This weeks guest is Raven Alexis Dales who currently lives in Shawnigan Lake on Vancouver Island, British Columbia. Raven has been working in the Food & Beverage industry since 2011, beginning her career studying culinary arts at Vancouver Community College and working in restaurants in Vancouver & Victoria. While doing so, Raven studied through the WSET program to better understand the relationship between food pairings and beverages. Raven's shift into front-of-house roles was a slow smoulder in the last couple years of her culinary-focused career. Raven wanted a better understanding of all parts of a restaurant—striving towards a better hospitality experience for all, so she began bartending in late 2018. Raven participated in the Nimble Bar Co. school curriculum and learned the ropes at Pagliacci's; an institution in Victoria BC run by Solomon Siegel, along with the mentorship of Shawn Soole. Raven quickly became Head Bartender and helped lead the bar program until early 2020, when she moved on to Veneto Bar and Ristorante. That venture stopped abruptly when Veneto closed permanently amidst COVID-19 restrictions, and in the time since then Raven has found herself tending bar at several establishments throughout Victoria. Raven spent a good deal of that time helping develop the bar program at Wind Cries Mary in Bastion Square, and is currently the bar manager at The Lakehouse in Shawnigan. Raven has also participated in a few bartending competitions: Diageo World Class, Speed Rack, Made with Love and Negroni Week to name a few. Raven's favourite parts about the competition world have been the camaraderie, meeting new people, and how amazing it is to hype and bring your peers up around you! Für die heutige Folge haben wir es uns mal wieder in der Rorschach Bar im Leipziger Süden bequem gemacht. Nicht nur, um die Atmosphäre einer Bar mal wieder einzufangen, sondern auch weil in dieser Woche die Negroni Week stattfand. In dieser folge berichtet Olli ausführliche über seinen Besuch bei den Spreewood Distillers in Schlepzig. Organisiert von Whisky Jason fand am 11.09.21 nämlich das alljährliche Blogger- und Vloggertreffen statt. In diesem Jahr ging es in den Spreewald etwas südöstlich von Berlin gelegen. Viele bekannte Gesichter gaben sich die klinke in die Hand und genossen einen wundervollen Tag mit vielen Gesprächen, Programm und natürlich Stork Club Rye Whiskey. An dieser Stellen nochmals vielen Dank allen Beteiligten, allen voran Jason, Bastian und Steffen für die Einladung! Tim konnte leider nicht teilnehmen, hatte aber dadurch die Chance einen Onlinetermin mit Dr. Bill Lumsden und Thomas Moradpour (CEO Glenmorangie) wahrzunehmen. Die beiden haben in einem Live Stream die neue Glenmorangie Lighthouse Distillery vorgestellt, die ausschließlich für Experimente genutzt werden wird. Das dazu komplett neue errichtete Lighthouse ist stolze 20m hoch und beherbergt zwei Brennblasen, die in ihrer Form exakt den originalen Giraffen von Glenmorangie nachempfunden sind. Besonders sind die Brennhälse, die die Höhe modulieren können, als wären sie niedriger oder höher. Auch die Kondensation über Kupfer oder Edelstahl mit und ohne Purifer sind technisch möglich. Wir sind daher gespannt, was da auf uns zukommt, der Ansatz "Flavor not Yield" ist auf jeden fall ein guter Schritt, den wir begrüßen. Gegen Ende dieser Folge weisen wir noch auf das Irish Whiskey Wochenende hin, das am 09. und 10. Oktober online stattfindet. Auch Thy Whisky aus Dänemark hat interessante Neuerungen für uns. On this week’s show we are talking about the Negroni. Easy to make, stands the test of time, nothing quite like the Negroni, it’s bitter and sweet, just like life. First experienced back at the Yard with Blake who put out Grandpa Bud’s Negroni. It’s boozy, it’s strong, for men and women. It has food possibilities, following a gastronomical tradition as far as Campari and vermouth. That category of Italian bitters, apparetif was designed to open the palate. The best Negroni in the world comes from Dante’s in New York, in the west village. They have a display case with vintage Campari bottles. They have great Garibaldis too. Campari was birthed in another cocktail, the Americano. The Americano came about because of the American expats during and after World War One. Then the Negroni apparently is named after bibulus, globetrotting Florentine count who liked his drinks strong. Go to theginfoundry.com for a more detailed version of the store. Equal parts, just like this show. One of the four or five prototype cocktails, one one one. If you’re a home bartender, try the Negroni. Campari is the bitter, vermouth and gin. The Negroni made in the glass is disappointing. You want to stir the Negroni  for the dilution, just like Old Fashioned made in a mixing glass. “The bitters are excellent for your liver, the gin is bad for you, they balance each other” Orson Welles. On the rocks or up? Depends on thirst and temperature, if it’s up it should be confused quickly, but on the rocks you can take your time, turns into a longer drink. If you follow the equal parts recipe, it’s a little sweet, a little extra dilution. Carpano Antica vermouth, a great, heavy vermouth was the first one the guys used, but now the lighter Italian or French vermouths are a nice variation. What is Vermouth? It is fortified wine. Infused with botanicals, herbs and spices, but also fortified, made stronger, like brandy, port, Madera, but vermouth is aromatized, typically a secret Monastery recipe. Good for you in the way Campari is a bitter, with medicinal qualities, good for you before or after a meal. Style of gin, London Dry for Ki, but there is so much variety that it’s fun to explore and experiment with local American, New World gins. Old Tom gin, with a woody taste. An aperitif is great for after a meal. Campari is an alcoholic liqueur, an aperitif, with different spirit strengths, depending on the country to which it is sold. Made of fruits and alcohol and water, produced by the Campari Group, invented in 1860 in Italy, colored with Carmine dye, made of beetles. First plant opened in 1904, and we love Campari! Kim remembers his dad drinking Campari and soda. There are several red bitters depending on your region. liquor.com has a list of more aperitifs, Peychaud’s, Luxado, Capaletti, Martini, Select, Contrato, Luna Amara and more. Ben prefers London dry gin as well, likes the botanical heavy more so than the citrusy American gins. Ben likes an orange twist. The Negroni has become so famous it has a Negroni Week, which is coming up! For those at home, familiarize yourself with the jigger and the ounce, not mL. Generally its an ounce of each, in a mixing glass, stirred with ice, then strained up in a coup or into a rocks glass, strained with ice and garnished with an orange zest and twist.
