In Part 2 of my high-flying conversation with Charles Joly, some of the topics we discuss include: The 2014 Diageo World Class win that elevated Charles to global bartending celebrity, and the story of the innovative cocktail that put him in the winner's circle. Jon Mateer is the Beverage Manager at TPC Sawgrass with the PGA Tour. Jon has worked in bars and restaurants over the last 12 years and places a major focus on craft cocktails. Some of the highlights along the way include being part of the opening bar team at the prestigious Death & Co. in Denver, where he worked as a bartender and education lead. During his time there, the team received numerous accolades from the Tales of the Cocktail Foundation including being a finalist for both “Best New American Cocktail Bar” and “Best American Bar Team.” Jon has been fortunate enough to have been selected as a Top 100 Bartender in The United States by Diageo World Class in 2022 & 2023! Last year, Jon claimed the title of U.S. National Champion of the Giffard West Cup and traveled to France to compete in the International Finals. Locally, Jon serves on the Board of Directors for the United States Bartender's Guild in Jacksonville, Florida. In his spare time, Jon has a podcast called Bardtenders where he and a few fellow bartenders take a break from putting liquids in cups. Sid Patel, CEO of Beverage Trade Network chats with Varun Sharma on his trip to India where they discuss How to become a better bartender, the kind of interview questions he keeps in mind before onboarding a new bartender for the bar, and how does he bring mixology in his bar. Varun Sharma is the Beverage Manager at Comorin. He is responsible for overseeing Comorin‘s unique beverage program which is one of India's favorite cocktail bars. Varun is India's top Mixologist currently and has worked as a Head Bartender and Mixologist at Ricks, the Taj Mahal Hotel, and as a Bar Manager at Chidiya Ghar Bar, Roseate House Hotel, Delhi. He has won numerous awards including regional wins at the Diageo World Class (2014 & 2013), where he was also recognized amongst the top 6 bartenders in India during both years. He also won the National Award for the Best Mixologist at the Corralejo Teqnic Mixology Challenge in 2014.

A very passionate and creative bartender, Dani is originally from Aurora Ontario and has been in the industry for over a dozen years now. Dani has worked in multiple facets of the industry from golf courses, cafes, nightclubs, train travel service and everything in between. Dani has also started competing in cocktail competitions and was crowned the Giffard West Cup Canadian National Champion in 2022 and was a semifinalist at Diageo World Class. This weeks guest is Raven Alexis Dales who currently lives in Shawnigan Lake on Vancouver Island, British Columbia. Raven has been working in the Food & Beverage industry since 2011, beginning her career studying culinary arts at Vancouver Community College and working in restaurants in Vancouver & Victoria. While doing so, Raven studied through the WSET program to better understand the relationship between food pairings and beverages. Raven's shift into front-of-house roles was a slow smoulder in the last couple years of her culinary-focused career. Raven wanted a better understanding of all parts of a restaurant—striving towards a better hospitality experience for all, so she began bartending in late 2018. Raven participated in the Nimble Bar Co. school curriculum and learned the ropes at Pagliacci's; an institution in Victoria BC run by Solomon Siegel, along with the mentorship of Shawn Soole. Raven quickly became Head Bartender and helped lead the bar program until early 2020, when she moved on to Veneto Bar and Ristorante. That venture stopped abruptly when Veneto closed permanently amidst COVID-19 restrictions, and in the time since then Raven has found herself tending bar at several establishments throughout Victoria. Raven spent a good deal of that time helping develop the bar program at Wind Cries Mary in Bastion Square, and is currently the bar manager at The Lakehouse in Shawnigan. Raven has also participated in a few bartending competitions: Diageo World Class, Speed Rack, Made with Love and Negroni Week to name a few. Raven's favourite parts about the competition world have been the camaraderie, meeting new people, and how amazing it is to hype and bring your peers up around you! Nick Kokonas is an award winning bartender who lives and works in Chicago, IL. Over the course of his career he has played an integral role behind some of the most prestigious bars in the city; from the formerly Michelin-starred gastropub Longman & Eagle to working on the opening bar team at Danny Meyer/The Dead Rabbit collaboration Green River. He has participated in a number of the most prominent international cocktail competitions, finding success in Diageo World Class, Bombay Sapphire's Most Imaginative Bartender, and Bacardi Legacy, to name a few.In June of 2016, Nicolas became the opening beverage director for The Heritage, a restaurant just outside Chicago's city limits. While developing the menu he created a weekly rotating cocktail simply titled “Something & Tonic”, an ever-changing drink with a foundation of tonic water, tonic syrup, or liqueur bittered with cinchona.The challenge of using tonic in innovative ways provoked his interest into tonic's origins and its growing presence in modern day drinking culture. After the restaurant's