Danny also talks about ways to connect with other professionals in the hospitality industry to help grow your career and advance your education! Danny Posey has been in the hospitality industry for 17. Danny started his journey in the industry working at a big corporate chain restaurant and since then has worked as a server, bartender, beverage director, manager, and training lead.  Danny has always loved bartending and has recently been back behind the sticks making cocktails and pouring libations for guests in Rogers, Arkansas. Danny has also entered many cocktail competitions thanks to our friends at Chilled Magazine; He hasn't placed yet, but he looks at these competitions as learning opportunities to fine-tune his skills and learn new techniques. NW Arkansas is a small market, with limited networking and educational opportunities for the industry (for now…) so for the last two years Danny has been trying to attend every possible opportunity out of state (and even one international trip) he can find, including Bar & Restaurant Expo, BCB, Tales, Portland Cocktail Week, etc.  Danny has also been working with Chilled Media to build an established Chilled 100 group in Arkansas to help connect people and grow their abilities as well as hoping to reignite a USBG chapter.You can find Danny at Local Lime in Rogers, AR, a Baja-Cali mex concept that uses fresh, local ingredients both in the kitchen and behind the bar where Danny is the bar manager and runs the beverage program there. Becky Rose is a Colorado native with a background in theater and coffee who has been working as a craft bartender in Denver for the last 7 years. Her inspiration comes from the beauty found in nature, travel, literature, and the relationships she has with family and friends. Becky has competed in a number of local, national, and global competitions including BARMANIA, an Herbs & Rye of Las Vegas-sponsored bartending free for all benefiting St. Baldrick's Foundation. She's a three-time top qualifier and semifinalist for the South West regional SpeedRack competition. SpeedRack is an all-female speed bartending competition for charity. Becky is also a two-time national finalist for various global spirit cocktail competitions. To teach us about this beloved cocktail and its iconic, eponymous ingredient, we're joined by San-Francisco-based Aaron Gregory Smith, the executive director of the USBG. Aaron Gregory Smith's Pimm's Cup Recipe Ingredients - 3-5 slices of cucumber - 5-6 mint sprigs - ½ ounce ginger syrup (2:1 demerara sugar to water, simmered for around 15 minutes with peeled, minced fresh ginger) - ¾ ounce fresh lemon juice - 1 ounce Pimm's No. 1 - 1 ounce gin - 1 dash of aromatic bitters - Soda water, to top - Garnish: fresh cucumber and mint Directions 1. Muddle cucumber with mint in a cocktail shaker.2. Add ginger syrup, lemon juice, Pimm's, and gin.3. This weeks guest is Olivia Lindstrom who currently resides in Philadelphia, Pennsylvania. Born and raised in rural Eastern Pennsylvania, Olivia moved to Pittsburgh, PA after highschool to pursue a Biology degree at the University of Pittsburgh. Olivia had always gravitated towards science as a way to understand the world around her. After her laboratory job's project concluded in her junior year, Olivia decided to try her hand at serving to get through her final year of college. She spent 6 months working as a server at a restaurant attached to the DoubleTree hotel called the Bigelow Grille in downtown Pittsburgh.  In 2016 Olivia started working at Spork which would be the job that foraged her current career path. Spork is a chef owned restaurant dedicated to fresh and local ingredients. Olivia worked her way up from a backwaiter to bartender, but had a pretty unconventional path of getting there. She has only really defined herself as a bartender for the last 2 years. This was due to the fact the she had pursued wine pretty intensely before stepping behind the bar. Olivia successfully passed the Certified Sommelier Examination in 2018 through the Court of Master Sommeliers. At that time Olivia had fallen in love with the hospitality industry and also how a lot of it overlapped with her love of science.   While still working as the Sommelier, Wine Director, and bartending at Spork, Olivia decided she also wanted to try her hand at high volume craft cocktail bartending. She was able to get a job at one of her personal favorite bars in Pittsburgh, Acacia. Being a part of a smaller staff allowed for creative contributions and influence on general operations of the bar. 2018-2020 was a whirlwind of time for Olivia as she dedicated her time outside of work to the industry and gathering as much knowledge as possible. After passing both her introduction and certified levels in the Court of Master Sommeliers, Olivia was also elected President of Pittsburgh's USBG chapter in 2019, nominated for Women in Whiskey through the local Brown Forman team, attended the 2019 Tales Of The Cocktail as a CAP, and was finally apart of the 2020 Team Taco at SACC.  Before the pandemic cancelled the majority of events Olivia was going to compete in Speed Rack for the first time and attend Camp Runamok. What happens when you get sick or injured and you work in a restaurant? You keep working. At least, that’s how it’s always been. With low wages, lack of access to benefits, and usually nonexistent paid leave, the workers living paycheck to paycheck can’t really take care of their health. Giving Kitchen, a nonprofit in Atlanta, Georgia, is attempting to mitigate those challenges in their local Georgia community by providing financial assistance and resources to workers going through a financial crisis from injury, illness, a death in the family, or housing crisis due to flood or fire.  We have been working on this episode for months, but as we write this, restaurants and their employees are facing a challenge unlike any other in the past due to the novel coronavirus and the disease it causes, COVID-19. We’ve compiled some resources and tips for workers on our website at copperandheat.com/coronavirus.  Look into workshare programs in your city or state like this one in Massachusetts. Many states are making applying for unemployment easier for those affected by COVID-19. So look it up in your state.  Bartenders - there’s an emergency relief fund that you can apply to through the USBG  See if your local restaurant association or any other nonprofits have an emergency financial assistance program like this one.  Some folks are starting GoFundMe pages for emergency relief like this one in Boston. Give if you can, start one in your area, apply if you need help.  Participate in telling city, state, and federal governments to announce a plan to help workers and small businesses.

