We've heard opinions from Italians and western tourists about Venice. We've seen questions like “What time does Venice close?” and “Does anyone actually live in Venice?” Nathaniel had been to Venice before, but two weeks ago I visited for time. We stayed for just one night and in this episode we address these questions and share our first impressions. Shout out to the Enoteca (wine bar) mentioned in this episode called "Stappo." On the occasion of Enoteca Sileno's 70th birthday, we spend a special double episode at the Melbourne institution in an old pub in Carlton North. We talk with Rosemary and John Portelli, the custodians of an import, wholesale and retail business founded by Rosemary's father Gino Di Santo in 1953. This is episode 2. From the beginning - whether it's pasta or extra virgin olive oil, balsamic vinegar or jarred artichokes, gorgeous risotto rice or a beautiful Valpolicello wine - Enoteca Sileno has honoured the farmers who grow and the artisans who make by carefully selecting, transporting and sharing tales of each product with their Australian customers. In the first episode, we heard from Rosemary about the origins of Enoteca Sileno, and from John about joining the business. In this episode we consider the importance of such institutions and why the business is still so vibrant and dynamic after 70 years. https://www.enoteca.com.au Follow Dirty Linen on Instagram https://www.instagram.com/dirtylinenpodcast Follow Dani Valent https://www.instagram.com/danivalent Follow Rob Locke (Executive Producer) https://www.instagram.com/foodwinedine/ Follow Huck (Executive Producer) https://www.instagram.com/huckstergram/ LISTEN TO OUR OTHER FOOD PODCASTS https://linktr.ee/DeepintheWeedsNetwork Dirty Linen is a food podcast hosted by Australian journalist Dani Valent. Why would someone travel for a day to buy Parmigiano Reggiano from Enoteca Sileno? It's about the cheese, definitely, but it's ultimately about trust. On the occasion of the Melbourne institution's 70th birthday, we spend a special double episode with Rosemary and John Portelli, the custodians of an import, wholesale and retail business founded by Rosemary's father Gino Di Santo in 1953. In this first episode, we hear from Rosemary about the origins of Enoteca Sileno, which started as an importer and wholesaler, moved to its first shop in Amess Street, Carlton North in 1982, and shifted to its current old pub emporium nearby in 2004. The soul of Enoteca Sileno has always been to celebrate artisan food and drink, a tender and enthusiastic honouring of the farmers and makers, and a belief in legacy and family. Everything is here for a reason, and everything has a story. https://www.enoteca.com.au/?utm_source=agfg.com.au&utm_medium=referral Follow Dirty Linen on Instagram https://www.instagram.com/dirtylinenpodcast Follow Dani Valent https://www.instagram.com/danivalent Follow Rob Locke (Executive Producer) https://www.instagram.com/foodwinedine/ Follow Huck (Executive Producer) https://www.instagram.com/huckstergram/ LISTEN TO OUR OTHER FOOD PODCASTS https://linktr.ee/DeepintheWeedsNetwork Dirty Linen is a food podcast hosted by Australian journalist Dani Valent.
Last spring, we sat down with Sarah and Zak Baker, the husband and wife team behind Ca'Lucchenzo Pastificio & Enoteca, a West Side mecca for housemade pasta and regional Italian dishes. Our conversation centered around their culinary backgrounds and the experiences that made opening their own restaurant possible. But we promised to bring them back to chat about the delicious food that they serve. And this week, we did just that. Listen in for the story of how the Bakers fell in love with Italy and Italian cuisine and the magic that makes the fare at Ca'Lucchenzo so remarkable.

To learn more visit: Twitter @matt_paice LinkedIn https://www.linkedin.com/in/matt-paice-6bb4ba2 About about today's guest producer: Giovanni Pesquera-Elia Giovanni Pesquero-Elia was born on June 1959, and was raised on a farm in Serraboella – Neive. He started to work in the fields following in his parents footsteps. In 1972 he started to learn the winemaking process, while studying at the Oenological School Umberto I of Alba. After 6 years he became an Oenologist, showing specific talent in the field of chemistry. For many years he spent time in the cellar winemaking, following traditional rules. After his brother Silvano joined the company a few years later, the two started managing the cellar together. A pivotal shift for Giovanni's career came with his meeting of Thomas Abruzzini, considered the American Veronelli, given his incredible nose and understanding of the dynamics of winemaking in Europe and markets in United States. He was one of the first people to import and trust Piemonte. He thought it to be a wine area in Italy with the greater potential to compete with the wines he was previously importing into the USA: Bourgogne and Bordeaux. Tom brought Giovanni to the States and helped him to learn about their much more complex and sophisticated market for wine. At the time the US was not well acquainted with the world of Italian wines. But he also let Giovanni and his family learn techniques used in many other wineries across the world, opening the eyes to more sophisticated winemaking styles. This relationship brought their wines to the US, after many years (50) of absence. In this way, Giovanni started to follow the markets too, steering away from the predominant domestic market and expanding worldwide. A future encounter with Marco De Grazia, famous for having started the revolution of the Langhe with the Barolo Boys, led to a further step in learning and the expansion of the winery. Now like every member of the family, Giovanni is in charge of supervising the farming, winemaking decisions and established markets. ---Unisciti al gruppo Telegram The Digital Wine Lovers e al canale The Digital Wine, chatta con me su Telegram e seguimi su Twitter, mi trovi come Wine Roland.
