Ithaca, NY. Ingredients: 1lb Cranberries 1/2 cup of White granulated sugar (Tom uses 1/4 of a cup) 1/2 cup of Firmly packed brown sugar (Tom uses 1/4 of a cup) 1 cup of water Directions: Grab a pot and bring the cranberries and sugar to a boil and cook for 10 minutes. When cool, mix in: 2 tbsp of Horseradish 2 tbsp of Dijon mustard Serve over Cream cheese as an Appetizer, or eat it as a side with Turkey, Chicken, or Pork. Sweet Potato Biscuits (Blacksauce Recipe) Ingredients: 4.75 lbs of All-purpose flour 7 tbsp of Baking powder 4 tbsp of Sugar 2 tsp of Salt 1.75 lb of Cold butter, cut into parts 1 lb of a Peeled Sweet potato 64 oz of Buttermilk 2 oz of Heavy cream 2 tbsp of Turbinado sugar Directions: Preheat convection oven to 400°F. (if you're using a conventional oven, then 425°F). Line two half-size sheet pans with parchment paper. Measure dry ingredients (flour, baking powder, sugar, and salt) into a stainless steel bowl. Using a knife and sanitized cutting board, cut the butter into 1-ounce cubes. In small batches, pulse the flour mixture and butter in the bowl of a food processor until the mixture resembles a coarse cornmeal. Return mixture to stainless steel bowl. Add roasted sweet potato to the food processor; pulse in the buttermilk. Make a well in the center of the flour & butter mixture; using a stainless steel spoon, fold in sweet potato buttermilk mixture just until the dough comes together. Turn out the biscuit dough onto dry, lightly floured work table; bring together and knead twice. Flatten the mound of dough, with hands or rolling pin, to two inches in height. Cut biscuits using 2” biscuit cutter, and place next to each other on sheet pan. Bake for 9 minutes in full size electric convection oven Remove biscuits from the oven and, working quickly, brush the tops with heavy cream and sprinkle with turbinado sugar. Return to the oven and bake for 9 more minutes in full size electric convection oven. Remove pans from oven and place onto bun rack to cool. In this episode, I, Dr. Laurie Marbas, a board-certified family and lifestyle medicine physician, delve into a cholesterol-lowering protocol that I've developed over the past four years through extensive research and patient experimentation. This protocol is particularly beneficial for those on a whole food plant-based diet who still struggle with high cholesterol levels. I start by explaining the importance of a plant-based diet and the common challenges my patients face, such as maintaining optimal cholesterol levels. I emphasize that while statins can be necessary for some, my goal is to improve quality of life and longevity through dietary means whenever possible. The core of my protocol involves a specific mixture to be consumed twice daily before lunch and dinner. This mixture includes: 1. Unsweetened applesauce (a quarter to half a cup) 2. Amla powder (eighth to a quarter teaspoon) 3. Psyllium husk (one teaspoon) 4. Ground flaxseed (one tablespoon) 5. Ceylon cinnamon (half a teaspoon) I also recommend additional steps to enhance the protocol's effectiveness: One Brazil nut per week for selenium. Berberine supplements (500 mg, three times a day) for cholesterol and blood sugar management. Algae omega-3s for heart and brain health, with brands like Nordic Naturals or Compliment. Soy products (two to three servings per day) such as soybeans, edamame, tempeh, tofu, or soy milk. I highlight the importance of consistency in following this protocol to achieve the best results. Additionally, I mention that this regimen can help with satiety, which may be beneficial for weight management. After years of experimenting, Dr. Sonya Whitaker noticed a trend that causes her concern and the trend is directly tied to her personal experiences related to limited to no ability to obtain unsweetened ice tea in any of the black communities she frequents. In this podcast she opens up about topics related to black people being disproportionately harder hit by heart disease risk factors such as high blood pressure, diabetes and obesity and challenges fast food service providers to make a concentrated effort to engage in practices geared more toward extending the life expectancy rates of African Americans. Dr. Whitakers own grandmother died at the age of 54 due to complications related to heart disease.

I have recently become a huge fan and I am thinking about becoming certified in your program. My question is about my father. He had a severe reaction to the yellow fever vacc several years ago and it caused brain swelling that took doctors months to figure out. He then was put on high levels of steroids, which then lead to Diabetes. Knowing what I know now, I think he has parasites (from all of his crazy travel places), h-pylori, Candida, SIBO all while getting sick constantly and taking forever to get over it. He won't change his diet but has recently made some changes in taking Omega 3's, CQ10 and NAC (this is huge progress) What would be a low hanging fruit (other than diet) that I could make him a believer in functional medicine that could spark some changes in him moving forward. I am sure taking the Big 5 would be the best place to start, however, I need to start very small. I am hoping for a suggestion for a supplement or something to that nature that people tend to see noticeable improvements from. Something like Zinc Picolinate or something that may help with blood sugar, blood pressure, mitochondrial function etc. Again, thank you in advance. Demetria: Hi, I have been dx with PanUvitis. I'm a little confused about my acne situation. I used to have really bad acne as a teenager, went on birth control for it which cleared it up, then got off birth control two years ago and my skin was clear for about nine months. I started getting a little acne here and there, mostly bumps and blackheads around my chin and jawline, on my right side of my face specifically, that turned into under the skin zits. I then did the 7-day detox followed by the CBO Protocol and heavy metal detox while incorporating Equi.Life hormone supplements. After all that, now my chin and jaw acne is now on the left side of my face instead of the right side. Persimmon-Kumquat Pudding with Coconut Whipped Cream Culinary Inspirations: From Gourmet to Pret-a-Manger. We CAN have nice things! +Cooking Demo Serves 6 For the pudding: 4 very ripe Hachiya persimmons or 5 Fuyu persimmons, allowed to soften ¼ lb. kumquats, whole, about 10 1-2 TBLS Dr. Fuhrman's Blood Orange vinegar, or lemon juice, or to taste Coconut water or orange juice (optional to facilitate blending) For the coconut whipped cream: 1 ½ cup nuts of choice (cashews, macadamias, walnuts, hemp, or a combination) 1 TBLS unsweetened flaked coconut 12 deglet noor dates, pitted Coconut water (as needed to facilitate blending) Optional: 1 teaspoon, Dr. Fuhrman's Coconut Vinegar, or coconut extract Optional garnishes: Unsweetened shredded coconut, raw or lightly toasted 6 kumquats, cut into pinwheels and seeded In a high-speed blender, puree the pudding ingredients until smooth, adding coconut water or orange juice as needed to facilitate blending. Place in 12 individual serving dishes (martini glasses make a nice presentation). Likewise, puree the coconut cream ingredients until smooth, using coconut water to facilitate blending. Spread a layer of the coconut cream over the persimmon pudding and chill for at least 2 hours. Garnish with unsweetened shredded coconut and some kumquat pinwheels. Nutritarian Vinaigrette (Basic Recipe) ½ cup vinegar or citrus juice (any flavored vinegar, balsamic, sherry, lemon juice, lime juice, Yuzu, verjus, etc) 1 cup water 2 teaspoons arrowroot powder, dissolved in an additional ¼ cup cold water Bring the vinegar and the cup of water to a boil in a small saucepan. Once boiling, whisk in the arrowroot-cold water mixture and let boil for 2 minutes, but no longer, whisking occasionally. Remove from the heat and let cool to room temperature. Refrigerate until ready to use. Makes about 1 ½ cups, approx. 6 servings.