Even filing for an LLC is optional (but recommended!) *** When I was a kid, my mom told me that I would be a great bartender or a great shrink.I was around 22 years old and I got a job as a bus, sir, at a Little East County Irish restaurant.I knew I had to start somewhere, but it was always my goal and intention to be a bartender. There s O after awhile, busing tables and washing dishes. I eventually became a server waiting in line to get behind the bar. That day would never come, so I took a job as a day bartender at a complete dive, but I got a lot of valuable experience there, too.My job was the head bartender, I guess on I was making 50 bucks a week plus tips to manage the bar.The fondue bar led me to a scene that was happening on Elizabeth Street called the Randolph, which is where I really got my start. They partnered with the late, great Mr Sasha Petraski to train us and show us what a proper drink tastes like and how that's made.This experience was absolutely pivotal for me, and I still remember the feeling of knowing I was in the presence of a master. The training was ongoing because down the street was one of the cornerstones of the craft cocktail movement Milk and honey.This was one of the times that I gained the most knowledge in the shortest amount of time. I mean, they were asking me for, like, Vieux Carre and Queens Park Swizzles and, you know, Ramos Gin fizzes.Death & Co. was another massively pivotal time for me. It was an eventful Monday this week. Our USBG NY chapter meeting was held in Brooklyn at The Counting Room. Dandelyan, of course has won many awards, including “World’s Best Cocktail Bar” at the Spirited Awards during Tales of the Cocktail in 2017. He’s the treasure of the SA chapter of the USBG. Book of the Week: Boston Official Bartender's Guide: 75th Anniversary Edition. The Mr. Boston Bartender Guide was my very first cocktail book, way, way back. I wish I could find that old book I bought when I was probably 17 years old! There have been many editions since its debut in 1935, and the most recent version is edited by our friend Jonathan Pogash. This is an iconic book with tons of cocktail recipes.   Cocktail of the week: Bronx Cocktail: 2 oz. gin 1/2 oz. dry vermouth 1/2 oz. sweet vermouth 1 oz. fresh orange juice Glass: Chilled Coupe Garnish: orange twist Combine all ingredients in a shaker with ice, shake, strain into a chilled glass and garnish. Toast of the week:"May you have the hindsight to know where you've been,
 The foresight to know where you are going,
 And the insight to know when you have gone too far."