opening Nicolas' cocktails began garnering attention. In the Chicago Tribune the “Something & Tonic” was given special mention in veteran food writer Phil Vettel's favorable two star review of the restaurant where he writes:"Kokonas offers a tidy list of five or six cocktails, of which the most interesting is the Something and Tonic, which changes week to week. I don't know if Kokonas can sustain this for a year, but I've managed to have three versions of this drink, and so far, so good."Moving on from The Heritage, Nick recently spent two years running a beverage program in Charleston, SC at the Southern food icon The Grocery. In this episode, we brought on our good friend and overall great guy, Bar Manager Jeff Savage of Botanist. We’d like to say that Jeff’s definitely had himself a year as he was not only part of the winning team that took home the Bols Around the World Global Title but that he was also crowned the Diageo World Class Canadian Champion. To top both of these achievements, Jeff just arrived back from Glasgow where he was runner up in the Diageo World Class Global Final. We repeat, he came 2nd in the world!! What an accomplishment for himself, Team Canada, Vancouver and his Botanist team. With that, we were thrilled that he accepted our invitation to come on the pod and discuss his achievements, his process and much much more. In this episode we spoke with bartender Grant Sceney of Vancouver’s Fairmont Pacific Rim Hotel. Grant’s been one of the few guests we’ve had shortlisted to have on for some time now as we were eager to hear his story, how he came to Canada by way of his native Australia and what it was like winning the Diageo World Class Canadian final in 2014. His win, a crowning achievement for a bartender, helped propel his ascension to being one of the worlds best as he would end up placing 4th at the Diageo Global final a few months later. Achievements such as this one, as well as running bar programs for the award winning Botanist restaurant and the Pac Rim’s Lobby Bar have given Grant a skill set and set of experiences we were excited to hear him discuss. It was a sunny Monday when we met and Grant delighted us with a bottle of batched Don Julio margaritas, which were we more than happy to indulge in. Dutch bartender Tess Posthumus and co-founder of Flying Dutchmen Cocktails in Amsterdam shares her Backstory with EXHETRA creator and Backstory curator Jo Jepson-Davies.Tess Posthumus fell in love with mixology after moving to Amsterdam from her hometown of Breda, where she worked in catering, events, restaurants and bars. In addition to studying at the University of Amsterdam, she joined the team at Door 79 in 2009.In December last year, Posthumus held a soft launch for her new venue, launched with former Door 74 manager Timo Janse, called Flying Dutchmen Cocktails. The venue officially opened its doors in March 2018.A regular on the cocktail competition circuit, Tess has learn to work in a male dominated industry. She has reached the Dutch National finals in Diageo World Class and was one of four Dutch winners in Bombay Sapphire’s Most Imaginative Bartender competition.Tess has written a cocktail book, called Cocktails met Tess.Along with her Backstory, Tess gives us an insight into the gay scene in Amsterdam, which I found quite disappointing. Bar Institute NYC We had the very exciting Bar Institute event here in NY this week. It's the Bartender Journey Podcast number 189! Listen with the audio player on this page, or subscribe on iTunes, Android or Stitcher Radio. On Monday before Bar Institute, I attended Diageo World Class Labs. This is an awesome opportunity. Diageo World Class is one of the top 2 or 3 cocktail competitions in the world. Competitions like this can literally change your life. To enter the competition you have to be a USBG member, in the US anyway. But through World Class you can get a free 30 day USBG membership which allows you to get your application in. If you decide to keep your USBG membership after that, its only $125/year, which is a real bargain, but that’s a subject for another day. To enter the World Class competition you have to take at least one World Class Lab class, or you can do it online, but the live events are awesome (and free). They travel to different cities doing the class and I really encourage you to look into it. We had a great class about Taste. It was run by Andy Symore. We had samples of various cocktails to demonstrate the power of different variables like temperature, sweet, sour, bitter and salty. It was a blind tasting, so Andy didn’t tell us what we were drinking until after we tasted and talked about it. The first sample was a room temperature Martini and the second was the same exact Martini, but chilled. It was diluted with the same exact amount of water. We also had a Negroni with and without salt added and so on. It really demonstrated the power of altering just one ingredient and the importance of every single thing that goes into your cocktail. You may sometimes hear that your cocktail is only as strong as the weakest link, so its important that every ingredient is high quality. Then there was lunch, (free btw) and a second session, which I didn’t stay for because I wanted to get downtown for Bar Institute. Taking just one session is enough to qualify for World Class although you are welcome to stay for both So even if you don’t enter the competition, (and why not?) you could still take one of these classes.