Bar Institute NYC We had the very exciting Bar Institute event here in NY this week. It's the Bartender Journey Podcast number 189!  Listen with the audio player on this page, or subscribe on iTunes,  Android or Stitcher Radio. On Monday before Bar Institute, I attended Diageo World Class Labs. This is an awesome opportunity. Diageo World Class is one of the top 2 or 3 cocktail competitions in the world. Competitions like this can literally change your life. To enter the competition you have to be a USBG member, in the US anyway. But through World Class you can get a free 30 day USBG membership which allows you to get your application in. If you decide to keep your USBG membership after that, its only $125/year, which is a real bargain, but that’s a subject for another day. To enter the World Class competition you have to take at least one World Class Lab class, or you can do it online, but the live events are awesome (and free). They travel to different cities doing the class and I really encourage you to look into it. We had a great class about Taste. It was run by Andy Symore. We had samples of various cocktails to demonstrate the power of different variables like temperature, sweet, sour, bitter and salty. It was a blind tasting, so Andy didn’t tell us what we were drinking until after we tasted and talked about it. The first sample was a room temperature Martini and the second was the same exact Martini, but chilled. It was diluted with the same exact amount of water. We also had a Negroni with and without salt added and so on. It really demonstrated the power of altering just one ingredient and the importance of every single thing that goes into your cocktail. You may sometimes hear that your cocktail is only as strong as the weakest link, so its important that every ingredient is high quality. Then there was lunch, (free btw) and a second session, which I didn’t stay for because I wanted to get downtown for Bar Institute. Taking just one session is enough to qualify for World Class although you are welcome to stay for both So even if you don’t enter the competition, (and why not?) you could still take one of these classes. I think you’ll find it to be a great experience and very educational. Next stop was Bar Institute at Pier A, in Manhattan, right next to where the ferry leaves for the Statue of Liberty. We spoke with Kevin Vanegas during Bar Institute about Herradura Tequila and about their new cocktail competition. The Book of the Week: A Proper Drink: The Untold Story of How a Band of Bartenders Saved the Civilized Drinking World by Robert Simonson. Robert takes us through the craft cocktail revival over the past two decades through the personal stories of bars, bartenders,  patrons and visionaries. Filled with modern classic recipes and their origins, A Proper Drink invites you to learn how we got here and where the craft cocktail industry is headed.   Cocktail of the Week: Bourbon Stone SourA Stone Sour is a Sour with the addition of Orange Juice-Freshly Squeezed preferred! 2 oz Bourbon 1 oz Orange Juice ¾ oz Lemon Juice ½ Simple SyrupShake with ice. Stints in computer science, film, and hockey were just temporary as the hospitality gene's dominance took effect. Justin is dedicated to improving his skills while also making simple flavors even more accessible. As a major voice of the USBG, co-conspirator at Lush Life, and general gentleman of cultural, Justin strives to bring the midwest scene to center stage. He sits as bar manager at BC's Kitchen for now, but what lies just on that next horizon. We talk DePalma, bodies of water, and the early days of Mezcal.

As we soon bid farewell to the studious Phillip Smith to the fine city of Chicago, it's great to recant the tale of how this Austinite became entrenched in the Dallas cocktail scene. The athletic and ambitious Phillip Smith was drawn to hospitality at a younger age and even became a cabana boy at the Four Seasons to work his way through the ranks. Bar Smarts, USBG meetings, and a Camp Runamok later, he now is building an amazing resume fueled by ambition and a dedication to his career. His next chapter begins this month in Chicago, and the opportunities are endless. We talk Mezcal, frozen Daiquiris, Parliament, and the Dallas "scene".

A student of both spirits and academia, Austin's newly appointed USBG president Katie Clas has been a great influence on the culture since she arrived nearly 2 years ago. From dog fostering to Malort shooting, this ex-Chicagoan moved to Austin for a large brand ambassador position that was suddenly dissolved shortly thereafter. Left with few leads, Katie chose to advance her education and ultimately accepted a role with the Phillips Distilling Company. These various opportunities converged proving that Katie is the ultimate survivor. Whether demonstrating her marketing shrewdness, or her midwestern down-to-earthness, nothing can keep a good Chicagoan down.

About a month ago, Jim Beam  and USBG partnered up and sponsored an event to allow bartenders, and folks in Pittsburgh be more aware of the history around them.  They rented a large bus and took us all on a tour of the Whiskey Rebellion.  I had never known the history of this area, and the role it played in stabilizing the economy, and making some of the best whiskey in the world.  Professor Buzzkill has a podcast of his own, and is part of our family up at Epicast TV.  He debunks myths about history, so I thought this would be the perfect episode for him to sit in and chat about the Whiskey Rebellion, and if there were any stories, or myths that may have shifted over the years.  Be sure to check out the Whiskey Rebellion Festival July 9-12 this year.  They have bands, food, fun, history, and of course.... whiskey.
